Restaurant-Style Garden Fresh Salsa

This Restaurant-Style Garden Fresh Salsa is absolutely my favorite fresh salsa ever! This easy recipe is made with fresh vegetables and a secret ingredient to give it a a deeper flavor that truly makes it amazing. It is an incredibly simple salsa with little chopping. Just toss all the ingredients in your food processor and pulse until it reaches your desired consistency.

Salsa is a staple here in the Southwest. This is my favorite kind. We call it "Just North of the Border Salsa". Living in Arizona we truly are just 'North of the Border', so it was fitting.

I personally like a more fresh tasting salsa, one that I can eat without constantly dabbing my eyes and nose. Oh and I prefer not to have to take in a gallon of liquids to try to put out the fire (which doesn't work anyway, try a milk based remedy. I like to use a spoon of vanilla ice cream to sooth my taste bud fires).

I have to say that my idea of salsa before I moved to Arizona was laughable. It was a couple of tomatoes with green peppers and onions. Anything hotter than that and I would run.

I think I mentioned before that my family is not really fond of spicy food. My mom never cooked with hot peppers, not even in dried spice form. When my parents came out to visit a few years ago I had made a fantastic Mexican Lasagna.

I toned it down a little, I really couldn't feel any heat at all. My Dad was not happy with it, he looked as if he had just swallowed fire! He about spit out his first bite. So, I kept meals to no hotter than a light sprinkle of finely ground black pepper for the rest of his visit.

But, that gives you an idea of where I started. The fact that I enjoy spice and heat now is pretty remarkable. But, I love it. I do not like things that are just hot for the sake of being hot. I want a flavor profile to back that heat up.

I love peppers so much now I even grown my own. You should try it. Homegrown peppers are amazing! This Restaurant-Style Garden Fresh salsa has it all. It is a medium heat salsa with fresh vegetables and fire roasted tomatoes to add extra depth.

It is so easy with little chopping. Just toss it all in your food processor. It is amazing and you are going to love it!

Restaurant-Style Garden Fresh Salsa

This Restaurant-Style Garden Fresh Salsa is absolutely my favorite fresh salsa ever! This easy recipe is made with fresh vegetables and a secret ingredient to give it a a deeper flavor that truly makes it amazing. It is an incredibly simple salsa with little chopping. Just toss all the ingredients in your food processor and pulse until it reaches your desired consistency.

Ingredients

  • 2 medium Roma tomatoes, rough chopped 
  • 1 (14.5 ounce) can fire roasted diced tomatoes
  • 1/2 large white onion, rough chopped
  • 2 jalapenos, rough chopped
  • 1 tablespoons lime juice
  • 2 cloves garlic
  • 1/2 teaspoon salt (to taste)
  • 1/2 teaspoon fresh ground black pepper
  • small handful cilantro 

Instructions

  1. Combine all ingredients in a food processor or blender. 
  2. Pulse until blended to your liking. If you like chunky pulse for a shorter time. If you prefer a smoother salsa, run blender until pureed.
  3. Serve immediately or serve chilled.
  4. Enjoy!

Growing up my mom was one heck of a cook. More of a semi-homemade cook, but let me tell you she gave me a love of cooking that I carried through my life. Years ago, my love for cooking and baking grew and my creativity in the kitchen followed.

Roasted Tomato Basil Soup

Roasted Tomato Basil Soup is a rich and comforting bowl of deliciousness with deep tomato flavor and a hint of sweetness from the caramelized roasted tomatoes. This family favorite soup recipe really takes your traditional tomato soup to the next level with the roasted tomatoes and a nice mild pepperiness from the basil. It is utterly mind-blowing.

