Crockpot Caramel Sauce

Best Ever Crockpot Caramel Sauce (aka Dulce De Leche) with just 2 ingredients most likely in your pantry and no stirring! This no-fail recipe results in the most magnificent, heavenly creation that you have ever made in your slow cooker. Guaranteed to be a favorite for a long time to come!



It is a divine creation that is utterly rich and creamy. It has a fabulously complex flavor with less overwhelming sweetness than caramel.
It's perfect on everything, but my favorite is on a spoon.

The Best Ever Dulce De Leche with just 2 ingredients and no stirring! It is a heavenly creation that will knock your socks off! Everyone is going to want it. Better buy more slow cookers. LOL

I have quite a dulce de leche obsession. I used to be hooked on caramel but it is almost too sweet. I mean it is cooked sugar with a little cream added, right? That is when I was introduced to dulce de leche. It is a divine creation that is utterly rich and creamy.

I can eat it by the spoonful! Dulce de leche is sweet milk slowly cooked until is it becomes dark, rich and thick. The traditional stove top method requires several hours of cooking and stirring often.

As much as I love my dulce de leche I just don't have the time or the patience to stand in front of my stove for hours. That is where the slow cooker comes in perfectly handy!

You really just pour the ingredients into canning jars, stir them together and cook. 8-10 hours later you have your thick, rich and creamy heavenly goodness. I have my spoon ready to dive in. It keeps for several weeks in the fridge, if it will last that long.

I gently warm my dulce de leche in the microwave, 30 seconds then stir. Until is it the thickness I am looking for. Perfect on cakes, great as a cupcake filling, dessert drizzle. I have stirred it into my brownies or cookies. It is perfect drizzled on cakes, ice cream and in coffee!

Can you imagine your morning coffee with a drizzle or scoop (no judgement here) of dulce de leche {{swoon}}. The thought makes me week in the knees. OK, enough chatting lets hurry and get to the recipe.

Helpful Tips to make Crockpot Caramel Sauce:

  • You can substitute 1 tablespoon vanilla extract or 1 vanilla bean for the vanilla bean paste. 
    I cooked these for 8 hours to get this color. If you would like it richer colored, cook it longer. Note that at 10 hours it is as thick as custard.
  • Recipe can be doubled and tripled to suit the size of your slow cooker. I usually cook 4 jars at a time. If your slow cooker is shallow you can use wide mouth half pint jars.

    Best Ever Crockpot Caramel Sauce

    Best Ever Crockpot Caramel Sauce (aka Dulce De Leche) with just 2 ingredients most likely in your pantry and no stirring! This no-fail recipe results in the most magnificent, heavenly creation that you have ever made in your slow cooker. Guaranteed to be a favorite for a long time to come!

    Ingredients

    • 1 (14 ounce) can sweetened condensed milk
    • 1 tablespoon vanilla bean paste

    Instructions

    1. Pour half of the sweetened condensed milk into each jar, add 1/2 of the vanilla bean paste into each jar. Stir to combine. Wipe rim of jar clean and seal with lid and ring. 
    2. Place in slow cooker and cover jars with water. Add enough water so there is at least 1" of water over the jars. You can lay the jars on their side if you need to.  Set temperature to low. Cover slow cooker and cook for 8 to 10 hours. 
    3. Remove from slow cooker and place jars on a towel until cooled.
    4. Serve and enjoy!

    Pineapple Salsa Party Dip

    When I made this dip the first time, it was for Chad's birthday party.

    To keep everything super simple, I prepared some burgers, Crockpot Corn on the Cob and a salsa bar.

    The salsa bar was my favorite. I wish I had pictures. 

    It featured 3 heat varieties of our Best Ever Chipotle's Copycat Guacamole, Strawberry Habanero Everything Spread and this Pineapple Salsa.

    Also, we set out different chips to go with all of the dips.

    The Pineapple Salsa stole the show. We started off with the salsa bar as our appetizers, if you will.

    By the time dinner began, several guests were still eating pineapple salsa with dinner.

    Then the cake came out and many of our guests headed back for the spicy dip again.  Let's just say the salsa was devoured!

    Ingredients

    The salsa features fresh pineapple and jalapeno peppers (although you could use serrano too) for the perfect combination of sweet and heat.

    Cilantro adds a coolness to the dip, red onion gives it a hint of pungent spiciness and the addition of ginger (our secret ingredient!) warms it up.

    It is truly a party for your senses and you will be eating this all year long!

