is just the simple side you have been looking for Chicken Rice Simple Side Dish

Do you remember those side dish pouches? I pretty much served every meal with one. Let's be honest here. I haven't always been such a fabulous cook and for a long time it was just Chad and myself. So I would grab some fettucine alfredo, butter pasta, and rice sides which were perfect with just about everything.

But then once I embraced being creative in the kitchen I started developing my own easy side dishes that are just as easy as that package was and tastes sooo much better.

After making my Chicken Rice as a simple side for the 1 millionth time, Chad asked me if I ever shared it on our website. "Of course not" I replied. "It is so easy....  that our readers will love it!" I realized as I was in the middle of answering him.

Well, that said. This is so easy and perfect as a side dish or add chicken and veggies on top to create your homemade rice bowl. Simple and delicious is the name of the game and this side dish is everything you could want it to be.

    Classic Slow Cooker Stuffing

Classic Slow Cooker Stuffing starts with sausage, bacon and fresh herbs. An American favorite now comes to you in a simple crockpot recipe. With options for a simple prep of this dish you can have it ready to cook in about 10 minutes. Now, you can't beat that! Classic Slow Cooker Sausage Herb Stuffing that is bursting with flavor is sure to be the star of the show. Sorry turkey!
An American favorite now comes to you in a simple crockpot recipe Classic Slow Cooker Stuffing

It is almost Thanksgiving and all I can think about is the stuffing. I know I shared my stuffing love affair with you a few weeks ago with our fabulous Sausage, Cranberry, and Apple Stuffing recipe. It really is my best ever all time favorite stuffing. But, honestly not everyone wants 'fancy' stuffing. I get that. So with all the requests we have been getting for crockpot recipes for Thanksgiving I recreated a family classic.

As long as I can remember (and for many years before I knew them) my mother-in-law Gigi has been making a classic midwestern/southern stuffing with sausage and bacon.  Some years it would be sausage only, but honestly my favorite was with a double helping of the pork.

An American favorite now comes to you in a simple crockpot recipe Classic Slow Cooker Stuffing
Knowing y'all are begging for slow cooker recipes to simplify your life, I recreated a family favorite. Classic Slow Cooker Stuffing starts with sour dough bread, sausage, bacon and fresh herbs.  It is destined to be the star of the show. It's so good that we ate it for dinner last night.

If you are in a time crunch, try substituting out store bought plain stuffing cubes, precooked sausage links (chopped) and bacon crumbles. It cuts the prep time to about 10 minutes. With a stuffing recipe this fabulous you will be making it over and over.

      Piña Colada Cheesecake Salad

Pina Colada Cheesecake Salad is my latest obsession. This simple recipe starts with a fresh pineapple fruit salad tossed with a rich and buttery coconut rum cheesecake filling (don't worry it's kid friendly) to create the most spectacular fruit salad ever!
This simple recipe starts with a fresh pineapple fruit salad tossed with a rich and butte Piña Colada Cheesecake Salad

We are so excited to be partnering with International Delight®  to bring you another fabulous recipe. I don't know about you, but I love my coffee so I always have creamer in the house. I have found this to be an amazing convenient ingredient in cooking and baking sweets. So, of course when I started thinking about cheesecake salads I thought of International Delight.

      RECIPE AT THE BOTTOM

I am so hooked on cheesecake salads. I have several different recipes now and you all are loving them as much as I am. So, I started wondering what combination we could come up with that screams summer and is totally out of the ordinary. I have to say I love love love the flavors of a pina colada. The nutty coconut, sweet pineapple and buttery rum. It is utterly tropical and completely satisfying.

Cheesecake salad is all the rage, and I am sure because it pretty much is everything. It is a side, it's a  salad and it's dessert all in one magnificent recipe. Rich and creamy cheesecake filling made with cream cheese, coconut cream pudding, our favorite creamer and some rum extract to get that true pina colada flavor. The creamer lends a richness and creaminess to the cheesecake filling and the perfect touch of sweetness. The filling is folded into fresh pineapple, strawberries, and mandarin oranges to create our latest taste sensation.

I have to say, Chad, Munchkin and I all stood around the counter sampling this cheesecake salad we just couldn't get enough.

I am stocking up on summer salad ideas and boy oh boy do we have a good selection to choose from. Summer Berry Cheesecake Salad, Strawberry Banana Cheesecake Salad, and Hawaiian Cheesecake Salad are three of our favorites!!!

Helpful Tips to make Piña Colada Cheesecake Salad:

      • Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way. Trust me on this one.
      • To make this ahead: prepare the cheesecake mixture and refrigerate in a bowl. Mix all of the fruit in a large bowl and refrigerate. Before serving, drain any excess liquid from the fruit and then fold the cheesecake filling into the fruit. Serve and enjoy!

