Mint Chocolate Chip Fudgy Brownies

Mint Chocolate Chip Fudgy Brownies are a simple recipe for rich and fudgy brownies, loaded with chocolate mint candies and topped with a mint chocolate chip frosting that will rock your world. Then it’s drizzled with an out of this world chocolate ganache. {{swoon}} You need these!

We are so excited to be partnering with International Delight®  to bring you another fabulous recipe. I don't know about you, but I love my coffee so I always have creamer in the house. I have found this to be an amazing convenient ingredient in cooking and baking sweets. So, of course, when I started thinking about mint chocolate chip frosting I thought of International Delight.



RECIPE AT THE BOTTOM

Happy almost St. Patrick's Day. It has already been an awesome celebration filled with lots of festive treats and not so traditional food. My daughter and I baked up a storm over the weekend so we could celebrate with our friends. We made about 4 dozen of our favorite sugar cookies and decorated the shamrock cookies with our melt in your mouth sugar cookie icing.

Then we packaged them up in these awesome plastic bags that we use for cookie gifts and attached a little card that says "Just like a friend, a four leaf clover is hard to find. Happy St. Patrick's Day. Your friend, Munchkin". Well, I am soooo not the Pinterest mom anymore. I have completely come to terms with being an Amazon Prime mom, but ya know sometimes that desire to create just takes over, and we end up with the cutest little cookies ever!

So, next, I decided that I wanted to whip up a scrumptious treat to bring to the dentist office too. They take such great care of us, and I just wanted a little thank you. Well, being St. Patrick's Day this week I knew Mint Chocolate Chip was the flavor. I decided to combine that with our luscious fudgy brownies to create the most amazing Mint Chocolate Chip Fudgy Brownies. They are sooo amazing.

They are utterly rich and fudgy with bites of creme de menthe candies speckled throughout. The brownies are topped with the most scrumptious mint chocolate chip frosting made with International Delight French Vanilla Creamer and then they are finished with a chocolate ganache drizzle. What could be more perfect?

Mint Chocolate Chip Fudgy Brownies
SERVES 16  |  ACTIVE TIME 15 Min  |  TOTAL TIME 35 Min

1/2 cup unsalted butter
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1/2 tablespoon vanilla extract
2 large eggs
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 (8.5 oz) bag creme de menthe thins, divided

Mint Chocolate Chip Frosting
2 cups powdered sugar
4 tablespoons unsalted butter, room temperature
3 tablespoons International Delight French Vanilla Creamer
1 1/2 teaspoon mint extract, to taste
pinch salt
green food coloring
2 tablespoons mini chocolate chips

Chocolate Drizzle
1/4 cup mini chocolate chips
2 tablespoons International Delight French Vanilla Creamer

Preheat oven to 350°F.

Set 16 candy mints aside for garnish and unwrap and cut the remaining candy in half.

Line an 8x8 baking dish with aluminum foil sprayed with non-stick spray and set aside.

Place the butter in a large microwave-safe mixing bowl and melt completely. Add sugar, cocoa, vanilla and eggs. Beat with an electric mixer until well combined. Add the remaining ingredients (except the creme de menthe thins). Mix on low just until completely combined, but do not over mix. Add 1/2 of the halved candies and stir to combine.

Pour into prepared baking dish. Sprinkle the remaining halved candies over the top and lightly press into the batter with a spatula.

Bake for 20 minutes or until a tooth pick comes out clean, well with no batter and no crumb. You may have chocolate if you stick it into a candy mint. Allow to cool completely. I pop them in the fridge or freezer for a few minutes.

Meanwhile, prepare the frosting.

In a large mixing bowl combine the butter and powdered sugar. Beat with an electric mixer until well combined. Add the creamer and beat on low until completely combined. Add the mint extract to taste, I start with 1/2 teaspoon and work my way up until it tastes perfectly minty. Add food coloring and mix until combined. I added 1 drop of green gel food coloring. If you are using liquid, start with 1/4 teaspoon and go from there. Sprinkle in chocolate chips and mix until combined. Once the brownies are cool, frost with the icing.

Meanwhile: combine the 1/4 cup chocolate chips and 2 tablespoons creamer in a microwave safe bowl. Heat for 1 minute. Remove from the microwave and let the chocolate and cream melt together for about 5 minutes. Stir until smooth. Drizzle the chocolate over the frosted brownies.

Serve and enjoy!
DONNA'S NOTES: The creme de menthe candies are the chocolate and mint rectangle candies that are wrapped in silver and green foil.