    Recipe Tips:

    • Use fresh pineapple. Frozen and canned won't give you the texture you are looking for.
    • Chill the ingredients. For the best flavor, be sure to allow time for the dip to chill in the refrigerator.
    • Use peppers to suit your palate. Less peppers for less heat. The recipe is mild heat as written.
    • Use kitchen gloves. To prevent burning your eyes, I recommend wearing gloves when working with spicy peppers.

    Pineapple Jalapeno Salsa

    Our pineapple salsa has a secret ingredient for the perfect blend of sweet and heat. Make this dip recipe in 15 minutes for your next party!

    prep time: 15 mins   cook time:  total time: 15 mins

    Ingredients

    • 1 whole medium pineapple diced (about 4 cups)
    • 1/4 medium red onion, diced
    • 2 jalapeno peppers (seeded and deveined), diced (to taste)
    • 1/4 cup fresh cilantro, chopped
    • zest and juice of 1 lime
    • 1 teaspoon fresh ginger paste (I used Gourmet Garden)
    • 1/2 teaspoon kosher salt

    Instructions

    1. Combine ingredients in a large bowl. Mix to combine. Refrigerate until ready to serve.
    2. Serve and enjoy!
    DONNA'S NOTES
    1. Use peppers to suit your palate. Less peppers for less heat. The recipe is mild heat as written.
    2. I recommend wearing gloves when working with hot peppers.
    3. If you do not have ginger paste, you can use finely diced fresh ginger or ground ginger to taste (start with 1/4 teaspoon).

    You may have noticed I have a bit of a thing for summer berries. I wait all year for the season to get here and when it finally does. I go crazy with berries. They go with every breakfast, snack and dessert.  I am thinking about incorporating them into dinner too.

    Truth be told my I do have favorites. Strawberries, blueberries and then raspberries. Blackberries are kind of the weird cousin that only gets to tag along once in a while.

    I like them, but the can have a more 'earthy' flavor than I prefer. The earthiness can really overwhelm the other flavors so I leave them out more times than not.

    Last year I made my first fruit salsa. Pineapple Salsa and it was insanely delicious. I couldn't get enough. Then I created Strawberry Habanero Everything Spread. Oh my gosh. I can not tell you how amazing the sweet dips were when dipped with salty tortilla chips.

    So this year I decided to try something new. A completely sweet fruit salsa served on tortilla chips.


    It all starts with a triple berry mixture that is dressed in a dazzling raspberry sauce. It is sweet and tangy and addictively tasty. We couldn't stop eating it. We dipped it with chips. Then once it sat in the refrigerator for about an hour it because this perfect everything salsa. Perfect for dipping or on top of oatmeal or ice cream.  {{swoon}} I know you are going to love it too.

    Summer Berry Fruit Salsa

    Summer Berry Fruit Salad is a simple recipe with a glorious dressing. The berries are left to macerate in the dressing and the result is a sweet and tangy perfectly scoopable summer sensation!     Ingredients

    • 1 pound fresh strawberries, diced 
    • 5 ounces fresh raspberries 
    • 9 ounces fresh blueberries 
    • 1/4 cup seedless raspberry jam 
    • 2 tablespoons granulated sugar
    • 2 tablespoons fresh lemon juice 

    Instructions

    1. Combine jam, sugar and lemon juice in a small measuring cup. Whisk to combine ingredients. Set aside. 
    2. Combine fruit in a large bowl. Pour dressing over fruit. Stir until fruit is completely coated. 
    3. Serve immediately or place in the refrigerator for 1 hour-overnight to allow the flavors to meld.

    DONNA'S NOTES

    1. The longer the fruit sits the more juice it will make. If you want a dry and crisp salsa I recommend serving it immediately. If you prefer your fruit soft and macerated allow it to sit in the refrigerator. I enjoyed it both ways.
    2. I served with sweet potato tortilla chips and also corn tortilla chips. The saltier corn chip was a nice contrast to the sweet salsa.

    We are so excited to be partnering with International Delight®  to bring you another fabulous recipe. I don't know about you, but I love my coffee so I always have creamer in the house. I have found this to be an amazing convenient ingredient in cooking and baking sweets. So, of course when I started thinking about rice pudding I thought of International Delight.

    RECIPE AT THE BOTTOM

    Growing up in Florida, summers were spent at the beach. Whether it was a family day at our local beach or we loaded up the car with friends and headed out to Siesta Key you can bet we were there.
    Sun and sand with the wind in my hair, I loved to enjoy the warm Florida beach as I kick back with my toes in the sand.

