Restaurant-Style Garden Fresh Salsa

This Restaurant-Style Garden Fresh Salsa is absolutely my favorite fresh salsa ever! This easy recipe is made with fresh vegetables and a secret ingredient to give it a a deeper flavor that truly makes it amazing. It is an incredibly simple salsa with little chopping. Just toss all the ingredients in your food processor and pulse until it reaches your desired consistency.

Salsa is a staple here in the Southwest. This is my favorite kind. We call it "Just North of the Border Salsa". Living in Arizona we truly are just 'North of the Border', so it was fitting.

I personally like a more fresh tasting salsa, one that I can eat without constantly dabbing my eyes and nose. Oh and I prefer not to have to take in a gallon of liquids to try to put out the fire (which doesn't work anyway, try a milk based remedy. I like to use a spoon of vanilla ice cream to sooth my taste bud fires).

I have to say that my idea of salsa before I moved to Arizona was laughable. It was a couple of tomatoes with green peppers and onions. Anything hotter than that and I would run.

I think I mentioned before that my family is not really fond of spicy food. My mom never cooked with hot peppers, not even in dried spice form. When my parents came out to visit a few years ago I had made a fantastic Mexican Lasagna.

I toned it down a little, I really couldn't feel any heat at all. My Dad was not happy with it, he looked as if he had just swallowed fire! He about spit out his first bite. So, I kept meals to no hotter than a light sprinkle of finely ground black pepper for the rest of his visit.

But, that gives you an idea of where I started. The fact that I enjoy spice and heat now is pretty remarkable. But, I love it. I do not like things that are just hot for the sake of being hot. I want a flavor profile to back that heat up.

I love peppers so much now I even grown my own. You should try it. Homegrown peppers are amazing! This Restaurant-Style Garden Fresh salsa has it all. It is a medium heat salsa with fresh vegetables and fire roasted tomatoes to add extra depth.

It is so easy with little chopping. Just toss it all in your food processor. It is amazing and you are going to love it!

Restaurant-Style Garden Fresh Salsa

This Restaurant-Style Garden Fresh Salsa is absolutely my favorite fresh salsa ever! This easy recipe is made with fresh vegetables and a secret ingredient to give it a a deeper flavor that truly makes it amazing. It is an incredibly simple salsa with little chopping. Just toss all the ingredients in your food processor and pulse until it reaches your desired consistency.

Ingredients

  • 2 medium Roma tomatoes, rough chopped 
  • 1 (14.5 ounce) can fire roasted diced tomatoes
  • 1/2 large white onion, rough chopped
  • 2 jalapenos, rough chopped
  • 1 tablespoons lime juice
  • 2 cloves garlic
  • 1/2 teaspoon salt (to taste)
  • 1/2 teaspoon fresh ground black pepper
  • small handful cilantro 

Instructions

  1. Combine all ingredients in a food processor or blender. 
  2. Pulse until blended to your liking. If you like chunky pulse for a shorter time. If you prefer a smoother salsa, run blender until pureed.
  3. Serve immediately or serve chilled.
  4. Enjoy!

Rosemary Roasted Onions

Rosemary Roasted Onions are such a simple recipe and the flavor is amazing. Rich, robust, tender, sweet and slightly caramelized, these onions are tossed in a tangy dressing make this a go to side dish that you will be using again and again.

Onions are one of my favorite foods, I could eat them all day. The health benefits are just incredible. As good as they are I bet you are thinking that this dish look amazing, but what do you serve them with?! I made this with the chicken piccata.

It was the perfect compliment to the dish, the flavors are amazing. The onions are caramelized in the oven with the fruity olive oil and the tang of the dijon mustard and the freshness of the lemon really comes through.

These onions are amazing. Truth is I had to reshoot them because they were so good that I ate too many before I took pictures.

This time I made a double batch. Luckily, I am the only onion junkie in the house so I am hoping I can still eat some and have enough left for pictures. Did I mention these are incredible???

It all starts by properly trimming the onion so you can get perfect wedges. I trim off the stem and root ends. Then stand them on their end and cut into wedges.

