Crockpot Caramel Sauce

Best Ever Crockpot Caramel Sauce (aka Dulce De Leche) with just 2 ingredients most likely in your pantry and no stirring! This no-fail recipe results in the most magnificent, heavenly creation that you have ever made in your slow cooker. Guaranteed to be a favorite for a long time to come!

It is a divine creation that is utterly rich and creamy. It has a fabulously complex flavor with less overwhelming sweetness than caramel.
It's perfect on everything, but my favorite is on a spoon.

The Best Ever Dulce De Leche with just 2 ingredients and no stirring! It is a heavenly creation that will knock your socks off! Everyone is going to want it. Better buy more slow cookers. LOL

I have quite a dulce de leche obsession. I used to be hooked on caramel but it is almost too sweet. I mean it is cooked sugar with a little cream added, right? That is when I was introduced to dulce de leche. It is a divine creation that is utterly rich and creamy.

I can eat it by the spoonful! Dulce de leche is sweet milk slowly cooked until is it becomes dark, rich and thick. The traditional stove top method requires several hours of cooking and stirring often.

As much as I love my dulce de leche I just don't have the time or the patience to stand in front of my stove for hours. That is where the slow cooker comes in perfectly handy!

You really just pour the ingredients into canning jars, stir them together and cook. 8-10 hours later you have your thick, rich and creamy heavenly goodness. I have my spoon ready to dive in. It keeps for several weeks in the fridge, if it will last that long.

I gently warm my dulce de leche in the microwave, 30 seconds then stir. Until is it the thickness I am looking for. Perfect on cakes, great as a cupcake filling, dessert drizzle. I have stirred it into my brownies or cookies. It is perfect drizzled on cakes, ice cream and in coffee!

Can you imagine your morning coffee with a drizzle or scoop (no judgement here) of dulce de leche {{swoon}}. The thought makes me week in the knees. OK, enough chatting lets hurry and get to the recipe.

Helpful Tips to make Crockpot Caramel Sauce:

  • You can substitute 1 tablespoon vanilla extract or 1 vanilla bean for the vanilla bean paste.
I cooked these for 8 hours to get this color. If you would like it richer colored, cook it longer. Note that at 10 hours it is as thick as custard.
  • Recipe can be doubled and tripled to suit the size of your slow cooker. I usually cook 4 jars at a time. If your slow cooker is shallow you can use wide mouth half pint jars.

An American favorite now comes to you in a simple crockpot recipe Classic Slow Cooker Stuffing

It is almost Thanksgiving and all I can think about is the stuffing. I know I shared my stuffing love affair with you a few weeks ago with our fabulous Sausage, Cranberry, and Apple Stuffing recipe. It really is my best ever all time favorite stuffing. But, honestly not everyone wants 'fancy' stuffing. I get that. So with all the requests we have been getting for crockpot recipes for Thanksgiving I recreated a family classic.

As long as I can remember (and for many years before I knew them) my mother-in-law Gigi has been making a classic midwestern/southern stuffing with sausage and bacon.  Some years it would be sausage only, but honestly my favorite was with a double helping of the pork.

An American favorite now comes to you in a simple crockpot recipe Classic Slow Cooker Stuffing
Knowing y'all are begging for slow cooker recipes to simplify your life, I recreated a family favorite. Classic Slow Cooker Stuffing starts with sour dough bread, sausage, bacon and fresh herbs.  It is destined to be the star of the show. It's so good that we ate it for dinner last night.

If you are in a time crunch, try substituting out store bought plain stuffing cubes, precooked sausage links (chopped) and bacon crumbles. It cuts the prep time to about 10 minutes. With a stuffing recipe this fabulous you will be making it over and over.

      Crockpot Make Ahead Ground Beef

So you are wondering "How to cook ground beef in a crockpot"? Here's my little short cut for time saving weekday cooking and also several time saving weeknight dinner ideas too! A few weeks ago I posted my Lazy Day Chili recipe and suggested that you use pre-cooked ground beef to cut the preparation time. I received a lot of emails asking how I prepare mine.
s my little short cut for time saving weekday cooking and also several time saving weeknig Crockpot Make Ahead Ground Beef

It is not uncommon to see 3 or 4 crockpots going at the same time at my house. Time just seems to get away from us and after having to stop for fast food one too many times I decided to take matters into my own hands.

I love to make shredded chicken to have it on hand for quick burritos, salads, bbq chicken sandwiches and other easy lunch and dinners.

