Cheesy Caprese Pasta Salad has become a go to favorite around here. With only 20 minutes to whip this up and 6 ingredients it is destined to become your favorite too.

A few years ago I found myself the morning of a potluck with nothing to bring. I had forgotten about the event and skipped grocery shopping the night before in lieu of some 'me time.' So needless to say 'Mother Elick's' cupboards were bare.

I quickly thought of a pasta salad. Everyone loves summer salads and I always have pasta in the pantry. So I grabbed some pantry staples and some fresh vegetables and cheese and tossed together this incredible new favorite.

Who was it that said "necessity is the mother of invention"? Plato? So true! I do my best creation when I am up against a wall. Pantry recipe development (my mom used to call it 'making do with what you have') is my favorite kind.

Cheesy Caprese Pasta Salad is perfect for a potluck. It is scrumptious served hot, cold or somewhere in between. Adults and kids alike devoured this pasta dish and getting a lot of recipe requests at a potluck is always a great sign!

Starting with a fun corkscrew shaped pasta with oodles of Parmesan cheese and mozzarella cheese is a great indication that this is going to be fabulous. But, I tell you the contrast of deep tomato flavor from the sun-dried tomato pesto against the fresh tomato crunch helps make this a dish that we will enjoy again and again.

Cheesy Caprese Pasta Salad

Cheesy Caprese Pasta Salad is a spectacular summer salad with fun corkscrew shaped pasta, oodles of cheese and a deep tomato flavor that will blow your mind. This simple recipe only has 6 ingredients but they sure pack a wallop of flavor!

Ingredients

  • 1 pound dried Cellentani pasta (corkscrew) 
  • 1 (6.5-ounce) jar sun-dried tomato pesto
  • 1 cup shredded Parmesan cheese, divided 
  • 8 ounces fresh mozzarella 
  • 1 pint grape tomatoes, halved 
  • 6 large basil leaves
  • handful kosher salt (for pasta water)

Instructions

  1. Cook pasta according to package directions, be sure to salt the water very well. It should taste like the ocean. Once pasta is cooked, drain and allow to cool. Return to pan. 
  2. Meanwhile, prep ingredients. Cut mozzarella into bite sized chunks. Slice tomatoes in half (really quick with this kitchen hack). Stack basil leaves; roll them up into a long log. Slice them across the roll with a sharp chef's knife, this is called a chiffonade. 
  3. Add pesto and Parmesan and stir until combined. Add all remaining ingredients to the pasta. Stir to combine. Chill until ready to serve or serve immediately. 
  4. Serve and enjoy.

  1. For a lovely presentation you can reserve some of the Parmesan and basil and sprinkle over the top as you serve.

We have completely enjoyed our comfort food this winter (just ask my hips). Now, as we have headed into warmer months (it has been in the 80's here) I am longing for light and fresh meals.

One of my family’s favorite summery flavor combinations is rosemary and lemon. It’s so bright and refreshing. We love rosemary-lemon grilled chicken, so I decided to bring that flavor in to the kitchen until I am ready to venture out to the grill.

It’s funny, as soon as the temperatures hit 80 degrees on my outdoor thermometer here in Arizona (Yes, 80!), I was looking for fresh rosemary. Rosemary grows like crazy out in the desert. So naturally we have 6 rosemary bushes that I planted a few years ago in my yard.

They are prolific and have provided me and my friends and neighbors with enough rosemary to last all season. I also dry it so I have that amazing home grown rosemary in my pantry. It is quickly becoming my favorite herb!

I love rosemary on just about everything. I even made a rosemary lemon ice cream a few years ago. The best is combining it with garlic, onions and veggies and you have an amazing dinner!

    Rosemary Lemon Chicken Skillet

    Rosemary Lemon Chicken Skillet with Summer Veggies is a one-skillet meal that boasts incredible lemon and rosemary flavor absorbed right into the chicken and vegetables, leaving you with amazingly moist and delicious chicken that goes from prep to plate in just 20 minutes.     prep time: 10 MINScook time: 10 MINStotal time: 20 mins

    Ingredients

    • 1 tablespoon extra virgin olive oil 
    • 3 cloves garlic 
    • 4 small boneless skinless chicken breasts (about 1 pound)
    • 2 tablespoons chopped fresh rosemary (or 2 tsp dried)
    • 2 lemons 
    • 1 teaspoon kosher salt
    • 1 teaspoon fresh ground black pepper
    • 1 (24-oz) package frozen summer vegetables (or use fresh if in season) 

