Cheesy Beef Enchilada Dip

Cheesy Beef Enchilada Dip is bursting with mouthwatering Mexican flavors! It is rich, delicious and loaded with ooey gooey cheese. This simple recipe comes together in just 20 minutes and will be the star of your table (dinner or game day)!

Well, any reason to throw a get together with our friends and family and I am in. We are so excited to to partner with Albertsons on this fabulous game day recipe. My daughter has been on a Mexican food kick so when I started thinking about game day food, she and I took a stroll to our Albertsons across the street to figure out what we were going to make.

We were looking to spice up our game day with some fabulous flavors, so we stopped over in the international aisle to check out the Old El Paso™ products. I love enchiladas and knew that a cheesy beef enchilada dip would be a huge game day hit! Then we headed over to the produce section to grab some veggies to whip together some pico de gallo to serve on top of the dip for some freshness.

Speaking of which... Oh my gosh! Did you see the game last week? I was on the edge of my seat screaming. Wow, what a crazy game! Larry, you got it! What a nail biter between 2 amazing teams. I live in Phoenix and the whole town is excited for the Big Game coming up. Just a one more playoff game and we are in.

Even long before I was a fan, I always watched the big game. You know, even if it is just for the commercials I think everyone loves it. The game has been hosted here in Arizona several times in the past few years. I think it is the weather. LOL.

Chad and I used to enjoy a Mexican feast every year with fajitas as the star, but now we have expanded out feasts and our company. This Cheesy Beef Enchilada Dip will certainly be the star of the show this year. A heavenly dip topped with tons of ooey gooey cheese and smoky beef enchilada filling is sure to wake up your senses. As if that wasn't enough, we topped it with some fresh pico de gallo for an added fresh flavor. All together it makes an incredibly easy, cheesy dip that is sure to disappear from your game day table! Chad couldn't keep his hands off it and I am sure you are going to love it too!

Cheesy Beef Enchilada Dip

SERVES 6  |  ACTIVE TIME 20 Min  |  TOTAL TIME 20 Min


1 pound lean ground beef
1 (10 ounce) can Old El Paso Enchilada Sauce-Medium Red
1 teaspoon garlic powder
1/2 teaspoon onion powder
salt to taste (I added 1/4 teaspoon)
4 ounces Colby Jack cheese, shredded (about 1 cup)
Optional garnish: fresh pico de gallo or salsa 

Cook ground beef in an oven safe medium skillet over medium-high heat until cooked through. Stir occasionally. Add garlic powder and onion powder once you see beef drippings in the pan. Break up beef with a wooden spoon as you go. Add enchilada sauce. Stir to combine. Bring to a boil and remove from heat. Taste for flavor. Add salt as necessary, it should not need much if any.

Sprinkle with cheese.* Transfer to oven and place under broiler for 2 minutes or until cheese is bubbly and golden brown. Remove from oven. Add a scoop or so of fresh salsa.

Serve and enjoy.

DONNA'S NOTES: I really wanted an incredible presentation for this dish. I knew a heaping skillet would give me just that, so I transferred my enchilada beef mixture to a smaller (6.25") cast iron skillet before I added the cheese. Then topped with cheese and placed on a baking sheet and broiled.

Quick fresh pico de gallo: 2 chopped Roma tomatoes, 1/2 small white onion (diced), 1/2 seeded and deveined jalapeno (minced), chopped cilantro, lime juice, salt and pepper (to taste).  Toss, drain and serve.

It is any surprise that a carb nut like me would love sandwiches too? Well of course not. 

That is one of the things that I loved about New Orleans. They could be in the running for the sandwich capital of America with all those fabulous Po'Boys and Muffalettas! 

Another city that thrills me for its fabulous sandwich representation is Philly. I mean can it really get any better than a Philly cheese steak sandwich?

Once you taste a cheesy Philly Cheese Steak Burger you might think so.

Philly Cheese Steak Burgers

I love Philly Cheese Steak sandwiches. The soft white bread with thinly cut slices of steak, topped with gobs of provolone cheese, and of course, sauteed peppers and onions. My mouth waters even at the thought.

So, for your devouring pleasure I bring you the Cheesy Philly Cheese Steak Burgers.  A fabulous burger loaded with steak flavor and topped with sauteed peppers, caramelized onions and the most delicious smoked provolone cheese sauce you have ever eaten.