Lucky Charms is one that really takes me back to my childhood. I mean how can you not love Lucky? These cereal treats are perfectly chewy and loaded with ooey gooey marshmallow.

Lucky Charms adds the perfect flavor and crunch and I just can't get enough of those marshmallows! How about you? When I was developing this recipe I just had to add extra Lucky Charms marshmallows on top.

I mean they are the best part of the cereal and I always pick them out of the box. Apparently I am not the only one, you can even buy just the marshmallows now. These are so easy, they are perfect for school treats, holiday parties, to bring to work, potlucks and so much more.

Helpful Tips to make Lucky Charms Marshmallow Treats:

  • The salt is optional but it mellows out the sweetness and gives it the perfect flavor.
  • If you are using almond bark instead of candy melts, simply place 1-2 squares in a microwave safe bowl and place in the microwave. Microwave for 30 seconds at time, stirring after each interval until melted.
  • Add drops of food coloring until desired color is reached. You can use more than one shade of green to make the design shown in the pictures.

    • 9x13 Baking DishI have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.

    Lucky Charms Marshmallow Treats

    Lucky Charms Marshmallow Treats are a fantastic St. Patrick's Day (or any day) confection!!! This simple recipe is only 4 ingredients and its bursting with charms. This easy dessert is loaded with ooey gooey marshmallows to give it the perfect chewy bite. These cereal treats are magically delicious! This is the perfect treat to take to school, work and a potluck too!

    Ingredients

    • 6 tablespoons unsalted butter 
    • 2 (10 ounce) bags mini marshmallows (or 8 cups), divided 
    • 12 cups Lucky Charms cereal 
    • Optional: 1/2 teaspoon salt 
    • 1/2 cup green candy melts (or vanilla almond bark and green food coloring)
    • Optional: 1 cup Lucky Charms Marshmallows (for garnish)

    Instructions

    1. Brush a 9"x13" baking dish with butter (or prepare with non-stick spray). Set aside.
    2. In large pot over low heat, melt butter. Once butter is completely melted add 6 cups marshmallows and salt. Stir mixture until marshmallows are just melted. Remove from heat. Stir in Lucky Charms cereal. Stir until well coated. Then pour in the remaining 2 cups of mini marshmallows and gently stir until combined.
    3. Scoop the treat mixture into your prepared baking pan. Use a buttered silicone spatula or wax paper to gently press them down (don't squish them or they will be hard). Add additional marshmallows on top, if desired.
    4. Melt candy melts and drizzle over Lucky Charms Marshmallow Treats. Allow to Cut into squares.
    5. Set aside and allow treats to cool completely.
    6. Serve and enjoy.

    My munchkin has been raving about the Copycat Shamrock Shake that I made for her and Chad a few weeks ago.

    Although she doesn't indulge in sweets that often I thought it would be fun to make her another shake.  But, when I reached in the freezer for the ice cream...  It was gone.

    Oh no.  I don't like making promises and not keeping them.

    Being the resourceful mom that I am, I pulled out some of our favorite trifle ingredients; Oreos and pudding.  I immediately got started on a minty treat that we would all love.

    A layer of cool mint Oreo cookies, topped  with chocolate pudding, Andes mints and mint whipped cream was PERFECT!

    Honestly I am not usually even a mint lover, but this trifle is AMAZING!  Creamy pudding and whipped cream are the perfect contrast for the crunchy Oreo cookies and melt in your mouth Andes mints.  You are going to love it too!

    Chocolate Mint Oreo Cookie Trifle

    Chocolate Mint Oreo Cookie Trifle features layer after layer of minty chocolaty goodness. Creamy pudding and whipped cream are the perfect contrast for the crunchy cookies and melt in your mouth mints.

    Ingredients

    • 12 OREO Cool Mint Cookies, chopped
    • 1 (3.9 oz) package no cook JELL-O Chocolate Fudge Pudding
    • 2 cups cold milk
    • 2 cups heavy whipping cream
    • 1/4 cup powdered sugar
    • 1 1/2 teaspoons pure mint extract
    • OPTIONAL:  8 drops green food coloring
    • 20 Andes Mints, chopped

    Instructions

    1. Beat pudding mix and 2 cups cold milk with an electric mixer (or whisk) for about 2 minutes.  Refrigerate until ready to assemble.
    2. Whip heavy cream using an electric mixer with a whisk attachment until you can see light tracks from the mixer.  Add powdered sugar and continue to whip.  Add mint and coloring.  Mix until whipped cream can hold a peak.  (Lift mixer up and there is a tip of cream on the mixer).  Refrigerate until ready to assemble.
    3. Chop Oreos and Andes mints.  Set aside.
    4. Assemble:  Add 1/4 of Oreos to the bottom of each trifle dish.  Spoon 1/4 of pudding directly on top of Oreos.  Reserve a tablespoon of chopped mints.  Add ¼ of remaining mints to trifle, directly on top of pudding.  Top with whipped cream.  Sprinkle with reserved mints.
    5. Serve and enjoy!

