When it comes to comforting side dishes, this Bacon Beer Cheese Stuffing hits all the marks. And by marks, I mean the three crucial flavor profiles that simply make any dish better.

First, there’s the bacon. Because, well… bacon. I don’t think I really need to sell you on the deliciousness of bacon, but if I do, just imagine everything amazing about savory meats in the form of a crispy culinary treat. It just makes everything better, and there’s a hefty portion of it in this stuffing.

Then, there’s the beer. Beer has a way of adding a ton of depth to the flavor of a recipe, and especially when used in conjunction with meats like bacon. Even if you’re not a fan of drinking beer you may love it’s when cooked with the right ingredients. I opted to use Blue Moon in this recipe, and the hints of citrus really made the flavor pop.

And, finally, there’s the cheese. I don’t know about you, but I’m always looking for new ways to add cheese to my life, and what better way is there than baking it in a dish that’s 90% French bread?

I certainly can’t think of any!



All fangirl-fawning over the ingredients aside, I must admit that this stuffing recipe surprised me with how good it was. I grew up enjoying the more “traditional” forms of stuffing, which usually meant a lot of bread with a little bit of seasoning. And don’t get me wrong – there’s absolutely nothing wrong with that. Classics are classics for a reason. Stuffing doesn’t have to be a wallop of flavor for it to still be good.

This recipe may be a bit more time-intensive (due to cooking up all that amazing bacon) but since you don’t use the bacon grease in this recipe, you can also opt to use pre-cooked bacon. I know not everyone is a fan, but it can be a great alternative in a pinch. I’ve used pre-cooked bacon in many baked dishes and still loved them just as much.



So if you’re ready to take your side dish game to the next level for your next dinner, holiday, or rainy Sunday, this stuffing is more than worth a walk on the wilder side.

    • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
    • Mixing Bowls - I like a variety of mixing bowls and prep bowls and this set has them all.
    • 9x13 Baking Dish - I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.

    Bacon Beer Cheese Stuffing

    This bacon beer cheese stuffing will kick your side dish game to the next level! Classic stuffing spiked with citrus beer, savory bacon, and cheddar cheese.

    Ingredients

    • 3/4 cup butter
    • 2 stalks celery, chopped (roughly 1/2 cup)
    • 1 large sweet onion, chopped (roughly 1/2 cup)
    • 1 pinch salt
    • 1 pinch pepper
    • 1/2 cup beer (such as Blue Moon)
    • 2 large eggs
    • 1 teaspoon Worcestershire sauce
    • 2 cups low-sodium chicken broth
    • 10 cups French bread, cubed, dried out overnight
    • 10 slices thick-cut bacon, cooked, drained, and chopped, divided
    • 1 cup shredded mild cheddar cheese, divided
    • 1 tablespoon fresh thyme, chopped and divided
    • 2 teaspoons fresh sage, chopped

    Instructions

    1. Preheat oven to 350 degrees F. Spray a 9x13 baking dish with cooking spray, then set aside.
    2. Melt butter in a skillet over medium heat. Add celery and onions and season with salt and pepper, to taste. Cook for 6-8 minutes or until veggies are tender. Add beer to skillet and bring to a simmer. Cook for 2-4 minutes, stirring occasionally, or until liquid is reduced by 1/2 and an opaque golden color. Remove skillet from heat.
    3. In a small bowl, whisk eggs until well beaten, then pour in Worcestershire sauce and chicken broth. Stir until mixed, then set aside.
    4. In a large mixing bowl, add French bread, 1/2 of the bacon, 1/2 cup mild cheddar, 1/2 tablespoon thyme, and sage, then toss to mix. Pour beer buttery veggies and chicken broth mixture in the bowl and then gently mix until bread is thoroughly saturated.
    5. Pour stuffing in prepared baking dish and gently smooth into an even layer. Garnish the top of the stuffing with the remaining bacon, mild cheddar, and thyme.
    6. Cover baking dish with aluminum foil and cook for 40 minutes. Remove foil and bake for another 20-30 minutes or until the top of stuffing is lightly crisp and golden brown.
    7. Serve Bacon Beer Cheese Stuffing immediately.

