Peanut Butter Caramel No-Bake Icebox Cake

This no-bake cake starts with a flavor explosion of peanut butter, caramel and chocolate. What could possibly be better? How about a simple recipe with mind blowing results? This fabulous cake is stacked with layer upon layer of sweet and salty creamy peanut butter filling, cream and chocolate cookies. After a trip to the fridge the layers become this incredibly moist and creamy cake... all without ever turning the oven on.

Now if you will excuse me, I need to take a moment to collect my thoughts (and be alone with the last piece of this divine dessert).

My family has been eating Skippy Peanut Butter as long as I can remember. We are a peanut butter household. Whether is it a simple pb&j sandwich, an apple and peanut butter snack, Extreme Peanut Butter Fudge Brownies that leave this house by the truckload or just a spoonful for the heck of it, we our Skippy. Truth be told I have a really great supply of Skippy on hand at all times.  You know, back ups in case we run out and then we have back ups for our back ups just to be sure. LOL

So, I got to work on this fabulous Peanut Butter Caramel No-Bake Ice Box Cake. What is a better flavor combination than peanut butter and chocolate? Peanut butter, caramel and chocolate. Oh my goodness.  It is insanely delish. Layer upon layer of fabulous flavors. I mean look at those scrumptious layers. Peanut butter caramel cream, fresh whipped cream and chocolate graham crackers topped with chocolate, caramel and nuts (because this girl likes some crunch).

This simple recipe is no-bake and only takes a handful of ingredients. Chill it for a few hours or overnight. We like to store it in the freezer and it is the perfect make ahead dessert. Scrumptious and wholly impressive.

Peanut Butter Caramel No-Bake Ice Box Cake

This no-bake cake starts with a flavor explosion of peanut butter, caramel and chocolate. What could possibly be better? How about a simple recipe with mind blowing results? This fabulous cake is stacked with layer upon layer of creamy peanut butter filling, cream and chocolate cookies. After a trip to the fridge the layers become this incredibly moist and creamy cake... all without ever turning the oven on.
prep time: 25 minscook time: total time: 25 mins

Ingredients

  • 2 cups heavy whipping cream
  • 1 3/4 cups powdered sugar, divided
  • 1 teaspoon pure vanilla extract
  • 8 ounces cream cheese, softened
  • 1 (15 ounce) jar creamy peanut butter
  • 10-15 chocolate graham crackers
  • 4 ounces chocolate shell ice cream topping (check out our homemade version here)
  • 2 tablespoons caramel topping
  • 1/4 cup honey roasted peanuts, chopped

Instructions

  1. In a tall bowl whip heavy cream with an electric mixer until you can start to see a defined trail through the cream. Add vanilla and slowly add 3/4 cup powdered sugar. Whip until stiff peaks form. (In other words when you turn off the blender and lift the beaters out of the cream, the cream stand up on the end of the beater). Place in the refrigerator while you prepare the remaining ingredients.
  2. To prepare the filling: Combine cream cheese, peanut butter and 1 cup powdered sugar in a large mixing bowl. Beat with an electric mixer until light and fluffy (about 3 minutes). Fold in 1/2 of the whipped cream until it is completely incorporated. Set aside.
  3. Line a 9 x 5-inch baking dish with parchment paper or plastic wrap. Layer 1/3 of the peanut butter cream on the bottom of the pan. Smooth into an even layer.  Add 1/3 of whipped cream on top of the peanut butter cream and use spatula to smooth into an even layer. Top with a layer of graham crackers, breaking them if necessary to make them fit.
  4. Repeat the layers 2 more times, ending with graham crackers. They will slightly peek over your baking dish.
  5. Cover and refrigerate 3-4 hours or freeze for 1-2 hours.
  6. Remove cake from refrigerator or freezer, invert pan onto a plate. Pour chocolate shell topping onto cake (starting at one end and working to the other).  While you are pouring, use an offset spatula to smooth and help the chocolate drip down the sides. Keep in mind the chocolate will harden so you must work fast.
  7. Drizzle the chocolate top with caramel and sprinkle with chopped peanuts.
  8. Refrigerate until ready to serve or serve immediately.
  9. Enjoy!

