McDonald’s Copycat Fried Apple Pies

Visions of McDonald's RETRO Fried Apple Pies have been dancing in my head. Remember those from the 80's? Crisp flaky, heavenly pie crust oozing with thick apple pie filling and tender chunks of spiced apple.
s RETRO Fried Apple Pies have been dancing in my head McDonald’s Copycat Fried Apple Pies

I had to create a copycat recipe to cure my hankering for my favorite apple pies from my childhood.  Now you can enjoy one (or 6) too!

My family actually didn't eat out much as I was growing up.  My mom made sure we had a home cooked meal every night we were home.  I would get so excited about stopping for fast food during our vacations.  I have a few favorites, but when I think about McDonald's I remember those fabulous fried apple pies.

To have my copycat fresh apple pie in my hand was like a dream come true.,  Just like the original it is crisp flaky pie crust oozing with thick spiced apple pie filling and tender chunks of tart and sweet apples.  Purely heaven.  We devoured these and I am sure you will too.

Ingredients

  • 2 cups 1/2” diced apples, (peeled, cored and diced) approx 2-3 medium apples (I used 1 gala and 1 granny smith apple)
  • 1/2 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon cinnamon
  • pinch nutmeg
  • 1/2 cup water
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon pure vanilla extract
  • neutral oil (vegetable, canola or coconut oil)
  • 2 sheets Puff Pastry

Instructions

  1. Remove puff pastry from freezer, unwrap pastry and place on a floured work surface to thaw.
  2. Meanwhile; in a large saucepan over medium heat combine apples, lemon juice, sugars, cinnamon and nutmeg.  Mix well.  Stir occasionally until mixture begins to bubble.
  3. Meanwhile combine water and flour in a mason jar or container.  Shake to combine.  Add to pot.  Continue boiling, stirring constantly until apples are softened, approximately 5 minutes.  Remove from heat, stir in vanilla.  Set aside to cool.
  4. In a heavy-bottomed pan with deep sides, heat about 1” oil to 350 degrees.
  5. Meanwhile, using a sharp knife cut each pasty sheet into 3 equal long pieces.  Lay pasty sheet strips out horizontally on floured work surface.  Place 1/4 cup apple pie filling on the left half of each dough strip.  Moisten your clean fingers and wet the edge of the pastry.  Gently pick up the right side of the dough and fold dough on top of the left side, encasing the filling (if any filling seeps out push it back in).
  6. Gently press along the edge with the tines of a fork.  Once all pies are assembled fry them 2 at a time.  Cook for 3-4 minutes total, carefully flipping them over halfway through.  Remove pies from oil when they are a nice golden brown.  Place pies on a stack of paper towels.  Sprinkle them with sugar and cinnamon.  Repeat until all pies are cooked.
  7. Serve and enjoy!

No-Bake Chocolate Icebox Pie

amazing chocolaty layers will rock your world No-Bake Chocolate Icebox Pie

This icebox pie is made really easily, and is a natural make-ahead dessert.  Chocolate is a family favorite flavor, and the buttermilk here adds a beautiful slight tang to counter all the sweetness!

Are you guys ready for Summer weather yet?  We definitely are!  It’s been rain rain rain here, and it’s driving me nuts.  I’m so ready for the warm sunshine, a summer breeze, and great summer desserts!

Hey guys, it’s Amanda from The Chunky Chef.  I love being a contributor here on TSRI, and will be here sharing some of my favorite recipes each month!  I look forward to bringing some of my midwestern flair and enjoying some treats together.

You have some options here in terms of some of the ingredients.  Since our oven is out of commission, I went with a pre-made chocolate cookie crust (which doesn’t require baking), but a homemade version is even better.  That does require baking to help it hold together, but it’s a short baking time.  I also use frozen whipped topping that’s been thawed, both in the pie filling itself and on top of the pie.  If you’d prefer to use homemade ingredients, whip up a big batch of homemade whipped cream with a little sugar.

To do that, add your mixing bowl and beaters to the freezer for about 10 minutes to get them chilled.  Get the bowl and beaters all set up, and add 2 cups heavy whipping cream, 2 tsp vanilla extract, and 1/2 cup powdered sugar to the bowl.  Beat on low speed at first, then increase to about med-high speed until stiff peaks form.  That means when you hold the beater with some whipped cream upside down, it still forms a peak and doesn’t slump down.

The chocolate ganache drizzle on top is optional, but SO recommended!  If you’re worried about making a ganache, it’s actually incredibly easy, and I’ll detail exactly how to do it down in the recipe below.

Once a month I’ll be sharing my family favorite, tried and true recipes that are guaranteed to be hits for you as well!

When Donna asked me to share a No Bake Strawberry Cheesecake recipe I was more than happy to oblige because, here in the midwest, strawberries are a BIG DEAL this time of year.

When strawberries are in season their taste is infinitely sweeter and more potent. Our family loves to pick and eat them fresh, sliced on pancakes, shortcakes, or in another no bake strawberry dessert - Fresh Strawberry Couer a la Creme.

