Cheesy Sausage Jalapeno Popper Empanadas

Cheesy Sausage Jalapeno Popper Empanadas are the perfect portable Brinner. This simple recipe is a fusion of your favorite appetizer (jalapeno poppers) in a fun empanada. It is stuffed with 2 ooey gooey melty cheeses, jalapenos and sausage!



We are so excited to be partnering with our friends at Jones Dairy Farm to bring you a scrumptious breakfast or brunch recipe perfect for the holidays with family and friends, starring one of my favorite ingredients: Fully Cooked Chicken Sausage Patties!!! My freezer is loaded with these sausage patties, and I love to add these to my breakfast, but when I am thinking about Brinner (breakfast for dinner), these are absolutely perfect to make quick work of prep.



These Cheesy Sausage Jalapeno Popper Empanadas start with frozen puff pastry and fully cooked chicken sausage (yes that simple). The puff pastry is rolled out and loaded up with your favorite jalapeno popper fixings (cheese, sausage, and jalapeno). Then you fold it over and crimp the edges to seal the empanadas and bake it in the oven.

I fell in love with creating recipes that I stuff different ingredients into dough or pastry. Much like the Cheesy Bacon and Eggs Breakfast Bombs that everyone goes nuts over. This is truly an extension of that love. And you are going to love love love these!

They are perfect for breakfast, lunch or Brinner. Brinner is my favorite meal, and I can remember as far back as 6 or 7-years-old when my mom would tell me that we were having breakfast for dinner I would flip with excitement. Brinner. Breakfast for dinner. YES! I am still a huge fan, and my daughter who is now 7-years-old has the same excitement as I do. Between the two of us, it's a wonder that we will ever eat a regular dinner again. Brinner rules!

Cheesy Sausage Jalapeno Popper Empanadas
SERVES 8 | ACTIVE TIME 15 Min |TOTAL TIME 35 Min
8 ounces cream cheese, softened
1 (5-ounce) package Jones Dairy Farm Fully Cooked Chicken Sausage Patties, diced
1 medium jalapeno, diced
1 large egg, beaten
1 package of puff pastry (2 sheets)
8 ounces Colby Jack cheese, shredded
kosher salt, for sprinkling
cilantro, chopped

Preheat oven to 425°F. Line a baking sheet with aluminum foil and spray with non-stick spray. Set aside.

In a medium bowl combine cream cheese, sausage, and diced jalapeno. Mix until well combined. Set aside. In a small bowl combine 1 egg and a tablespoon of water. Whisk until well combined. Set aside.

Lay 1 sheet of puff pastry on a floured counter top and gently roll it out to about 8 by 8 inches. Use a 4-inch cookie cutter or bowl to cut the pastry into 4-inch rounds. Place the rounds on the baking sheet. Repeat with the second sheet.

Add a scoop of sausage and cheese mixture to the center of the puff pastry and top with Colby Jack cheese, leaving a 1/2-inch border. Pull the sides together to create a half circle and press the edges together to seal, pushing in any escapees that are on the edges.

Use two fingers to create a ruffle crimp around the edges or use a fork to crimp closed. Brush the tops of the empanadas with egg wash and sprinkle with salt.

Bake for 20 to 25 minutes, or until golden brown. Sprinkle with chopped cilantro.

Serve and enjoy!

My family is pretty picky and I tend to stick with the basics. I cook a lot of chicken and some times the same old thing can get pretty boring. So we decided to twist it up and have a little fun with it. barbecue chicken is a dinner favorite but what about Cheesy Barbecue Ranch Chicken Dip? That is exciting!

Not to mention, a dinner that you can dip is always fun. Just about anything dip-able in our house is a win for the whole family.  It starts with creamy cheesy ranch layer that is topped with hickory brown sugar barbecue chicken and sprinkled with melty Colby jack cheese. It really rocked dinner time and I even ate it for lunch for the next few days.

I really love how easy this recipe is. It came together in about 5 minutes and then I just tossed it in the oven. This is the perfect dinner, lunch or appetizer. You really can't go wrong with barbecue chicken and when it is transformed into a glorious dip, its sure to knock their socks off.