    No-Bake Cap'n Crunch Avalanche Cookies

    No-Bake Cap'n Crunch Avalanche Cookies are a simple 5-ingredient recipe that comes together in just 15 minutes! Imagine creamy peanut butter fudge swirled with chocolate and speckled with Cap'n Crunch cereal and fluffy marshmallows. It's the ultimate treat. A creamy, fudgy, crunchy, peanut buttery treat that has the right touch of chocolate and is perfectly sweet! Hurry, you probably have everything you need to make this in your pantry!

    Ingredients

    • 1/2 cup mini chocolate chips
    • 16 ounces (about 2-1/2 cups) white chocolate chips
    • 16 ounces (about 1-3/4 cups) honey roasted chunky peanut butter
    • 3 cups Cap'n Crunch cereal
    • 1 1/2 cups mini marshmallows

    Instructions

    1. Prepare 2 baking sheets with silicone mats or parchment paper. Set aside.
    2. Place mini chocolate chips in the freezer, until ready to use.
    3. Melt white chocolate chips in a large heat safe bowl, microwave 30 seconds at a time until melted and smooth, stirring between each interval.
    4. Add peanut butter to the melted white chocolate chips. Stir until well mixed.
    5. Add cereal to peanut butter mixture and fold in. Allow mixture to cool to room temperature (or until barely warm), if necessary. Mine was room temperature and didn't need to cool.
    6. Fold in marshmallows and frozen chocolate chips, the chocolate chips will melt slightly and create delicious streaks of chocolate throughout your cookies. Don't overmix or the chocolate chips will complete dissolve.
    7. Use a 2 tablespoon scoop to portion treats onto the prepared cookie sheets. Lightly press down on the top of each cookie with the back of the scoop to spread the cookie out.
    8. Refrigerate until firm, about 15 minutes. Keep refrigerated for best results.
    9. Serve and enjoy!

    So, to honor popped corn kernels every where I created a scrumptious popcorn treat. Sweet, crunchy and peanut buttery popcorn. What more could you ask for? How about easy prep and easy clean up?

    Crunchy Caramel Peanut Butter Popcorn is perfect for movie night and an awesome party favor too. I don't know about you, but I am always on the lookout for fun and delicious homemade party treats. Popcorn is certainly loved by most people and caramel peanut butter popcorn is a perfect party treat.

    Just toss a scoop into one of these cute popcorn bags for a party snack or one of these cellophane cones as a party favor and voilà. Party perfect.

    Crunchy Caramel Peanut Butter Popcorn

    Sweet, crunchy and peanut buttery popcorn. What more could you ask for? How about and easy recipe with quick prep and simple clean up? Crunchy Caramel Peanut Butter Popcorn is perfect for movie night and an awesome party favor too.

    Ingredients

    • 2 (3.5 ounce) packages microwave popcorn, popped 
    • ¾ cup light brown sugar 
    • ½ cup butter 
    • ½ cup crunchy peanut butter 
    • 6 ounces marshmallows 
    • kosher salt 

    Instructions

    1. Preheat oven to 300°F.  Line a baking sheet with parchment paper.  Set aside. 
    2. Pour popcorn into a large bowl.  
    3. In a microwave safe bowl combine butter, brown sugar, and marshmallows. Cook 1 minute at a time in the microwave, stirring between cook times, until the mixture is melted and smooth. Stir in the peanut butter until well blended. Pour the caramel peanut butter mixture over the popcorn, and stir to coat the popcorn before it cools.
    4. Bake 15 minutes (until crunchy) and sprinkle with salt.
    5. Serve and enjoy!

    I would stay close though,
    because if you are lucky enough to eat one of these cookies while they are still warm, you may never touch another cookie again.

    Last year after Thanksgiving, my mother-in-law and I were talking about our plans for Christmas. There are several people in our family that are gluten sensitive and I was thinking about treats that I could make that would be flourless or gluten-free with as little effort as possible. As much as I love my family, I would prefer to spend time with them, rather than just baking for them. You know? 


