Helpful Tips to make No Bake Peppermint Cheesecake Bars:

  • Make sure you use room temperature cream cheese and on the opposite, very cold heavy whipping cream.
  • The hot water should be very hot, boiling water, this will help melt the peppermint candies quicker.
  • The bars must be served chilled and must be stored in the refrigerator.
  • You can make the recipe in a springform pan, for a round cheesecake or make it as a trifle, served in individual glasses.
  • Top with whipped cream right before serving, as the whipped cream hardens in the refrigerator.

What you will need to make No Bake Peppermint Cheesecake Bars:

  • 9x13 baking pan – the perfect pan for blondies, brownies and many other delicious desserts. I love this one with the cover.

No-Bake Peppermint Cheesecake Bars

No-Bake Peppermint Cheesecake Bars are the best way to enjoy the delicious holiday flavors in a stunning and easy dessert recipe!

Ingredients

Crust
  • 3 cups graham cracker crumbs
  • 1/3 granulated sugar
  • 1 cup unsalted butter, melted
Cheesecake
  • 15 Peppermint hard candies, crushed
  • 1/2 cup hot, boiling water
  • 2 (7 gram) packets unflavored gelatin
  • 3 (8 ounce) package full fat cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 1/2 cups heavy whipping cream, cold
Garnish
  • 10 Peppermint hard candies, crushed
  • 1 1/2 cups heavy whipping cream
  • 2 tablespoons white granulated sugar

Instructions

  1. Prepare the Crust: Add all the ingredients to a large bowl, mix with a fork until well combined and press into a lightly greased 9x13 inch pan.
  2. Prepare the Cheesecake: Add peppermints to a large Ziploc bag. Seal the bag well, but do not make the bag air tight, or the bag will perforate on the first smash. To avoid a mess, place the bag inside another Ziplock bag.Place the bag on a wooden cutting board and using a kitchen mallet, crush the candies.
  3. Add the crushed candies to a medium bowl and pour hot, boiling water over them. Using a spoon, stir the mixture for 3-5 minutes, until the candies completely melt.
  4. Sprinkle the two packets of gelatin over the peppermint mixture, let it bloom for 1 minute and whisk it until fully combined. Set aside.
  5. Add room temperature cream cheese and sugar to a large bowl and using a hand mixer (you can also you a stand mixer for this), whisk it on medium-high speed until creamy and fully combined. Scrape the sides and bottom of the bowl a few times.
  6. Add the gelatin mixture to the cream cheese, mix it in with the electric mixer starting on low speed and increasing it to high. Scrape the sides and bottom of the bowl a few times.
  7. Add cold heavy whipping cream to a preferably chilled, cold bowl and beat it on medium-high speed until soft peaks form and the whipped cream holds its shape, about 1-2 minutes. Fold whipped cream into the cheesecake mixture and stir well to combine.
  8. Add the cheesecake mixture to the pan, level the top with a spatula. Chill for at least 3 hours, better 5-8 hours.
  9. Garnish: When ready to serve, add cold heavy whipping cream and sugar to a preferably chilled, cold bowl and whisk it on medium-high speed until soft peaks form and the whipped cream holds its shape, about 1-2 minutes.
  10. Garnish each peppermint cheesecake bar with whipped cream and top with crushed peppermints.
  11. Enjoy!

We absolutely love love love rich and creamy buttercream icing on cookies and this recipe is absolutely perfect for Christmas cookies or for holiday parties!

wether you make it as a 2 layer cake or as cupcakes this frosting will make it a holiday spectacular!

Candy Cane Buttercream Frosting
MAKES 2 Cups | ACTIVE TIME 5 Min | TOTAL TIME 5 Min
 is a simple recipe for a rich and creamy peppermint icing that is sure to be a holiday fa Candy Cane Buttercream Frosting

1 cup (2 sticks) unsalted butter, room temperature
3 cups powdered sugar
1 tablespoon International Delight French Vanilla Liquid Creamer
1 tablespoon pure peppermint extract
2-3 drops red gel food coloring, optional
Pinch salt, optional
Crushed candy canes, optional garnish

In a standing mixer fitted with the whisk attachment (or in a large bowl using an electric mixer), cream the butter for 1 minute. Scrape down the sides of the bowl if necessary. Turn the mixer to low and add powdered sugar one cup at a time. Mix until well blended.

