Sun-dried Tomato Chicken and Pasta

is a fabulous easy dinner recipe ready in just Sun-dried Tomato Chicken and Pasta

Recently I came to terms with the fact that it is quite possible that cheese is my favorite food.  As they say... absence makes the heart grow fonder.  One time (ONE TIME) cheese and I broke up in an attempt to cut dairy out of my life and see if I felt better.  It was a heart wrenching break up and I vowed never to do that again.

I enjoy cheese several times every day.  2% cheese slices on my egg white omelets, shredded fat free mozzarella on my afternoon salad and cheese incorporated into dinner.

Truthfully there is only one other thing that I eat and enjoy as much as cheese...  SUN DRIED TOMATOES.  Good heavens.  I am addicted.  I sprinkle them into my breakfast omelet, a handful sprinkled over my salads or a small handful as a snack and a beautiful sun-dried tomato sauce over penne pasta.    Is this heaven?  It sure tastes like it.

This pasta dish is bursting with flavor, sun-dried tomatoes, garlic, basil, chicken and penne come together in just 30 minutes to give you a Sunday dinner on a Monday night.  It doesn't get much better than that.

Sadly, my three year old is not quite as enthusiastic about the sun-dried tomatoes.  Although she devoured this pasta, when I leave them whole she tells me "Mommy, I don't like mo-matoes on my pasta".  I assured her that she is mistaken.  She is my child. Of course she loves tomatoes.  Silly girl!

    Sun-Dried Tomato and Ricotta Frittata

Sun-dried Tomato and Ricotta Frittata is the perfect breakfast for dinner recipe. Cooked in a cast iron skillet this frittata is light and fluffy with pockets of ooey gooey cheese throughout. Bejeweled with sweet sun-dried tomatoes, basil and flavorful sausage this is my all time favorite brinner!
is the perfect breakfast for dinner recipe Sun-Dried Tomato and Ricotta Frittata

#JonesBrinner is one of the many reasons we are so excited to be partnering with Jones Dairy Farm again. February is National Hot Breakfast Month, I don't know about you, but I LOVE LOVE LOVE breakfast. I just don't have the time to cook up my favorites in the morning. That is exactly why our friends at Jones Dairy Farm created this super fun website JonesBrinner.com. Breakfast + Dinner=Brinner. They want to help you enjoy the breakfast foods that you love at your dinner table. I'm game!!!

The site is packed with fabulous brinner recipes, cooking tips and a pretty fun quiz. And of course the RECIPE for this amazing frittata. You have to check it out. My favorite thing on the site is the cooking tips for eggs.

Earlier this month I shared with you that although I am pretty handy in the kitchen I just haven't mastered eggs. I can cook a lot of things and bake my little heart out. However, eggs...  UGH! They are my nemesis. Over easy, sunny side up, scrambled, omelets, soft boiled, hard boiled. It is one food that really challenges me. I have to say that I mastered hard boiled eggs last summer. I was feeling pretty good, then I had this amazing idea for this Royal Bacon Breakfast Burger and I knew that I had to come through.

After 2 attempts and some fantastic tips, voila! Perfect sunny side up eggs. I can't believe it! Chad was thrilled as he loves 'em and I haven't made them successfully until now. I mean, he did get some really awesome fried eggs.  LOL. You know when the top just won't cook, you flip it. hahaha

Seriously check out the Egg Cooking Tips, you will thank me.
is the perfect breakfast for dinner recipe Sun-Dried Tomato and Ricotta Frittata

This frittata is absolutely amazing, I literally confiscated all the frittatas that we recipe tested (Chad and Munchkin each had a bite). I ate them for breakfast, lunch and dinner until they were gone. Oh my heavens it is light, fluffy and completely amazing. With pockets of fluffy cream cheese in each bite and little sun-dried tomato jewels throughout and all-natural chicken sausage from our friends at Jones Dairy Farm it is truly the ultimate brinner recipe! You are going to love it.

If you would like to find more recipes, tips and information on Jones Dairy Farms, check out their Facebook and Twitter pages.

