Chocolate Lovers Brownie Biscotti is the ultimate twist on the classic Italian cookie! A simple recipe for this glorious crunchy cookie, that is perfect for dunking, and will make the perfect gift for the chocoholic in your life! They are rich and chocolaty with 4 kinds of chocolate and a special ingredient to really enhance the flavor they totally irresistible!

We are so excited to be partnering with Medaglia d'Oro®  to bring you a fabulous Italian inspired recipe featuring one of our pantry staples Espresso Instant Coffee. Y'all know how much I love my coffee, my espresso, lattes and naturally....  biscotti.

RECIPE AT THE BOTTOM 


It's funny but it was my dad's Italian family that originally introduced me to the art of dunkin'. I remember sitting around the kitchen table at my grandma and grandpa's house and everyone had a cup of fresh perked Italian coffee and a pile of dunkables in front of them.

By 'fresh' I mean just poured out of an old time stove top percolator; where the water is on the bottom and the beans are in a canister in the top. What great memories.

So, naturally when I heard that National Coffee Day and National Biscotti Day both fall on the same day, I knew it was fate! I got to work on my newest dunkable: Chocolate Lovers Brownie Biscotti!!!  {{swoon}}


It all starts with a super chocolaty cookie base made with cocoa powder for a scrumptious chocolate flavor. I added my go-to Medaglia D’Oro Espresso Instant Coffee to really enhance the flavor! Just a teaspoon or two adds an incredible depth of flavor to the chocolate.

It is my favorite trick to really bring out the chocolatiness of the biscotti. Not to mention it is always in my pantry so a quick cup of Italian-Style espresso is just a cup of boiling water away.

I have to say, Chad is not as big a fan of the dunkin' tradition or crunchy cookies so when I cut the biscotti to go for their second trip to the oven, I grab a few for him. They are absolutely delightful both ways!As you can tell Munchkin follows in mama's foot steps.

I added in 3 more varieties of chocolate to really take it over the top: Semi sweet chunks, milk chocolate chips and white chocolate. It truly is a chocolate lovers delight! With a cup of my Italian-style coffee and a Chocolate Lovers Brownie Biscotti, if I close my eyes it is like I am at my grandparents table all over again. ☕️

Chocolate Lovers Brownie Biscotti
SERVES 24 | ACTIVE TIME 20 Min | TOTAL TIME 1 Hour

1 3/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
2 teaspoons Medaglia D’Oro Espresso Instant Coffee
1 teaspoon baking powder
1 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs, room temperature
1 tablespoon pure vanilla extract
1 cup semi-sweet chocolate chunks, divided
1 cup white chocolate chips, divided
1/2 cup milk chocolate chips

Preheat oven to 350°F. Prepare large baking sheet by lining with parchment paper or a silicone baking mat.

In a large bowl whisk together flour, cocoa powder, espresso powder, baking powder and salt. Set aside.

In a stand mixer fitted with the paddle attachment (or in separate large mixing bowl using an electric mixer) cream butter and sugar until light and fluffy, about 3 minutes. Scrape down the bowl as necessary. If you are using a large stand mixer you will need to scrape down the bowl a lot as this is a small recipe. Add the eggs and vanilla. Beat to combine. Add the flour mixture and mix on low until combined.

Reserve 1/4 cup semi-sweet chocolate chunks and 1/4 cup white chocolate chips. Set aside.

Fold in the remaining 3/4 cup chocolate chunks, 3/4 cup white chocolate chips and 1/2 cup milk chocolate chips. Divide the dough in half and place both halves on the prepared baking sheet.

Use your hands to form each dough half into a 12 inches long, 4 inches wide log (about 1 inch tall). If the dough is sticky, lightly dust hands with flour and then try forming again. Make sure that the logs are not touching each other or touching the sides

Bake for 30-35, or until the dough is slightly firm to the touch. Cool for 5 minutes, then transfer the biscotti logs to a cutting board and cut loaf diagonally into slices (about 1" thick) using a serrated knife. My bread knife worked wonderfully for this.