    I loved to lay in the sun and enjoy the day. I could hear the wind, the waves and the seagulls calling and beach goers playing on the shore. I can still close my eyes and imagine the salt air and the warmth of the sun on my face. My girlfriends and I would lay on the beach and chat as we watched the boys playing football.

    We might hop over to the courts for a beach volleyball game and then grill burgers and dogs for dinner. My favorite part, most likely was yours too.



    The s'mores! Graham crackers topped with melty chocolate and roasted marshmallows. I tried to recreate them living here in Arizona and I realized something was missing. Those beach treats are salt kissed. I have been adding salt to my s'mores ever since.

    As fun as s'mores can be, dippable desserts are really my thing these days! So, this time I decided to create a fabulous campfire s'more dip with a little twist. Can you think of anything that enhances chocolate like coffee? Me either.

    This dip starts with an utterly decadent chocolate layer, created with milk chocolate and International Delight Mocha Iced Coffee with just a pinch of salt to add that salt kissed element that I miss from my beach days. All of that scrumptious chocolate is topped with toasted marshmallow that tastes like it came off the campfire.

    It is so amazing we couldn't keep our hands off of it! So, what are you waiting for? Grab a graham cracker and dip in!

    Mocha Campfire S'mores Dip
    SERVES 4 | ACTIVE TIME 5 Min | TOTAL TIME 25 Min
     

    2 tablespoons International Delight Mocha Iced Coffee
    1 cup milk chocolate chips

    20 regular marshmallows
    8 graham cracker sheets

    Place 6" cast iron skillet in the oven. Preheat oven to 450°F with the pan inside.

    Once the oven is preheated, heat the iced coffee in a microwave safe bowl until it's steaming hot, about 30 seconds.

    Remove the skillet from the oven. Add chocolate chips and salt to the hot skillet. Pour hot iced coffee over top. The heat from the skillet and the coffee will melt the chocolate chips. Stir chocolate chips with a spatula until mixture is smooth. Spread mocha mixture into an even layer. Add marshmallows on top in an even layer.

    Bake 7-8 minutes, until marshmallows are toasted and golden brown. Allow to cool for 5 minutes.

    Serve with graham crackers. I dip for my daughter, as the skillet is very hot!

    Being a cookie connoisseur for many, many years I can tell you I would rather eat the dough than the cookie. {{gasp}} Shocking, I know.  Especially where chocolate chip cookie dough is concerned I have a hard time getting the dough to the oven!  I love, love, love cookie dough, almost as much as I love cheese (and that is A LOT).

    After making our Mint Chocolate Oreo Cookie Trifle masterpiece I’ve had a hunkering for more mint chocolate flavor.  I searched my brain for easy desserts that I could make that did not involve much work.  I mean I work all day, who needs yet another involved task when all I really want is to dive into a bowl of cookie dough anyway?!?!

    That’s it!  Mint Chocolate Cookie Dough Dip was the perfect solution to cure my cravings.  I starting thinking about my first cookie dough dip and remembered that it lacked the texture that I associate with cookie dough.  I like to feel the sugar as I devour it!  Also, Chad does not care for cream cheese...

    Ah ha! The perfect solution…  Make it just like cookie dough, with a mixer.  No cooking and add flour for texture.  Ding ding ding.  We have a winner.

    Mint Chocolate Cookie Dough Dip tastes just like cookie dough, with no egg!  Chad and I went totally bonkers over this dessert.  Really… the bowl, a spoon and a quiet place is all you need to go with this dessert dip.  However, if you must serve it, I recommend Oreo’s or chocolate cookies!

    5 Minutes is all that stands between you and this dangerously delicious treat.

    Simple 5 Minute Mint Chocolate Chip Cookie Dough Dip

    Ingredients

    • 1/2 cup unsalted butter (1 stick), room temperature
    • 1/4 cup light brown sugar, packed
    • 1/4 cup granulated sugar
    • 2 teaspoons pure mint extract
    • 1/2 teaspoon pure vanilla extract
    • 1/4 teaspoon salt
    • 1 cup flour
    • 3 tablespoons half and half
    • 8-12 drops green food coloring
    • 1 cup mini semi-sweet chocolate chips

    Instructions

    1. Cream butter and sugars in a medium size mixing bowl.  Once mixture if light and fluffy, add extracts and salt.  Mix to combine.  With the mixer running slowly sprinkle in flour.  Mixture will become thick.  Add half and half.  Mix to combine.  Add food coloring until desired color is reached.  Mix well to combine. Stir in chocolate chips.
    2. Serve and enjoy!