    Enjoy!

    Meat Lover's Pizza Pasta Bake

Meat Lover’s Pizza Pasta Bake is exactly what I like to make when pizza comes up on a busy weeknight. It’s loaded with ooey gooey cheese, fun twisty pasta, seasoned beef, pepperoni, sausage and bacon… Need I say more? This is our family favorite choice for a weeknight “pizza night” and I am sure it will be yours, too!

We really love pizza and we could eat it everyday!  Munchkin goes crazy for pizza and she lets us know when we are driving past our favorite pizza place.  As in, "what are you doing?  The pizza is back there!!!".  We all love the meat lovers pizza; loaded with pepperoni, beef, sausage and bacon.  It makes my heart go pitter patter.

This Meat Lover's Pizza Pasta Bake is my spin on our favorite pizza.  My picky 3 year old squeals when she hears "pizza pasta for dinner" and gobbles it down as quick as I can get it on her plate.  Chad is no different he certainly loves it too!  And Me?  Well, let's just say you don't need to go gettin' all fancy on me and bother takin' it out of the pan.  Just give me a fork!   Just be glad I am civilized about this and using a fork.  Seriously I could dive into this pan.

Why do I love thee so???  Let me count the ways...   Pepperoni, sausage, beef, bacon and ooey gooey cheese.  I love it for so many reasons, it tastes unbelievable and it can be on the table in half an hour!

This bread is super simple, great for a party, and can be prepped ahead of time if you're in a pinch when party planning. It's a great touch on a holiday table as an alternative to traditional rolls.

    Pepperoni Pizza Skillet Dip

Pizza Dip Skillet is a fabulously dippable way to eat your pizza Pepperoni Pizza Skillet Dip

Pizza Dip Skillet is a fabulously dippable way to eat your pizza. This easy recipe starts with a scrumptious meat sauce that is topped with a layer of ooey gooey cheese and a ring of garlic-Parmesan bread for dipping. It all comes together in one skillet in only 30 minutes!

Easy dinners are the theme most nights around here, but when it's Sunday football and you just got new TV, there is nothing better than a simple recipe for a game day dinner. So, that is exactly what I came up with...

When we re craving pizza, we love this homemade version topped with pepperoni and all the ooey gooey cheese you can imagine. For us that is fun and dippable!

So we came home from Disneyland to a blown out TV. Mind you we bought it in 2006 so it really wasn't that big a surprise. LOL. We have been eyeing this crazy awesome TV at Costco for over a year. Well, when that TV blew out we knew exactly what we wanted.

So, after we set up the TV Chad declared that a football game would look amazing on the screen and he was right. So, while Chad and Munchkin were watching the game together I decided to whip up  a non-traditional pizza for dinner.

It all starts with a flavorful meat sauce that is topped with pepperoni and a layer of fresh shredded mozzarella cheese. A ring of scrumptious garlic-Parmesan biscuits encircles the pan. It is easy and absolutely delicious.

This pizza dip skillet is perfect for game day or dinner! It is so easy it comes together in one skillet, in just 30-minutes.

    Enjoy!

With love from our simple kitchen to yours.

7 Layer Mexican Bean Dip is a go to meal in our house - served with tortilla chips or flour tortillas.  It is also served at every party we host and there is never a drop left! It is an excellent make ahead recipe that I love to freeze and pop in the oven when we have company or a party.

Cheesy Fiesta Taco Dip is loaded with layer upon layer of your favorite Mexican flavors and goes from prep to plate in just 30 minutes.  I serve mine with Doritos but this dish goes great with tortilla chips and plain old taco shells too!

    =================================================================
    Pizza Skillet Dip
    SERVES 6-8  |  ACTIVE TIME 20 Min  |  TOTAL TIME 30 Min

1 pound hot Italian sausage, removed from casings
2 cups pizza sauce, (I used 5 Minute Marinara)
8 ounces (2 cups) fresh shredded mozzarella cheese
    1 cup pepperoni slices
2 cans (10 count) biscuits, cut into 1/4's (regular size biscuits)
2 tablespoons STAR garlic flavored olive oil
4 ounces fresh grated Parmesan cheese
    1 tablespoons dried Italian seasoning
    optional fresh cut parsley

    Preheat oven to 450°F.

