    Yield: 4 cups

    The Best Ever Simple Sweet and Sour Sauce

    The Best Ever Sweet and Sour Sauce with more flavor than you can wrap your mouth around. This simple recipe is ready in just 15 minutes. What more could you ask for?

    Ingredients

    • 1/4 cup corn starch
    • 1/4 cup water
    • 6 ounces pineapple juice
    • 6 ounces water
    • 1/2 cup brown sugar, packed
    • 1/2 cup granulated sugar
    • 3/4 cups apple cider vinegar
    • 1/2 cup ketchup
    • 1 tablespoon soy sauce

    Instructions

    1. In a small bowl whisk 1/4 cup corn starch and 1/4 cup water until combined. Set aside.
    2. In a medium saucepan, over medium high heat, combine remaining ingredients. Whisk to combine. Bring sauce to a boil, cook for one minute. Add corn starch mixture and cook until thick and shiny, about 5 minutes. Remove from heat. 
    3. Set aside until ready to use.

    This skillet is so insanely good we can't stop eating it.  I have made it so many times that I don't need the recipe.  So, one night I was talking to my Mom while I was preparing it and she asked me how I come up with all these recipes.
    I told her everything inspires me!  Just a conversation about old family photos was all the inspiration that this Pineapple Chicken Skillet with Broccoli took.

    After reminiscing over old family travel pictures of my husband’s grandparents, we started talking about the places we would like to visit to make our own family travel memories.  Where would you like to travel?  Hawaii is at the top of our list.  Can you believe I have never been to Hawaii?  Seriously.  When Hawaii came into the conversation, I started having a craving for Hawaiian-inspired flavors.

    The next day I started thinking of ways to incorporate flavors that I associate with Hawaii into a fabulous chicken skillet.  The mixture of pineapple chunks and juice with soy sauce, honey, ginger, and garlic makes my taste buds sing.  Perhaps a nod to my love of Asian flavor as well, this Pineapple Chicken Skillet with Broccoli certainly satisfies that desire for island flavors.  I like to serve this over Simple Chicken Rice, but honestly, I love to eat it alone most often.

      Pineapple Chicken Skillet with Broccoli

      Pineapple Chicken Skillet with Broccoli is loaded with your favorite summer flavors and ready in just 30 minutes! The mixture of pineapple chunks and juice with Hawaiian flavors will make your taste buds sing.

      Ingredients

      • 1 pound boneless skinless chicken breasts
      • 1 tablespoon extra virgin olive oil
      • 1 (20-oz) can pineapple chunks in pineapple juice
      • 2 tablespoons low sodium soy sauce
      • 2 tablespoons honey
      • 2 teaspoons fresh ginger, minced
      • 2 teaspoons fresh garlic, minced
      • 1 (14-oz) bag frozen broccoli florets
      • 1 bell pepper, I used 1/2 red, 1/2 orange
      • 1/4 teaspoon kosher salt
      • 1/2 teaspoon fresh ground black pepper
      • 1 teaspoon corn starch
      • scallions and sesame seeds to garnish, optional

      Instructions

      1. Warm a large skillet over medium-high heat. Meanwhile, cut the chicken into thin strips. Add oil to skillet and then chicken. Sprinkle with salt and pepper. Cook until browned, then flip chicken and cook chicken until done, approximately 5 minutes total.
      2. In the meantime, combine pineapple chunks and juice, soy sauce, honey, ginger, and garlic in a medium bowl. Whisk to combine. Set aside until chicken is cooked. Slice peppers into strips.
      3. Once the chicken is cooked, add the pineapple mixture to the pan and turn it to high heat. Allow mixture to boil for about 5 minutes. Add broccoli and peppers, stir to combine. Cook until crisp-tender and using a slotted spoon transfer the chicken, vegetables and pineapple to a serving bowl.
      4. Combine cornstarch and 1 tablespoon water in a small bowl, pour into skillet. Whisk to combine and cook until the cornstarch thickens to a syrup-like consistency. Before serving pour the sauce over chicken and vegetables. Optional garnish: sprinkle chopped scallions and sesame seeds over top. Serve and enjoy!