Put the slices on their sides on the baking sheet, separated so they are not touching, and bake for 10-15 minutes,or until crisp. Place on a cooling rack and cool completely.

Meanwhile microwave the remaining 1/4 cup semi-sweet chocolate and 1/4 cup white chocolate chips, in separate bowls, until melted. Put biscotti back together into a log shape, where the bottoms are back on the bottom and you have 2 logs of biscotti.

Drizzle the top of the biscotti logs with the white chocolate, in a zigzag pattern across the top of both logs. Then drizzle the semi-sweet across the tops in a zigzag pattern, starting at a the opposite corner so the you have a crisscross of the chocolates. Leave biscotti in log shape and refrigerate until the chocolate is firm.

Put the biscotti apart and store in an airtight container for 3-4 days. You can also store them in a freezer zip top bag for up to 3 weeks.

Serve with a cup of coffee and enjoy!

When it comes to comforting side dishes, this Bacon Beer Cheese Stuffing hits all the marks. And by marks, I mean the three crucial flavor profiles that simply make any dish better.

First, there’s the bacon. Because, well… bacon. I don’t think I really need to sell you on the deliciousness of bacon, but if I do, just imagine everything amazing about savory meats in the form of a crispy culinary treat. It just makes everything better, and there’s a hefty portion of it in this stuffing.

Then, there’s the beer. Beer has a way of adding a ton of depth to the flavor of a recipe, and especially when used in conjunction with meats like bacon. Even if you’re not a fan of drinking beer you may love it’s when cooked with the right ingredients. I opted to use Blue Moon in this recipe, and the hints of citrus really made the flavor pop.

And, finally, there’s the cheese. I don’t know about you, but I’m always looking for new ways to add cheese to my life, and what better way is there than baking it in a dish that’s 90% French bread?

I certainly can’t think of any!



All fangirl-fawning over the ingredients aside, I must admit that this stuffing recipe surprised me with how good it was. I grew up enjoying the more “traditional” forms of stuffing, which usually meant a lot of bread with a little bit of seasoning. And don’t get me wrong – there’s absolutely nothing wrong with that. Classics are classics for a reason. Stuffing doesn’t have to be a wallop of flavor for it to still be good.

This recipe may be a bit more time-intensive (due to cooking up all that amazing bacon) but since you don’t use the bacon grease in this recipe, you can also opt to use pre-cooked bacon. I know not everyone is a fan, but it can be a great alternative in a pinch. I’ve used pre-cooked bacon in many baked dishes and still loved them just as much.



So if you’re ready to take your side dish game to the next level for your next dinner, holiday, or rainy Sunday, this stuffing is more than worth a walk on the wilder side.

    What you will need to make Bacon Beer Cheese Stuffing:

    • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
    • Mixing Bowls - I like a variety of mixing bowls and prep bowls and this set has them all.
    • 9x13 Baking Dish - I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.

    Bacon Beer Cheese Stuffing

    This bacon beer cheese stuffing will kick your side dish game to the next level! Classic stuffing spiked with citrus beer, savory bacon, and cheddar cheese.
    prep time: 15 minscook time: 70 minstotal time: 85 mins

    Ingredients

    • 3/4 cup butter
    • 2 stalks celery, chopped (roughly 1/2 cup)
    • 1 large sweet onion, chopped (roughly 1/2 cup)
    • 1 pinch salt
    • 1 pinch pepper
    • 1/2 cup beer (such as Blue Moon)
    • 2 large eggs
    • 1 teaspoon Worcestershire sauce
    • 2 cups low-sodium chicken broth
    • 10 cups French bread, cubed, dried out overnight
    • 10 slices thick-cut bacon, cooked, drained, and chopped, divided
    • 1 cup shredded mild cheddar cheese, divided
    • 1 tablespoon fresh thyme, chopped and divided
    • 2 teaspoons fresh sage, chopped