Cheesy Barbecue Ranch Chicken Dip

Cheesy Barbecue Ranch Chicken Dip is a fun way to turn dinner on its head. It's rich, cheesy barbecue-y and this simple recipe is prepped even before the oven is done preheating. That my friends is a win in this moms book.

Ingredients

  • 2 (8 ounce packages) Philadelphia Cream Cheese, softened
  • 8 ounces sour cream
  • 3 tablespoons dry ranch dressing mix
  • 24 ounces shredded chicken
  • 1 (18 ounce) bottle hickory brown sugar barbecue sauce
  • 8 ounces colby jack cheese, shredded

Instructions

  1. Preheat oven to 350°F.
  2. In a 2 quart baking dish (8x8x2 works perfectly) combine cream cheese, sour cream and dressing mix. Use a spoon to mix well. Then spread evenly along the bottom of the pan.
  3. In a medium bowl combine shredded chicken and barbecue sauce. Stir until well mixed. Pour on top of ranch mixture. Use spoon to spread into one even layer.
  4. Sprinkle with cheese.
  5. Bake for 20-25 minutes, until the top is golden brown and the casserole is warmed through.
  6. Serve and enjoy!

Recently I came to terms with the fact that it is quite possible that cheese is my favorite food.  As they say... absence makes the heart grow fonder.  One time (ONE TIME) cheese and I broke up in an attempt to cut dairy out of my life and see if I felt better.  It was a heart wrenching break up and I vowed never to do that again.


I enjoy cheese several times every day.  2% cheese slices on my egg white omelets, shredded fat free mozzarella on my afternoon salad and cheese incorporated into dinner.

Truthfully there is only one other thing that I eat and enjoy as much as cheese...  SUN DRIED TOMATOES.  Good heavens.  I am addicted.  I sprinkle them into my breakfast omelet, a handful sprinkled over my salads or a small handful as a snack and a beautiful sun-dried tomato sauce over penne pasta.    Is this heaven?  It sure tastes like it.

This pasta dish is bursting with flavor, sun-dried tomatoes, garlic, basil, chicken and penne come together in just 30 minutes to give you a Sunday dinner on a Monday night.  It doesn't get much better than that.

Sadly, my three year old is not quite as enthusiastic about the sun-dried tomatoes.  Although she devoured this pasta, when I leave them whole she tells me "Mommy, I don't like mo-matoes on my pasta".  I assured her that she is mistaken.  She is my child. Of course she loves tomatoes.  Silly girl!

    What you will need to make Sun-dried Tomato Penne Pasta with Chicken:

    • large skillet  – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
    • Dutch oven - I love this set and use it all the time. It is perfect for roasts and I especially love it for my one-pot meals.
    • Blender - You can use any blender, but I absolutely love this one! I use it for ice cream, smoothies, soups, my tomato sauce and naturally this milk shake.

    Sun-dried Tomato Penne Pasta with Chicken

    Sun-dried Tomato Chicken and Pasta is a fabulous easy dinner recipe ready in just 30 minutes. This pasta dish is bursting with flavor. Sun-dried tomatoes, cheese and herbs come together to create the most amazing chicken and pasta. It doesn't get much better than that.

    Ingredients

    • 1 pound boneless, skinless chicken breast (washed and trimmed)
    • 1 tablespoon extra virgin olive oil
    • 1 (16 ounce) box penne pasta
    • 1 (8.5 ounce) jar sun-dried tomatoes with Italian herbs packed in olive oil
    • 4 cloves garlic, quartered
    • 8 ounces fresh mozzarella, cut into bite size pieces
    • 1 tablespoon fresh basil chopped
    • kosher salt
    • pepper

    Instructions

    1. Heat a large skillet over medium high heat.
    2. Fill an 8 quart pot with water, cover and bring to a boil over high heat. Add a small handful of salt to boiling water and cook pasta until al dente (about 7-9 minutes).
    3. Meanwhile, drizzle oil in hot skillet and immediately add chicken. Sprinkle with salt and pepper. Cook 3-5 minutes on each side until cooked through. Remove from pan and set on cutting board to cool.
    4. While the chicken cooks, combine contents of sun-dried tomatoes and garlic in a blender. Blend until the mixture is smooth, scraping blender down as necessary.
    5. Drain pasta and pour into a large serving dish. Pour sun-dried tomatoes over pasta, add basil and stir to combine.
    6. Cut chicken into bites size pieces and add to pasta. Add mozzarella and stir. Add salt and pepper to taste. Serve and enjoy!

