So, of course when I started thinking about the cheesecake filling I was going to put together for this trifle I thought of International Delight.

Everyone loves strawberries! They are the most popular berry and they totally scream summer. As soon as the berries start flooding the stores I know it's that time.

After going back and forth about making a strawberry cheesecake my husband Chad (our amazing photographer and site designer) came home from the grocery store with an angel food cake. Well that sealed the deal. Strawberry Cheesecake became a trifle and I am soooo glad it did.

It all starts with your favorite angel food cake cut into bite sized pieces and covered with glazed strawberries. Then it is topped with a luscious cheesecake filling. {{{swoon}}}. Let me tell you that it is so amazing I would have eaten 2 if I had another stomach.

I guess I will have to start with dessert next time to be safe.

My entire family devoured this trifle and I can't wait to make it again. Actually, I make treats each week to bring to a class that we are taking. Maybe this will be this weekends treat. I just know you are going to love it!

    Strawberry Cheesecake Trifle

    Strawberry Cheesecake Trifle is a simple recipe that screams summer! With just 5 ingredients and 15 minutes you can whip up this incredibly impressive, crowd pleasing, layered dessert.

    Ingredients

    • 1 pound strawberries, sliced
    • 3/4 cup powdered sugar, divided
    • 8 ounces cream cheese, softened
    • 1/4 cup International Delight French Vanilla Creamer
    • 1/2 Angel Food Cake, diced into bite sized pieces
    • optional toppings: whipped cream and fresh strawberries

    Instructions

    1. Add sliced strawberries to a medium bowl. Sprinkle 1/4 cup powdered sugar over the top. Stir until completely combined. If you have any lumps keep stirring they will dissolve. Set aside.
    2. In a large bowl, using an electric mixer, beat cream cheese until light and fluffy. Add remaining 1/2 cup powdered sugar a little at a time until the cream cheese completely combines with the sugar. With the mixer on low, add creamer a little at a time. Beat until it combines and add more. Continue beating until cheesecake filling is light and fluffy. Set aside.
    3. Set out 4 pint size mason jar. Fill 1/8 of the angel food cake in each jar, top with 1/8 of the strawberry glaze. Top with 1/8 of the cheesecake filling. Repeat.
    4. Refrigerate until ready to serve or serve immediately. Top each trifle with whipped cream and a strawberry, if desired.
    5. Serve and enjoy.

    You may have noticed I have a bit of a thing for summer berries. I wait all year for the season to get here and when it finally does. I go crazy with berries. They go with every breakfast, snack and dessert.  I am thinking about incorporating them into dinner too.

    Truth be told my I do have favorites. Strawberries, blueberries and then raspberries. Blackberries are kind of the weird cousin that only gets to tag along once in a while.

    I like them, but the can have a more 'earthy' flavor than I prefer. The earthiness can really overwhelm the other flavors so I leave them out more times than not.

    Last year I made my first fruit salsa. Pineapple Salsa and it was insanely delicious. I couldn't get enough. Then I created Strawberry Habanero Everything Spread. Oh my gosh. I can not tell you how amazing the sweet dips were when dipped with salty tortilla chips.

    So this year I decided to try something new. A completely sweet fruit salsa served on tortilla chips.


    It all starts with a triple berry mixture that is dressed in a dazzling raspberry sauce. It is sweet and tangy and addictively tasty. We couldn't stop eating it. We dipped it with chips. Then once it sat in the refrigerator for about an hour it because this perfect everything salsa. Perfect for dipping or on top of oatmeal or ice cream.  {{swoon}} I know you are going to love it too.

    Summer Berry Fruit Salsa

    Summer Berry Fruit Salad is a simple recipe with a glorious dressing. The berries are left to macerate in the dressing and the result is a sweet and tangy perfectly scoopable summer sensation!     Ingredients

    • 1 pound fresh strawberries, diced 
    • 5 ounces fresh raspberries 
    • 9 ounces fresh blueberries 
    • 1/4 cup seedless raspberry jam 
    • 2 tablespoons granulated sugar
    • 2 tablespoons fresh lemon juice 

    Instructions

    1. Combine jam, sugar and lemon juice in a small measuring cup. Whisk to combine ingredients. Set aside. 
    2. Combine fruit in a large bowl. Pour dressing over fruit. Stir until fruit is completely coated. 
    3. Serve immediately or place in the refrigerator for 1 hour-overnight to allow the flavors to meld.

    DONNA'S NOTES

    1. The longer the fruit sits the more juice it will make. If you want a dry and crisp salsa I recommend serving it immediately. If you prefer your fruit soft and macerated allow it to sit in the refrigerator. I enjoyed it both ways.
    2. I served with sweet potato tortilla chips and also corn tortilla chips. The saltier corn chip was a nice contrast to the sweet salsa.

    Strawberry Shortcake Tiramisu is the ultimate dessert!  Every holiday I deliver outstanding treats to friends and family.  Last year on my father-in-laws ("Pop Pop")'s birthday, I delivered a flop dessert.  Have you ever tried to deliver a cream pie across town when it's 110 degrees out?  Let's just say
    it was a humbling experience when he opened the door to a dripping cream topping.  All I could do was bust out laughing.