    We are a big pumpkin loving family. Except for the fact that we aren’t the biggest fans of pumpkin pie, well maybe not 'we' so much as 'me'. So when I can make a different type of treat that has pumpkin it will always satisfy that inner craving!

    One thing that we like to make every year for an alternative to the traditional pumpkin pie is this Classic Pumpkin Cake Roll. It has all the flavors of a pie, but rolled up tightly around a delicious cream cheese filling, I mean who can beat that! I’m a huge frosting gal, so when I can get frosting in each and every bite, I’m in!

    Now I know that a lot of people are really nervous about cake rolls, and you REALLY shouldn’t be. In all honesty, they are actually pretty simple, if you can take on a layer cake you can take on this delicious thing.


    One bowl is all you need to make this tasty cake. Mix everything together and you pour it all into a parchment lined jelly roll pan. Now I always highly recommend someone having a jelly roll pan in your kitchen! It’s not just good for these cake rolls!

    There are so many different uses that you can use your jelly roll pan for...bars, sheet cakes, you name it! It is a multi-purpose pan despite the name jelly roll. But, my all-time favorite use for it has and always will be making yummy cake rolls!

    This delicious cream cheese filling is super simple and easy to whip up. The hardest part of this whole dessert is the time that you will wait for it to cool to fill, and to cool to set up. It’s so hard to not want to dig into this right away and just devour the whole darn thing.

    So if you want to go a little untraditional yet still classic this holiday season then this Classic Pumpkin Cake Roll is just what you need. It gives you a cake option but still keeping the amazing and ever delicious pumpkin flavor!

    HELPFUL TIPS TO MAKE THIS PUMPKIN ROLL:

    • Spray the pan with non-stick spray before adding parchment paper to keep it from sliding around. 
    • Make sure the cake is hot when you roll it up, or it may crack.
    • Use unflavored dental floss to cut perfect slices into the cake roll.

    Pumpkin Slab Pie is the perfect fall dessert for a crowd! Creamy pumpkin pie on top of a buttery homemade crust, top it with whipped cream or serve a la mode!

    Pumpkin Roll
    SERVES 12  |  PREP TIME 25 Min  |  COOK TIME 15 Min

    3 large eggs
    1 cup granulated sugar
    3/4 cup all-purpose flour
    2/3 cup pumpkin puree (not pumpkin pie filling)
    1 teaspoon baking soda
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    1/4 teaspoon ground ginger
    Powdered sugar for dusting

    Filling:
    8 ounces cream cheese, softened
    2 tablespoons butter, softened
    1 cup powdered sugar
    1 teaspoon pure vanilla extract

    Preheat oven to 375°F.

    Line a 15”x10” jelly roll pan with parchment paper, set aside.

    In a medium bowl whisk together your eggs, sugar, flour, pumpkin, baking soda, cinnamon, nutmeg, and ginger until no lumps remain.

    Pour the batter into your prepared baking pan and spread it out to the sides.

    Bake for about 10-15 minutes or until the top springs back when touched, remove from oven.
    Liberally sprinkle the hot cake with powdered sugar. Place a tea towel that is slightly larger than your cake over top. Top with a cooling rack or larger baking sheet on top of that. Hold the stack together firmly and flip the cake over onto the cooling rack. Remove the parchment paper.

    While the cake is still hot, fold the towel over the short edge of the cake. Slowly roll up your cake (with the tea towel inside) and leave it rolled until it is completely cooled about 1-1 1/2 hours.

    Meanwhile to make your filling beat your cream cheese in a medium bowl until it is light and fluffy.
    Add your butter, powdered sugar and vanilla and continue to beat until smooth, set aside.