    I had settled on this old fashioned peanut butter cookie recipe that is made without flour when my mother-in-law was telling me how she wasn't really feeling up to making cookies this year.

    I know how much she loves baking with the grandkids when they come in town and it just broke my heart to think about her missing that.

    So, I decided to mix her several batches of cookie batter and freeze them so she could make cookies, without all the work. I used a 1 tablespoon cookie scooper to portion them out into balls and wrote the directions on each Ziploc freezer bag.

    I was pretty excited to see what she did with them. When I looked for the old fashioned peanut butter cookies, much to my surprise she used the recipe to make peanut butter blossom cookies. I was so thrilled by her creativity.

    I honestly didn't see more potential than a peanut butter cookie, but Gigi had the vision for these 4-Ingredient Peanut Butter Blossom cookies. They are absolutely amazing. They are soft and billowy, chewy and peanut buttery! You are going to love them.

    4-Ingredient Peanut Blossom Cookies

    Ingredients

    • 1 cup honey roasted peanut butter 
    • 1 cup granulated sugar (plus 1/4 cup extra) 
    • 1 large egg 
    • 36 milk chocolate candy kisses, unwrapped 

    Instructions

    1. Preheat oven to 350°F. Line a baking sheet with parchment paper (for easy clean up). Add 1/4 cup sugar to a medium (2-cup) bowl. Set aside. 
    2. Mix 1 cup sugar, peanut butter and egg in a medium bowl until well combined. Use an electric mixer, stand mixer or a wooden spoon. 
    3. Scoop cookie dough using a 1 tablespoon scooper, drop onto cookie sheet. Roll cookie balls and drop into sugar. 
      Once 4 cookie dough balls are in bowl, swirl it around until cookie balls are covered in sugar. 
    4. Place cookies on cookie sheet.  Bake 10-12 minutes (until barely golden brown around the edges). Meanwhile unwrap candy kisses. Set aside. 
    5. Remove from oven and place a candy kiss on top of each cookie ball, pressing down slightly.  The cookies will crack a little around the edges.
    6. Allow to cool on baking sheet for 5 minutes before transferring to a cooling rack.
    7. Serve and enjoy. 

    DONNA'S NOTES

    • 40 mini Reese’s Peanut Butter Cups, (wrappers removed, divided)
    • 1/4 cup unsalted butter, melted
    • 1 (8-oz) package cream cheese, softened
    • 1 3/4 cups powdered sugar, divided
    • 1 (16.3-oz) jar chunky peanut butter, (approximately 1¾ cups)
    • 2 cups heavy cream
    • 1 tsp pure vanilla extract
    • 1/4 cup dry roasted peanuts, chopped
    • 2 oz milk chocolate, broken into pieces

    Instructions

    1. In a tall bowl whip heavy cream with an electric mixer until you can start to see a defined trail through the cream. Add vanilla and slowly add 3/4 cup powdered sugar. Whip until stiff peaks form. (In other words when you turn off the blender and lift the beaters out of the cream, the cream stand up on the end of the beater). Place in the refrigerator while you prepare the remaining ingredients.
    2. In a food processor combine cookies and 20 peanut butter cups. Pulse until your mixture is crumbs. Slowly pour butter in through the feed tube. Pulse until combined and crumbs are moistened.
    3. Pour crumbs into a 9” pie plate and press mixture on the bottom and around the sides to form pie crust. Place in the freezer while you prepare the filling.
    4. To prepare the filling: Combine cream cheese and 1 cup powdered sugar in a large mixing bowl. Beat with an electric mixer until light and fluffy (about 3 minutes). Add peanut butter. Beat until well combined. Fold in ½ of the whipped cream until it is completely incorporated. Pour into chilled pie crust. Smooth with a spatula. Pour remaining whipped cream over top. Place in the refrigerator while you prepare toppings.
    5. Place the milk chocolate in a microwave safe mixing bowl. Heat for 30 seconds at a time, stirring each time, until chocolate is melted. Set aside.
    6. Quarter the remaining 20 mini peanut butter cups.
    7. Sprinkle peanut butter cups over pie. Sprinkle chopped peanuts over pie. Use a spoon to drizzle chocolate over pie (or transfer chocolate to a plastic sandwich bag and cut a very small hole in the corner, then drizzle over pie).
    8. Refrigerate until ready to serve or serve immediately. Enjoy!

