This icebox pie is made really easily, and is a natural make-ahead dessert.  Chocolate is a family favorite flavor, and the buttermilk here adds a beautiful slight tang to counter all the sweetness!

Are you guys ready for Summer weather yet?  We definitely are!  It’s been rain rain rain here, and it’s driving me nuts.  I’m so ready for the warm sunshine, a summer breeze, and great summer desserts!

Hey guys, it’s Amanda from The Chunky Chef.  I love being a contributor here on TSRI, and will be here sharing some of my favorite recipes each month!  I look forward to bringing some of my midwestern flair and enjoying some treats together.

You have some options here in terms of some of the ingredients.  Since our oven is out of commission, I went with a pre-made chocolate cookie crust (which doesn’t require baking), but a homemade version is even better.  That does require baking to help it hold together, but it’s a short baking time.  I also use frozen whipped topping that’s been thawed, both in the pie filling itself and on top of the pie.  If you’d prefer to use homemade ingredients, whip up a big batch of homemade whipped cream with a little sugar.

To do that, add your mixing bowl and beaters to the freezer for about 10 minutes to get them chilled.  Get the bowl and beaters all set up, and add 2 cups heavy whipping cream, 2 tsp vanilla extract, and 1/2 cup powdered sugar to the bowl.  Beat on low speed at first, then increase to about med-high speed until stiff peaks form.  That means when you hold the beater with some whipped cream upside down, it still forms a peak and doesn’t slump down.

The chocolate ganache drizzle on top is optional, but SO recommended!  If you’re worried about making a ganache, it’s actually incredibly easy, and I’ll detail exactly how to do it down in the recipe below.

St Patrick's Day Desserts Couldn't Be Easier

St Patricks Day is so colorful and fun and so are these festive treats: Shamrock Shake, Mint Chocolate Chip Cookie Dough Dip, Mint Oreo Cookie Trifle, Mint Chocolate Chip Brownies, Lucky Charms Marshmallow Treats, Chocolate Mint Candy Bark, and  Mint Chocolate Chip Cookie Dough Bars.

The Ultimate St. Patrick's Day Pie

Lucky Charms No-Bake Ice Box Pie is the ultimate whimsical dessert. It’s a festive treat with confetti cloud pie filling that is like a fairytale come true.

It all starts with a custom pie crust made from ground Lucky Charms cereal. Cream cheese, whipped cream, marshmallow fluff and Lucky Charms marshmallows come together to create an enchanted layer of pie filling, unlike anything you have seen before.

The pie is topped with Lucky’s marshmallows and whipped cream. The real magic happens in the refrigerator. While the pie is ‘setting up’ the Lucky Charms marshmallows in the pie meld into the filling and the marshmallows on top start to soften.

This pie is one that will make Lucky the Leprechaun dance and shout…  It’s magically delicious!

Helpful Tips to Make Lucky Charms No-Bake Icebox Pie:

  • The green crust is especially fun for St. Patrick's Day, but the rest of the year you can leave out the marshmallows and use 4 cups of cereal without the marshmallows for a more beige color crust.
  • The longer the pie sits in the freezer, the softer the marshmallows will become.

What you will need to make Lucky Charms No-Bake Icebox Pie:

  • Electric Hand Mixer - I have had this one in my kitchen forever (it seems like) at least 8 years.
  • 9" Pie Plate  - Can you ever have too many pie plates? I love these for plates for a breading station too. Egg in one, breading in another. So perfect!
  • Cereal marshmallows -If you don't feel like sorting the cereal grab a bag of marshmallows!

Enjoy!

Strawberry Icebox Cake (No-Bake) + VIDEO

Strawberry Icebox Cake with layer upon layer of cookies, cream, and luscious strawberries make up this insanely simple and delicious no-bake strawberry cake.

The fabulous vanilla whipped cream frosting will certainly knock your socks off. If you've never tried a no-bake strawberry shortcake cake, you are in for a real treat.

Strawberry Shortcake Cake

We have been loving frozen treatstrifles, and cookie dough dips.  Well, cakes have been on my mind like you wouldn't believe.

I mean have you checked out my cake dream board?  I have lots of ideas for the fall.

and luscious strawberries make up this insanely simple and delicious Strawberry Icebox Cake (No-Bake) + VIDEO

What is a strawberry icebox cake?

If you combine fresh summer strawberries with a light and fluffy vanilla whipped cream frosting and layer it with graham crackers, you have a no-bake strawberry shortcake cake.

It's one of our favorite no-bake summer icebox cakes. And, it's always a hit at barbecues and potlucks.

It takes only a few simple ingredients to create this no-bake dessert recipe but it looks like you spent hours putting it together.

The finished icebox cake goes in the freezer for 3 to 4 hours. That makes the graham crackers softer so the whole thing actually tastes like there are layers of cake between the strawberries and fluffy cream filling.

and luscious strawberries make up this insanely simple and delicious Strawberry Icebox Cake (No-Bake) + VIDEO

Tips for making Strawberry Icebox Cake

Homemade whipped cream really makes this icebox cake taste amazing. But, if you are pressed for time, you can use a frozen whipped topping instead.

The taste will be very similar and you'll be able to save a few minutes on a busy day.