Chad and I went nuts over these burgers. This is an amazing gourmet burger recipe, and if you dare to make a double batch of smoked provolone cheese sauce, it is amazing on fries too!

Pro tip for making any gourmet burger recipe:


  • Use a gentle touch - When you are making the patties, be careful not to over work the meat mixture, because too much handling creates tough, dry burgers. 
  • Don't press down - Try to avoid pressing down on the burgers while they are cooking. All this does is squeeze out the juicy goodness from inside the burgers.

    What you will need to make Cheesy Philly Cheesesteak Burgers:
    • Mixing Bowl- I like a variety of mixing bowls and prep bowls and this set has them all.
    • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.

    Philly Cheese Steak Burgers

    Make Philly Cheese Steak Burgers with this gourmet burger recipe! Featuring sauteed peppers and onions plus smoked provolone cheese sauce.

    Ingredients

    Burgers
    • 2 pounds ground sirloin or chuck
    • 1 tablespoon Montreal grill seasoning
    • 1 tablespoon A-1 Steak Sauce
    • 1 teaspoon kosher salt
    • 1 teaspoon fresh ground black pepper
    Toppings
    • 1 large yellow onion
    • 2 bell peppers (I used 1/2 each: red, orange, yellow and green)
    • 2 tablespoons unsalted butter, divided
    • Kosher salt
    • Fresh ground black pepper
    • 4 hamburger buns  (I love these homemade buns)
    • 1 recipe Provolone Cheese Sauce

    Instructions

    1. Combine burger ingredients in a large mixing bowl.  Mix with hands to combine.  Do not over mix.
    2. Form beef into 4 patties, slightly larger than your bun.  Make a slight indentation in the center of the burger to prevent it from doming up in the center. (The indentation will rise as your burger cooks).  Set aside while you prepare the toppings.
    3. Melt 1 tablespoon butter in a large skillet over medium high heat, add onions.  Toss to coat, cover and cook for 20-25 minutes until onions are caramelized, stirring occasionally. Season with salt and pepper, to taste.
    4. Meanwhile in a large skillet over high heat, melt 1 tablespoon butter.  Add sliced peppers, toss to coat.  Cook until peppers are soft.  Season with salt and pepper, to taste.   
    5. Preheat grill to high.
    6. Grill until golden brown and slightly charred (about 3 minutes), turning once (cook for 3 minutes on the other side for medium). Close grill cover.  Try not to press down on your burger with a spatula. It will cause the juices to escape and will create a dry burger!
    7. Toast buns on low or indirect heat.
    8. To dress burger:  Place a burger on toasted bottom bun, top with 1/4 of the sautéed peppers and onions, and a heaping spoonful of smoked provolone cheese sauce. Then, top with a toasted top bun.
    9. Serve and enjoy!

    50/50 Beef Bacon Burger

    Our 50/50 Burger is most definitely the most divine burger you will ever sink your teeth into. Smoky bacon and ground beef come together in the most spectacular way in this simple recipe. The real trick is how to get the bacon in there and after a lot of testing, I finally figured it out. And you are going to flip over this one!

    This burger brings back so many amazing memories. It was the summer of 2011. We were planning the menu for our barbecue for the following weekend when one of our friends launched into a story about this burger place in California that makes a beef and bacon burger. It's called the 50/50 burger. I had never been to the restaurant, but a burger made half of beef and half of bacon sounded like something I needed to taste for myself!

    We got to work on testing the recipe. We tried many different methods of combining the beef bacon to get it just right and then we chopped it up and added it to our ground beef. Magic. Pure magic.

    Let me just say, OH MY GOSH!!! I can not get over this burger. It was absolutely one of my favorite burgers ever, and I am so excited to share it with you.

    The magic of this burger is the Applewood smoked bacon. It adds so much flavor to the burger that you don't need to add anything else.

    Just choose your fixin's. We loved everything from mayonnaise, ketchup, mustard, lettuce, tomato, pickle and onion to just cheese and bacon strips on top.

    No matter how you top it, this burger is one you will remember.

      50/50 Beef Bacon Burgers

      Our 50/50 Burger is most definitely the most divine burger you will ever sink your teeth into. Smoky bacon and ground beef come together in the most spectacular way in this simple recipe. The real trick is how to get the bacon in there and after a lot of testing, I finally figured it out. And you are going to flip over this one!