    Instructions

    1. Preheat medium (10") skillet over medium high heat. 
    2. Chop rosemary and mince garlic while skillet is heating.
    3. Sprinkle tops of chicken breasts with about 1/4 of the salt, pepper and rosemary. Add oil to skillet. Add garlic. Stir and place chicken in skillet seasoned side down. Sprinkle chicken with about 1/4 of the salt and pepper. Add all of the remaining rosemary.
    4. Cook chicken on both sides until cooked through, about 3 minutes on each side.
    5. Add vegetables. Squeeze lemon juice into skillet, sprinkle with remaining salt and pepper. Place chicken on top of vegetables. Bring to a boil. Cover.
    6. Cook 5 minutes or until vegetables are crisp tender.
    7. Serve and enjoy!

    I’m Jacqueline, and I blog over at Go Go Go Gourmet- my mantra is all about “less effort, more taste,” and I have definitely achieved that with this incredibly simple, but absolutely delicious pasta dish that is a guaranteed family dinnertime hit. I’m so happy to be bringing my recipe philosophy over to my friends Donna and Chad here at TSRI!

    I have been a seafood lover for about as long as I can remember. When I was younger and would go out to dinner with my parents, my dinner of choice was almost always a shrimp cocktail.

    As I got older, my love of all things seafood grew, which is equaled by two things- an affinity for all things pasta and a hatred of doing dishes. This creamy garlic shrimp pasta hits it out of the park for me- a luscious creamy cheese sauce develops after cooking pasta straight in milk, cream, and water.  No roux needed here!

    HELPFUL TIPS TO MAKE ONE POT CREAMY GARLIC PARMESAN SHRIMP PASTA:

    • The amount of liquid that you use in this will depend on how fast your pasta cooks. I started off with 1 1/2 cups of each liquid, but I ended up adding another cup and a half when I stirred in the Parmesan to get the dish creamier. 
    • Add milk or cream until you get the texture that you prefer- thicker vs. thinner. You can substitute the shrimp in this recipe if you prefer- rotisserie chicken would be outstanding. The amount you choose to put in is also flexible and entirely up to you!

    WHAT YOU WILL NEED TO MAKE ONE POT CREAMY GARLIC PARMESAN SHRIMP PASTA:

    • Wide Shallow Pan - a 4-quart braiser is one of my favorite pans. It is wide and shallow and perfect for one-pot recipes! Using a wide pan gives more surface area so your pot will heat more evenly and cook faster.
    • Garlic Press-One of my moist used kitchen tools! I received mine as a gift years ago and I can't imagine why I never had one. It minces garlic with one squeeze, with the peel still on!

    One-Pot Creamy Garlic Parmesan Shrimp Pasta
    SERVES 6   |  ACTIVE TIME 5 MIN   |  TOTAL TIME 20 Min

    3 tablespoons butter
    3 cloves garlic, minced
    2 cups water
    2 cups milk
    1 1/2 cups heavy cream
    2 teaspoons kosher salt, or to taste
    1 teaspoon freshly ground pepper, or to taste
    1 pound angel hair pasta
    1 cup parmesan
    1 pound jumbo shrimp, peeled and deveined
    3 tablespoons chopped parsley

    In a wide deep skillet (I love this 4-qt braiser), melt the butter over medium-high heat. Add the garlic and saute until lightly golden.

    Pour the water, milk, cream, salt, and pepper in the skillet and whisk together. Bring to a simmer, then add in the angel hair pasta. Cover and cook until almost al dente, about 5-7 minutes.

    Stir in the Parmesan cheese. Top with the shrimp and sprinkle with parsley.  Re-cover and simmer for an additional 5 minutes, until shrimp is cooked through, pasta is tender, and sauce is thickened. Serve immediately.

