When it comes to comforting side dishes, this Bacon Beer Cheese Stuffing hits all the marks. And by marks, I mean the three crucial flavor profiles that simply make any dish better.

First, there’s the bacon. Because, well… bacon. I don’t think I really need to sell you on the deliciousness of bacon, but if I do, just imagine everything amazing about savory meats in the form of a crispy culinary treat. It just makes everything better, and there’s a hefty portion of it in this stuffing.

Then, there’s the beer. Beer has a way of adding a ton of depth to the flavor of a recipe, and especially when used in conjunction with meats like bacon. Even if you’re not a fan of drinking beer you may love it’s when cooked with the right ingredients. I opted to use Blue Moon in this recipe, and the hints of citrus really made the flavor pop.

And, finally, there’s the cheese. I don’t know about you, but I’m always looking for new ways to add cheese to my life, and what better way is there than baking it in a dish that’s 90% French bread?

I certainly can’t think of any!



All fangirl-fawning over the ingredients aside, I must admit that this stuffing recipe surprised me with how good it was. I grew up enjoying the more “traditional” forms of stuffing, which usually meant a lot of bread with a little bit of seasoning. And don’t get me wrong – there’s absolutely nothing wrong with that. Classics are classics for a reason. Stuffing doesn’t have to be a wallop of flavor for it to still be good.

This recipe may be a bit more time-intensive (due to cooking up all that amazing bacon) but since you don’t use the bacon grease in this recipe, you can also opt to use pre-cooked bacon. I know not everyone is a fan, but it can be a great alternative in a pinch. I’ve used pre-cooked bacon in many baked dishes and still loved them just as much.



So if you’re ready to take your side dish game to the next level for your next dinner, holiday, or rainy Sunday, this stuffing is more than worth a walk on the wilder side.

    What you will need to make Bacon Beer Cheese Stuffing:

    • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
    • Mixing Bowls - I like a variety of mixing bowls and prep bowls and this set has them all.
    • 9x13 Baking Dish - I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.

    Bacon Beer Cheese Stuffing

    This bacon beer cheese stuffing will kick your side dish game to the next level! Classic stuffing spiked with citrus beer, savory bacon, and cheddar cheese.

    Ingredients

    • 3/4 cup butter
    • 2 stalks celery, chopped (roughly 1/2 cup)
    • 1 large sweet onion, chopped (roughly 1/2 cup)
    • 1 pinch salt
    • 1 pinch pepper
    • 1/2 cup beer (such as Blue Moon)
    • 2 large eggs
    • 1 teaspoon Worcestershire sauce
    • 2 cups low-sodium chicken broth
    • 10 cups French bread, cubed, dried out overnight
    • 10 slices thick-cut bacon, cooked, drained, and chopped, divided
    • 1 cup shredded mild cheddar cheese, divided
    • 1 tablespoon fresh thyme, chopped and divided
    • 2 teaspoons fresh sage, chopped

    Instructions

    1. Preheat oven to 350 degrees F. Spray a 9x13 baking dish with cooking spray, then set aside.
    2. Melt butter in a skillet over medium heat. Add celery and onions and season with salt and pepper, to taste. Cook for 6-8 minutes or until veggies are tender. Add beer to skillet and bring to a simmer. Cook for 2-4 minutes, stirring occasionally, or until liquid is reduced by 1/2 and an opaque golden color. Remove skillet from heat.
    3. In a small bowl, whisk eggs until well beaten, then pour in Worcestershire sauce and chicken broth. Stir until mixed, then set aside.
    4. In a large mixing bowl, add French bread, 1/2 of the bacon, 1/2 cup mild cheddar, 1/2 tablespoon thyme, and sage, then toss to mix. Pour beer buttery veggies and chicken broth mixture in the bowl and then gently mix until bread is thoroughly saturated.
    5. Pour stuffing in prepared baking dish and gently smooth into an even layer. Garnish the top of the stuffing with the remaining bacon, mild cheddar, and thyme.
    6. Cover baking dish with aluminum foil and cook for 40 minutes. Remove foil and bake for another 20-30 minutes or until the top of stuffing is lightly crisp and golden brown.
    7. Serve Bacon Beer Cheese Stuffing immediately.