Brown sausage in a 10" cast iron skillet over medium-high skillet.

Meanwhile: in a large bowl, combine cut biscuits, olive oil, Italian seasoning and Parmesan cheese. Toss with your hands until the biscuits are well coated with all ingredients. (Don't worry if you have left over Parmesan cheese, we will sprinkle that on top later).

Drain any remaining sausage drippings from the pan. Add pizza sauce and stir until combined. Use spoon to even out the sauce.

Sprinkle mozzarella cheese over top, until all the sauce is covered. Place pepperoni in a ring around the outside edge of the pan (You are making a base for the biscuits to sit on). Add remaining pepperoni to the center of the pan.

Place biscuits in a ring against the side of the pan (on top of the pepperoni slices). Sprinkle any remaining Parmesan cheese from the biscuits over the top of the biscuits. Cover with foil and cook 10-12 minutes or until biscuits are cooked through. If the top is not golden brown, remove foil and place under the boiler 1-2 minutes, or until they biscuits are golden brown and the mozzarella cheese
    is bubbly.

Allow to cool briefly. Sprinkle with fresh parsley.

    Serve and enjoy!

DONNA'S NOTES: I recommend serving this dip with bowls so everyone can have their own serving.

You can use ground beef and 1 tablespoon Italian seasoning in place of the sausage.

You can use frozen dinner rolls in this recipe. Simply thaw 12 regular size rolls. Cut into quarter and proceed with recipe.

You would think that Parmesan, Romano and mozzarella cheeses would be enough to put these fabulous meatballs over the top, but no... I added in fresh rosemary to give them a punch of flavor.

The meatball is delicious on its own, but when you break into it a river of ooey gooey mozzarella cheese runs all over the plate. One bite and you will be singing a chorus of 'ummmms' as you devour these one after the other.

    Cheesy Mozzarella Stuffed Meatballs

Triple Cheesy Mozzarella Stuffed Meatballs feature 3 fabulous cheeses and are so delicious they will knock your socks off. I make a double batch of this simple recipe and freeze half.

    Ingredients

    • 2 pounds 93% lean beef
    • 1 cup Italian seasoned breadcrumbs
    • 1/2 cup Parmesan cheese, fresh grated
    • 1/2 cup Pecorino Romano cheese, fresh grated
    • 1/2 tablespoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon kosher salt
    • 1 tablespoon Italian seasoning
    • 1 tablespoon fresh rosemary, chopped finely
    • 1/2 cup 2% milk
    • 1/4 cup Oven Roasted Tomato Sauce or your choice of a tomato sauce
    • 2 large eggs, lightly beaten
    • 8 ounce block mozzarella cheese, cut into 32 - 1/2" squares (cut into 4 longways and 8 across)

    Instructions

    1. Preheat oven to 400°.  Line 2 baking sheets with parchment paper and set aside.
    2. Place all ingredients in a large bowl, except the mozzarella cheese.  With clean hands, mix ingredients without overworking your meatballs.  Working them too much can cause tough meatballs.
    3. Using a 4 tablespoon scoop, scoop out meat and place on a baking sheet or plate.  After all meatballs have been scooped onto tray, with damp hands roll them into balls.  Place balls back on tray or plate.  One at a time place meatball in the palm of your cupped hand.  Press mozzarella cube into meatball and roll back into a ball.
    4. Place meatballs on baking sheets, not touching.  Bake for 35 minutes, rotating trays half way through cook time.
    5. Remove from oven and place meatballs into your sauce and allow to simmer for 30 minutes.  Some of your mozzarella cheese may have tried to make a run for it.  Just scoop up the meatballs and cook it in the sauce.
    6. Serve and enjoy!