    Funny thing, I fought the chicken thigh train for a long time. I have been a boneless skinless kind of girl for as long as I have been eating chicken, but Chad loves the thighs.

    After 15 years of chicken breasts, I guess he was making up for lost time, poor guy. LOL. Well I decided to put those perfect pan-fried chicken thighs into an amazing dinner.




    It all starts with pan-fried tender and juicy chicken thighs with golden brown crispy skin, finished in a flavorful fresh tomato-wine sauce.

      Pan Fried Chicken Thighs with Olives and Tomatoes

      • 6 chicken thighs (2-3 pounds), skin-on bone-in
      • 1-2 teaspoons kosher salt
      • 1/2-1 teaspoon fresh ground black pepper
      • 2 tablespoons extra virgin olive oil
      • 1 medium yellow onion, chopped
      • 3 garlic cloves, minced
      • 2 cups grape tomatoes, halved
      • 1 (5.75 ounce) jar STAR Fine Foods Tomato & Pepper Marinated Olives, drained
      • 1 cup Chardonnay white wine

      Instructions

      1. Use 1 teaspoon salt and 1/2 teaspoon pepper to sprinkle both sides of the chicken. Warm a high sided large skillet over medium-high heat. Once you hold you hand 6 inches from the skillet and feel the heat, add the olive oil. Then, place the seasoned chicken in the pan skin side down. Cook until golden brown, then flip to brown the other side, about 4-5 minutes for each side. Remove chicken and place in your upside down pot lid or on a plate.
      2. Reduce heat to medium. Add garlic and onion. Cook until onions soften, about 3 minutes. Add olives, wine and 1 cup of tomatoes. Stir to combine and scrape the bottom of the pan to remove the browned bits. Cook until liquid has reduced about half, about 4 minutes.
      3. Taste sauce. Add salt and pepper as necessary. I usually add about 1/2 teaspoon salt and pepper.
      4. Add chicken (skin side up) to skillet. Cook for 10 minutes longer, until the chicken is cooked through to the bone.
      5. If preferred you can place skillet under broiler to crisp the chicken skin. Add remaining tomatoes. Stir and serve.

      DONNA'S NOTES

      1. You can substitute chicken stock or white grape juice for the wine.

      This skillet is so insanely good we can't stop eating it.  I have made it so many times that I don't need the recipe.  So, one night I was talking to my Mom while I was preparing it and she asked me how I come up with all these recipes.
      I told her everything inspires me!  Just a conversation about old family photos was all the inspiration that this Pineapple Chicken Skillet with Broccoli took.

      After reminiscing over old family travel pictures of my husband’s grandparents, we started talking about the places we would like to visit to make our own family travel memories.  Where would you like to travel?  Hawaii is at the top of our list.  Can you believe I have never been to Hawaii?  Seriously.  When Hawaii came into the conversation, I started having a craving for Hawaiian-inspired flavors.

      The next day I started thinking of ways to incorporate flavors that I associate with Hawaii into a fabulous chicken skillet.  The mixture of pineapple chunks and juice with soy sauce, honey, ginger, and garlic makes my taste buds sing.  Perhaps a nod to my love of Asian flavor as well, this Pineapple Chicken Skillet with Broccoli certainly satisfies that desire for island flavors.  I like to serve this over Simple Chicken Rice, but honestly, I love to eat it alone most often.