    We are burger lovers through and through.  You really can't go wrong with a classic bacon double cheeseburger.  We eat a lot of burgers. A lot.

    But sometimes I can not fathom the idea of another traditional burger even though I am craving the flavors.  So, I have started creating recipes with these favorite flavors built it.

    Cheese Stuffed Meatloaf


    I have a deep love and appreciation for cheese.  I don't discriminate I love 'em all.

    When I was developing my idea for the Bacon Double Cheeseburger Meatloaf, I started with a meatloaf bursting with steak flavors!

    I also knew stuffing it with cheese was the perfect way to incorporate that element into it.

    Then as if that wasn't enough I covered it in the delicious brown sugar ketchup glaze and layered thick cut bacon over the top.

    It is going to knock your socks off.

    Helpful Tips to make Bacon Double Cheeseburger Stuffed Meatloaf :

    • Lean ground beef works best in this recipe 93% or so is perfect. If you use a fattier cut, reduce the amount of milk.
    • Be sure to beat the egg before adding it to the meat mixture. This helps to not overwork the meat, which would make it tough.
    • Run your hands under warm water before smoothing the meatloaf the last time, it will help. You can also use olive oil.
    • Meatloaf is even better the next day and this one is no exception!

    • Baking dish - one of my favorites are these simple durable baking dishes that I have been making meatloaf in since I had my first house.
    • Montreal Steak Seasoning - it is an incredible blend that adds a bold flavr which makes it perfect for this recipe.

    Bacon Double Cheeseburger Stuffed Meatloaf

    Bacon Double Cheeseburger Stuffed Meatloaf is bursting with steak flavors! And it is just about enough to make my mouth water, but stuffing it with cheese and covering it in the delicious brown sugar ketchup glaze and layered thick cut bacon put this recipe over the top.
    prep time: 15 MINScook time: 1 hourtotal time: 1 hours and 15 mins

    Ingredients

    • 1 pound lean beef
    • 1 cup Panko bread crumbs
    • 1/2 cup milk
    • 6 tablespoons ketchup, divided
    • 1 tablespoon Montreal Steak Seasoning
    • 1 tablespoon Worcestershire sauce
    • 1 large egg
    • 1 tablespoon brown sugar
    • 8 ounces mild cheddar cheese, shredded
    • 1 pound bacon, uncooked

    Instructions

    1. Preheat oven to 350°F.
    2. In a large bowl combine beef, bread crumbs and milk.  Pouring milk directly over bread crumbs.  Add 2 tablespoons ketchup, Worcestershire and steak seasoning. Set aside.
    3. In a small bowl, crack egg and beat it slightly.  This helps prevent overworking the meat while combining, resulting in a tougher meatloaf.  Add egg to large bowl with meat mixture.  Combine well with hands, do not overwork the meat mixture.
    4. Gently press meatloaf into bowl and divide in half.  Place first half into 7"x10” (or larger) baking dish and form into a flat meatloaf  Gently press the center in to create a rim around the outside of the meatloaf.  Add shredded cheese into the center of the meatloaf.
    5. Form remaining half of meatloaf in the bowl into a size similar to the meatloaf in the pan.  Set op top and press the sides together to seal in the cheese.  Form into a loaf shape about 1½ - 2” tall.
    6. You may notice cracks in the loaf.  Run your hands under warm water and then across the meatloaf to smooth the cracks out.  Set meatloaf aside.
    7. In a small bowl combine 4 tablespoons ketchup and 1 tablespoon brown sugar.  Mix well with a fork.  Apply glaze evenly all over your meatloaf (except the bottom).
    8. Arrange bacon slices over the top of the meatloaf.  Start by wrapping a piece of bacon across the front side and a second piece of bacon across the back side.  Arrange remaining bacon over the top.  Tuck the ends of the bacon under the meatloaf (this prevents curling).
    9. Place meatloaf in the oven and bake until bacon is crispy, about 1 hour.
    10. Remove from oven.  Allow to rest uncovered for 20 minutes.  Serve and enjoy!