    Helpful Tips to make One-Pot Taco Spaghetti:

    • I use lean ground beef but you are welcome to use your fav: ground turkey, ground sausage etc., even chopped chicken will work great!  
    • I use 1 tablespoon beef bouillon which is the equivalent of 3 beef bouillon cubes.  I use beef bouillon as it is less expensive than beef broth but you are welcome to substitute 3 cups of the water with 3 cups low sodium beef broth and omit the beef bouillon.
    • We break our spaghetti pieces in half so they can be fully emerged in the water.  Break all your pieces in half before you starting to add them to the pot so they will cook more evenly. 
    • It is important to stir the spaghetti occasionally then replace the lid because we don’t want the spaghetti to stick to the bottom and we want the spaghetti to cook evenly.  Replacing the lid keeps the water from evaporating too quickly. 
    • There are variables in the exact amount of water needed to cook our spaghetti such as how often the lid is removed, how hot the liquid is simmering, etc., but the required liquid should be very close to the 5 ¾ cups listed.  If you find the liquid is all absorbed by the spaghetti before it is al dente, then simply add more water, a little at a time until the spaghetti is cooked through.  It is normal for there to be some water remaining when the spaghetti is cooked because this melts with the cheese helping to coat our spaghetti. 
    • This One Pot Taco Spaghetti cooks in roughly 12-15 minutes after the water starts to boil.  As with all pastas, you are going to want to start checking for doneness at the earlier 12 minute mark, because there is nothing worse in than soggy pasta for dinner!

    What you will need to make One-Pot Taco Spaghetti:

    • Large Soup Pot or Dutch Oven – this is essential in this recipe as we are cooking everything in one pot – so it needs to fit into one pot with ease so there is enough movement for the pasta and the water to boil along with all the other ingredients. 
    • Cheese Grater - this kitchen tool gets more love than almost any other tool in my kitchen because I am a huge proponent of FRESHLY grated cheese as opposed to bagged shredded cheeses.  Using freshly grated cheeses saves money, tastes better, and MELTS better.  In this One Pot Spaghetti Pasta, you really want a good melting cheese.

    One-Pot Taco Spaghetti

    One-Pot Taco Spaghetti is all of your favorite taco flavors in pasta form! This wonderfully cheesy, fiestalicious spaghetti recipe is on your table in less than 30 minutes with only one pot to clean!

    Ingredients

    • 1 pound lean ground beef
    • 1 medium yellow onion, diced
    • 3 garlic cloves, minced
    • 2 tablespoons chili powder
    • 1 tablespoon beef bouillon
    • 1 1/2 teaspoons ground cumin
    • 1 teaspoon salt
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon black pepper
    • 1/4 teaspoon cayenne pepper (optional for heat)
    • 16 ounces uncooked spaghetti, pieces broken in half
    • 2 (14.5 oz) cans fire roasted diced tomatoes, with liquid
    • 1 (4 oz) can mild diced green chilies
    • 5 3/4 cups water
    • 2 cups freshly grated sharp cheddar cheese
    Garnishes (optional)
    • Shredded sharp cheddar cheese
    • Diced tomatoes
    • Diced avocadoes
    • Chopped cilantro
    • Sour cream

    Instructions

    1. Brown ground been and onions in a Dutch oven or large soup pot over medium high heat, crumbling beef as you cook. Drain off grease. Add garlic, beef bouillon and all seasonings and cook an additional 30 seconds over medium high heat.
    2. Stir in spaghetti, tomatoes, green chilies and water. Bring to a boil then reduce heat to a simmer over medium-low heat. Cover and cook 12-15 minutes OR until pasta is al dente, stirring occasionally and replacing lid. Add additional water a little at time if water evaporates before spaghetti is cooked. Once cooked, there should be a little water remaining.
    3. Remove from heat and stir in cheese a handful at a time until melted. Season with additional salt and pepper to taste. Top with desired garnishes.

    Helpful Tips to make One-Pot Chicken Fajita Pasta:

    • Make sure to keep your chicken pieces similar in size.  The chicken in this recipe cooks in just a few minutes, so you need to make sure the chicken pieces are all close to the same size so they can fully cook at the same time.
    • The heat level (in my opinion) is between a mild and medium, however you can make it spicier by using hot diced tomatoes and green chiles, or by substituting jalapeΓ±o for the green bell pepper.  You can make it milder by using plain diced tomatoes instead of the diced tomatoes with green chiles.