      Ingredients

      • 1 pound thick cut Applewood smoked bacon 
      • 1 pound 85% lean beef 
      • 4 hamburger buns 
      • butter 
      • 4 slices American cheese 
      • optional toppings: (mayonnaise, ketchup, mustard, lettuce, sliced tomatoes, sliced onions, pickles) 

      Instructions

      1. Cover a cookie sheet with aluminum foil. Place bacon on foil. Make sure the bacon is not touching. Bake for 10-15 minutes until the bacon is partially cooked. Remove and place on paper towels to drain the grease. Once bacon is drained and cool enough to handle, place on cutting board and dice bacon or cut with kitchen shears. 
      2. Preheat grill to high.
      3. In a large bowl combine bacon and beef. Mix until combined. Form mixture into 4 patties, not too thick or they will not cook evenly. Using your thumb, make a slight indentation in center of patties on one side to prevent it from doming up in the center. 
      4. Place patties on the grill, make sure they are not touching.  Grill burgers until golden brown and slightly charred on the first side. Flip and grill for 3 to 5 minutes depending on your preferred doneness. 
        Top with cheese for the last few minutes.
      5. Meanwhile, Brush your buns with butter and toast on the grill. Cook until golden brown with grill marks.
      6. Serve with your favorite toppings.
      7. Enjoy!

      Crockpot Make Ahead Ground Beef

      So you are wondering "How to cook ground beef in a crockpot"? Here's my little short cut for time saving weekday cooking and also several time saving weeknight dinner ideas too! A few weeks ago I posted my Lazy Day Chili recipe and suggested that you use pre-cooked ground beef to cut the preparation time. I received a lot of emails asking how I prepare mine.

      It is not uncommon to see 3 or 4 crockpots going at the same time at my house. Time just seems to get away from us and after having to stop for fast food one too many times I decided to take matters into my own hands.

      I love to make shredded chicken to have it on hand for quick burritos, salads, bbq chicken sandwiches and other easy lunch and dinners.

      Then, I also started making ground beef  ahead so I have plenty of options on a busy night. Like on nights we don't get home from TaeKwonDo until 7:00pm and we didn't get to eat before we left. I grab a package of precooked ground beef out of the freezer and toss it in a pot with spaghetti sauce and boil some pasta. Viola! Dinner in 10 minutes.

      Some of my favorites made with 1 pound precooked ground beef:

      Quick and Easy Sloppy Joes - add 1/2 cup ketchup, 1/4 cup brown sugar, onion and garlic powder and precooked ground beef. Simmer for 10 minutes. Season with salt and pepper.

      Meat Sauce Marinara - combine spaghetti sauce and precooked ground beef in a medium saucepan over medium heat. Prepare pasta. Serve and enjoy!

      Flautas - combine ground beef, 4 ounces cream cheese, 4 ounces salsa, 4 ounces shredded Colby Jack cheese.  Lay out 4 (6 inch flour) tortillas at a time and add 1-2 tablespoons of mixture to the lower 1/3 of the tortilla. Roll the taquito tightly without tearing the tortilla.  Place taquitos seam side down on the baking sheet.  Repeat until the baking sheet is full, being careful not to allow the taquitos to touch.  Spray taquitos with cooking spray and sprinkle with salt.  Bake 15-20 minutes until the tortillas are crisp or the ends begin to brown.

      • Cook up to 5 pounds at a time, adjust cooking time as necessary. I divide in half and freeze in 1 pound (pre-cook weight) portions, as that is the most common amount in the recipes I use.
      • I cook 2 pounds in a 2 quart crockpot.

        What you will need to make Crockpot Make Ahead Ground Beef:

        • Slow Cooker - the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!

        Crockpot Make Ahead Ground Beef

        So you are wondering "How to cook ground beef in a crockpot"? A few weeks ago I posted my Lazy Day Chili recipe and suggested that you use pre-cooked ground beef to cut the preparation time.         prep time: 5 minscook time: 2 hourtotal time: 2 hours and 5 mins

        Ingredients

        • 2 pounds lean ground beef (I use 93% lean)
        • 1 teaspoon garlic powder
        • 1 teaspoon onion powder
        • 1 teaspoon kosher salt

        Instructions

        1. Combine ingredients in a crock pot. Stir and combine. Cook on high 2-3 hours or low 4-6 hours, stirring occasionally. Drain if necessary.
        2. Divide into portions, place in freezer safe resealable zip top bags. Freeze for several months.