    Instructions

    1. Preheat oven to 350 degrees F. Spray a 9x13 baking dish with cooking spray, then set aside.
    2. Melt butter in a skillet over medium heat. Add celery and onions and season with salt and pepper, to taste. Cook for 6-8 minutes or until veggies are tender. Add beer to skillet and bring to a simmer. Cook for 2-4 minutes, stirring occasionally, or until liquid is reduced by 1/2 and an opaque golden color. Remove skillet from heat.
    3. In a small bowl, whisk eggs until well beaten, then pour in Worcestershire sauce and chicken broth. Stir until mixed, then set aside.
    4. In a large mixing bowl, add French bread, 1/2 of the bacon, 1/2 cup mild cheddar, 1/2 tablespoon thyme, and sage, then toss to mix. Pour beer buttery veggies and chicken broth mixture in the bowl and then gently mix until bread is thoroughly saturated.
    5. Pour stuffing in prepared baking dish and gently smooth into an even layer. Garnish the top of the stuffing with the remaining bacon, mild cheddar, and thyme.
    6. Cover baking dish with aluminum foil and cook for 40 minutes. Remove foil and bake for another 20-30 minutes or until the top of stuffing is lightly crisp and golden brown.
    7. Serve Bacon Beer Cheese Stuffing immediately.

    Helpful Tips to make No Bake Peppermint Cheesecake Bars:

    • Make sure you use room temperature cream cheese and on the opposite, very cold heavy whipping cream.
    • The hot water should be very hot, boiling water, this will help melt the peppermint candies quicker.
    • The bars must be served chilled and must be stored in the refrigerator.
    • You can make the recipe in a springform pan, for a round cheesecake or make it as a trifle, served in individual glasses.
    • Top with whipped cream right before serving, as the whipped cream hardens in the refrigerator.

    No-Bake Peppermint Cheesecake Bars

    No-Bake Peppermint Cheesecake Bars are the best way to enjoy the delicious holiday flavors in a stunning and easy dessert recipe!

    Ingredients

    Crust
    • 3 cups graham cracker crumbs
    • 1/3 granulated sugar
    • 1 cup unsalted butter, melted
    Cheesecake
    • 15 Peppermint hard candies, crushed
    • 1/2 cup hot, boiling water
    • 2 (7 gram) packets unflavored gelatin
    • 3 (8 ounce) package full fat cream cheese, room temperature
    • 1 cup granulated sugar
    • 1 1/2 cups heavy whipping cream, cold
    Garnish
    • 10 Peppermint hard candies, crushed
    • 1 1/2 cups heavy whipping cream
    • 2 tablespoons white granulated sugar

    Instructions

    1. Prepare the Crust: Add all the ingredients to a large bowl, mix with a fork until well combined and press into a lightly greased 9x13 inch pan.
    2. Prepare the Cheesecake: Add peppermints to a large Ziploc bag. Seal the bag well, but do not make the bag air tight, or the bag will perforate on the first smash. To avoid a mess, place the bag inside another Ziplock bag.Place the bag on a wooden cutting board and using a kitchen mallet, crush the candies.
    3. Add the crushed candies to a medium bowl and pour hot, boiling water over them. Using a spoon, stir the mixture for 3-5 minutes, until the candies completely melt.
    4. Sprinkle the two packets of gelatin over the peppermint mixture, let it bloom for 1 minute and whisk it until fully combined. Set aside.
    5. Add room temperature cream cheese and sugar to a large bowl and using a hand mixer (you can also you a stand mixer for this), whisk it on medium-high speed until creamy and fully combined. Scrape the sides and bottom of the bowl a few times.
    6. Add the gelatin mixture to the cream cheese, mix it in with the electric mixer starting on low speed and increasing it to high. Scrape the sides and bottom of the bowl a few times.
    7. Add cold heavy whipping cream to a preferably chilled, cold bowl and beat it on medium-high speed until soft peaks form and the whipped cream holds its shape, about 1-2 minutes. Fold whipped cream into the cheesecake mixture and stir well to combine.
    8. Add the cheesecake mixture to the pan, level the top with a spatula. Chill for at least 3 hours, better 5-8 hours.
    9. Garnish: When ready to serve, add cold heavy whipping cream and sugar to a preferably chilled, cold bowl and whisk it on medium-high speed until soft peaks form and the whipped cream holds its shape, about 1-2 minutes.
    10. Garnish each peppermint cheesecake bar with whipped cream and top with crushed peppermints.
    11. Enjoy!