      Helpful Tips to make Asian Noodle Salad :

      • Cut up all the veggies while you're waiting for the pasta water to come to a boil and waiting for the noodles to cook.
      • If making this ahead of time, toss a tablespoon of the dressing with the spaghetti noodles so they don't stick. Wait to add remaining dressing. This will keep your veggies nice and crisp.
      • Mix the dressing ingredients together in a jar. This allows you to store (and transport) the dressing easily if you're making it ahead of time. Plus, then you don't have to dirty another dish.
      • Cut the carrots in long thin strips by using a vegetable peeler. If you want to take a shortcut, buy a bag of match stick carrots.
      • This meal is already pretty healthy but you can take it a step further by using whole wheat spaghetti.

      What you will need to make Asian Noodle Salad :

      • Quality Knives- You have a few veggies to chop up in this recipe and anytime you cut, chop, or slice, good quality knives make it easier and safer. You can help prolong the quality of your knives by honing them regularly.
      • Cutting Board- A big good solid cutting board is a necessity. I have many cutting boards but always come back to this one.
      • 4-quart Stock Pot- Great for soups, roasts, frying, cooking pasta... I use this all the time.

      Asian Pasta Salad

      Asian Pasta Salad is a fabulous fusion pasta salad recipe loaded with colorful vegetables and tossed in an unforgettable Asian inspired dressing.
      prep time: 10 MINScook time: 10 MINStotal time: 20 mins

      ingredients:

      • 8 ounces uncooked spaghetti
      • 4 carrots peeled, sliced thin
      • 10 mini sweet peppers (red and yellow), sliced
      • 1 cup edamame, cooked
      • 1 1/2 cups purple cabbage, sliced
      • 1 1/2 cups green cabbage, sliced
      • 3 green onions, chopped
      • 1/2 cup cilantro, chopped
      • 1 cup peanuts, chopped
      • sesame seeds

      Dressing

      • 1/3 cup olive oil
      • 1/3 cup soy sauce
      • 5 tablespoons brown sugar
      • 3 tablespoons rice vinegar
      • 2 tablespoons fresh ginger (or 2 teaspoons ground ginger)
      • 1 tablespoon sesame oil
      • 2 cloves minced garlic (or 1/2 teaspoon garlic powder)

      instructions

      1. Cook spaghetti according to directions on box. Once done, drain and place in a bowl of ice water until cooled. Drain again.
      2. While the pasta cooks, place dressing ingredients together in a jar and shake.
      3. Assemble by placing spaghetti in a bowl and topping with all the veggies, cilantro, peanuts, and sesame seeds. Pour the dressing on just before serving and toss until evenly coated. Serve immediately.

      If making ahead of time, toss the spaghetti noodles with about a tablespoon of the dressing before layering on the veggies.

      Honey garlic sauce coats the veggies and chicken and as it bakes the sauce caramelizes into this sticky, sweet, glaze that is absolutely amazing.

      Helpful Tips to make One-Pan Honey Garlic Chicken and Veggies:

      • Make your honey garlic sauce ahead of time. The sauce has to be cooked in a saucepan until it thickens up a bit. If you make it ahead of time you can keep it in your refrigerator and just warm it up slightly before adding it to your chicken and veggies. 
      • Line your baking sheet! You can simple grease it if you like but if you line the baking sheet with parchment paper it makes clean-up so much faster!
      • If you don’t want to use chicken tenders you can substitute chicken breasts, just cut your chicken breast into 1-inch thick strips, or cubes, so it cooks more quickly.
      • I used some of my favorite veggies but you can use anything you like. Just remember the firmer the vegetable the longer it takes to cook in the oven so you will want to cut those veggies into thinner pieces so they will cook through in 15 minutes.

      What you will need to make One-Pan Honey Garlic Chicken and Veggies:

      • Sheet Pan Behind every one-pan meal is a good sheet pan. This the one I use!
      • Parchment paper Line your sheet pan with parchment paper and save yourself some time on clean-up!
      • Zester This is my favorite tool for grating ginger root.