        Meat Lover's Pizza Pasta Bake

        Meat Lover’s Pizza Pasta Bake is exactly what I like to make when pizza comes up on a busy weeknight. It’s loaded with ooey gooey cheese, fun twisty pasta, seasoned beef, pepperoni, sausage and bacon… Need I say more? This is our family favorite choice for a weeknight “pizza night” and I am sure it will be yours, too!

        We really love pizza and we could eat it everyday!  Munchkin goes crazy for pizza and she lets us know when we are driving past our favorite pizza place.  As in, "what are you doing?  The pizza is back there!!!".  We all love the meat lovers pizza; loaded with pepperoni, beef, sausage and bacon.  It makes my heart go pitter patter.


        This Meat Lover's Pizza Pasta Bake is my spin on our favorite pizza.  My picky 3 year old squeals when she hears "pizza pasta for dinner" and gobbles it down as quick as I can get it on her plate.  Chad is no different he certainly loves it too!  And Me?  Well, let's just say you don't need to go gettin' all fancy on me and bother takin' it out of the pan.  Just give me a fork!   Just be glad I am civilized about this and using a fork.  Seriously I could dive into this pan.

        Why do I love thee so???  Let me count the ways...   Pepperoni, sausage, beef, bacon and ooey gooey cheese.  I love it for so many reasons, it tastes unbelievable and it can be on the table in half an hour!

        This bread is super simple, great for a party, and can be prepped ahead of time if you're in a pinch when party planning. It's a great touch on a holiday table as an alternative to traditional rolls.

        Meat Lover's Pizza Pasta Bake

        Meat Lover’s Pizza Pasta Bake is exactly what I like to make when pizza comes up on a busy weeknight. It’s loaded with ooey gooey cheese, fun twisty pasta, seasoned beef, pepperoni, sausage and bacon… Need I say more? This is our family favorite choice for a weeknight “pizza night” and I am sure it will be yours, too!
        prep time: 15 minscook time: 15 minstotal time: 30 mins

        Ingredients

        • 8 ounces dried cellentani pasta (or elbow)
        • 20 slices pepperoni
        • 2 cooked Italian sausage links (about 1/2 pound total)
        • 5 slices uncooked bacon
        • 1/2 pound lean ground beef
        • 1 (14.5 ounce) can diced tomatoes
        • 1 (8 ounce) can tomato sauce
        • 1 tablespoon + 1 teaspoon Italian seasoning (divided)
        • 1 teaspoon kosher salt (plus more for pasta water)
        • 1/2 teaspoon fresh ground black pepper
        • 1/2 teaspoon onion powder
        • 1/2 teaspoon garlic powder
        • 8 ounces Italian blend shredded cheese
        • 5 ounces fresh grated Parmesan cheese

        Instructions

        1. Preheat oven to 425°F.
        2. Bring a covered 8 quart pot of water to a boil over high heat. Add pasta and a handful of salt. Cook according to package directions (approximately 7-10 minutes). Remove from heat when pasta is al dente. Drain.
        3. Meanwhile, heat a medium skillet over medium-high heat. Brown ground beef with a sprinkle of kosher salt and a teaspoon of Italian seasoning.
        4. On a microwave safe plate, cook bacon between 4 paper towels in microwave for 4-5 minutes or until cooked. Dice bacon. Set aside. Heat precooked sausage in microwave for 1 minute. Slice and set aside.
        5. In a blender combine diced tomatoes, tomato sauce, 1 tablespoon Italian seasoning, 1 teaspoon kosher salt, pepper, garlic and onion powders. Blend until smooth.
        6. Once pasta is drained, immediately add sauce, 3/4 of both cheeses, 1/2 of pepperoni, 1/2 of sausage, ground beef, and bacon to hot saucepan and stir with pasta until combined.
        7. Pour pasta mixture into a 9” deep pie pan cover top of pasta with remaining sausage and pepperoni. Sprinkle remaining cheese over top and bake for 10 minutes, until cheese is melted and bubbly.
        8. Serve and enjoy!