Add creamer, extract and a pinch of salt if desired (I add it to take the edge off of the sweetness) and continue to beat on medium speed for 1 minute more, adding more creamer as needed until desired consistency is reached. Add red food coloring (I use gel so it does not thin out the frosting, but if you must use liquid that is fine, just add additional powdered sugar as necessary to thicken it back up).

Enjoy on your favorite dessert, or with a spoon! We especially love it on our Best Ever Sugar Cookies and Easy Chocolate Cake.

DONNA'S NOTES: This recipe will frost a 9x13 inch cake or 24 cupcakes (12 with a stacked swirl).

I don't know about you, but as soon as the holiday season strikes, I am baking up a storm. Thanksgiving pies lead into Christmas candies and cookies. This pecan pie Christmas crack is a perfect combination of the two. Its a mash up of pecan pie and Christmas cracker toffee. I added pecans to the toffee to make it more like these amazing pecan pie bars. This is a must make Christmas candy this year!

Hi Friends, its Aimee from Like Mother Like Daughter here again for my monthly contributor post! I hope you love this cracker toffee as much as I do!

Because this toffee starts with saltine crackers, it makes it a perfectly sweet and salty treat. The crackers give the toffee the perfect crunch, and saltiness, that pairs perfectly with the sweet homemade toffee and drizzled chocolate. You can leave the chocolate off, if you prefer to have more of the traditional pecan pie flavor, but in my opinion chocolate makes everything better!

After you drizzle the chocolate on the top you can sprinkle the top with red, white, and green, or other Christmas sprinkles to make the candy extra festive.

I promise its a treat that will be loved by all! Perfect for sharing with your neighbors this holiday season, or enjoying at home, or taking to a Christmas party!

HELPFUL TIPS TO MAKE PECAN PIE CHRISTMAS CRACKER TOFFEE:

  • Have all your ingredients prepared beforehand. If you need to chop your pecans, do that first, have the chocolate chips ready in a bowl for when they are needed, and sprinkles ready for sprinkling.
  • Instead of sprinkles you could also top your toffee with festive m&ms, or drizzle some red, and green candy melts on top!
  • I recommend using a silicone liner, but if you don't have one you can use parchment, or heavily greased foil. This keeps the treat from sticking to the pan and makes it easy to work with and easy clean up!

WHAT YOU WILL NEED TO MAKE PECAN PIE CHRISTMAS CRACKER TOFFEE:

  • Silpat mat - I use these mats for everything. They are great for flash freezing, rolling out dough and naturally for baking.
  • Christmas sprinkles - we love sprinkes of every kind in our house but these are especially fun on this dessert!

Pecan Pie Christmas Cracker Toffee
SERVES 40  |  PREP TIME 5 Min  |  COOK TIME 8 Min

40 saltine crackers
1 cup packed light brown sugar
1 cup butter
1 cups chopped pecans
1 cup your favorite chocolate chips
Christmas sprinkles

Preheat the oven to 350°F.

Place a silicone mat or parchment paper on a baking half sheet pan. Place saltine crackers in rows covering most of the pan. Combine the brown sugar, and butter in a medium sized pot. Heat over medium low until the butter is melted. Raise the temperature to medium high and bring to a boil. Boil for 3 minutes, stirring constantly.

Carefully pour sauce evenly over the top of the saltine crackers. Sprinkle pecans over the top.
Place pan in preheated oven and bake for 5 minutes. Remove pan from oven.

Melt chocolate chips in the microwave in 30 second increments, stirring till smooth after each (mine took 1 minute). Drizzle melted chocolate over the toffee. Sprinkle with Christmas sprinkles if desired.

Place pan in the fridge for 2 hours to set. Once set, break into pieces. Store in an airtight container for 1.5 -2 weeks.

Helpful Tips to make White Chocolate Peppermint Crockpot Candy:

  •  I like to use a mix of white chocolate chips and melting chocolate wafers. The latest are creamier, therefore they give the candy that velvety texture. If you can't get your hands on melting chocolate wafers (aka candy melts), do NOT substitute with chocolate chips, but rather use same amount of a good quality white chocolate bar. Keep in mind, you need good white chocolate for this recipe to taste amazing!
  • Do NOT try to take a shortcut and cook the candy on High, the recipe doesn't take long to make on the Low setting. If you cook it on high, chances that some of the chocolate will burn are very high.
  • You can substitute some of the nuts if you are allergic or just don't like some.
  • Yes, you can make this recipe without the peppermint candies, if you are not a fan.
  • Very important: don't forget to stir, this will ensure uniform cooking.