Ingredients

  • 3 pounds Roma tomatoes, halved lengthwise
  • 1/4 cup extra virgin olive oil 
  • 2 tablespoons kosher salt, divided
  • 1 teaspoon freshly ground black pepper
  • 1 medium sweet onion, diced
  • 4 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon crushed red pepper flakes 
  • 2 (14.5-ounce) cans diced tomatoes 
  • 2 tablespoons dried basil leaves
  • 1 tablespoon Italian seasoning 
  • 2 (14.5 ounce) cans reduced sodium chicken broth

Instructions

  1. Preheat the oven to 400°F. 
  2. In a large bowl, toss together the tomatoes, 4 tablespoons olive oil, 1 tablespoon salt, and pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 45 minutes.
  3. In an 8-quart stockpot over medium heat, melt butter. Add the onions, garlic and red pepper flakes. Cook until the onions start to brown, about 10 minutes.
  4. Add the oven-roasted tomatoes (including the liquid on the baking sheet), canned tomatoes, basil, Italian seasoning and chicken broth.
  5. Bring to a boil and simmer uncovered for 40 minutes.
  6. Carefully scoop soup into a blender or food processor (be careful not to fill more than 1/2 full) and blend to puree. Then pour through a sieve placed over the soup pot to get seeds and skins out.
  7. Serve and enjoy!

  • Seasoning is important

Because ingredients range in flavor, always taste and adjust seasonings before serving. 

You may find that the soup needs more sweetness or acidity for balance, or maybe the flavor from the herbs isn’t strong enough.

 

  • Adjusting the texture 

Pureeing the soup makes for a smooth, creamy finish. But, if you don’t mind little pieces of onion in the soup, you can skip this step entirely.

Ingredient notes and substitutions 

  • Chicken broth - If you use low-sodium or unsalted chicken broth, you may need to add more salt at the end. You can also substitute vegetable broth to make this recipe vegetarian.
  • Heavy cream - Replace with half-and-half if needed.
  • Sugar - Adjust the amount of sugar based on how sweet you like your soup. Some brands of canned tomatoes have higher acidity than others, so you may need a little more sugar to balance the flavor as well.
  • Basil - While using fresh basil will give you the best flavor, you can also use the kind that comes in a squeeze tube from the produce section. Or use dried basil, but reduce the amount by at least half.
  • Parmesan - Buy a fresh wedge and grate it yourself. The texture found in packaged shreds is much different, and it won’t melt into the soup the same way that fresh will.
Kitchen tools needed for this recipe 
  • Immersion Blender - This is the perfect tool to blend soups and sauces right in the pot, which makes cooking so much easier! If you don’t have one, work in batches to blend the soup in a food processor or high-speed blender.
  • Chef’s Knife - Quality knives make prep time much quicker and are important for safety as well. If you make one kitchen investment, I believe it should be in a good quality chef's knife.
  • Cutting Boards - I love these cutting boards because they’re easy to clean, keep your knives in great shape, and are gorgeous to look at too.

Serving suggestions

Garnish your homemade tomato basil soup with croutons, fresh basil, and grated Parmesan cheese. 

Serve it with a grilled cheese sandwich, some mac and cheese bombs, or slices of thick, crusty bread. 

It would also be delicious with a side of Texas Roadhouse rolls!


FAQ: Recipe Questions


Can I use fresh tomatoes instead of canned?

You can use fresh Roma tomatoes if you prefer them. However, it will require a bit of prep work first.

One 28-ounce can of crushed tomatoes equals 8 to 10 Roma tomatoes, or about 2 pounds. For this tomato basil soup recipe, you will need twice that amount.

  1. First, blanch the tomatoes - find instructions on how to do that here.
  2. Peel, core, and dice the tomatoes. Then, use a potato masher to crush them. 
Alternatively, you can pulse them in a food processor or high speed blender, just until they are chunky.


Can the soup be frozen? 

Freezing soups that have milk or cream in them isn't a good idea. Thawing and reheating the soup changes the consistency, causing the cream to separate from the.rest of the soup. 

Although it's possible to recombine them as they warm up, the texture of the soup changes and is usually unpleasant.

However, if you want to make the tomato basil soup recipe ahead and freeze it to serve later, you can simply leave out the heavy cream. Then, stir it in after reheating the soup.