    Helpful Tips to make White Chocolate Peppermint Crockpot Candy:

    •  I like to use a mix of white chocolate chips and melting chocolate wafers. The latest are creamier, therefore they give the candy that velvety texture. If you can't get your hands on melting chocolate wafers (aka candy melts), do NOT substitute with chocolate chips, but rather use same amount of a good quality white chocolate bar. Keep in mind, you need good white chocolate for this recipe to taste amazing!
    • Do NOT try to take a shortcut and cook the candy on High, the recipe doesn't take long to make on the Low setting. If you cook it on high, chances that some of the chocolate will burn are very high.
    • You can substitute some of the nuts if you are allergic or just don't like some.
    • Yes, you can make this recipe without the peppermint candies, if you are not a fan.
    • Very important: don't forget to stir, this will ensure uniform cooking.

    • Slow Cooker - the slow cooker is almost my most used kitchen gadget, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
    • White Chocolate Chips - I buy them in bulk, I always have some on hand.
    • White Chocolate Melting Wafers - These are of high quality, creamy and specifically designed for melting and candy making.

    White Chocolate Peppermint Crockpot Candy
    SERVES 16  |  PREP TIME 10 Min  |  COOK TIME 1 Hour

    1 cup cocktail peanuts
    1 cup cashews
    1/2 cup slivered almonds
    1 cup peppermint candy, crushed
    1 cup white chocolate chips
    20 ounces white chocolate melting wafers

    Garnish:
    1/4 cup peppermint candy, crushed
    1 tablespoon green sanding sugar

    Add nuts, crushed peppermint candy, white chocolate chips and white chocolate melting wafers to the slow cooker. Distribute evenly. Close.

    Cook on low for 1 hour. Stir the mixture every 30 minutes.

    If after one hour the chocolate is not fully melted, cook for another 15-20 minutes.

    Once the chocolate is fully melted, stir well to combine.

    Line a cookie sheet with parchment paper and using a 2 tablespoon cookie scoop, scoop the candy onto the baking sheet.

    Immediately garnish with crushed peppermint candies and green sanding sugar.

    You can refrigerate the candy for 15 minutes to settle quicker, or just leave it at room temperature and it will settle in about 30-40 minutes.

    Helpful Tips to make One Pan Hawaiian Pasta :

    • If you would like to save some time, you can buy cooked bacon or bacon crumbs, you can also roast it in the oven or skip it all together if you don’t like bacon.
    • For the best tomato flavor, I like to use canned San Marzano tomatoes when possible, they are sweeter, not that acidic and the flavor is amazing.
    • I like adding red bell pepper to this recipe, you can add green, yellow or orange bell pepper as well.
    • For a spicier kick, you can add some red pepper flakes or hot sauce.
    • I used mozzarella cheese and sharp cheddar. You can use your favorite cheese in this recipe.
    • The dried basil is optional, but it will add a nice, subtle flavor.
    • If you want a creamier version of this recipe, you can add 1 cup of cream to the pasta when cooking.
    • If the pasta absorbs all the broth, you can add 1 cup of water to continue cooking and avoid from drying it out.
    • Make sure to stir the pasta while cooking, so it doesn’t stick to the bottom of the pan.

    • Dry Basil - Delicious in this recipe, and its nice to have it in your pantry.