What you will need to make White Chocolate Peppermint Crockpot Candy:

  • Slow Cooker - the slow cooker is almost my most used kitchen gadget, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
  • White Chocolate Chips - I buy them in bulk, I always have some on hand.
  • White Chocolate Melting Wafers - These are of high quality, creamy and specifically designed for melting and candy making.

White Chocolate Peppermint Crockpot Candy
SERVES 16  |  PREP TIME 10 Min  |  COOK TIME 1 Hour

1 cup cocktail peanuts
1 cup cashews
1/2 cup slivered almonds
1 cup peppermint candy, crushed
1 cup white chocolate chips
20 ounces white chocolate melting wafers

Garnish:
1/4 cup peppermint candy, crushed
1 tablespoon green sanding sugar

Add nuts, crushed peppermint candy, white chocolate chips and white chocolate melting wafers to the slow cooker. Distribute evenly. Close.

Cook on low for 1 hour. Stir the mixture every 30 minutes.

If after one hour the chocolate is not fully melted, cook for another 15-20 minutes.

Once the chocolate is fully melted, stir well to combine.

Line a cookie sheet with parchment paper and using a 2 tablespoon cookie scoop, scoop the candy onto the baking sheet.

Immediately garnish with crushed peppermint candies and green sanding sugar.

You can refrigerate the candy for 15 minutes to settle quicker, or just leave it at room temperature and it will settle in about 30-40 minutes.

We are so excited to be partnering with our friends at Jones Dairy Farm to bring you a scrumptious breakfast or brunch recipe perfect for the holidays with family and friends, starring one of my favorite ingredients: Bacon!!!





As far back as Chad can remember his family has been enjoying fatayer for Christmas eve dinner. His mom got the recipe from one of her friends' moms when she was just a teenager. Her family recipe is a spin on the traditional Syrian/Lebanese meat pie. Perfectly seasoned beef and potatoes are wrapped in a bread dough and baked.

Chad's mom (Munchkin calls her Gigi) and bonus dad (Pop Pop) have been preparing Christmas eve dinner for everyone from the beginning. Then one year (when I was pregnant with Munchkin) they invited us over to help.


Now, I have to tell you that this was a major big deal. Taking part in the preparation of fatayer was an exciting day. To give you an idea, Chad's family feels the same way about fatayer as my family feels about Christmas lasagna and braciole (I will get you the recipe for my dads braciole someday). So, you can imagine what a big deal this was.

So, over the years it has become a tradition for us to get together Thanksgiving weekend and prepare the fatayer for Christmas. We make it and freeze it. Then pop it in the oven on Christmas Eve and it is as fresh and delicious as the day it was first made. FUN FACT: The original idea for our bombs series came from this family tradition. Funny how one thing can have such an incredible impact. They are THAT good!

So, as you can see even Munchkin gets in on the prep work. She has been helping since she was 2. Gigi prepares the filling, Munchkin and I roll out the dough. Chad and Gigi stuff and seal the fatayer and Pop Pop mans the oven.


It is quite a process. We have been wanting to share the family recipe for years, and finally this year Fatayer day was at our house! While we were making the longtime family recipe I said "I bet sweet potatoes would be awesome in here". Chad said and BACON!!! So we thought about it and decided to put a modern twist on the family recipe.

I am so excited to share with you our Bacon Burger Bombs. Loaded with beef, cherrywood smoked bacon and sweet potatoes that are perfectly seasoned. It's stuffed in a soft and tender bread dough, then brushed with bacon drippings and baked to perfection. OH MY WORD!!! The finished Bacon Burger Bomb is tender and bursting with flavor!

