This perfectly scoopable Lazy Day Salsa is a classic tomato salsa that is whipped up in a flash (no chopping required). It is speckled with bits of onion, garlic, and cilantro for extra freshness. This salsa is so easy you can make it in 10 minutes (it actually takes me about 5). The best part is, you can add it to leftover chicken, burgers, casseroles and voila you have the perfect dinner.

I love to add this recipe to a few pounds of chicken in the crockpot and have the best ever salsa chicken.

It is so good that we made it twice this weekend and then made one more batch Monday as a thank you gift.

We eat so much salsa in our house that we could just about live on it. Funny thing is, I never even tried salsa until I moved to Arizona.

Boy was that a mistake! As soon as I had my first bite I was hooked.

  • Salsa keeps fresh in the refrigerator for 3 to 4 days.
  • MILD SALSA: remove the veins and seeds from the jalapeno
    UTTERLY MILD SALSA: use 2 tablespoons green chiles MEDIUM SALSA: Prepare as written HOT SALSA: Use 2 jalapenos, veins and seeds included
  •  The canned diced jalapenos are packed with citric acid NOT vinegar. Add about 2 tablespoons (canned jalapenos) per 1 fresh jalapeno with seeds and veins (called for in the recipe) . If you want medium-mild, start with 1 tablespoon.

Lazy Day Salsa

This perfectly scoopable Lazy Day Salsa is a classic tomato salsa that is whipped up in a flash (no chopping required). It is speckled with bits of onion, garlic, and cilantro for an extra freshness. This salsa is so easy you can make it in 10 minutes (it takes me 5) . The best part is, you can add it to left over chicken, burgers, casseroles and viola you have the perfect left over dinner.

Ingredients

  • 1/4 medium white onion, peeled
  • 2 tablespoons diced jalapenos (from a can) OR 1 medium fresh jalapeno, stem removed and halved
  • 2 cloves garlic, peeled
  • 1 (14.5 ounce) can Hunt's fire roasted diced tomatoes with garlic
  • 1/2 fresh lime, juiced
  • 1/2 teaspoon kosher salt
  • 2 tablespoons fresh cilantro

Instructions

  1. Add onion, jalapeno and garlic to the bowl of a food processor. Pulse until the bits are your desired size, about 5 or 6 times. Open cover, scrape down sides. Add remaining ingredients, pulse 1 or 2 times to combine.
  2. Transfer to a serving dish and serve immediately or transfer to a pint jar and store in the refrigerator. It becomes even more flavorful the next day.
  3. Enjoy!

We have included tips for substitutions and using what is in your pantry to create your own version along with serving suggestions to make one meal and repurpose it into several future meals.

As well as serving suggestions and ideas for the leftovers. This is a go-to in my "what's for dinner?" arsenal, and it will be in yours too.

One day I was talking to my friend and she told that I can make the easiest dinner ever by tossing in a jar of salsa with some chicken. I said, what? Just salsa and chicken? So I gave it a try.

Well, after several tests I came up with the most amazing simple dinner and it is a go-to in my house. When you are working with 2 ingredients you really want them to be the best ingredients you can find. Whether that means homemade salsa or store-bought is up to you. But, I have a few tips for add-ins and using what you have on hand to stretch this meal.

Cooking from your pantry can add some creative twists to this Salsa Chicken Crockpot.

  • Add a can of rinsed and drained black beans or kidney beans to the bottom of the slow cooker.
  • Add a can of drained niblet corn or 2 cups of frozen corn to the bottom of the slow cooker.
  • Add in a couple tablespoons of your favorite taco seasoning to really make the flavor pop. 
  • Add Colby Jack cheese.
  • If you are short on salsa, use a can of diced tomatoes with peppers or a can of diced tomatoes and a can of jalapenos or green chilis. This recipe is really forgiving. Get creative and see what you can come up with.
  • Add a couple tablespoons of cream cheese for a creamy version. 