    One Pot Chicken Fajita Pasta

    This hearty One-Pot Chicken Fajita Pasta Recipe has all the great classic chicken fajita flavors combined with creamy pasta in a perfect weeknight meal!
    prep time: 10 minscook time: 25 minstotal time: 35 mins

    Ingredients

    • 3 tablespoons olive oil, divided
    • 1 pound boneless, skinless chicken breasts, cut into 1/2 - 1" pieces
    • 2-3 tablespoons fajita seasoning (taco seasoning works as well)
    • 1 large yellow or red onion, diced
    • 2-3 bell peppers (any variety), sliced into thin 1" long strips
    • 5 cloves garlic, minced
    • 2 cups reduced sodium chicken stock
    • 1/2 cup heavy cream
    • 10 ounce can diced tomatoes and green chiles (I used Rotel brand)
    • 8 ounces uncooked penne pasta (or other short cut pasta)
    • pinch of salt and black pepper, to taste
    • Lime wedges, for garnish
    • Diced green onions, for garnish
    • Minced fresh parsley or cilantro, for garnish

    Instructions

    1. Add 1 1/2 tablespoons olive oil to dutch oven or 12" skillet and heat over MED HIGH heat. Add chicken, sprinkle with half of the fajita seasoning and cook about 2 minutes. Turn chicken pieces over (or give it a good stir) and cook the other side for another 1-2 minutes. Remove chicken to a plate and set aside.
    2. Add remaining 1 1/2 tablespoons olive oil to dutch oven and add in onions and peppers and remaining fajita seasoning. Cook, stirring occasionally, about 4-5 minutes, until softened and slightly charred. Add garlic, stir, and cook about 30 seconds, then remove vegetable mixture to the plate with the chicken and set aside.
    3. Pour in chicken stock, heavy cream, diced tomatoes and chiles, pasta, and a pinch of salt and black pepper. Use a wooden spoon to carefully loosen the browned bits from the bottom of the skillet and bring to a boil. Once boiling, reduce heat to a low boil (usually about a MED LOW heat should work), cover, and cook about 15 minutes, stirring occasionally.
    4. After 15 minutes, most of the cooking liquid should be absorbed. If it's not, cook another 3-5 minutes. Return the chicken and vegetables to the pot and stir to heat through.
    5. Serve garnished with diced green onions and minced fresh parsley or cilantro and with a squeeze of a lime wedge.

    I have really been rocking the one-pot meals lately.  I would cook all day every day, except that means washing dishes and cleaning up all day every day too.  I was just chatting with my friend about this.  I prefer to cook a couple times a week and eat left overs the rest of the week.  That means making food that not only tastes great, but reheats well too.

    You know sometimes, when the season approaches, you just have a hankerin’ for something cozy. Lately, I have be craving soup - broth soups, meaty soups. If it cooks in one pot and its a soup it has been on the menu.

    That is how this glorious Three-Cheese Lasagna Soup came to be. It is packed with my favorite lasagna ingredients and so perfect for fall. It was amazing the first day and unbelievable each day after. The 2 best parts are it is made all in one pot and ready in 30 minutes!


    Seriously, my picky family sat down to eat this soup with a little bit of trepidation. Two and three bowls later (each) we decided it was the best thing since sliced bread.     Ultimate Three-Cheese Lasagna Soup

How about a scrumptious, stick-to-your-bones soup that goes from prep to plate in 30 minutes. This recipe will be on our menu all year long and I am sure your family will love it too!

    Ingredients

    • 19 ounces ground Italian sausage, hot (can substitute mild)
    • 1 (14.5-ounce) can fire roasted diced tomatoes with garlic
    • 1/2 (6-ounce) can tomato paste
    • 1 (8-ounce) can tomato sauce
    • 1/2 tablespoon dried Italian seasoning
    • 6 cups chicken broth
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon black pepper
    • 8 oz dried campanelle pasta (bell shape)
    • 1/2 cup part-skim ricotta cheese
    • 2 tablespoons grated Parmesan cheese
    • 4 ounces shredded mozzarella cheese
    • 2 basil leaves, chopped

    Instructions

    1. In a large (12 quart) pot over high heat, brown sausage, about 5 minutes. If the pan is too dry (add a splash of the chicken broth).
    2. Meanwhile prep remaining ingredients.
    3. Once sausage is mostly cooked through add tomatoes, paste, sauce, seasoning, onion powder, salt, pepper and chicken broth. Stir to combine. Cover and bring to a boil, about 7-10 minutes.
    4. Add pasta and boil, uncovered, until it is al dente, 7-9 minutes. Turn off heat. Add ricotta, parmesan cheese and 1/2 mozzarella. Stir to combine.
    5. Serve and top with each bowl with some of the remaining cheese and basil. Enjoy!