    Stuffing is the main reason that I look forward to Thanksgiving dinner. It makes me think of home.  My mom made amazing stuffing, mashed potatoes, and corn.

    OK, I would have a little turkey too because it was Thanksgiving, but it was always all about the stuffing! I have mentioned I am a carbivore and I love love love stuffing, right?

    I moved away from 'home' before my mom could teach me how to make stuffing.  So I had to do a lot of research when I wanted to make it on my own.

    Honestly, it took a lot of trial and error before I perfected my stuffing making.

    I can tell you that as good as my mom's stuffing was, it NEVER tasted this good {{sorry mom}}. Just looking at the photos makes my mouth water and that is when you know it has to be good!

    She is elated and I can't wait for the day to get here.  But, really when stuffing is THIS good, you shouldn't have to wait for a holiday. Let's just call this Sunday stuffing.  Maybe we should start a new trend.

    • For those sensitive to alcohol, you can use chicken or stock in place of the wine.
    • You can substitute dried herbs if you are unable to get fresh. Use 1 teaspoon dried herbs for each tablespoon called for. When you are adding the dried herbs, pour them into your hand and crush them in your palm before adding them to the bowl, this will release the oils and increase the potency.
    • You can scoop the stuffing into a slow cooker to keep it warm while you wait for dinner to be served. Add a little chicken stock if it starts to look dry.

    Sausage, Cranberry and Apple Stuffing

    The Best Stuffing Recipe Ever starts with sausage, cranberry and apple. Herbs and spices are added in but the real magic happens as the pan is deglazed with a the most glorious combination of liquids and those bits are scraped up creating the most magnificent sauce to bake the stuffing in. Oh my word!
    prep time: 45 Mcook time: 55 Mtotal time: 100 M

    Ingredients

    • 1 loaf sour dough bread, cubed (about 10 cups)
    • 1 cup sweetened dried cranberries
    • 1 medium apple, peeled, cored and chopped
    • 2 (12 oz) Jones Dairy Farm All Natural Pork Sausage Rolls
    • 1/2 cup shallots, finely diced
    • 1/2 cup pecans, chopped
    • 1/2 cup fresh parsley, chopped
    • 3 tablespoons fresh sage, finely chopped and divided
    • 1 tablespoon fresh rosemary, finely chopped
    • 1 teaspoon fresh thyme, chopped
    • 1 cup chardonnay wine
    • 4 tablespoons unsalted butter
    • 2 cups chicken stock
    • 2 eggs, lightly beaten

    Instructions:

    How to cook Sausage, Cranberry and Apple Stuffing

    1. Preheat oven to 350°F. Place cubed sourdough on 2 baking sheets. Bake 10-15 minutes, stirring bread occasionally until toasted, but not browned. Place toasted bread cubes into an extra-large bowl, add cranberries and apples. Set aside.
    2. Butter 9x13-inch casserole dish. Set aside.
    3. In a large skillet over medium heat, cook sausage using a spatula to break it up as it cooks.
    4. Add 1 1/2 tablespoons sage. Cook through, but do not brown. Remove sausage from skillet using a slotted spoon and add it to bowl with bread cubes. Leave 2 tablespoons of sausage drippings in the pan (drain any extra) and add shallots. Cook until translucent; add pecans, herbs and remaining sage to skillet. Cook 2 minutes stirring frequently. Pour shallot herb mixture into the bowl with bread cubes.
    5. Add wine to the skillet and scrape browned bits from the bottom of the pan as it cooks. Add butter and chicken stock. Bring to a boil for 3 minutes, remove from heat and pour over bread cubes in the bowl. Add eggs. Toss gently until combined and pour into prepared baking dishes.
    6. Cover with foil and bake 40 minutes. Remove foil and bake 15 minutes more.