        Ingredients

        • 1 (8-ounce) package cream cheese
        • 1 (3.4-ounce) package coconut cream flavored instant pudding, unprepared
        • 1 teaspoon rum extract
        • 1 cup International Delight French Vanilla Creamer
        • 1 fresh pineapple cut into bite-size pieces (about 4 cups)
        • 1 pound strawberries, quartered
        • 4 mandarin oranges, peeled and sectioned

        Instructions

        1. In a medium tall bowl (I use my 8 cup measuring cup), using an electric mixer, whip the cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up. Add the dry pudding mix. Beat until it is well combined. Blend in the rum extract.
        2. With the mixer on low, slowly add the creamer to the cream cheese mix. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese, repeat until all of the creamer has been added to the mixture. Whip until smooth.
        3. In a large bowl, combine pineapple, strawberries, and oranges. Add the cheesecake mixture to the fruit. Gently fold cheesecake mixture into fruit.
        4. Chill until ready to serve or serve immediately.

        DONNA'S NOTES

        1. Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way. Trust me on this one.

        Pineapple Salsa Party Dip

Our pineapple salsa has a secret ingredient for the perfect blend of sweet and heat. Make this dip recipe in 15 minutes for your next party!

has a secret ingredient for the perfect blend of sweet and heat Pineapple Salsa Party Dip

With one special addition to really take this simple recipe up a notch, your guests will be guessing what the secret ingredient is all night long.

This is truly an addictive dip! I promise, you will be making this recipe again and again.

has a secret ingredient for the perfect blend of sweet and heat Pineapple Salsa Party Dip

        Pineapple Salsa Party Dip

When I made this dip the first time, it was for Chad's birthday party.

To keep everything super simple, I prepared some burgers, Crockpot Corn on the Cob and a salsa bar.

The salsa bar was my favorite. I wish I had pictures.

It featured 3 heat varieties of our Best Ever Chipotle's Copycat Guacamole, Strawberry Habanero Everything Spread and this Pineapple Salsa.

has a secret ingredient for the perfect blend of sweet and heat Pineapple Salsa Party Dip

Also, we set out different chips to go with all of the dips.

The Pineapple Salsa stole the show. We started off with the salsa bar as our appetizers, if you will.

By the time dinner began, several guests were still eating pineapple salsa with dinner.

Then the cake came out and many of our guests headed back for the spicy dip again.  Let's just say the salsa was devoured!

        Ingredients

The salsa features fresh pineapple and jalapeno peppers (although you could use serrano too) for the perfect combination of sweet and heat.

Cilantro adds a coolness to the dip, red onion gives it a hint of pungent spiciness and the addition of ginger (our secret ingredient!) warms it up.

It is truly a party for your senses and you will be eating this all year long!

has a secret ingredient for the perfect blend of sweet and heat Pineapple Salsa Party Dip

        Recipe Tips:

        • Use fresh pineapple. Frozen and canned won't give you the texture you are looking for.
        • Chill the ingredients. For the best flavor, be sure to allow time for the dip to chill in the refrigerator.
        • Use peppers to suit your palate. Less peppers for less heat. The recipe is mild heat as written.
        • Use kitchen gloves. To prevent burning your eyes, I recommend wearing gloves when working with spicy peppers.

Onions are one of my favorite foods, I could eat them all day. The health benefits are just incredible. As good as they are I bet you are thinking that this dish look amazing, but what do you serve them with?! I made this with the chicken piccata.

It was the perfect compliment to the dish, the flavors are amazing. The onions are caramelized in the oven with the fruity olive oil and the tang of the dijon mustard and the freshness of the lemon really comes through.

These onions are amazing. Truth is I had to reshoot them because they were so good that I ate too many before I took pictures.

This time I made a double batch. Luckily, I am the only onion junkie in the house so I am hoping I can still eat some and have enough left for pictures. Did I mention these are incredible???

It all starts by properly trimming the onion so you can get perfect wedges. I trim off the stem and root ends. Then stand them on their end and cut into wedges.

Whip up this perfectly delicious and simple dressing in a medium bowl (see in this batch I used dried rosemary (1/2 tablespoon) because I ran out of fresh. Whisk until well combined.

Pour the dressing over the onions and toss to coat. Then bake on a baking sheet. It is so easy it just may become your go to side dish.

          Rosemary Roasted Onions

Rosemary Roasted Onions is such a simple recipe and the flavor is amazing. Rich, robust, tender, sweet and slightly caramelized, these onions are tossed in a tangy dressing make this a go to side dish that you will be using again and again.

          Ingredients

          • 2 medium red onions
          • 1 medium sweet yellow onion
          • 1/4 cup extra virgin olive oil
          • 1 lemon, juiced
          • 1 teaspoon Dijon mustard
          • 3 cloves garlic, minced
          • 2 sprigs fresh rosemary, stems removed and chopped
          • 1 teaspoon kosher salt
          • 1/2 teaspoon freshly ground black pepper

          Instructions

          1. Preheat oven to 400° F.
          2. Trim onion both the root and stem sides of the onion. Be sure to leave the root intact (cut so that the dried brown roots are cut off and only a white nub remains).
          3. Peel onions. Place the onion with a cut side down on the board and cut into wedges.
          4. Place onions onto a baking pan.  Set aside.
          5. In a medium bowl combine olive oil, lemon juice, mustard, garlic, rosemary, salt and pepper. Whisk until well combined.
          6. Pour the dressing over the onions and toss well (I tried to use spoons, but the hands are the perfect tool for this job).
          7. Bake onions for 30 to 45 minutes, until tender and browned. Toss the onions once during cooking.
          8. Remove from the oven, toss again.
          9. Serve and enjoy!