    Carefully unroll your cooled cake roll, remove the towel and spread your filling all over the surface of the cake. Then roll the cake back up tightly. Wrap the cake in plastic wrap and refrigerate until chilled, about 1 hour.

    Once chilled, dust with powdered sugar, slice and serve.

    Chicken Tetrazzini

    Now that it’s officially comfort food season, there’s one dish our family always loves… and that’s this mushroom chicken tetrazzini.  Traditionally, or at least, how I’ve seen it frequently, this dish is made with spaghetti pasta.  My family prefers it with egg noodles, so that’s what I’ve made to share with you all today! 
     One of the things I love about this chicken tetrazzini is that it Chicken Tetrazzini

    If you’d prefer spaghetti, that’s something you can easily substitute. One of the things I love about this chicken tetrazzini is that it’s made from scratch!  No condensed soups whatsoever.  Nothing against those soups, but I find meals taste better when made with everyday, whole ingredients.

    Hi everyone, it's Amanda from The Chunky Chef.  I'm so excited to being joining as a monthly contributor!  Each month I'll be sharing mouthwatering family recipes, all positively loaded with bold flavors.  Great food doesn't have to be complicated!

    Perhaps the best part about this meal is that I typically use a shredded rotisserie chicken for this meal, but you can easily make this without that component.  Just cook 2 chicken breasts until golden brown and cooked through.  Remove from the pot and shred with two forks… voila!  Shredded chicken.  Then just use the same pot and start with the recipe as written… easy peasy!




    So what if your evening is incredibly packed and you just have NO time to prepare this meal?  Good news… this chicken tetrazzini can be prepared the night before!  Prepare as directed, but don’t bake, then cover and refrigerate overnight.  While the oven is preheating, let the pot sit out on the counter at room temperature, then bake according to the recipe.  I love meals like that… because we all know there are some nights that are crazy busy, but we still want a home cooked meal right?


    As the weather cools down, and your nights get busier, give this chicken tetrazzini a try… I’m sure you’ll enjoy it as much as my family does!

    HELPFUL TIPS TO MAKE CHICKEN TETRAZZINI:

    • I really like to use cremini (also called baby Portobello) mushrooms in this chicken tetrazzini, as they bring a much meaty, earthy flavor to the dish but you can substitute button mushroom if you prefer. 
    • To make using fresh chicken breasts, add a drizzle of olive oil to pot over MED heat.  Season chicken breasts with salt and pepper, to taste, and cook 5-6 minutes per side, until cooked through and golden.  Remove chicken from skillet and drain excess grease.  Shred chicken with two forks and set aside.  Preheat oven, add butter and cook recipe as directed, starting with step 2 above.
    • As an added bonus, the leftovers are fabulous… so lunch the next day is covered too!

    WHAT YOU WILL NEED TO MAKE CHICKEN TETRAZZINI:

    • 4 Qt Braising Pan - my go to pan for one-pot recipes and skillet meals. It is oven safe and so easy to clean up!
    • Wood turner - my most used spoon or spatula in my kitchen. It is amazing for sauteing vegetables. Browning meat and turning. A must have!

Toss it all in a pot and let it go.  It's so easy, that it just about cooks itself.  Now that's my kind of meal!

    Chicken Tetrazzini
    SERVES 8  |  ACTIVE TIME 20 Min  |  TOTAL TIME 55 Min

    1/2 cup butter, plus 1 tablespoon melted
    8 ounces sliced cremini mushrooms
    1 medium yellow onion, diced
    3-4 cloves garlic, minced
    1 tablespoon fresh thyme, minced (can substitute 1 tsp dried thyme leaves)
    1/2 teaspoon kosher salt
    1/4 teaspoon black pepper
    1/3 cup all-purpose flour
    3 cups chicken stock
    1 cup heavy cream
    16 ounces egg noodles, cooked according to package directions
    3 cups cooked, shredded chicken (or 2 large chicken breasts cooked and shredded – see recipe notes below)
    2 cups frozen peas
    1 1/2 cups shredded Parmesan cheese
    1/3 cup Panko breadcrumbs

    Preheat oven to 350°F.