        Ingredients

        • 1 pound boneless skinless chicken breasts
        • 1 tablespoon extra virgin olive oil
        • 1 (20-oz) can pineapple chunks in pineapple juice
        • 2 tablespoons low sodium soy sauce
        • 2 tablespoons honey
        • 2 teaspoons fresh ginger, minced
        • 2 teaspoons fresh garlic, minced
        • 1 (14-oz) bag frozen broccoli florets
        • 1 bell pepper, I used 1/2 red, 1/2 orange
        • 1/4 teaspoon kosher salt
        • 1/2 teaspoon fresh ground black pepper
        • 1 teaspoon corn starch
        • scallions and sesame seeds to garnish, optional

        Instructions

        1. Warm a large skillet over medium-high heat. Meanwhile, cut the chicken into thin strips. Add oil to skillet and then chicken. Sprinkle with salt and pepper. Cook until browned, then flip chicken and cook chicken until done, approximately 5 minutes total.
        2. In the meantime, combine pineapple chunks and juice, soy sauce, honey, ginger, and garlic in a medium bowl. Whisk to combine. Set aside until chicken is cooked. Slice peppers into strips.
        3. Once the chicken is cooked, add the pineapple mixture to the pan and turn it to high heat. Allow mixture to boil for about 5 minutes. Add broccoli and peppers, stir to combine. Cook until crisp-tender and using a slotted spoon transfer the chicken, vegetables and pineapple to a serving bowl.
        4. Combine cornstarch and 1 tablespoon water in a small bowl, pour into skillet. Whisk to combine and cook until the cornstarch thickens to a syrup-like consistency. Before serving pour the sauce over chicken and vegetables. Optional garnish: sprinkle chopped scallions and sesame seeds over top. Serve and enjoy!

        We have shared some lighter chicken options the last few weeks. The  Garlic Beer Marinaded Grilled Chicken  and Simple Rosemary Lemon Marinaded Grilled Chicken are both incredible chicken recipes, and great for watching your waistline. This week we decided to kick it up a notch or two.  We spiked the barbecue sauce and covered the chicken in bacon!!!  Seriously.  This could be the best chicken to ever come off of my grill.
        I saw the idea of using a bacon paste when perusing Cooks Illustrated.  Although I understood the rationale; the chicken is kept moist by the bacon and it does not cause flair ups, I wasn't thrilled about pureeing bacon.  However, after that kabob came off the grill and I took my first bite, that all changed.  I would catch the pig and prepare it myself (theoretically) if that is what it took to make this again.  It is AMAZING!

        Chicken pieces smothered in spicy bacon puree, brushed with a drunken barbecue sauce and grilled to perfection.  Unbelievably divinely decadent!!!  What more could you ask for?  Nothing.  Skip the sides and have a whole kabob!  You won't be sorry.

          Bacon Bourbon Barbeque Chicken Kabobs

          Bacon Bourbon Barbeque Chicken Kabobs are chicken pieces smothered in spicy bacon, brushed with a drunken barbecue sauce and grilled to perfection. One that will truly knock your boots off!

          Ingredients

          • 16 ounces barbecue sauce, I used my homemade sauce
          • 1/4 cup bourbon whiskey (I prefer Maker's Mark)
          • 2 tablespoons apple cider vinegar
          • 4-5 lbs boneless skinless chicken breasts, cut into 1”x1” pieces
          • 2 teaspoons kosher salt
          • 1 teaspoon fresh black pepper
          • ¼ cup sweet paprika
          • 3 tablespoons packed dark brown sugar
          • 1 tablespoon smoked paprika
          • 6 slices bacon , cut into small pieces (uncooked)
          • 8 12-inch wooden skewers (soaked in water for an hour)

          Instructions

          1. In a medium bowl combine barbecue sauce, vinegar and whiskey. Whisk to combine. Set aside and allow flavors to meld.
          2. Add bacon to the bowl of your food processor and blend until bacon becomes a paste. Add salt, pepper, paprikas, and sugar. Pulse until well combined.
          3. Pat chicken with a paper towel to dry. Add bacon paste mixture to chicken; mix with hands until chicken is completely coated. Place chicken on skewers.
          4. Place on preheated grill. Cook on each side for 2-3 minutes. Brush cooked surface with barbecue sauce and cook each side (coated in sauce) for 1 additional minute.
          5. Remove kebabs from grill. Pour remaining barbecue sauce into a small saucepan and bring to a boil. Pour into a serving container and serve barbecue sauce along side kebabs. Enjoy!