      One-Pan Honey Garlic Chicken and Veggies

      One-Pan Honey Garlic Chicken and Veggies is an easy chicken dinner recipe for busy weeknights. Broccoli, carrots, snow peas, and chicken are coated in a sweet honey garlic sauce and baked on a sheet pan for a one-pan chicken dinner you don’t want to miss!
      prep time: 10 minscook time: 35 minstotal time: 45 mins

      Ingredients

      • 2 pounds Chicken Tenders
      • 8 ounces Baby Carrots, sliced in half lengthwise
      • 4 cups Broccoli Florets, sliced in half
      • 2 cups Snow Peas
      • 1 teaspoon Sesame Seeds , optional
      • 1 1/2 cups Honey Garlic Sauce
      Honey Garlic Sauce
      • 1/2 cup Brown Sugar, packed
      • 4 teaspoons Garlic minced
      • 1 tsp Fresh Ginger, grated
      • 1/2 teaspoon Onion Powder
      • 1/4 cup Soy Sauce
      • 4 tablespoons Honey
      • 2 cups Water, set aside 1/2 cup for cornstarch mixture
      • 3 tablespoon Cornstarch

      Instructions

      1. Preheat oven to 425 degrees F.
      2. Place the chicken tenders on a lined baking sheet and place the vegetables around them. Make sure to crowd the vegetables on the pan as they will shrink as they cook. 
      3. Pour 3/4 - 1 cup of the honey garlic sauce over the sheet pan using tongs to lightly toss the ingredients in the sauce until they are coated. 
      4. Place the pan in the oven and bake for 15 minutes or until the chicken is cooked through.
      5. Once it has finished baking remove the pan from the oven and add a bit more honey garlic sauce to the chicken and vegetables.
      6. Sprinkle with sesame seeds. (optional)
      7. Serve immediately.
      Honey Garlic Sauce
      1. In a medium saucepan combine brown sugar, garlic, ginger, onion powder, soy sauce, honey, and 1 1/2 cups of water.  Cook over medium high heat until it comes to a boil, whisking constantly. 
      2. In a small bowl combine cornstarch and the remaining 1/2 cup of water. Whisk them together and then slowly pour the cornstarch mixture into the sauce whisking constantly.
      3. Continue to cook for about 10 minutes or until sauce thickens to a point where it will coat the back of a spoon.
      4. Remove from heat and use immediately or let cool and then store in an airtight container in the refrigerator for up to 1 week.

      COOK'S NOTE

      1. The amount of vegetables needed will vary depending on the size of your baking sheet. Vegetables shrink as they bake so make sure to pack your veggies onto the sheet pan (in a single layer) to make sure you have enough.

      Move over PF Changs! Who here loves Chinese take-out style meals?  *raises hand frantically*  I love all the bold flavors, great sauces, and how quickly things cook!  One thing I don’t like though, is how hectic it can be to cook take-out style meals at home.  The nature of a stir fry is that things cook really quickly, which means you have to have every component in the recipe ready to go… and things can STILL get stressful right?

      Hey guys, it’s Amanda from The Chunky Chef.  I love being a contributor here on TSRI, and will be here sharing some of my favorite recipes each month!  This meal has been in my family’s rotation for a while now, and I just knew I had to share it with all of you!

      The main thing I love so much about this Mongolian beef recipe is that unlike, some slow cooker meals, it’s made entirely in the crock pot, with no extra steps to take.  No browning the meat, no broiling… just adding all the ingredients, turning on the slow cooker and walking away.  Simply amazing.

      • Slice your flank steak against the grain.  As you’re looking at the beef, you’ll see lines, like the grain on a piece of wood.  You want to slice it across those lines, not alongside them.  Doing this ensures an incredibly tender piece of beef.
      • The carrots are optional, but add a great texture!
      • Add the Sriracha to your tastes.  I like this recipe to have a little heat to balance out the sweetness.
      • To make this a complete meal, add some steamed broccoli!