I have never had a fatayer like this before. So naturally we decided to change the name. It is so rich and decadent, the bacon flavor comes through in every bite! Every one of use devoured these. Bacon Burger Bombs
SERVES 18 | ACTIVE TIME 30 Min | TOTAL TIME 1 Hour 30 Min



18 frozen dinner roll dough balls
1 pound Jones Dairy Farm Cherrywood Smoked Sliced Bacon
1 pound lean ground beef
1/2 sweet potato, finely chopped
1 large egg, lightly beaten
1 teaspoon cinnamon
1 teaspoon kosher salt
1/2 teaspoon nutmeg
1/4 teaspoon allspice

Lightly flour a large cutting board or a countertop. Place frozen dough balls on the counter to thaw flipping them once after about 30 minutes. Shortcut method in Donna's notes.

Meanwhile: In a cold large (12") cast iron skillet add bacon. Turn heat to medium and cook until crisp, stirring occasionally. This will take about 25 minutes. Remove bacon from pan and place on a plate. Once the skillet has cooled, pour bacon drippings through a sieve into a resealable container. I use a mason jar. Set aside.

Meanwhile: Combine beef, sweet potato, bacon (including any bacon drippings on the plate), egg, and spices in a large bowl. Mix with clean hands until combined.

Preheat the oven to 425°F.

Toss 1 piece of dough in flour and flatten and stretch like you are making a mini pizza. Stretch dough to about 3-4” across. I like to use a rolling pin to make sure that I do not get any thin spots.

Add about 2 tablespoons of the beef mixture to the center of the flattened dough. Grab the top and bottom edges of the dough and crimp together on the right side. Pull the left edge up to meet the crimped dough. crimp the two edges to the dough to make a triangle package. Place on a cookie sheet. Repeat until there are 9 on each cookie sheet.

Brush bombs with the strained bacon drippings. If you did not reserve the bacon drippings, you can use canola oil.

Bake the bombs for 12-15 minutes until the tops are golden brown and the bombs are no longer doughy, swapping the trays half way during cook time. And brushing with bacon drippings again. If your dough is still cold, you may need to bake them longer. I have baked them up to 20 minutes.

DONNA'S NOTES: To defrost the rolls quickly, place dinner rolls on a microwave safe plate and microwave on defrost for about 3-4 minutes (or until dough is no longer frozen, but not cooked).

That is one of the many reasons we are so excited to be partnering with Jones Dairy Farm.

I am sure I have mentioned it before, but I am the "queen of over overnight and make ahead breakfasts". It's not some exciting honor that has been bequeathed to me. It actually arose out of necessity and I blame my mom as I am sure it's some gene that she passed along to me. I am a total night owl. I can go until the wee hours of the morning without batting an eye, but I am slow going when I wake up.

I remember trying to get my mom to wake up Christmas morning so we could open presents. It just about took a pot of coffee and a funnel. haha. In her defense, she was up until 4am 'waiting for Santa'. 

So, needless to say, Christmas morning breakfast would be a major challenge or it would be served at lunch time if I didn't plan ahead.  So, I started creating ways to make breakfast the night before and enjoy it the next morning hot out of the oven, like these and these.


Feeding a crowd during the holidays is that much less stressful too. I stumble out of bed and grab the casserole that I prepared the night before (during my normal hours), and I toss it in the oven. Now, I have time to wake up while breakfast is cooking. Easy peasy!

My latest obsession is this Cheesy Sausage Overnight Breakfast Casserole that starts with Jones Dairy Farm All-Natural Pork Sausage Roll. It is my absolute favorite sausage. With just 4 ingredients (Pork, water, salt, spices) I can feel good about feeding my family.

I love being able to start with a flavorful canvas and really take it over the top. So, I fry up the sausage with red pepper and maple syrup to create a heavenly fusion of my favorite flavors. It is heat and sweet all in one savory bite. Imagine that speckled throughout this fabulous breakfast!

I have found this to be an amazing convenient ingredient in cooking and baking sweets. So, of course, when I started thinking about bread pudding I thought of International Delight.

And donuts. I have loved cake donuts since I was a kid. Recently though when Chad is getting donuts, I will pass. I don't know if it's my palette or the way they are made now but I would rather skip them.

That was until my friend  brought me 2 dozen donuts from New York. A lovely Amish woman makes them the first Saturday of every month and I was lucky enough to get my hands on a fresh batch. I have to say they are truly the best donuts I have ever had. Well, after the donuts had passed their peak of freshness I started wondering what I could do to revive them.

I knew they needed liquid so I started thinking about cakes and breakfast and landed on my new favorite Christmas breakfast! My daughter and I completely devoured ours. It is absolutely amazing and I know you are going to love it.