    One of the best things about this chocolate peanut butter ice cream is that it requires only 3 simple ingredients.

    But, I know that it's hard to resist a bowl of chunky peanut butter ice cream loaded with your favorite candies.

    So, you can certainly add chunks of chocolate-covered peanut butter, chopped nuts, and chocolate chips if you prefer.

    Or, for a more adult version, you can add some instant espresso to the ingredients for a coffee taste. There are lots of different chocolate peanut butter ice cream brands you can buy at the store.

    But, this homemade ice cream recipe will soon become your favorite. It's rich and creamy and because it doesn't have added sugar or dairy, it's much lower in fat and calories.

    What do I need to make chocolate peanut butter ice cream?

    All you need to make this creamy homemade ice cream is a high powered blender or a food processor. You don't need an ice cream maker.

    And, you don't need to cook it on the stove. It really doesn't get much easier than that. All you need is:
    • Blender - You can use any blender, but I absolutely love this one! I use it for ice cream, smoothies, soups, my tomato sauce, and naturally this ice cream.

    Is this ice cream allergy-friendly?

    Yes, because this chocolate peanut butter ice cream uses only 3 simple ingredients, it's allergy-friendly. It does not contain dairy, eggs, soy, or gluten.

    You can substitute other nut butter for people with peanut allergies.

    Just be careful what types of extras you add if you're concerned about allergies. One of the best add-ins, if you're concerned about food intolerances, is 70% dark chocolate.

    How should I serve chocolate peanut butter ice cream?

    I usually just enjoy this ice cream as is in a bowl. But, if you want a few more ideas, you can use my No Fail Caramel Sauce or my Crockpot Caramel Sauce.

    Or, why not try adding a scoop of this ice cream to my Wendy's Frosty recipe. Or, try a scoop in between two of my homemade chocolate chip cookies.

    Homemade ice cream sandwiches are a delicious summer treat. One of the benefits of making your own homemade ice cream is that you control what you put into it.

    Helpful Tips to make Simple 3 Ingredient Peanut Butter and Chocolate "Ice Cream"

    • If you do not have a high powered blender, you may use 2 frozen and one fresh banana to encourage easier blending.
    • There are no preservatives in your ice cream, so it will freeze solid. Simply remove from the freezer 10 minutes before serving to allow it to soften slightly. If it freezes and keeps beautifully!
    • You can transfer to a freezer-safe container and allow the ice cream to firm up in the freezer for 2 to 3 hours.
    • If you don't have any semi-sweet chocolate chips, you can substitute 1/3 cup of cocoa powder.

    How can I store homemade ice cream?

    You will want to store this in the coldest part of your refrigerator. Never store ice cream in the freezer door.

    If you find the ice cream is getting soft while you're eating it, just put it back in the freezer for a few more minutes.

    Homemade ice cream will stay good in the freezer for about two weeks. But, I think it's best when you eat it as soon as you make it.

    Chocolate Peanut Butter Ice Cream (3-Ingredients)

    Chocolate Peanut Butter Ice Cream is the perfect amount of peanut butter flavor, speckled chocolate pieces in this delicious frozen treat.

    Ingredients

          • 3 frozen ripe bananas
          • 4 tablespoons peanut butter
          • 1/4 cup semi-sweet chocolate chips

                Instructions

                    1. Place bananas and peanut butter in a blender. Blend until mixture starts to get creamy, scraping down the sides as necessary. Add chocolate chips and pulse until chocolate has speckled your ice cream.
                    2. Transfer to a resealable container and place in the freezer for 2-3 hours.
                    3. Scoop and serve or scoop and place the scoops into a container for later use. If you decide to leave it in the freezer, just allow it to sit at room temperature for 10 minutes or so, to soften before serving.
                    4. Enjoy!