      Slow Cooker Mongolian Beef

      Slow Cooker Mongolian Beef recipe is the easiest way to make Mongolian Beef! Perfectly tender beef in a silky ginger soy glaze, with great sweet and spicy flavors!
      prep time: 10 MINScook time: 2 hourtotal time: 2 hours and 10 mins

      Ingredients

      • 1-1/2 pounds thinly sliced flank steak (1/4 inch thick)
      • 1/4 cup cornstarch
      • 1 tablespoon vegetable oil (or other light flavored oil)
      • 3-4 cloves garlic, minced
      • 2 teaspoons fresh ginger, minced
      • 3/4 cup water
      • 3/4 cup reduced sodium soy sauce
      • 3/4 cup light brown sugar, packed
      • 1 - 2 teaspoons Sriracha sauce (can substitute with red pepper flakes or cayenne instead - in whatever amount you prefer)
      • 1 cup shredded carrots
      • 4-6 green onions, thinly sliced
      • sesame seeds, for garnish

      Instructions

      1. Add sliced flank steak and cornstarch to a large resealable plastic bag.  Close and shake to coat well.
      2. To the bottom of slow cooker, add vegetable oil, garlic, ginger, water, soy sauce, brown sugar and Sriracha sauce.  Stir to combine.
      3. Add in coated flank steak and carrots and stir again until everything is coated in the sauce.
      4. Cover and cook on HIGH for 2-3 hours or on LOW for 4-6 hours, until steak is fully cooked and tender.
      5. Serve over white rice and garnish with green onions and sesame seeds if desired.

      Helpful Tips to make One Pan Baked Chicken Teriyaki:

      • I like to make this recipe with bone-in/skin-on chicken thighs. You can also make it with chicken breast or boneless/skinless chicken thighs. 
      • You can add less or more garlic, also, if you don’t have fresh garlic on hand, you can use 1 tablespoon of garlic powder.
      • Always make sure your chicken is at room temperature, if you put cold chicken in the oven, it will become tough.
      • Using fresh ginger will add amazing flavor to the sauce and the overall dish. You can use ground ginger if you don’t have fresh on hand.
      • Use your favorite veggies to make this dish, I like broccoli, bell pepper, carrots and red onion.

      One Pan Baked Chicken Teriyaki

      One Pan Baked Chicken Teriyaki is an easy weeknight meal that is full of flavor. Baked with lots of veggies that you can use as a side dish.
      prep time: 60 minscook time: 40 minstotal time: 100 mins

      Ingredients

      • 4-6 bone-in, skin-on chicken thighs
      • 1 large red onion, chopped
      • 2-3 cups ounces broccoli florets
      • 3 carrots, cut diagonally in 1-inch-thick slices
      • 1 green bell pepper, chopped
      • 2 tablespoon olive oil
      • ½ teaspoon red pepper flakes
      • ½ teaspoon salt
      Teriyaki Sauce
      • 1 cup water
      • 1/2 cup reduced sodium soy sauce
      • 1/3 cup light brown sugar, packed
      • 1 tablespoon sesame oil
      • 1 tablespoon minced garlic
      • 1 tablespoon freshly grated ginger
      • 3 tablespoons honey
      • 1 tablespoon cornstarch

      Instructions

      1. Preheat oven to 400 degrees F. 
      2. Lightly coat a 9×13 baking dish with nonstick spray.
      3. To make the teriyaki sauce:  add all the sauce ingredients except cornstarch, to a small saucepan over medium heat, whisk to combine and bring it to a simmer. 
      4. Mix cornstarch with 1 tablespoon of water until fully combined. Stir in cornstarch mixture into the sauce, and simmer until thickened enough to coat the back of a spoon, about 2 minutes. Let the sauce cool to room temperature. Reserve 1/2 cup and set aside.
      5. Add chicken to a gallon size Ziploc bag or to a large tupperware bowl. Add chicken and add the remaining sauce. Marinate for at least 30 minutes or overnight, turning the bag occasionally to make sure the chicken marinates uniformly. 
      6. When ready to cook, drain the chicken from the sauce. Do not discard the sauce yet.
      7. Add the chopped veggies to a large bowl, add the olive oil, red pepper flakes and salt. Stir to combine.
      8. Add the veggies to the prepared baking pan. Top with the chicken and the remaining teriyaki sauce.
      9. Place into oven and roast until completely cooked,  about 25-30 minutes. With an internal temperature of 165 degrees F.
      10. Check the chicken and turn on the broiler for the last 5 minutes, for a crispier top on the chicken.
      11. Serve immediately over rice if desired, with veggies on the side, garnished with sesame seeds and green onion.