    Luckily Pop Pop has a great sense of humor.  Thanks to this AH-mazing summery tiramisu I am completely redeemed!  I delivered this one for Father's Day (in a cooler) and it was a hit.

    Using the basic idea of an Italian dessert, the tiramisu, I layered orange dipped lady fingers, with  fresh homemade cream filling and juicy sweetened strawberries to create the most mouthwatering strawberry dessert I have ever tasted. Then I toppd it with a scrumptious strawberry syrup and then I devoured it.

    This dessert completely disappeared in a blink and trust me there will be many more made very soon.  Any dessert you can make without heating up the house may be coming out of my kitchen this summer.

    Strawberry Shortcake Tiramisu

    Strawberry Shortcake Tiramisu is a bold and no-bake flavorful summery treat: two favorite desserts transformed into one perfect trifle! Are you still looking for the perfect Easter dessert? This is it!

    Ingredients

    • 4 egg yolks
    • 1/4 cup granulated sugar, plus 1 tablespoon (divided)
    • 8 ounces cream cheese, softened
    • 1 cup heavy whipping cream
    • pinch salt
    • 18 lady fingers
    • 2 cups strawberries
    • 1/4 cup orange juice
    • prepared whipped cream
    • strawberry syrup (this homemade recipe or your favorite store bought)

    Instructions

    1. Slice strawberries and sprinkle with 1 tablespoon sugar.  Stir to combine and set aside.
    2. In the bowl of a stand mixer fitted with a whisk attachment, combine egg yolks and sugar.  Mix on medium until sugar and egg mixture is light and fluffy, about 3-5 minutes.  Add salt, whipping cream and cream cheese.  Whip until mixture is thick and fluffy, about 3 minutes.
    3. Meanwhile, pour orange juice into a wide bowl.
    4. Once cream is done, layer your dessert in a trifle dish.  Dip ladyfingers, one at a time into orange juice and crumble into the bottom of the trifle dish.  Each dish will get 1 ½ lady fingers on the first layer.  Add a heaping 1/4 of cream to each trifle dish.  Divide ½ of strawberries amongst trifle dishes.  Repeat.
    5. Top with a dollop of whipped cream and a drizzle of strawberry syrup.  Serve and enjoy.

    Hulling Strawberries can be a huge pain and just cutting the tops off is a huge waste of the tastiest part of the strawberry. This kitchen hack is a time saver and will save the flavorful part of the berry while hulling the tasteless pith and stem.

    I have been trying to get my daughter more involved in the kitchen. I have been putting together some of my favorite kitchen tips as I am teaching her and I am so excited to share them with you.


    Munchkin is a picky 6-year-old, and she doesn't like the way certain food looks or what it's called. For example, if I say a recipe has ground beef in it, she is bothered, so I call it "hamburger." That makes more sense to her. I have found when she is more involved in the process, she is more open to trying new food.

    This kitchen hack for hulling strawberries is not only perfect for my 6-year old, but it is my husbands preferred way to hull them too.

    You all know I am all about simplifying meals and I just don't have time for kneading and rolling, but I love love love Southern-Style Sweet Buttermilk Biscuits.

    Lately, I have really been craving the flavors and dishes I remember from my childhood. I guess that is a good indication that I am missing home. Well, at least my family and especially my mom.

    I grew up in small town America, in southwest Florida in a little town untouched by reality. Sure, I had the typical family and life struggles, but it was kind of like growing up in Mayberry. I joked about it through my teens and twenties. Nonetheless, looking back I wouldn't change a thing.

    Florida is a melting pot for the northeastern and the southern United States. There are so many culinary influences, but the ones that truly take me home are the recipes of the south that I remember from my childhood. My mother prepared a lot of Italian food as my dad is Italian and that is what he loved most.

    But, when we spent time eating with our friends, we would get to enjoy their favorite dishes and that usually was the best the south had to offer. So, when I think of home, the flavors of the south beckon to me. Strawberry Shortcake was a favorite growing up!

    I tried to recreate that magic with a store bought sponge cake for a long time; that was until I discovered the beauty of the Sweet Buttermilk Drop Biscuit. It is so simple that it brings this Southern favorite to your table in about 30 minutes!

    I have created an amazing drop biscuit recipe to take the complicated out of this southern classic.It all starts with a super easy sweet buttermilk drop biscuit. There is no kneading or rolling here. It is a genius creation! You are going to love it.

      Southern-Style Strawberry Shortcake

      Southern-Style Strawberry Shortcake is a glorious dessert with a tender, sweet buttermilk biscuit piled with luscious, juicy strawberries and topped with light and fluffy homemade vanilla bean whipped cream. It all comes together with this easy recipe to create the perfect bite!

