This skillet is so insanely good we can't stop eating it.  I have made it so many times that I don't need the recipe.  So, one night I was talking to my Mom while I was preparing it and she asked me how I come up with all these recipes.
I told her everything inspires me!  Just a conversation about old family photos was all the inspiration that this Pineapple Chicken Skillet with Broccoli took.

After reminiscing over old family travel pictures of my husband’s grandparents, we started talking about the places we would like to visit to make our own family travel memories.  Where would you like to travel?  Hawaii is at the top of our list.  Can you believe I have never been to Hawaii?  Seriously.  When Hawaii came into the conversation, I started having a craving for Hawaiian-inspired flavors.

The next day I started thinking of ways to incorporate flavors that I associate with Hawaii into a fabulous chicken skillet.  The mixture of pineapple chunks and juice with soy sauce, honey, ginger, and garlic makes my taste buds sing.  Perhaps a nod to my love of Asian flavor as well, this Pineapple Chicken Skillet with Broccoli certainly satisfies that desire for island flavors.  I like to serve this over Simple Chicken Rice, but honestly, I love to eat it alone most often.

    Pineapple Chicken Skillet with Broccoli

    Pineapple Chicken Skillet with Broccoli is loaded with your favorite summer flavors and ready in just 30 minutes! The mixture of pineapple chunks and juice with Hawaiian flavors will make your taste buds sing.

    Ingredients

    • 1 pound boneless skinless chicken breasts
    • 1 tablespoon extra virgin olive oil
    • 1 (20-oz) can pineapple chunks in pineapple juice
    • 2 tablespoons low sodium soy sauce
    • 2 tablespoons honey
    • 2 teaspoons fresh ginger, minced
    • 2 teaspoons fresh garlic, minced
    • 1 (14-oz) bag frozen broccoli florets
    • 1 bell pepper, I used 1/2 red, 1/2 orange
    • 1/4 teaspoon kosher salt
    • 1/2 teaspoon fresh ground black pepper
    • 1 teaspoon corn starch
    • scallions and sesame seeds to garnish, optional

    Instructions

    1. Warm a large skillet over medium-high heat. Meanwhile, cut the chicken into thin strips. Add oil to skillet and then chicken. Sprinkle with salt and pepper. Cook until browned, then flip chicken and cook chicken until done, approximately 5 minutes total.
    2. In the meantime, combine pineapple chunks and juice, soy sauce, honey, ginger, and garlic in a medium bowl. Whisk to combine. Set aside until chicken is cooked. Slice peppers into strips.
    3. Once the chicken is cooked, add the pineapple mixture to the pan and turn it to high heat. Allow mixture to boil for about 5 minutes. Add broccoli and peppers, stir to combine. Cook until crisp-tender and using a slotted spoon transfer the chicken, vegetables and pineapple to a serving bowl.
    4. Combine cornstarch and 1 tablespoon water in a small bowl, pour into skillet. Whisk to combine and cook until the cornstarch thickens to a syrup-like consistency. Before serving pour the sauce over chicken and vegetables. Optional garnish: sprinkle chopped scallions and sesame seeds over top. Serve and enjoy!

    Broccoli is my favorite 'healthy' vegetable.  I have to clarify that because I could eat corn and potatoes every day for the rest of my years and be a happy girl.  Munchkin (my 4 year old) and I share a love for broccoli, especially when it is covered in ooey gooey cheese.  I digress.  I would probably eat cardboard if you put enough cheese on it.  Just sayin'!

    I really love roasted vegetables. I love the deep caramelized flavor that roasting lends to veggies! he simple preparation really rocks my world!       The Best Ever Garlic Roasted Broccoli

      Best Ever Garlic Roasted Broccoli is a simple recipe with a deep caramelized flavor unlike any other cooking method. It is tender and flavorful and truly the best roasted broccoli recipe ever!!!
      prep time: 5 minscook time: 25 minstotal time: 30 mins

      Ingredients

      • 1 1/2 pounds fresh broccoli florets
      • 1/2 red onion, sliced
      • 3 garlic cloves, sliced
      • 2 tablespoons extra virgin olive oil
      • 1 teaspoon kosher salt
      • 1 teaspoon fresh ground black pepper

      Instructions

      1. Preheat oven to 450°F.  Line a baking sheet with aluminum foil.
      2. Add broccoli, onions and garlic to pan.  Drizzle with olive oil.  Sprinkle with salt and pepper.  Toss with clean hands, until coated.  Wiggle the pan until broccoli is in a single layer. Bake 20-25 minutes until fork tender.
      3. Serve and enjoy!