    Heat a large cast iron (or other oven safe pot) skillet over medium heat. Add 1/2 cup of butter and cook until melted. Add mushrooms and onion. Cook, stirring occasionally, until tender, about 5-6 minutes.  Add garlic and cook for 1 minute.

    Stir in thyme, salt and pepper, then add flour, stirring to coat completely.

    Add chicken stock and cream, stirring frequently to remove any lumps. Cook, stirring often, about 8-10 minutes, or until thickened.

    Stir in cooked egg noodles, shredded chicken, peas and Parmesan cheese.

    In a small bowl, stir together melted butter and panko breadcrumbs, then sprinkle over the top of the dish.  Season with additional pepper if desired, then bake 35-45 minutes, until bubbly and golden brown.

    COOK'S NOTES: To make using fresh chicken breasts, add a drizzle of olive oil to pot over MED heat.  Season chicken breasts with salt and pepper, to taste, and cook 5-6 minutes per side, until cooked through and golden.  Remove chicken from skillet and drain excess grease.  Shred chicken with two forks and set aside.  Preheat oven, add butter and cook recipe as directed, starting with step 2 above.

    It's finally getting cool here and that means it's time to pull out my slow cooker and start making soups, and stews, and all sorts of delicious cold-weather comfort food. To be honest I use my slow cooker in the summer too because it makes getting dinner on the table so easy, but when the leaves start turning and the air starts getting cooler that's when I start craving comfort food. You know, the kind that cooks in a slow cooker all day filling the house with the best smells, and makes you feel all warm and happy when you eat it.

    I have a whole list of slow cooker recipes that I love to make and right at the top this Slow Cooker Sausage and Ravioli because it is absolutely delicious and super simple to make.

    Most slow cooker recipes take a little effort, whether it is browning the meat, or chopping up vegetables, but my Slow Cooker Sausage and Ravioli is just a few simple ingredients, diced tomatoes, tomato sauce, Italian sausage links (you can use mild or spicy whatever you prefer), frozen ravioli, and fresh basil. You can add salt to taste but I usually find it doesn't need any extra. The Italian sausage is sliced into bite-sized pieces and then added, along with the rest of the ingredients, to the slow cooker. Set the slow cooker to low, and let it cook for 4 hours, or until the sausage is fully cooked.



    When you get home at the end of a long day you have a complete slow cooker dinner waiting for you. The diced tomatoes and tomato sauce cook down into a pasta sauce that takes on a great flavor from cooking with the sausage and basil all day. It coats the cheese ravioli and sausage and make a hearty meal that everyone in the family loves. Garnish it with a little fresh basil and grated Parmesan and then call everyone to the dinner table and watch them dig in. This is one of those easy weeknight dinners that is so good there are never any leftovers.

    Slow Cooker Sausage and Ravioli

    SERVES 6  |  PREP TIME 5 Min  |  COOK TIME 4 Hour

    1 pound Italian sausage links, cut into bite size pieces
    1 pound frozen cheese ravioli
    2 (14.5 ounce) cans diced tomatoes
    1 (15 ounce) can tomato sauce
    3 tablespoons chopped fresh basil
    Salt to taste
    Fresh Parmesan for garnish

    Add sausage, ravioli, diced tomatoes, tomato sauce, and basil to the slow cooker. 

    Set slow cooker to LOW for 4 hours, or until sausage is fully cooked.
    Salt to taste.

    Remove from slow cooker and serve with a garnish of Parmesan cheese.

    Helpful Tips to make Crockpot Beef Stroganoff:

    •   You can use regular egg noodles, or for a healthier version, whole wheat.
    •   To make the prep go even quicker, buy pre-cut mushrooms.
    •   If you need the recipe gluten free, substitute gluten-free noodles.
    •   Regular or light sour cream works in this recipe.
    •   This dish is even better the next day for lunch or leftover dinner!