Then, I also started making ground beef  ahead so I have plenty of options on a busy night. Like on nights we don't get home from TaeKwonDo until 7:00pm and we didn't get to eat before we left. I grab a package of precooked ground beef out of the freezer and toss it in a pot with spaghetti sauce and boil some pasta. Viola! Dinner in 10 minutes.

Some of my favorites made with 1 pound precooked ground beef:

Quick and Easy Sloppy Joes - add 1/2 cup ketchup, 1/4 cup brown sugar, onion and garlic powder and precooked ground beef. Simmer for 10 minutes. Season with salt and pepper.

Meat Sauce Marinara - combine spaghetti sauce and precooked ground beef in a medium saucepan over medium heat. Prepare pasta. Serve and enjoy!

Flautas - combine ground beef, 4 ounces cream cheese, 4 ounces salsa, 4 ounces shredded Colby Jack cheese.  Lay out 4 (6 inch flour) tortillas at a time and add 1-2 tablespoons of mixture to the lower 1/3 of the tortilla. Roll the taquito tightly without tearing the tortilla.  Place taquitos seam side down on the baking sheet.  Repeat until the baking sheet is full, being careful not to allow the taquitos to touch.  Spray taquitos with cooking spray and sprinkle with salt.  Bake 15-20 minutes until the tortillas are crisp or the ends begin to brown.

Check out below for more recipes and ideas. What are your favorite ways to use pre-cooked ground beef?

        Overnight Slow Cooker Breakfast Casserole
        SERVES 8 | ACTIVE TIME 20 Min | TOTAL TIME 6 Hours 20 Min

Slow Cooker Overnight Breakfast Casserole Slow Cooker Overnight Breakfast Casserole

        12 large eggs
1 cup heavy cream (or half and half)
        1 teaspoon onion powder
        1 teaspoon salt
        1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1 (20 ounce) bag refrigerated hash browns
1 (5 ounce) package Jones Dairy Farm fully cooked chicken sausage links, sliced into coins
8 ounces shredded mozzarella cheese, divided
4 ounces shredded Parmesan cheese, divided
1/2 cup chopped sun dried tomatoes, divided
1/2 cup chopped fresh basil, divided
        cooking spray

Spray a slow cooker with non-stick cooking spray. I used a 6 quart crockpot. Set aside.

In a medium bowl or 4 cup measuring cup combine eggs and cream. Whisk until well combined. Sprinkle spices (onion powder, salt and both peppers) over egg mixture while whisking. Whisk until completely combined. Set aside.

In slow cooker, combine all of the hash browns and about 1/2 of each of the remaining ingredients (Parmesan cheese, mozzarella cheese, sliced sausage links, sun-dried tomatoes and basil). Using fingers, gently toss hash brown mixture until combined. Pour egg mixture over casserole. If necessary use a spatula to smooth out the top.

Set aside about 1/2 of the mozzarella cheese (approximately 2 ounces). Sprinkle the remaining reserved ingredients over the top of the casserole. Cover the slow cooker and cook for 6-8 hours on low or until a thermometer inserted into the center of the casserole reads 160°F. Once the center of the casserole is cooked through, it is done.

Sprinkle casserole with remaining cheese, serve and enjoy!

        Slow Cooker Baked Beans

Smokehouse Bacon Beans are an easy recipe with bold flavors. Rich and thick beans slow cooked for hours in a mixture of molasses, brown sugar, veggies, smoky spices and bacon, bacon and more bacon. Most possibly the cook-out side dish of your dreams!
Rich and thick beans slow cooked for hours in a mixture of molasses Slow Cooker Baked Beans

Nothing says summer quite like a cook-out filled with grilled eats, sides, salads and beans.  My perfect cookout menu includes burgers and dogs, my moms potato and macaroni salads, roasted corn and beans. I am so excited to be sharing recipes for our favorites with you this summer.

Have you ever tasted baked beans so smoky and rich that you could eat them for an entire meal?  Well, these are the beans of your dreams!  It all starts with a pound of bacon, veggies and the fixins for the best tasting smoky beans you have ever eaten.

Prepared in a slow cooker the recipe is as easy as soaking the beans overnight and then dumping all the ingredients into the slow cooker and letting them go all day (or night).  The results are incredible.  Deep rich molasses and brown sugar add to the body of the smokey, tender beans.  The vinegar helps mellow out the sweetness so it is perfect.  These beans are reminiscent of the beans you would enjoy at a smokehouse.  Now you can have them at home.