      Hello friends! It’s Melanie again from Garnish & Glaze. I'm originally from St. Louis where Panera Bread Company began. There, it's actually called St. Louis Bread Co. It was one of my very favorite places to eat growing up. My favorite thing to get was a "you pick two"- half a Frontega Chicken Sandwich and a side of broccoli cheese soup.

      All you have to do for this soup is chop and cook up some onions, celery, broccoli, and carrots, add some cream and broth. At the end, just stir in some sharp cheddar cheese (extra sharp for a stronger flavor) and you’re done. Serve with some fresh crusty bread and you've got a delicious comforting meal.

      HELPFUL TIPS TO MAKE PANERA COPYCAT BROCCOLI CHEEDDAR SOUP:

      • Cut the broccoli in small florets. This makes them easier to eat and faster to cook. 
      • Turn off the heat before adding the cheese. The soup was simmering so it was plenty hot to melt the cheese. Cooking the cheese too long creates a grainy soup.
      • Since this is a thick soup, it’s perfect for serving in a bread bowl. Plus, it’s adds an extra level of comfort.

      WHAT YOU WILL NEED TO MAKE PANERA COPYCAT BROCCOLI CHEESE SOUP:

      • 4-quart Stock Pot- Great for soups, roasts, frying... I use this all the time.
      • Ladle- This is necessary for dishing up soup. Like, how can you even serve soup without one?
      • Cheese Grater- As much as I love buying shredded cheese because I'm lazy, fresh grated cheese melts down so much better and creates a smoother soup.

      Panera Copycat Broccoli Cheddar Soup 
      SERVES 6  |  PREP TIME 10 Min  |  COOK TIME  30 Min

      2 tablespoons butter
      1 stalk celery, diced
      1/2 onion, diced
      1/4 cup all-purpose flour
      3 cups half-and-half cream
      2 cups chicken broth
      3 cups broccoli florets, chopped
      1 cup carrots, shredded
      2 cups extra sharp cheddar cheese, shredded
      1/4 teaspoon nutmeg
      1 teaspoon salt
      1/2 teaspoon fresh cracked pepper

      Melt butter in a large pot over medium heat. Add onions and celery and cook until tender. Mix in the flour and cook for 2-3 minutes while constantly stirring. Mix in the cream a little at a time and then add in the chicken broth. Bring to a simmer on low for 20 minutes.

      Add the broccoli florets and simmer for 7 minutes and then add the carrots and continue to simmer for 3 more minutes. Turn off the heat and mix in the cheese and seasonings until melted and smooth.

      Serve soup in a bread bowl or with a slice of crusty bread.

      Finding something healthy that my 6 year old will eat becomes increasingly difficult each week.  I have found that cute, bite sized food is perfect for her.  But, every day is different.  She loves broccoli, kidney beans and rice.  So, I am trying to venture out and create variations of her favorites that we will both love.

      I love love love these Broccoli and Cheese Quinoa Bites.  They are loaded with vegetables and healthy protein and are absolutely delicious.  What's even better is that they freeze fabulously.  I make a batch of these and freeze them.  Then I can defrost them on the day I wish to serve them or pop them in the oven or microwave frozen.

      So, what did Munchkin think of these???  She was sneaking them off the plate and running into the other room to eat them.  A chorus of "mmmm's" trailing behind her.  I think that's 2 thumbs up from her.  I joined her in the perfectly popable lunch and devoured at least 6 of them in one sitting.

      Zucchini, broccoli, white beans, egg whites and quinoa are the stars of these little power house bites.  With added cheese for the perfect little toddler lunch or even a fabulous bite sized appetizer for your next girls brunch these are in my permanent toddler lunch rotation and I am sure they will be in yours too!