Cranberry Maple Donut Bread Pudding
SERVES 8 |  ACTIVE TIME 10 Min  |  TOTAL TIME 60 Min

8-12 stale glazed cake donuts
4 large eggs
1 teaspoon cinnamon
3/4 teaspoon salt, divided
2 cups half-and-half
7 tablespoons unsalted butter, melted
6 tablespoons maple syrup
6 ounces fresh or frozen cranberries
2 tablespoons International Delight French Vanilla Creamer
3/4 cup powdered sugar

Preheat oven to 350°F. Butter a deep 9" pie pan (or 9x9 baking pan).

Chop donuts into bite size pieces. You want enough donuts so that your pie plate is heaping, they will be pressed down later. Place them in the buttered baking dish. Set aside.

Whisk the eggs in a large bowl and add cinnamon and 1/2 teaspoon salt. Whisk to combine. Add half-and-half, 4 tablespoons melted butter, 4 tablespoons maple syrup. Whisk until well combined.
Pour egg mixture over the donuts. Toss donuts to coat and press down into the egg mixture if necessary so they can absorb the mixture. Rest for 15 minutes. Add cranberries and toss to combine. Gently press the donuts into the pan so they will stick together, not so much that you flatten them.
 
Cover with foil and bake for 30 minutes. Remove foil and bake for 15-20 additional minutes, until it is set.

Meanwhile, add powdered sugar to a medium bowl. Add remaining 3 tablespoons butter, 2 tablespoons maple syrup, creamer and remaining 1/4 teaspoon salt. Whisk to combine.

Pour or drizzle frosting over warm bread pudding.

Serve and enjoy!

DONNA'S NOTES: If you are using fresh donuts, you can bake the cut pieces in the oven until they are dry and stale.

I absolutely love giving homemade gifts at Christmas. It is a tradition in my house. It is like giving a part of yourself and I can not think of a better way to celebrate the season.

A few year back it seemed like most of the people on our Christmas list were dealing with some type of food issue. So, I diversified from my standard treats of pecan bars, brownies, cookies and such. That is the year I started making different varieties of candied nuts to give.

In addition to the favorites. I started with honey ginger almonds (which are spectacular) and eventually worked my way to these Crockpot Cinnamon Roasted Almonds. They were a huge hit and I had a lot of requests for the recipe too! This recipe is about as easy as can be.

You whisk together the egg whites and vanilla. Toss in the almonds. Pour into the slow cooker and stir in the remaining ingredients (reserve the water for later) and cook. All that is left to do is enjoy them and bag them up into a cello bag with a beautiful ribbon for a gorgeous presentation.

Crockpot Cinnamon Roasted Almonds

Crockpot Cinnamon Roasted Almonds are crunchy cinnamon glazed almonds that are perfectly roasted right in your slow cooker. This simple recipe is so easy, they just about cook themselves. Candied nuts make for the perfect homemade holiday gift.

Ingredients

  • 2 egg whites 
  • 2 tablespoons pure vanilla extract 
  • 3 pounds (10 cups) whole raw almonds
  • 2 cups granulated sugar
  • 1 cup packed light brown sugar 
  • 1/4 cup ground cinnamon
  • 1/2 teaspoon kosher salt 
  • 1/4 cup water (does not go in until the last hour) 

Instructions

  1. Spray a 6-quart slow cooker bowl with non-stick cooking spray. Set aside.
  2. Add egg whites and vanilla to a large bowl. Whisk until frothy but not stiff. Add almonds and toss until they are all completely coated. Pour almonds into slow cooker. Add remaining ingredients (except the water) to slow cooker and stir with almonds until they are well coated.
  3. Set slow cooker to low temperature. Cover. Cook 4-5 hours, stirring occasionally (at least once an hour). After 3 hours add 1/4 cup water to slow cooker and stir well. Cover and cook for the last hour (or two), stirring occasionally. Almonds are done when the coating begins to harden. 
  4. Spoon almonds onto parchment paper or silpat mats. Allow to dry. 
  5. Serve and enjoy! 

DONNA'S NOTES

  1. Recipe can be halved. If you prefer you can divide these onto 2 cookies sheets and can toss these in the oven at 250°F for 45-55 minutes, stirring occasionally.