What to Serve with Salsa Chicken Crockpot

  • Salsa Chicken Crockpot is amazing served on a flour or corn tortilla.
  • Serve it over a rice and veggies for a scrumptious rice bowl.
  • This is delish on a bed of lettuce for an amazing salad.
  • Try on crunchy taco shells with lettuce and cheese on top.
  • Are you a nacho lover? This could be a new favorite. Lay down tortilla chips, then salsa chicken, then top with cheese, black olives, sour cream and guacamole. YUM!
  • My family loves flautas (flour taquitos). So, I took the leftover salsa chicken and mixed it with cream cheese and Colby Jack cheese and rolled it up in flour tortillas. I froze them and when I am ready to make them, I pop them in a preheated 425°F oven for 20 minutes, until tortilla is crisp and the ends are beginning to brown and cooked through and my family goes crazy over them!
Whatever you choose, go with whatever works for you. Because honestly this salsa chicken is absolutely amazing!!!

  • To freeze for later use:  Prepare taquitos as described.  Place taquitos in a resealable freezer bag (1 gallon works great) and store until ready to use.  They keep well for 6 months.
  • I prefer my Lazy Day Salsa (recipe on TheSlowRoastedItalian) and Rojo's Fire Roasted Medium Salsa.

2-Ingredient Crockpot Salsa Chicken

2-Ingredient Slow Cooker Salsa Chicken is so easy it just about cooks itself. This fantastic simple recipe is officially part of our Lazy Day collection. Chunks of tomato, onion, and chiles are speckled through the perfectly tender and juicy chicken. And, just like every easy recipe, there are tips and tricks to make this a simple dish, a fabulous dinner!
prep time: 2 MINScook time: 4 hourtotal time: 4 hours and 2 mins

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 16 ounces your favorite salsa
  • salt and pepper to taste

Instructions

  1. Place chicken breasts on the bottom of the slow cooker. Pour salsa over top.
    Cover and cook for 3-4 hours on high or 6-8 hours on low.  Once cooked through, use 2 forks or meat claws to shred chicken. Season with salt and pepper to taste. Mine usually needs just a pinch.
  2. Serve and enjoy!

DONNA'S TIPS

  1. My family loves flautas (flour taquitos). So, I took the leftover salsa chicken and mixed it with cream cheese and Colby Jack and rolled it up.  Froze it and when I am ready to make it, I pop it in a preheated 425°F oven for 20 minutes, until tortilla is crisp and the ends are beginning to brown and cooked through and my family goes crazy over them!

Pineapple Salsa Party Dip

When I made this dip the first time, it was for Chad's birthday party.

To keep everything super simple, I prepared some burgers, Crockpot Corn on the Cob and a salsa bar.

The salsa bar was my favorite. I wish I had pictures. 

It featured 3 heat varieties of our Best Ever Chipotle's Copycat Guacamole, Strawberry Habanero Everything Spread and this Pineapple Salsa.

Also, we set out different chips to go with all of the dips.

The Pineapple Salsa stole the show. We started off with the salsa bar as our appetizers, if you will.

By the time dinner began, several guests were still eating pineapple salsa with dinner.

Then the cake came out and many of our guests headed back for the spicy dip again.  Let's just say the salsa was devoured!

Ingredients

The salsa features fresh pineapple and jalapeno peppers (although you could use serrano too) for the perfect combination of sweet and heat.

Cilantro adds a coolness to the dip, red onion gives it a hint of pungent spiciness and the addition of ginger (our secret ingredient!) warms it up.

It is truly a party for your senses and you will be eating this all year long!

Recipe Tips:

  • Use fresh pineapple. Frozen and canned won't give you the texture you are looking for.
  • Chill the ingredients. For the best flavor, be sure to allow time for the dip to chill in the refrigerator.
  • Use peppers to suit your palate. Less peppers for less heat. The recipe is mild heat as written.
  • Use kitchen gloves. To prevent burning your eyes, I recommend wearing gloves when working with spicy peppers.

Our pineapple salsa has a secret ingredient for the perfect blend of sweet and heat. Make this dip recipe in 15 minutes for your next party!