      Yield: makes 48 mini muffins (about 8 servings)

      Broccoli and Cheese Quinoa Power Bites

      Broccoli and Cheese Quinoa Power Bites are loaded with vegetables and healthy protein. Perfect for lunch and my daughter has loved them since she was 3. With this easy recipe you will be making them again and again.

      Ingredients

      • 2 cups cooked quinoa
      • 8 egg whites
      • 1 zucchini, shredded (about 1 cup)
      • 1 (15.25 ounce) can white beans (drained and rinsed)
      • 2 cups finely chopped broccoli, frozen (defrosted)
      • 2 cups shredded mild cheddar cheese
      • 1 teaspoon garlic powder
      • 1/2 teaspoon onion powder
      • cooking spray

      Instructions

      1. Preheat oven to 350°F.  Prepare mini muffin pan with cooking spray.
      2. In a large mixing bowl combine ingredients and mix to combine.   Using a 1 tablespoon scoop, add 1 heaping scoop of mixture into each baking cup.
      3. Bake approximately 20 minutes until edges are golden brown.
      4. Let cool for 5 minutes.  Remove from pan and serve.

      Several years ago we got together with Chad's relatives for a family reunion.  A quaint gathering at my mother in law's house to spent time together and enjoy each others company while we ate and played.

      Chad's family from California drove in and brought a few dishes with them.  I remember the first time I saw it...  Fresh broccoli with dressing, onions and pine nuts.  I had never seen such a thing and dove right in.

      Oh it was a good thing I did.  It was pure heaven.  I asked his aunt Karen and his cousin Shelly what this divine creation was.  Broccoli Salad!  Who knew?  Well after about 6 bowls I asked for the recipe.

      To be honest I never wrote it down but I have remembered that salad for almost 7 years now.  Once summer was upon us I knew I needed to create my own broccoli salad and I did.  It is as amazing as I remember.

      The combination of fresh broccoli, bacon, plump raisins, red onion and roasted pine nuts create the most amazing summer salad yet.  The sweet and creamy dressing really makes this the perfect summer side!

      To be honest, no one in my house was interested in eating it.  So...  I may have enjoyed this salad for lunch and dinner for almost a week!  Oh my word it is amazing.

      • Blanching the broccoli does take a few minutes but it is so worth it!
      • For a thicker dressing you can omit the lemon juice.
      • If you don't prefer pine nuts you can use chopped pecans or walnuts.

      The Best Ever Broccoli Salad

      The Best Ever Broccoli Salad is a simple recipe combining broccoli, bacon, raisins, onion and nuts. They come together in the most amazing summer salad yet. The sweet and creamy dressing really makes this the perfect summer side that you won't be able to get enough of!

      Ingredients

      • 3 pounds fresh broccoli florets, washed
      • 1 cup bacon crumbles
      • 1 cup golden raisins
      • 1 cup toasted pine nuts (or your favorite nut)
      • 3/4 cup mayonnaise
      • 1/4 cup sour cream
      • 1/4 cup granulated sugar
      • 2 tablespoons fresh lemon juice
      • 1/2 teaspoon kosher salt
      • 1/2 teaspoon fresh ground black pepper
      • 1/2 medium red onion, diced

      Instructions

      1. Bring a large pot of water to a boil.  Add broccoli and cook for 30 seconds.  Drain water and rinse with ice cold water or place broccoli in an ice bath.  Drain and set aside.
      2. Reserve a small handful of bacon, raisins and pine nuts for garnish.
      3. In a medium bowl combine mayonnaise, sour cream, sugar, lemon juice, salt and pepper.  Whisk to combine. Set aside.
      4. Place broccoli, onion and remaining raisins in a large bowl.  Pour dressing over top.  Toss to coat.  Chill.
      5. When ready to serve add nuts and bacon and toss well.  Garnish with reserved bacon, raisins and pine nuts.  Serve and enjoy!

      DONNA'S NOTES

      1. Broccoli is even better if you blanch it first (boil quickly and then chill), but you can make this recipe with fresh broccoli too.
      2. If you prefer your salad crisper:  add onions and raisins to dressing and chill until ready to serve.  When serving assemble salad as instructed above.