    Being a cookie connoisseur for many, many years I can tell you I would rather eat the dough than the cookie. {{gasp}} Shocking, I know.  Especially where chocolate chip cookie dough is concerned I have a hard time getting the dough to the oven!  I love, love, love cookie dough, almost as much as I love cheese (and that is A LOT).

    After making our Mint Chocolate Oreo Cookie Trifle masterpiece I’ve had a hunkering for more mint chocolate flavor.  I searched my brain for easy desserts that I could make that did not involve much work.  I mean I work all day, who needs yet another involved task when all I really want is to dive into a bowl of cookie dough anyway?!?!

    That’s it!  Mint Chocolate Cookie Dough Dip was the perfect solution to cure my cravings.  I starting thinking about my first cookie dough dip and remembered that it lacked the texture that I associate with cookie dough.  I like to feel the sugar as I devour it!  Also, Chad does not care for cream cheese...

    Ah ha! The perfect solution…  Make it just like cookie dough, with a mixer.  No cooking and add flour for texture.  Ding ding ding.  We have a winner.

    Mint Chocolate Cookie Dough Dip tastes just like cookie dough, with no egg!  Chad and I went totally bonkers over this dessert.  Really… the bowl, a spoon and a quiet place is all you need to go with this dessert dip.  However, if you must serve it, I recommend Oreo’s or chocolate cookies!

    5 Minutes is all that stands between you and this dangerously delicious treat.

    Simple 5 Minute Mint Chocolate Chip Cookie Dough Dip

    Simple 5 Minute Mint Chocolate Chip Cookie Dough Dip is a fab quick dessert recipe. Looking for a snack during prime time TV? This is sure to be ready before the commercial break ends. If you like cookie dough, you will be bonkers over this dangerously delish treat!!!

    Ingredients

    • 1/2 cup unsalted butter (1 stick), room temperature
    • 1/4 cup light brown sugar, packed
    • 1/4 cup granulated sugar
    • 2 teaspoons pure mint extract
    • 1/2 teaspoon pure vanilla extract
    • 1/4 teaspoon salt
    • 1 cup flour
    • 3 tablespoons half and half
    • 8-12 drops green food coloring
    • 1 cup mini semi-sweet chocolate chips

    Instructions

    1. Cream butter and sugars in a medium size mixing bowl.  Once mixture if light and fluffy, add extracts and salt.  Mix to combine.  With the mixer running slowly sprinkle in flour.  Mixture will become thick.  Add half and half.  Mix to combine.  Add food coloring until desired color is reached.  Mix well to combine. Stir in chocolate chips.
    2. Serve and enjoy!

    We love copycat recipes! Especially the frozen ones TGIF Frozen Chocolate Mudslide Copycat ,

    Every February for the last 20 years Chad says: "Guess what is out?  Shamrock Shakes at McDonald's!!!"

    Wearing the excited smile of a 6-year-old that just got his first bike, we drive into the drive-thru and he orders his Shamrock Shake.

    This ritual has occurred ever since I have known him.  Over the last couple of years the shake was not as impressive as it used to be;  who knows why; formula change, taste buds change, whatever the reason.

    One Saturday in February, a few years ago, Chad is working on Munchkins playground.  Uncle Happy and Pop Pop have been helping him get this together, but my man has been slaving out there for a week.

    Munchkin and I ran out to do some errands and I thought I would do something nice and get Chad a Shamrock Shake from McDonald's, then I remembered that the last one he had didn't sit well with him.

    How to Make a Shamrock Shake

    So, I decided to make my own.  I know with good ingredients I can make a shake that would put McD's to shame!!!  And I was right, I started with good ice cream and that is just the start. My shake is amazingly thick and creamy and oh so minty and delicious!!!  Here is my version (that is much better than the original in my opinion) hope you enjoy, and have a fantastic St Patrick's Day!