Ingredients

  • 1 whole medium pineapple diced (about 4 cups)
  • 1/4 medium red onion, diced
  • 2 jalapeno peppers (seeded and deveined), diced (to taste)

Restaurant-Style Garden Fresh Salsa

This Restaurant-Style Garden Fresh Salsa is absolutely my favorite fresh salsa ever! This easy recipe is made with fresh vegetables and a secret ingredient to give it a a deeper flavor that truly makes it amazing. It is an incredibly simple salsa with little chopping. Just toss all the ingredients in your food processor and pulse until it reaches your desired consistency.

Salsa is a staple here in the Southwest. This is my favorite kind. We call it "Just North of the Border Salsa". Living in Arizona we truly are just 'North of the Border', so it was fitting.

I personally like a more fresh tasting salsa, one that I can eat without constantly dabbing my eyes and nose. Oh and I prefer not to have to take in a gallon of liquids to try to put out the fire (which doesn't work anyway, try a milk based remedy. I like to use a spoon of vanilla ice cream to sooth my taste bud fires).

I have to say that my idea of salsa before I moved to Arizona was laughable. It was a couple of tomatoes with green peppers and onions. Anything hotter than that and I would run.

I think I mentioned before that my family is not really fond of spicy food. My mom never cooked with hot peppers, not even in dried spice form. When my parents came out to visit a few years ago I had made a fantastic Mexican Lasagna.

I toned it down a little, I really couldn't feel any heat at all. My Dad was not happy with it, he looked as if he had just swallowed fire! He about spit out his first bite. So, I kept meals to no hotter than a light sprinkle of finely ground black pepper for the rest of his visit.

But, that gives you an idea of where I started. The fact that I enjoy spice and heat now is pretty remarkable. But, I love it. I do not like things that are just hot for the sake of being hot. I want a flavor profile to back that heat up.

I love peppers so much now I even grown my own. You should try it. Homegrown peppers are amazing! This Restaurant-Style Garden Fresh salsa has it all. It is a medium heat salsa with fresh vegetables and fire roasted tomatoes to add extra depth.

It is so easy with little chopping. Just toss it all in your food processor. It is amazing and you are going to love it!

Restaurant-Style Garden Fresh Salsa

This Restaurant-Style Garden Fresh Salsa is absolutely my favorite fresh salsa ever! This easy recipe is made with fresh vegetables and a secret ingredient to give it a a deeper flavor that truly makes it amazing. It is an incredibly simple salsa with little chopping. Just toss all the ingredients in your food processor and pulse until it reaches your desired consistency.

Ingredients

  • 2 medium Roma tomatoes, rough chopped 
  • 1 (14.5 ounce) can fire roasted diced tomatoes
  • 1/2 large white onion, rough chopped
  • 2 jalapenos, rough chopped
  • 1 tablespoons lime juice
  • 2 cloves garlic
  • 1/2 teaspoon salt (to taste)
  • 1/2 teaspoon fresh ground black pepper
  • small handful cilantro 

Instructions

  1. Combine all ingredients in a food processor or blender. 
  2. Pulse until blended to your liking. If you like chunky pulse for a shorter time. If you prefer a smoother salsa, run blender until pureed.
  3. Serve immediately or serve chilled.

Chad and I have really caught this travel bug. It is actually funny because we are the type of people that enjoy 'home life' so much.

Easy Sloppy Joes

Easy Sloppy Joes are miles away from ordinary with a special ingredient added to really kick this simple recipe up a notch. This hearty meal is ready in just 15 minutes these can be on your table any night of the week!
prep time: 5 minscook time: 10 minstotal time: 15 mins

Ingredients

  • 1 pound lean ground beef
  • 1 1/4 cups ketchup 
  • 1 tablespoon tomato paste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon coarse ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 6 hamburger buns

Instructions

  1. Cook ground beef, in a 10" skillet over medium-high heat. Drain any excess liquid. Add remaining ingredients. Add 1/4 cup water. Stir until combined. Cover and reduce temperature to simmer, for 5 minutes. Remove cover and stir.
  2. Serve sloppy Joe mixture on hamburger buns and enjoy!

DONNA'S NOTES

  1. I like to butter the buns and toast them in the oven. It adds great texture and flavor to the sandwich.