      Ingredients

      • 1 pound fresh strawberries, hulled and sliced 
      • 1/4 cup granulated sugar 
      • 1 recipe Homemade Vanilla Bean Whipped Cream
      • 1 recipe Sweet Buttermilk Drop Biscuits 

      Instructions

      1. Wash, hull and slice strawberries. Add to a medium bowl. Sprinkle sugar over top.  Stir strawberries until they are well coated with sugar. Cover the bowl with cling wrap and refrigerate for 30 minutes, while you prepare the biscuits and whipped cream.
      2. Prepare the drop biscuits as per the recipe.
      3. Allow to cool.
      4. Meanwhile, prepare the whipped cream. Refrigerate until ready to use.
      5. Slice biscuits in half to create a top and a bottom (a serrated knife works best). Place biscuit bottom on a small plate. Top with a large spoon of strawberries and strawberry liquid. Top with a large dollop of whipped cream.
      6. Place the biscuit top on the whipped cream. Top with a small spoon of strawberries and a small dollop of whipped cream. 
      7. Serve and enjoy!

      • Go ahead and cheat with a box mix. The shortcake in this recipe is a little dense, more like a pound cake. If you're more of a fluffy cake fan, feel free to use your own scratch cake recipe - or a box mix. No one will judge after they taste it!
      • If you do use this cake recipe, make sure your eggs and milk and at room temperature, and your melted butter has cooled a bit. Otherwise, you'll end up with curdled milk and scrambled eggs!
      • Store-bought whipped cream will also work! If you need to throw this cake together quickly, just fold the mashed strawberries into a tub of Cool Whip and go at it.
      • The acetate cake collar is necessary to make this cake so pretty! Unless you have a similarly sized springform pan, of course. If you decide to use the pan instead, freeze the cake after filling it, and run a hot knife around the outside before removing the collar.

      What you will need to make Strawberry Shortcake Layer Cake:

      • 6-inch cake pans - I use 6-inch cake pans more than anything else since there are only two of us in the house. You can get 6-8 slices from a 6-inch cake, but if you need something bigger, just stick with this brand!
      • KitchenAid Mixer - I use this mixer almost as much as I use my oven! Whether you grab the Artisan or Professional series, this workhorse will be a wonderful addition to your kitchen.
      • Acetate cake collar - These strips are necessary to get that perfect slice look! Once you have a roll, your creativity will go crazy and you'll be trying all kinds of fun and fancy dessert recipes!
      • Shelf-stable whipping cream  - sometimes you just forget the heavy cream. Thankfully, popping one of these shelf-stable boxes of cream in the fridge means you won't need to run to the store!
      • A sharp knife - perfect slices require a sharp knife, heated under hot water. You'll never regret getting one of these babies!

      Strawberry Shortcake Layer Cake

      Strawberry Shortcake Layer Cake is a classic summer treat in festive party form that you'll be taking to every event! Fresh strawberries and fluffy strawberry whipped cream are sandwiched between two layers of vanilla shortcake, then topped with juicy macerated berries for the ultimate strawberry flavor!

      Ingredients

      Vanilla Shortcake
      • 1 1/2 cups all-purpose flour
      • 1 cup granulated sugar
      • 1 1/4 teaspoons baking powder
      • 1/2 teaspoon kosher salt
      • 2 large eggs, room temperature
      • 3/4 cup whole milk, room temperature
      • 1/2 cup unsalted butter, melted & cooled
      • 2 teaspoon vanilla extract
      • 1/2 teaspoon almond extract
      Macerated Strawberries
      • 2 cups fresh strawberries, sliced
      • 1/4 cup granulated sugar
      • 2 teaspoons lemon zest
      Strawberry Whipped Cream
      • 2 cups heavy whipping cream
      • 3 tablespoons powdered sugar
      • 1 teaspoon vanilla extract
      • 13 whole strawberries, divided

      Instructions

      Vanilla Shortcake
      1. Preheat oven to 350 degrees F. Spray two 6-inch cake pans with cooking spray and place them on a baking sheet; set aside.
      2. In a medium bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
      3. In a large bowl, combine eggs, milk, melted butter, and extracts. Whisk until well combined, then add the dry ingredients. Stir until just combined.
      4. Divide batter evenly between the cake pans. Bake 22-28 minutes, until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool 10 minutes, then transfer to a cooling rack. Cool to room temperature.
      Macerated Strawberries
      1. Combine the sliced strawberries, sugar, and zest in a medium bowl. Stir well to coat, then cover and refrigerate for at least an hour, or overnight.
      Strawberry Whipped Cream
      1. In a large bowl, whip cream to medium peaks. Add sugar and vanilla, then whip until stiff peaks form, being sure not to over-whip.
      2. In a separate bowl, mash 6 of the strawberries with a fork. Fold them into the whipped cream. Refrigerate until ready to use.
      3. When ready to assemble, place one layer of cooled cake on a cake board or serving plate. Wrap a strip of acetate around the layer and tape to secure.
      4. Remove the tops of the remaining strawberries, then cut the berries in half. Discard the tops. Place the halves side by side on the cake layer, pressing the cut side against the plastic strip.
      5. Spoon 3/4 of the strawberry whipped cream on the layer, spreading it between the berries with a spatula. Smooth the cream into an even layer, then place the second layer of cake on top.
      6. Spread the remaining whipped cream on the top of the cake. Refrigerate until ready to serve, then spoon the macerated berries and juice on top.
