My niece went off to college this year. I talked to her after about a month of dorm living and found out she was pretty much living on granola bars. Seriously? Granola bars? How are you going to put on the freshman 15 eating nothing but granola bars.

So, I shared with her my 2nd favorite kitchen shortcut wonder. Or course, I love my slow cookers and if she had a full fridge and freezer I would have recommended she get one. But the best ever dorm appliance has to be the waffle iron. If you don't know what I am talking about Google waffle iron recipes and you will find that you can cook just about anything in a waffle iron.

Waffles (well, duh Donna), cinnamon rolls, sandwiches, quesadillas, hash browns, pizza and sooo much more. Today I am sharing with you a full loaded waffle hashbrown with our favorite fixin's!



My family went absolutely nuts over these. Chad even drizzled a little syrup over them and called them dinner. Crisp on the outside and perfectly flavorful and tender on the inside. Top them with an egg for a complete breakfast or a burger for dinner. The possibilities are endless!

    Cheesy Bacon Hashbrown Waffles

    Cheesy Bacon Hash Bown Waffles are perfectly crisp on the outside and tender on the inside. A perfectly simple recipe, they are incredibly flavorful and loaded with bacon and ooey gooey cheese!

    Ingredients

    • 1 (20-ounce) package Simply Potatoes Hash Browns
    • 8 ounces thick cut applewood smoked bacon, cooked and diced (about 1/4" pieces)
    • 4 ounces (1 cup) medium cheddar cheese, shredded
    • 4 ounces (1 cup) pepper jack cheese, shredded
    • 3 large eggs, beaten
    • 1 teaspoon New Mexico chili powder
    • 1 teaspoon kosher salt
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon fresh ground black pepper
    • handful fresh parsley leaves, chopped (about 4 tablespoons)

    Instructions

    1. Set waffle iron to medium-high and preheat. Reserve half of parsley for garnishing.
    2. Combine all ingredients (including the remaining parsley) in a large bowl. Stir until well mixed.
    3. Mist the waffle iron with non-stick cooking spray.
    4. Pour about 1/2 cup of the hash brown mixture onto the hot waffle iron. Use a spatula to spread the mixture into an even layer. Cook until golden and cooked through, about 3-5 minutes. Be aware the hash browns will release steam as they cook.
    5. Remove from waffle iron and place cooked hash brown waffles on oven rack in a 200°F preheated oven until ready to serve. This will help keep them crisp and hot.
    6. Sprinkle with reserved fresh parsley. Serve and enjoy!

    When it comes to comforting side dishes, this Bacon Beer Cheese Stuffing hits all the marks. And by marks, I mean the three crucial flavor profiles that simply make any dish better.

    First, there’s the bacon. Because, well… bacon. I don’t think I really need to sell you on the deliciousness of bacon, but if I do, just imagine everything amazing about savory meats in the form of a crispy culinary treat. It just makes everything better, and there’s a hefty portion of it in this stuffing.

    Then, there’s the beer. Beer has a way of adding a ton of depth to the flavor of a recipe, and especially when used in conjunction with meats like bacon. Even if you’re not a fan of drinking beer you may love it’s when cooked with the right ingredients. I opted to use Blue Moon in this recipe, and the hints of citrus really made the flavor pop.

    And, finally, there’s the cheese. I don’t know about you, but I’m always looking for new ways to add cheese to my life, and what better way is there than baking it in a dish that’s 90% French bread?

    I certainly can’t think of any!



    All fangirl-fawning over the ingredients aside, I must admit that this stuffing recipe surprised me with how good it was. I grew up enjoying the more “traditional” forms of stuffing, which usually meant a lot of bread with a little bit of seasoning. And don’t get me wrong – there’s absolutely nothing wrong with that. Classics are classics for a reason. Stuffing doesn’t have to be a wallop of flavor for it to still be good.

    This recipe may be a bit more time-intensive (due to cooking up all that amazing bacon) but since you don’t use the bacon grease in this recipe, you can also opt to use pre-cooked bacon. I know not everyone is a fan, but it can be a great alternative in a pinch. I’ve used pre-cooked bacon in many baked dishes and still loved them just as much.



    So if you’re ready to take your side dish game to the next level for your next dinner, holiday, or rainy Sunday, this stuffing is more than worth a walk on the wilder side.

    We are talking bacon, beer, and cheese, after all.

      What you will need to make Bacon Beer Cheese Stuffing:

      • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
      • Mixing Bowls - I like a variety of mixing bowls and prep bowls and this set has them all.
      • 9x13 Baking Dish - I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.