Before freezing the soup, allow it to cool before transferring it to jars or airtight containers. It may be kept in the freezer for up to 6 months.

Reheating leftover tomato soup:

When you are ready to enjoy it, transfer the container of soup to the refrigerator so that it can thaw overnight. 

Reheat it in a pan over medium heat on the stove. After it warms up, stir in the heavy cream and continue to cook on medium heat for another 5 minutes.

Tomato Basil Soup (Applebee's Copycat)

This Tomato Basil Soup is filling, comforting, and so easy to make from scratch! Move over Applebee’s, this copycat soup recipe tastes even better than the original and is ready in only 30 minutes.
Prep time: 5 mins     Cook time: 25 mins     Total time: 30 mins

Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup white onion, chopped
  • 2 garlic cloves, minced
  • 2 1/2 cups chicken broth
  • 2 (28 ounce) cans crushed tomatoes
  • 1 tablespoon granulated sugar
  • 3/4 cup heavy cream
  • 1/4 cup fresh basil, minced
  • 1 1/2 teaspoon fresh or dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt, or more to taste
  • 1/4 teaspoon ground black pepper
Garnish
  • Croutons
  • Fresh Basil
  • Freshly grated Parmesan Cheese
Instructions
  1. In a large saucepan heat olive oil over medium heat, then add chopped onion and saute until translucent, for about 2-3 minutes. Add garlic and saute for one more minute while stirring constantly.
  2. Add chicken broth, crushed tomatoes, and sugar. Bring to a simmer and cook uncovered for 20 minutes.
    Puree with an immersion blender or transfer to a blender and puree.
  3. Stir in heavy cream and herbs. Bring soup back to a simmer and cook for 5 minutes on low heat.
  4. Season to taste with salt and pepper. Serve garnished with croutons, basil, and grated parmesan cheese.

I can not get enough of salads during the summer months, but lately lettuce has not been my thing.  So I have turned to fabulous vegetable salads like my Best Ever Broccoli Salad to satisfy this craving.

Pasta salads really rock my world, but on days like today where I am longing to taste the freshness of summer.

 I grabbed a bunch of garden fresh ingredients (okay, they are actually market fresh) and tossed them with an incredible lemon and garlic dressing and sat down to enjoy lunch.

The fresh corn takes me back to a few years ago when Chad and I planted a garden full of corn.  I mean he is from Iowa, we should be able to grow corn...  Even in Arizona.

Well, I tended that corn, fertilized it (by shaking the tassels) watered it by hand.  That corn garden was my baby.

After a full season of tending the corn, using all natural gardening alternatives to deter pests and loving on my corn (can you tell I really babied this corn garden) the day finally came to harvest the corn.

The harvest: 3 ears.  Yes, you read that correctly my garden of corn stalks (12 or so) yielded 3 ears of corn.

I have to tell you though, my excitement was not suppressed by the low yield.  Chad and I took 2 ears of corn and dropped them in boiling water (with nothing added).

After a few minutes we took them out of the pot and ate them.

That was the best corn I have ever eaten in my life. So what happened to the 3rd ear you ask? I ate it straight off the cob. It never made it to the kitchen.

AMAZING and it was so inspiring that I started enjoying fresh corn on the cob in dishes like this one.  I love it, and you will too.

Summer Corn Salad

Summer Corn Salad is a bright refreshing taste of summer. Garden fresh corn and tomatoes come together with fresh mozzarella, herbs and a glorious dressing that really gives it an even lighter fresher taste. This simple recipe is the perfect summer side!