Whip up this perfectly delicious and simple dressing in a medium bowl (see in this batch I used dried rosemary (1/2 tablespoon) because I ran out of fresh. Whisk until well combined.

Pour the dressing over the onions and toss to coat. Then bake on a baking sheet. It is so easy it just may become your go to side dish.

    Rosemary Roasted Onions

    Rosemary Roasted Onions is such a simple recipe and the flavor is amazing. Rich, robust, tender, sweet and slightly caramelized, these onions are tossed in a tangy dressing make this a go to side dish that you will be using again and again.

    Ingredients

    • 2 medium red onions
    • 1 medium sweet yellow onion
    • 1/4 cup extra virgin olive oil
    • 1 lemon, juiced
    • 1 teaspoon Dijon mustard
    • 3 cloves garlic, minced
    • 2 sprigs fresh rosemary, stems removed and chopped
    • 1 teaspoon kosher salt
    • 1/2 teaspoon freshly ground black pepper 

    Instructions

    1. Preheat oven to 400° F.
    2. Trim onion both the root and stem sides of the onion. Be sure to leave the root intact (cut so that the dried brown roots are cut off and only a white nub remains).
    3. Peel onions. Place the onion with a cut side down on the board and cut into wedges.
    4. Place onions onto a baking pan.  Set aside.
    5. In a medium bowl combine olive oil, lemon juice, mustard, garlic, rosemary, salt and pepper. Whisk until well combined.
    6. Pour the dressing over the onions and toss well (I tried to use spoons, but the hands are the perfect tool for this job).
    7. Bake onions for 30 to 45 minutes, until tender and browned. Toss the onions once during cooking.
    8. Remove from the oven, toss again.
    9. Serve and enjoy!

    Broccoli is my favorite 'healthy' vegetable.  I have to clarify that because I could eat corn and potatoes every day for the rest of my years and be a happy girl.  Munchkin (my 4 year old) and I share a love for broccoli, especially when it is covered in ooey gooey cheese.  I digress.  I would probably eat cardboard if you put enough cheese on it.  Just sayin'!

      The Best Ever Garlic Roasted Broccoli

      Best Ever Garlic Roasted Broccoli is a simple recipe with a deep caramelized flavor unlike any other cooking method. It is tender and flavorful and truly the best roasted broccoli recipe ever!!!
      prep time: 5 minscook time: 25 minstotal time: 30 mins

      Ingredients

      • 1 1/2 pounds fresh broccoli florets
      • 1/2 red onion, sliced
      • 3 garlic cloves, sliced
      • 2 tablespoons extra virgin olive oil
      • 1 teaspoon kosher salt
      • 1 teaspoon fresh ground black pepper

      Instructions

      1. Preheat oven to 450°F.  Line a baking sheet with aluminum foil.
      2. Add broccoli, onions and garlic to pan.  Drizzle with olive oil.  Sprinkle with salt and pepper.  Toss with clean hands, until coated.  Wiggle the pan until broccoli is in a single layer. Bake 20-25 minutes until fork tender.
      3. Serve and enjoy!

      You know growing up the 'traditional' green bean casserole was not a tradition in my house. My mom made a lot of scrumptious side dishes on the holidays but not the oh so popular green bean casserole. When I moved out to Arizona, Chad and I would spend the holidays with his family. Every holiday there was a green bean casserole.

      Let's just say that his family loved it and there was never a bite left.

      Years later the idea of a green bean casserole came back into my mind, but I started thinking about how I could completely revamped the famous semi-homemade version into modern rendition of the green bean casserole that will change your life and the way you do holiday dinners!

      It all starts with that heavenly bacon. After it is fried and set aside, the entire dish is built on the bacon. Starting with the mshrooms and onion sauted in the bacon drippings. Then the cheese sauce is built on top of that. It just gets better and better. We used thawed frozen green beans for convenience, but you can use fresh if they are available. Just blanch them first.

      To finish off this masterpiece, we have opted for crisp bacon for the addictive crunch that you are familiar with, but with so much flavor! This recipe completely redefines green bean casserole. It is sure to be on our Thanksgiving table year after year.