    Helpful Tips to Make McDonald's Shamrock Shake Copycat:

    • For the creamiest shake, go with the richest ice cream you can buy. The icier the ice cream the icier the shake.
    • You can substitute 2% milk in the shake (if that is all you have), but I wouldn't use fat free.
    • You can use gel food coloring (my fav) if you have it or liquid will work just fine.
    • You want to be sure to use Mint extract. Peppermint extract is purely peppermint extract and has a higher menthol content. Mint extract is a combination of peppermint and spearmint, it has a completely different flavor.

    What you will need to Make McDonald's Shamrock Shake Copycat:

    • Blender – You can use any blender, but I absolutely love this one! I use it for ice cream, smoothies, soups, my tomato sauce and naturally this milk shake.
    • Green Food Coloring - gel or liquid
    • Mint Extract - remember peppermint is for red/pink treats (candy canes), mint is for the green ones (mint chocolate chip ice cream and mojitos).

    • 6 cups good vanilla ice cream (I used Blue Bell homemade vanilla)
    • 1 1/2 cups whole milk
    • 1 1/4 - 1 1/2 teaspoons pure mint extract, to taste
    • 15 drops green food coloring
    • 1 cup heavy whipping cream
    • 1 tablespoon powdered sugar
    • green sprinkles for garnish

    Instructions

    1. Put ice cream and milk in a blender with half of the green food coloring and mint.  Blend well.  Add additional as desired.  15 drops of food coloring and 1 1/2 teaspoons mint extract was perfect for us.
    2. Fill 1 cup of heavy whipping cream in a tall bowl and use an electric mixer with a whisk attachment to whip until peaks begin to form.  Add 1 tablespoon powdered sugar and whip until stiff peaks form.
    3. Pour the shake mixture into 4 glasses, top with 1/4 of the whipped cream in each glass. Garnish with sprinkles and a straw.

    Helpful Tips to Make Lucky Charms No-Bake Icebox Pie:

    • The green crust is especially fun for St. Patrick's Day, but the rest of the year you can leave out the marshmallows and use 4 cups of cereal without the marshmallows for a more beige color crust.
    • The longer the pie sits in the freezer, the softer the marshmallows will become.

    What you will need to make Lucky Charms No-Bake Icebox Pie:

    • Electric Hand Mixer - I have had this one in my kitchen forever (it seems like) at least 8 years.
    • 9" Pie Plate  - Can you ever have too many pie plates? I love these for plates for a breading station too. Egg in one, breading in another. So perfect!
    • Cereal marshmallows -If you don't feel like sorting the cereal grab a bag of marshmallows!

    Lucky Charms No-Bake Ice Box Pie

    Lucky Charms No-Bake Ice Box Pie is Magically Delicious! This fairytale pie all starts with a Lucky Charms pie crust topped with an enchanted confetti cloud pie filling. This simple recipe is unlike anything you have ever had before. The real magic happens in the freezer.
    prep time: 8 hour and 30 MINScook time: total time: 8 hours and 30 mins

    Ingredients

    • 4 cups Lucky Charms Cereal (marshmallow and cereal mixture)
    • 8 tablespoons unsalted butter, melted
    • 2 cups heavy cream
    • 1/2 cup powdered sugar
    • 8 ounces cream cheese, softened
    • 1 1/2 cups marshmallow fluff
    • 2 1/2 cups Lucky Charms marshmallows, divided

    Instructions

    1. Add 4 cups Lucky Charms cereal to the bowl of a food processor. Pulse until the mixture is fine crumbs. Slowly pour melted butter in through the feed tube. Pulse until combined and crumbs are completely moistened.
    2. Pour the crumbs into a 9” pie plate and press mixture onto the bottom and around the sides to form a pie crust. Place in the freezer while you prepare the filling.
    3. Whip heavy cream and powdered sugar with an electric mixer, in a tall bowl. Whip until stiff peaks form. (In other words, when you turn off the mixer and lift the beaters out of the cream, the cream stand up on the end of the beater). Place the whipped cream in the refrigerator while you prepare the remaining ingredients.
    4. Combine the cream cheese and marshmallow fluff in a large mixing bowl. Beat with an electric mixer until light and fluffy, about 3 minutes. Fold in 1/2 of the whipped cream and 1/2 cup Lucky Charms marshmallows until completely incorporated. Pour into the chilled pie crust.
    5. Smooth the filling into an even layer with a spatula. Pour the remaining whipped cream over top or you can pipe it into a decorative look. Sprinkle the 2 cups of remaining marshmallows around the edge of the pie. Freeze for 8 hours or overnight. Transfer to the refrigerator or allow to set at room temperature for 30 minutes before serving.