Ingredients

  • 4 ears fresh corn on the cob, cleaned and washed
  • 1 (10.5 ounce) package grape tomatoes, halved
  • 8 ounces fresh mozzarella, cut into bite size pieces
  • 10 basil leaves, chiffonade (roll leaves and slice thinly)
  • ¼ cup fresh lemon juice
  • ¼ cup extra virgin olive oil
  • 2 garlic cloves, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh ground coarse black pepper

Instructions

  1. Cut corn off the cob, place into a medium mixing bowl.  Add tomatoes and mozzarella. Sprinkle with basil.  Set aside.
  2. Add fresh lemon juice, olive oil, garlic, salt and pepper to a pint size canning jar.  Shake to combine.  Pour dressing over salad.  Toss to combine.
  3. Serve and enjoy!

  1. If you are traveling with this salad or making ahead; you can prep the salad and the dressing and wait to pour dressing over salad until ready to serve.  Refrigerate until ready to serve.

Lazy Day Salsa (With VIDEO)

This perfectly scoopable Lazy Day Salsa is a classic tomato salsa that is whipped up in a flash (no chopping required). It is speckled with bits of onion, garlic, and cilantro for extra freshness. This salsa is so easy you can make it in 10 minutes (it actually takes me about 5). The best part is, you can add it to leftover chicken, burgers, casseroles and voila you have the perfect dinner.

I love to add this recipe to a few pounds of chicken in the crockpot and have the best ever salsa chicken.

Helpful Tips to make Lazy Day Salsa:

  • Salsa keeps fresh in the refrigerator for 3 to 4 days.
  • MILD SALSA: remove the veins and seeds from the jalapeno
    UTTERLY MILD SALSA: use 2 tablespoons green chiles MEDIUM SALSA: Prepare as written HOT SALSA: Use 2 jalapenos, veins and seeds included
  •  The canned diced jalapenos are packed with citric acid NOT vinegar. Add about 2 tablespoons (canned jalapenos) per 1 fresh jalapeno with seeds and veins (called for in the recipe) . If you want medium-mild, start with 1 tablespoon.

Lazy Day Salsa

This perfectly scoopable Lazy Day Salsa is a classic tomato salsa that is whipped up in a flash (no chopping required). It is speckled with bits of onion, garlic, and cilantro for an extra freshness. This salsa is so easy you can make it in 10 minutes (it takes me 5) . The best part is, you can add it to left over chicken, burgers, casseroles and viola you have the perfect left over dinner.

Ingredients

  • 1/4 medium white onion, peeled
  • 2 tablespoons diced jalapenos (from a can) OR 1 medium fresh jalapeno, stem removed and halved
  • 2 cloves garlic, peeled
  • 1 (14.5 ounce) can Hunt's fire roasted diced tomatoes with garlic
  • 1/2 fresh lime, juiced
  • 1/2 teaspoon kosher salt
  • 2 tablespoons fresh cilantro

Instructions

  1. Add onion, jalapeno and garlic to the bowl of a food processor. Pulse until the bits are your desired size, about 5 or 6 times. Open cover, scrape down sides. Add remaining ingredients, pulse 1 or 2 times to combine.
  2. Transfer to a serving dish and serve immediately or transfer to a pint jar and store in the refrigerator. It becomes even more flavorful the next day.
  3. Enjoy!

DONNA'S NOTES

  1. Salsa keeps fresh in the refrigerator for 3 to 4 days.
  2. MILD SALSA: remove the veins and seeds from the jalapeno
    UTTERLY MILD SALSA: use 2 tablespoons green chiles
    MEDIUM SALSA: Prepare as written
    HOT SALSA: Use 2 jalapenos, veins and seeds included
  3. The canned diced jalapenos are packed with citric acid NOT vinegar. Add about 2 tablespoons (canned jalapenos) per 1 fresh jalapeno with seeds and veins (called for in the recipe) . If you want medium-mild, start with 1 tablespoon.

Best tomatoes for roasted tomato sauce

Roma tomatoes are really the best tomato for this roasted tomato sauce recipe. They have very few seeds and are a nice, dense tomato.

Some people like to remove the seeds when they make tomato sauce. Other people leave them in. It's up to you. But, with Roma tomatoes, you have far fewer seeds to deal with.