Helpful Tips to make No-Bake Strawberry Cheesecake:

  • The no bake crust comes together in minutes, but you can make it even easier (with less clean up) by throwing everything in a food processor. Just put in the whole graham crackers, melted butter, and brown sugar. Process until crumbly and voila! No need to crush the graham crackers ahead separately.
  • The recipe calls for softened cream cheese, but if you forget to set out the cream cheese, no worries! Place the unwrapped cream cheese blocks on a microwave safe dish and hit the “defrost” button (or at 30% power) on your microwave for 45 seconds to 1 minute.
  • I tested the recipe with full fat versus light cream cheese and sour cream. The no bake cheesecake sets with both versions. However, as much as I hate to be the bearer of bad news, the full fat version was thicker and tasted better (duh).
  • Don’t forget to remove 1 tablespoon of strawberry jello from the package before adding it to the sugar water. Leaving it in makes the strawberry glaze a little too gelatinous.
  • The recipe calls for 1 pound of strawberries, but you might need more, depending on the size of your strawberries. Smaller strawberries will require more to cover the top of the cheesecake.
  • The recipe only requires 2 cups of Cool Whip whipped topping. Use the leftover whipped topping for dolloping on top of slices.

is the perfect seasonal dessert to kickoff summer No-Bake Strawberry Cheesecake

What you will need to make No-Bake Strawberry Cheesecake:

  • 9” Pie Dish - Another reason why this cheesecake is so simple to throw together. There’s need for a special springform cheesecake pan. Just throw everything in your pie dish.
  • Strawberry Huller - With picking so many strawberries every year, I have tried out a lot of strawberry hullers. This one, by far, is my favorite and easiest to use.
  • Hand Mixer - The key to making the cheesecake filling so silky and creamy is beating the daylights out of it. This is easily done by using a powerful hand mixer.

Enjoy!

Helpful Tips to Make Lucky Charms No-Bake Icebox Pie:

  • The green crust is especially fun for St. Patrick's Day, but the rest of the year you can leave out the marshmallows and use 4 cups of cereal without the marshmallows for a more beige color crust.
  • The longer the pie sits in the freezer, the softer the marshmallows will become.

What you will need to make Lucky Charms No-Bake Icebox Pie:

  • Electric Hand Mixer - I have had this one in my kitchen forever (it seems like) at least 8 years.
  • 9" Pie Plate  - Can you ever have too many pie plates? I love these for plates for a breading station too. Egg in one, breading in another. So perfect!
  • Cereal marshmallows -If you don't feel like sorting the cereal grab a bag of marshmallows!

Enjoy!

Fresh Strawberry Pie + VIDEO

Fresh Strawberry Pie without Jello is bursting with natural flavor and so easy and quick to make from scratch. This simple but so delicious dessert recipe is always a hit especially when served with a big dollop of whipped cream on top!

without Jello is bursting with natural flavor and so easy and quick to make from scratch Fresh Strawberry Pie + VIDEO
Fresh Strawberry Pie without Jello is so easy to make from scratch and tastes amazingly flavorful. This pie recipe is perfect for summer because it can be made without turning the oven on.

You can use a store-bought pie crust or a no-bake graham cracker crust as a base (or go the fancy route and make your own pie crust).

This Strawberry Pie is loaded with juicy, fresh strawberries and made with a homemade strawberry glaze without added gelatin that lets the natural flavor of the strawberries be the star.

Is you are looking for other fresh strawberry recipes, check out our Strawberry Jam!

I have the biggest sweet tooth and love everything with berries but strawberry pie is definitely one of my favorite desserts!

This Fresh Strawberry Pie is the perfect spring and summer dessert made with simple ingredients! Top it with a big dollop of whipped cream and you have an easy dessert that everyone will love!

Helpful Tips to make Fresh Strawberry Pie:

  • I used a homemade pie crust for this recipe but you can also use a Graham Cracker Crust or a store-bought pie crust to save time.
  • For the best flavor, use fresh, high-quality strawberries. The strawberries are the star of this recipe so look for the freshest strawberries you can find that don’t have any bruises or discoloration.
  • This pie tastes best on the same day! The longer it sits the higher the risk of the juicy strawberries making the pie crust soggy. To avoid a soggy pie crust you can seal the crust by painting melted chocolate in the bottom and inside of cooled pie crust. Place the crust in the freezer to set the chocolate before adding the berries.
  • Make sure to stir the cornstarch mixture continuously for 2-3 minutes until it is thick and translucent. You don’t want it to be clumpy.
  • This pie won’t be as sturdy because it is made without gelatin but it will not ooze all over after cutting if you keep it refrigerated and serve it straight from the fridge.
  • Don’t forget the whipped cream! Strawberries and cream are a match made in heaven!!

  • Pie Dish - This is my everyday pie dish but if I want to use a fancier one this is my go-to pie dish for guests.
  • Strawberry Huller -  This little tool makes hulling strawberries super easy and it’s safe for kids. It works best on medium and larger strawberries.
  • Hand Mixer -  If you have problems with whipping cream try using a hand mixer. I prefer to use this one instead of my stand mixer to whip cream because I have more control and don’t over-whip the cream.

Enjoy!