    One-Pan Hawaiian Pasta

    One-Pan Hawaiian Pasta is a quick and easy 30 minute dinner that packs all the punch that comes with Hawaiian flavors, in an easy to make, hearty dinner.

    Ingredients

    • 8 slices smoked bacon, chopped
    • 16 ounces cubed ham
    • 1 red bell pepper, chopped
    • 20 oz pineapple tidbits, drained
    • 1 tablespoon garlic, minced
    • 1/2 teaspoon dried basil 
    • 1/2 teaspoon salt 
    • 1/4 teaspoon pepper 
    • 1 (15 oz) can tomato sauce
    • 8 oz dry cellentani pasta
    • 2 cups chicken broth , low sodium
    • 1 cup mozzarella cheese, shredded
    • 1 cup sharp cheddar cheese, shredded
    • Cilantro, chopped

    Instructions

    1. Slice bacon into small pieces. 
    2. Place a large cast iron pan or deep skillet over medium heat, add bacon to it while the pan is still cold. Cook bacon until crisp stirring occasionally.
    3. Remove bacon from the pan once crispy and place on a paper towel lined plate to drain. Discard the bacon grease from the pan, leaving only about 1-2 tablespoons. 
    4. Add cubed ham to skillet. Cook, stirring frequently, until ham is browned, for about 2-3 minutes.
    5. Add chopped red bell pepper and half of the pineapple tidbits. Cook for about 1 minute, stirring occasionally.
    6. Add minced garlic, basil, salt and pepper. Stir to combine.
    7. Add tomato sauce, pasta and chicken broth, stir to combine.
    8. Bring mixture to a boil, then cover with a lid and cook over low-medium heat until pasta is tender, about 15 minutes. Stir often, to make sure pasta does not stick to the bottom of the pan, if needed add more broth or water, 1 cup at a time.
    9. When pasta is cooked, cover with cheese and stir to combine. Remove from heat.
    10. Stir in remaining pineapple if desired and reserved crispy bacon.
    11. Garnish with chopped cilantro before serving.

    The entire meal cooks in less than 35 minutes and is made with the freshest flavors.

    Combine chicken, fresh jalapeƱos, pasta, cheese and a few other simple ingredients in one pot to make dinner easy. Top the pasta with bacon and garnish with flat leaf parsley before serving.

    One Pot JalapeƱo Popper Chicken Pasta

    One Pot JalapeƱo Popper Chicken Pasta cooks in one pot to make clean up easy! The meal is packed with flavor and is perfect for the entire family.

    Ingredients

    • 1 pound chicken breast, cut into 1 inch pieces
    • 2 teaspoons chili powder
    • 2 tablespoons olive oil
    • 1/2 cup diced yellow onion
    • 1 tablespoon minced garlic
    • 2 1/2 cups uncooked penne pasta
    • 2 cups chicken broth
    • 1/3 cup water
    • 2-3 jalapeƱo peppers, minced
    • 4 ounces cream cheese
    • 1/2 cup shredded Monterey Jack or Colby Jack cheese
    • 4 slices cooked bacon
    • Sliced jalapeƱo, for garnish
    • Freshly chopped Italian flat leaf parsley, for garnish

    Instructions

    1. Season chicken with chili powder; set aside.
    2. In a 12” pan or skillet, heat olive oil over medium heat. Add onions and stir until soft, about 3 minutes. Add chicken to pan and cook until brown on both sides. Stir in garlic and cook one additional minute.
    3. Add uncooked pasta, chicken broth, water and sliced peppers. Stir then bring to a boil. Reduce heat to low, cover and simmer for 22 minutes.
    4. Uncover and cook until almost all of the liquid is absorbed, about 5 additional minutes. Remove from heat, stir in cream cheese and shredded cheese. Stir until cheese is melted.
    5. Garnish with bacon, sliced jalapeƱos and fresh parsley. Enjoy!