      Helpful Tips to make Cheesy Bacon Green Bean Casserole:

      • You can also use blanched fresh green beans, when available.
      • Shortcut method: bake bacon in the oven until crisp. Cool and crumble. Set aside. Add 4 tablespoons butter to skillet. Once the butter is melted add mushrooms, onions and garlic. Continue with recipe as written above.
      • Gluten-free instructions: Mix 1/4 cup of corn starch with 1/2 cup of milk in a resealable container. Seal and shake the living tar out of it to create a slurry. Omit the flour called for in the recipe. Add the remaining 1 1/2 cups of milk to the recipe. Cook until it starts to bubble. Add the slurry and stir to combine. Proceed with the recipe.

      Cheesy Bacon Green Bean Casserole

      Cheesy Bacon Green Bean Casserole ain't your grandma's recipe! This modern take on the classic recipe features green beans in a rich and creamy bacon mushroom cheese sauce that will change Thanksgiving forever! Cooking from scratch has never been so easy.

      Ingredients

      • 1 pound Jones Dairy Farm Dry Aged Hickory Smoked Bacon, cut into 1/2"-3/4" pieces
      • 8 ounces sliced baby bella (aka crimini) mushrooms
      • 1/2 medium yellow onion, sliced
      • 3 garlic cloves, minced
      • 1/4 cup all-purpose flour *see gluten-free notes
      • 1 teaspoon kosher salt, more to taste
      • 1/2 teaspoon fresh ground black pepper
      • 1-2 pinches red pepper flakes, to taste
      • 2 cups whole milk
      • 1 cup (4 ounces) shredded sharp cheddar cheese
      • 24 ounces frozen green beans, thawed

      Instructions

      How to cook Cheesy Bacon Green Bean Casserole

      1. In a cold large (12") cast iron skillet add bacon. Turn heat to medium and cook until crisp. Stirring occasionally. This will take about 25 minutes. See the shortcut method if you want to make this quicker.
      2. Remove bacon from the skillet with a slotted spoon and place on a paper towel lined plate. Set aside. Pour bacon drippings into a jar to save for later use and return 4 tablespoons bacon drippings to the pan.
      3. Return skillet to medium heat. Add mushrooms, onion and garlic. Cook the vegetables until they are browned, about 5 minutes, stirring occasionally.
      4. Add 2 tablespoons bacon drippings, into the pan (or butter if you are out of bacon drippings). Add flour, salt, pepper, and red pepper flakes. Stir until the flour dissolves into the vegetables. Cook 1 minute to cook out the floury taste.
      5. Add milk and stir to combine. Remove from the heat, add the cheese a handful at a time and stir between each addition. Once the cheese is completely melted into the sauce add green beans and half of the cooked bacon. Stir to combine, cook until green beans are warmed through, about 2 minutes. Top with remaining bacon.
      6. Serve and enjoy!

      Chipotle Copycat Roasted Chili-Corn Salsa is a medium heat, smoky and slightly sweet salsa that is an amazing side dish and the perfect topping to so many of my favorite dishes! This simple recipe even has a shortcut to get it on the table in no time flat.

      I have professed my love for Chipotle Mexican Grill time and time again. I can't help myself. I absolutely adore their food. My absolute favorite thing to order is a burrito salad. And I could eat it every day. I love my burrito bowl filled with Pork Carnitas, pinto beans, fresh salsa, guacamole and this Roasted Chili-Corn Salsa.

      This corn salsa starts with sweet corn, smoky roasted poblano peppers, red onions, jalapeΓ±o peppers and cilantro. It is sweet, spicy, smoky and perfectly tart from the citrus juice. It is amazing on chips, on burritos, salads, tacos... Pretty much on everything. I tend to fix a bowl and eat it as a side with lunch and dinner.

      This dish has a chile pepper that I have never shared with you before. But trust me. You want this pepper in your life. 

      Poblano (pronounced "po-BLAH-no") is a dark green, heart-shaped pepper that is approximately 4 inches long and 2 inches wide.They are a mild variety of chili pepper and are common in Mexican dishes such as chiles rellenos. They are absolutely amazing and a great starter chile for people who are hesitant about cooking with chiles.