        You would think that Parmesan, Romano and mozzarella cheeses would be enough to put these fabulous meatballs over the top, but no... I added in fresh rosemary to give them a punch of flavor.

        The meatball is delicious on its own, but when you break into it a river of ooey gooey mozzarella cheese runs all over the plate. One bite and you will be singing a chorus of 'ummmms' as you devour these one after the other.

        The meatballs feature 3 different cheeses and are so delicious I recommend you make the whole recipe.  Yes, it makes 32 meatballs.  They freeze and refrigerate extraordinarily well, so I always make 2 pounds and freeze half.  These amazing meatballs are sure to become a family favorite for you too!

        What you will need to make Cheesy Mozzarella Stuffed Meatballs:


        • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
        • Mesh Strainer – Normally you don’t need to drain the grease when cooking with lean ground beef, but if you do, a mesh strainer will help ensure you don’t lose any of the cooked meat.
        • Heat resistant spoon or spatula – Ideal for cooking, stirring, and serving.

        Yield: makes 32 meatballs

        Cheesy Mozzarella Stuffed Meatballs

        Triple Cheesy Mozzarella Stuffed Meatballs feature 3 fabulous cheeses and are so delicious they will knock your socks off. I make a double batch of this simple recipe and freeze half.

        Ingredients

        • 2 pounds 93% lean beef
        • 1 cup Italian seasoned breadcrumbs
        • 1/2 cup Parmesan cheese, fresh grated
        • 1/2 cup Pecorino Romano cheese, fresh grated
        • 1/2 tablespoon garlic powder
        • 1 teaspoon onion powder
        • 1 teaspoon kosher salt
        • 1 tablespoon Italian seasoning
        • 1 tablespoon fresh rosemary, chopped finely
        • 1/2 cup 2% milk
        • 1/4 cup Oven Roasted Tomato Sauce or your choice of a tomato sauce
        • 2 large eggs, lightly beaten
        • 8 ounce block mozzarella cheese, cut into 32 - 1/2" squares (cut into 4 longways and 8 across)

        Instructions

        1. Preheat oven to 400°.  Line 2 baking sheets with parchment paper and set aside.
        2. Place all ingredients in a large bowl, except the mozzarella cheese.  With clean hands, mix ingredients without overworking your meatballs.  Working them too much can cause tough meatballs.
        3. Using a 4 tablespoon scoop, scoop out meat and place on a baking sheet or plate.  After all meatballs have been scooped onto tray, with damp hands roll them into balls.  Place balls back on tray or plate.  One at a time place meatball in the palm of your cupped hand.  Press mozzarella cube into meatball and roll back into a ball.
        4. Place meatballs on baking sheets, not touching.  Bake for 35 minutes, rotating trays half way through cook time.
        5. Remove from oven and place meatballs into your sauce and allow to simmer for 30 minutes.  Some of your mozzarella cheese may have tried to make a run for it.  Just scoop up the meatballs and cook it in the sauce.
        6. Serve and enjoy!

        I always keep our pantry stocked with beans because they are so easy to incorporate into everyday meals. We would happily eat these kidney beans just as they are out of the can. Having them on hand makes it so easy to toss together a great meal.



        With fall peeking its head around the corner we are craving soups already. But being it is still hot out I want something a little lighter.         Hearty Beef and Sausage Chili
        SERVES 8 | ACTIVE TIME 10 Min | TOTAL TIME 15 Min


        1 pound lean ground beef
        1-2 jalapeno peppers, diced
        1 teaspoon kosher salt
        14 ounces smoked hot Italian sausage
        2 (14.5 ounce) cans fire Roasted Diced Tomatoes with Garlic
        2 (15.5 ounce) cans Bush's Kidneys Beans in Mild Chili Sauce
        1 teaspoon crushed red pepper (to taste)

        In a large (4-quart) saucepan over medium high heat, add beef, jalapeno and salt. Cooked until lightly browned, break beef up with a wooden spoon as it cooks.

        Add sausage, tomatoes, beans, and crushed red pepper flakes (to taste - less for mild, more for hot). Stir. Simmer 5 minutes.

        Serve and enjoy!

        DONNA'S NOTES: Use chicken or turkey in place of the beef and sausage for a lighter meal.