    What you will need to make Crockpot Beef Stroganoff:

    • Slow Cooker - the slow cooker is almost my most used kitchen gadget, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
    • Beef Stock- this beef stock is a staple in my pantry! It is reduced sodium (47% less) with all the flavor.

    Crockpot Beef Stroganoff

    Crockpot Beef Stroganoff is an easy and delicious recipe. Hearty and flavorful with beef, mushrooms, onions and garlic that slow cooked all day long!!! It is an amazing crockpot version of the family favorite classic beef stroganoff.
    prep time: 10 minscook time: 8 hourtotal time: 8 hours and 10 mins

    Ingredients

    • 1 1/2 pounds cut beef stew meat
    • 1 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 1 1/4 cups low-sodium beef broth
    • 2 cups (about 6 ounces) coarsely chopped white mushrooms
    • 1 medium onion, chopped
    • 3 tablespoons Worcestershire sauce
    • 2 garlic cloves, minced
    • 1 heaping tablespoon dijon mustard
    • 1 teaspoon dried parsley
    • 1/2 teaspoon dried thyme
    • 1 (12 ounce) package egg noodles
    • 1 cup sour cream (light or regular)

    Instructions

    1. Place beef in 6-quart crockpot, add salt and pepper. Then add beef broth, mushrooms, onion, Worcestershire sauce, garlic, Dijon mustard, parsley and thyme. Mix well.
    2. Cook on low 8-9 hours, or high 4-5 hours. I prefer cooking the beef on low to make sure it's nice and tender.
    3. Cook egg noodles according to the package directions.
    4. Add the cooked and drained noodles to the crockpot as well as sour cream. Mix well. Let simmer for another 15 minutes, stirring occasionally.

    HELPFUL TIPS TO MAKE INSTANT POT MASHED SWEET POTATOES:

    • Place sweet potatoes in a steamer basket with 1 cup of water.
    • Stab potatoes to make steam vents.
    • Close lid and seal, cook on high for 10 minutes.
    • Do not force steam.
    • When Instant Pot has lost pressure naturally, remove potatoes and remove peel, then continue to follow slow cooker recipe steps.

    Slow Cooker Mashed Sweet Potatoes

    Slow Cooker Mashed Sweet Potatoes with Honey Butter are the ultimate mashed sweet potato recipe - just toss in a slow cooker and then whip for perfect, smooth, rich, and amazing sweet potatoes everyone loves!
    prep time: 10 minscook time: 4 hour and 20 minstotal time: 4 hours and 30 mins

    Ingredients

    • 4-5 large sweet potatoes
    • 1 cup water
    • 1 cup butter, softened
    • 1/4 cup honey
    • 2 tablespoons smoked paprika
    • 2 tablespoons celtic sea salt
    • 1 tablespoon  fresh cracked pepper
    • 1 tablespoon  garlic powder
    • 1 tablespoon red pepper flakes
    • 1/2 cup chopped pecans or walnuts

    Instructions

    1. Wash potatoes and stab each 4-6 times with a sharp knife to create steam vent holes.
    2. Add water to slow cooker cover and cook 4 hours, until potatoes are soft.
    3. In a small bowl, add butter , honey, and all herbs and spices (everything but the nuts), blend well to create compound butter. Cover with plastic wrap and leave in refrigerator. 
    4. Remove potatoes and drain water. Wait until potatoes are cool enough to touch (but still very warm), and remove peels. They should slide right off when sweet potatoes are cooked. Add peeled sweet potatoes back to slow cooker.
    5. Add 1/2 compound butter mix to potatoes and using a handheld mixer, whip potatoes and butter until soft, fluffy, and creamy. 
    6. Optional: Cook potatoes in slow cooker another 30 minutes to bring out the rich flavors from the compound butter even more!
    7. Mix nuts into potatoes, serve, and top with pats of compound butter for extra-indulgent sweet potatoes your guests will love!