If you do decide to make your own homemade whipped cream topping, adding 1-2 tablespoons of dry pudding mix to whipped cream helps to stabilize it.

and luscious strawberries make up this insanely simple and delicious Strawberry Icebox Cake (No-Bake) + VIDEO

Icebox cake variations

There are so many different types of icebox cakes you can make.

This strawberry icebox cake is one of my favorites. but, if you don't have strawberries, you can easily use another type of berry like raspberries, blackberries, or blueberries.

Or, if you prefer, you can use sliced peaches instead of berries. If you want a chocolate strawberry icebox cake, you can use a chocolate pudding mix.

Or, why not try layers of bananas if you decide to use chocolate.

Traditionally, a strawberry icebox cake is made with graham crackers.

But, you could also make it with Nilla wafers for a slightly different taste. Or, if you want a strawberry icebox cake with ladyfingers, you can substitute those as well.

If you want to up the presentation of your strawberry icebox cake just a little bit, why not drizzle a chocolate ganache over the top? Chocolate and strawberries just go so well together.

and luscious strawberries make up this insanely simple and delicious Strawberry Icebox Cake (No-Bake) + VIDEO

Can I make this sugar free?

So many people are watching their sugar intake and thankfully, you can reduce the sugar content in this strawberry icebox cake very easily.

And, you can also choose low-fat whipped topping to cut the fat content if you're concerned about that.

Instead of traditional instant pudding, choose a sugar-free version.

And, look for a confectioner's sugar substitute that is made with stevia. Reference the package for the substitution ratio. But, the end result should be quite good.

and luscious strawberries make up this insanely simple and delicious Strawberry Icebox Cake (No-Bake) + VIDEO

Do I need to invert this cake?

While I love the way it looks when you invert it, you don't have to.

If you prefer, you can simply layer the ingredients in a 9x5 pan and serve it that way. If you have a glass 9x5 pan, the presentation is gorgeous when you can see the layers through the glass.

If you have a steady hand, you can create this icebox cake on a cake platter.

Simply make the layers and alternate with graham crackers, piped in layers of the whipped filling, and layers of sliced strawberries. It's a beautiful dessert that really looks like it took hours to prepare.

Now if you will excuse me, I need to take a moment to collect my thoughts (and be alone with the last piece of this divine dessert).

My family has been eating Skippy Peanut Butter as long as I can remember. We are a peanut butter household. Whether is it a simple pb&j sandwich, an apple and peanut butter snack, Extreme Peanut Butter Fudge Brownies that leave this house by the truckload or just a spoonful for the heck of it, we our Skippy. Truth be told I have a really great supply of Skippy on hand at all times.  You know, back ups in case we run out and then we have back ups for our back ups just to be sure. LOL

So, I got to work on this fabulous Peanut Butter Caramel No-Bake Ice Box Cake. What is a better flavor combination than peanut butter and chocolate? Peanut butter, caramel and chocolate. Oh my goodness.  It is insanely delish. Layer upon layer of fabulous flavors. I mean look at those scrumptious layers. Peanut butter caramel cream, fresh whipped cream and chocolate graham crackers topped with chocolate, caramel and nuts (because this girl likes some crunch).

This simple recipe is no-bake and only takes a handful of ingredients. Chill it for a few hours or overnight. We like to store it in the freezer and it is the perfect make ahead dessert. Scrumptious and wholly impressive.

Ingredients

  • 2 cups heavy whipping cream
  • 1 3/4 cups powdered sugar, divided
  • 1 teaspoon pure vanilla extract
  • 8 ounces cream cheese, softened

    No-Bake Cap'n Crunch Avalanche Cookies

No-Bake Cap'n Crunch Avalanche Cookies are a simple 5-ingredient recipe that comes together in just 15 minutes! Imagine creamy peanut butter fudge swirled with chocolate and speckled with Cap'n Crunch cereal and fluffy marshmallows. It's the ultimate treat. A creamy, fudgy, crunchy, peanut buttery treat that has the right touch of chocolate and is perfectly sweet! Hurry, you probably have everything you need to make this in your pantry!

    Ingredients

    • 1/2 cup mini chocolate chips
    • 16 ounces (about 2-1/2 cups) white chocolate chips
    • 16 ounces (about 1-3/4 cups) honey roasted chunky peanut butter
    • 3 cups Cap'n Crunch cereal
    • 1 1/2 cups mini marshmallows

    Instructions

    1. Prepare 2 baking sheets with silicone mats or parchment paper. Set aside.
    2. Place mini chocolate chips in the freezer, until ready to use.
    3. Melt white chocolate chips in a large heat safe bowl, microwave 30 seconds at a time until melted and smooth, stirring between each interval.
    4. Add peanut butter to the melted white chocolate chips. Stir until well mixed.
    5. Add cereal to peanut butter mixture and fold in. Allow mixture to cool to room temperature (or until barely warm), if necessary. Mine was room temperature and didn't need to cool.
    6. Fold in marshmallows and frozen chocolate chips, the chocolate chips will melt slightly and create delicious streaks of chocolate throughout your cookies. Don't overmix or the chocolate chips will complete dissolve.
    7. Use a 2 tablespoon scoop to portion treats onto the prepared cookie sheets. Lightly press down on the top of each cookie with the back of the scoop to spread the cookie out.
    8. Refrigerate until firm, about 15 minutes. Keep refrigerated for best results.
    9. Serve and enjoy!