      If you do not want to spend the time roasting the poblanos, substitute fire roasted green chiles. It makes for an even simpler recipe.

      The roasted poblanos really brings this dish together. The smoky poblanos, with the sweet corn and spicy jalapenos come together to create an amazing dish that you will have on your table again and again.

      Chipotle Copycat Roasted Chili-Corn Salsa
      SERVES 12 | ACTIVE TIME 25 MIN | TOTAL TIME 25 MIN











      2 poblano chile peppers
      4 cups frozen white sweet corn, defrosted and drained
      1/2 red onion, finely diced
      1/2 cup fresh cilantro, chopped
      2 medium jalapenos, finely diced
      1 tablespoon fresh lime juice
      1 tablespoon fresh lemon juice
      1/2 teaspoon kosher salt

      Place an oven rack at the upper top position and preheat the oven to 425°F. Line a baking sheet with aluminum foil.

      Place poblano peppers on the prepared baking sheet. Bake until the peppers are totally blistered and browned, about 15 to 20 minutes. Turn peppers every 5 minutes to roast all sides. Transfer the peppers to a bowl and cover with plastic wrap for 5 minutes. Peel the poblanos with your fingers. Careful the peppers are still hot. Cut them in half and remove seeds. Chop poblanos and place in a medium bowl with the remaining ingredients. Toss to combine. Serve and enjoy.

      DONNA'S NOTES:  This is a great make-ahead dish, it gets even better the next day.

      You can substitute fresh cooked corn when it is in season.

      SHORTCUT: You can substitute 1 (4 ounce) can fire roasted diced green chiles for the poblanos. It will save you some time and it tastes amazing!

      Corn is one of my favorite foods. Well, actually the entire family would concur.

      With Chad being from Iowa, I am sure growing up with corn around you really lent itself to his love of corn. Me on the other hand. I grew up in an Italian family and we had corn with turkey roasts and pot roast.

      It was always accompanied by mashed potatoes and to this day mashed potatoes and corn remind me of home.

      Of course growing up my mom never cooked anything like this divine creation. hahaha I bet you are wondering how on earth I put this recipe together.

      Well, I have a great story to share about the marriage of corn and bacon and how it came to be but the bottom line is that this is absolutely life changing and you have to try it.

      The corn on the cob is wrapped with thin cut bacon so it can get nice and crispy. Then it's sprinkled with brown sugar.

      • We also love to add a dash of cayenne pepper to the brown sugar.  The best way to do that is to place brown sugar in a small dish.  Add the desired amount of cayenne pepper and mix. Then apply to the bacon.

      Candied Bacon Wrapped Oven Roasted Corn

      The best corn recipe you have ever tasted, Candied-Bacon Wrapped Corn is what dreams are made of! It all starts with tender sweet corn wrapped in crisp smoky bacon and topped with caramelized brown sugar. It is sweet smoky and utterly, gloriously delicious!
      prep time: 10 MINScook time: 45 MINStotal time: 55 mins

      Ingredients

      • 8 ears corn, cleaned 
      • 16 slices thin cut bacon (about 1 pound)
      • 1/2 cup light brown sugar 

      Instructions

      1. Preheat oven to 400°F.  Line a baking sheet with aluminum foil.
      2. Place corn on the prepared baking sheet. Wrap each ear of corn with 2 slices of bacon, starting at one end, pull gently and spin the corn as you wrap it with the bacon. Start the second slice where the first slice ends. Place the end of the bacon on the bottom as you set it on the baking sheet; this will help hold it in place.
      3. Starting with the bottom side of the corn (where the bacon ends), press about one tablespoon brown sugar onto each ear of corn. Spinning as you press until all of the bacon is lightly coated with brown sugar. Place the corn back on the baking sheet with the end of the strips of bacon on the bottom; this will help keep it in place.
      4. Bake for 40-45 minutes, until the bacon, is crisp cooked. Carefully rotate corn 1/4 turn every 10 minutes, using tongs, try not to knock the bacon off. If the bacon comes off, just use the tongs to wrap it back on the corn.
      5. Remove from oven. 
      6. Serve and enjoy!