      Bacon Beer Cheese Stuffing

      This bacon beer cheese stuffing will kick your side dish game to the next level! Classic stuffing spiked with citrus beer, savory bacon, and cheddar cheese.
      prep time: 15 minscook time: 70 minstotal time: 85 mins

      Ingredients

      • 3/4 cup butter
      • 2 stalks celery, chopped (roughly 1/2 cup)
      • 1 large sweet onion, chopped (roughly 1/2 cup)
      • 1 pinch salt
      • 1 pinch pepper
      • 1/2 cup beer (such as Blue Moon)
      • 2 large eggs
      • 1 teaspoon Worcestershire sauce
      • 2 cups low-sodium chicken broth
      • 10 cups French bread, cubed, dried out overnight
      • 10 slices thick-cut bacon, cooked, drained, and chopped, divided
      • 1 cup shredded mild cheddar cheese, divided
      • 1 tablespoon fresh thyme, chopped and divided
      • 2 teaspoons fresh sage, chopped

      Instructions

      1. Preheat oven to 350 degrees F. Spray a 9x13 baking dish with cooking spray, then set aside.
      2. Melt butter in a skillet over medium heat. Add celery and onions and season with salt and pepper, to taste. Cook for 6-8 minutes or until veggies are tender. Add beer to skillet and bring to a simmer. Cook for 2-4 minutes, stirring occasionally, or until liquid is reduced by 1/2 and an opaque golden color. Remove skillet from heat.
      3. In a small bowl, whisk eggs until well beaten, then pour in Worcestershire sauce and chicken broth. Stir until mixed, then set aside.
      4. In a large mixing bowl, add French bread, 1/2 of the bacon, 1/2 cup mild cheddar, 1/2 tablespoon thyme, and sage, then toss to mix. Pour beer buttery veggies and chicken broth mixture in the bowl and then gently mix until bread is thoroughly saturated.
      5. Pour stuffing in prepared baking dish and gently smooth into an even layer. Garnish the top of the stuffing with the remaining bacon, mild cheddar, and thyme.
      6. Cover baking dish with aluminum foil and cook for 40 minutes. Remove foil and bake for another 20-30 minutes or until the top of stuffing is lightly crisp and golden brown.
      7. Serve Bacon Beer Cheese Stuffing immediately.

      I started making oven roasted vegetables a few years ago and completely fell in love with the flavor.  The caramelization that occurs during slow roasting bringing out the sugars in the vegetables is incredible. But, I had never made potatoes that way, until...

      Last year we grilled ribeye steaks and I decided nothing would go better than oven roasted fingerling potatoes.  I seasoned them with garlic and rosemary, they were like candy.  Chad (my picky husband) and I were head over heals in love.

      Needless to say, I have been making them this way ever since.  Costco always has a lovely bag of fingerling potatoes and fresh cleaned corn on the cob.  Grab both and pop them in the oven together.  Click on the corn pic below to see the oven roasted corn recipe.  They go perfect with everything.  Trust me, you are going to love them.

      Oven Roasted Rosemary Garlic Fingerling Potatoes

      The easiest side dish recipe you will ever make. Fingerling potatoes roasted to perfection with rosemary and garlic is our favorite potato dish ever!
      prep time: 5 minscook time: 60 minstotal time: 65 mins

      Ingredients

      • 3 pound fingerling potatoes
      • 2 tablespoons extra virgin olive oil
      • 6 garlic cloves, minced
      • 2 tablespoons chopped rosemary (about 4 sprigs)
      • 1 teaspoon kosher salt
      • 1/2 teaspoon fresh ground black pepper

      Instructions

      1. Preheat oven to 400°F.
      2. Rinse potatoes. Place potatoes in a 7”x10”x3” baking dish (or similar size).
      3. Combine remaining ingredients in a small bowl.  Stir to combine.  Pour over potatoes. Toss with clean hands until potatoes are well coated. 
      4. Bake 60-70 minutes, stirring occasionally until potatoes are fork tender. (Mine cooked 60 minutes).
      5. Serve and enjoy!

It doesn't get much better than this mouthwatering side. You must give it a try!

      Chad is a meat and potatoes kinda guy, I am sure it had something to do with him growing up in Iowa. I think he could live on 'em, well add a side of corn and I think he is all set. haha. Needless to say I am always looking for ways to jazz up the standard meat and potatoes for him. Honestly we eat more Mexican food than anything else, so when he does get his meat and taters, I want them to be special.

      When I am looking to make something spectacular there is nothing quite like pulling out the cast iron skillet and whipping up some roasted potatoes for dinner. We were having the best ever pot roast for dinner the other night, which incidentally is so good I thought Chad was going to drink the gravy with a straw. Anyway, cast iron skillet roasted potatoes were the perfect side dish that this dinner needed.