Chad and I went nuts with these, as I mentioned I ate bowls of them on their own and Chad put them on everything you can imagine.  They are the perfect topping to a grilled burger, just add a slice of cheese!  This dish will be a hit at your cook-out, just be sure to bring the recipe with you.  Everyone will ask for it!

        2. Pour beans into a large sieve or colander and rinse well.  Pour rinsed beans into 6 quart slow cooker and cover with water by 2 inches.  Place cover on and leave slow cooker OFF.  Allow beans to soak overnight (about 8-12 hours).
        3. Drain the soaked beans and rinse the slow cooker.  Place onions, garlic and bacon into the slow cooker.  Then add beans back into the slow cooker.  Add water, molasses, brown sugar, ketchup, chili pepper, vinegar, and pepper.  (Salt will be added at the end).
        4. Cook on high for 10-12 hours until beans are tender.  Add salt to taste, we use the full 1 tablespoon.
        5. Serve and enjoy!

        DONNA’S NOTES

        1. If you want your beans really thick, after about 10 hours remove 2 cups of beans from cooker and smash them.  Add them back to the cooker and stir.  This step will help the beans thicken.

We are so excited to be partnering with International Delight®  to bring you another fabulous recipe. I don't know about you, but I love my coffee so I always have creamer in the house. I have found this to be an amazing convenient ingredient in cooking and baking sweets. So, of course when I started thinking about the frosting for this recipe I thought of International Delight.

My whole family loves cinnamon rolls, but to be honest some days I am just not about making and rolling out dough. Last weekend I wanted something that was just as fabulous but something sooo much easier.

Not to mention with Mother's Day right around the corner I can not think of a more amazing breakfast or brunch to surprise mom with.

        RECIPE AT THE BOTTOM

So, I decided to create a bite size cinnamon roll drizzled with the most amazing frosting. Truly like a bite of your favorite cinnamon roll. It all starts out with freezer dinner rolls they are utterly convenient but if you prefer you can just whip up a loaf of homemade bread dough and substitute that.

The dough balls are coated in butter and tossed in cinnamon sugar. They are cooked in the crockpot and the sugar becomes ooey gooey delicious! As if they aren't perfect enough they are topped with a cream cheese frosting that will blow your mind.

My family loves finger food so I have to say this pull apart bread was absolutely heavenly. A sweet and tender bite size pastry bursting with spicy sweet cinnamon and covered in the most glorious cream cheese frosting. We all stood around the slow cooker and devoured these little tasty treats.

It is the easier cinnamon roll ever. Ok, so it is not rolled up but the dough is rolled in cinnamon sugar and inspired by the illustrious cinnamon roll so I decided to keep the name.

You are going to love it!

prep time: 10 minscook time: 2 hourtotal time: 2 hours and 10 mins

        • 2 sticks (16 tablespoons) butter. melted
        • 3 tablespoons ground cinnamon
        Cream Cheese Frosting

        • 1/4 teaspoon salt

        Instructions

        1. Place frozen dinner rolls on clean counter top or cutting board to thaw enough to cut, about 15-30 minutes.
        2. Meanwhile: melt butter in medium bowl and prepare cinnamon sugar. To prepare cinnamon sugar, combine brown sugar and cinnamon in a 1 gallon resealable plastic bag. Seal and shake to combine.
        3. Add 1/4 cup of melted butter to the bottom of  a 6 quart slow cooker, brush butter up the sides or use a paper towel. Set aside.
        4. Using clean kitchen shears, cut dinner rolls into 1/4's. Place a handful of the cut rolls into the butter. Stir to coat. Remove from butter and toss in cinnamon sugar.
        5. Place half of the cinnamon roll bites into the slow cooker in an even layer. Repeat to make 2 even layers. Pour any remaining cinnamon sugar over top and pour remaining butter over top. Cover and cook on high for 1 1/2-3 hours (mine were perfect at 1 hour 45 minutes).
        6. Meanwhile prepare the cream cheese frosting.
        7. In a tall bowl beat cream cheese and butter with an electric mixer until smooth and creamy. Add powdered sugar and continue to mix until incorporated. Add creamer and salt. Mix until light and fluffy.
        8. Drizzle frosting over the entire batch of pull apart bread or serve on the side.