      I had fresh herbs on hand from making the roast and knew they would be perfect with the garlic and Parmesan cheese. Butter, olive oil, garlic and a little (or a lot) herbaceous love qualifies this side dish for a spot in the permanent file. Not to mention a whole cup of fresh Parmesan cheese.


      Don't buy the pre-shredded cheese for this dish, it won't melt properly. You can adapt the recipe to suit whatever fresh herbs you have on hand, but I love the combination of rosemary, thyme and parsley. Fresh herbs really take this dish to a whole new level.

      These potatoes were amazing. They are perfectly tender and bursting with flavor. Chad and I both devoured them and I may have had a bowl or 3 for dessert too. I know you are going to love them.

      Garlic Parmesan Cheesy Potatoes

      Ingredients

      • 2 tablespoons unsalted butter, melted
      • 2 tablespoons Star Fine Foods Extra Virgin Olive Oil
      • 1 tablespoon fresh chopped parsley
      • 1 tablespoon fresh chopped rosemary
      • 1 teaspoon fresh chopped thyme
      • 5 cloves garlic, minced
      • 1/2 teaspoon kosher salt
      • 3 pounds red potatoes, cut into bite size pieces
      • 1 cup fresh shredded Parmesan cheese

      Instructions

      1. Preheat oven to 400°F. 
      2. In a small bowl combine butter, olive oil, chopped herbs, garlic, and salt. Stir to combine. Brush 1/2 mixture onto a large cast iron skillet. Add potatoes to skillet. Brush potatoes with remaining herb mixture. Cover with foil and bake for 45 minutes.
      3. Remove from oven. Remove foil and sprinkle with Parmesan cheese. Bake for 15 minutes or until potatoes are fork tender.
      4. Serve and enjoy!

      Growing up, I looked forward to mashed potatoes and corn (pretty much more than any other weekday meal). For a long time, my mom had a meal plan, and we had the same thing each weeknight, and on the weekend she would switch things up. If I were really lucky, we would be having mashed potatoes and corn with something (I really only cared about the taters and corn).

      My mom could whip up the fluffiest, most tasty mashed potatoes you could find anywhere. It really never mattered what else was for dinner, once she pulled out the potatoes I was on cloud nine. She could peel a whole potato with a paring knife and only remove the skin. Me? I need a carefully crafted vegetable peeler.  LOL

      This many years later, I still love mashed potatoes and my mom's recipe has long been with me and is still my favorite way to make everyday potatoes. Now, don't get me wrong... I love the heck out of these Best Ever Mashed Potatoes, and they are the only potatoes I serve on special occasions, but on a regular day and even when I am looking for comfort food it is Mom's potatoes that I crave.

      It all starts with peeled Yukon gold potatoes, of course, Mom used Russets. I love Yukon gold, though, they taste better if you ask me, so that is a great place to start. After the taters are boiled until fork tender mom would whip the daylights out of her potatoes adding milk, butter, and salt as she went.

      I have my own way; I like to mash the butter into the taters with a potato masher which leaves the perfect size little chunks for you. Then add the milk, salt, pepper and a touch of garlic.

      I love garlic in my potatoes. Mash them until they are the right consistency for you. There is no wrong here, just whatever you prefer.

      I go ahead and taste them and see if they are just perfect. Just a little taste will do, or you can use a shovel if that suits you better. I won't tell. Either way, you are going to love 'em!

      Nana's Perfect Everyday Mashed Potatoes
      SERVES 6  |  ACTIVE TIME 20 Min  |  TOTAL TIME 40 Min


      3 pounds Yukon gold or Russet potatoes, peeled and cut into bite size pieces
      1/4 cup (1/2 stick) unsalted butter
      1/2 cup milk
      2 teaspoons kosher salt (to taste)
      1/2 teaspoon garlic powder
      black pepper (to taste)

      Place the potatoes into a large pot, and cover with salted water.  Cover and bring to a boil over medium-high heat.  Reduce heat to medium and cook until fork tender (meaning they break apart when you put a fork into a potato), approximately 15 minutes.

      Drain water. Return the potatoes to the pot. Turn heat to high, and allow the potatoes to dry for about 30 seconds. Turn off the heat.

      Add butter. Begin mashing the potatoes with a potato masher. Mash until butter is melted.  Add milk, and remaining ingredients. Mash ingredients together until potatoes are your desired consistency.

      Serve and enjoy!

      COOK'S NOTE: I prefer my potatoes a little chunky, but mash until you like them. If you prefer them extra fluffy, you can use an electric mixer on about half power for about 2 minutes. Then stir and scrape down the sides and then mix for another minute.

      To make ahead: Prepare ahead and refrigerate. Place in slow cooker on low temperature the day you wish to serve 2-4 hours before hand. Add 1/2 cup milk and stir. Cover and stir occasionally.