You can use this roasted tomato sauce recipe in the same way that you use traditional spaghetti sauce or marinara sauce. Just serve it over your favorite pasta.

Or, if you prefer a low carb option, you can serve it over zucchini noodles or even spaghetti sauce. You might want to try it in my Roasted Tomato Basil Soup.

It has a deep tomato flavor with just a hint of sweetness. My Sundried Tomato Chicken and Pasta is a fabulous easy dinner recipe in just 30 minutes.

How can I store this?

This recipe makes about 3 cups of roasted tomato sauce. If you want to make more so that you can enjoy homemade roasted tomato sauce in the winter, you can.

Just put it in a freezer-safe container or a freezer bag and it will stay good for 3 to 4 months.

Or, you can keep it in the refrigerator in a jar for up to five days.

I try to keep extra Mason jars on hand to store this in. It's an easy way to extend your tomato harvest.

Roasted tomato sauce for canning To make this roasted tomato sauce recipe for canning, you will need to use a water bath canner. You need to make sure that your recipe has the right acidity level.

So, it's best to consult the canning guide that came with your canner. Or, an easy alternative is to store it in the freezer.

  • Baking sheet
  • Parchment paper or a silpat mat
  • Food processor

How to make roasted tomato sauce Scroll to the end for a printable copy of this recipe. You will need to microwave the oil, herbs, and spices first. Then, cut the tomatoes and place them in the oil mixture.

Next, place the tomatoes cut side up on a silpat sheet and sprinkle them with fresh herbs and any extra oil mixture.

Next, you will need to roast then in the oven rotating halfway through.

What can I add to this recipe? If you want to add more vegetables to your roasted tomato sauce recipe, you certainly can. Why not try onions, garlic, spinach, mushrooms, red bell peppers, or zucchini.

This is a wonderful way to use up your extra garden produce.

Simply at them to your sauce while you're cooking it.

But, be sure to add it after you put it in the food processor or they will be blended into the sauce. Then, serve it over your favorite pasta or use it in your favorite recipe.

Roasted Tomato Sauce

Our Roasted Tomato Sauce recipe is still our favorite after over a decade of learning how to make tomato sauce from scratch! It's that good.

Ingredients

    • 18 ripe Roma (Paste) tomatoes (halved and cored)
    • 3 cloves garlic, finely chopped
    • 1/2 small yellow onion, diced
    • 1/4 cup extra virgin olive oil
    • 1 teaspoon kosher salt
    • 1/2 teaspoon fresh ground pepper
    • 1 tablespoon granulated sugar
    • 1 tablespoon Italian seasoning
    • 2 tablespoons fresh basil, finely chopped
    • 1 tablespoon fresh rosemary, finely chopped

      Instructions

        1. Preheat oven to 300°F.  Line a baking sheet with parchment paper or Silpat mat.
        2. In a microwave-safe bowl combine onion, garlic, and olive oil.  Microwave for 30 seconds to infuse the garlic and onion into the oil. When you remove the bowl from the oven you will smell the heavenly aroma of garlic and onion.  
        3. Add salt, pepper, Italian seasoning and sugar to bowl and stir to combine. Sugar will help cut the acidity of the tomatoes.
        4. Place cut tomatoes in a large mixing bowl, pour in the olive oil mixture over top and toss with your hands or a spoon.  Make sure all of the tomatoes are well coated.  
        5. Place the tomatoes cut side up on the baking sheet. Sprinkle with the fresh basil, rosemary, and any remaining olive oil mixture from the prep bowl.
        6. Place tray on middle rack in oven.  Cook for 2 hours.  After 2 hours of slow roasting, your tomatoes will look slightly caramelized.
        7. Turn the oven up to 400°F and roast for 30 minutes, or until the tomatoes start to brown.  They will be caramelized and delicious. If you prefer a brighter tomato sauce pull them out before they brown.  Approximately 10-15 minutes after you turn the oven to 400°.  These roasted for the full 30 minutes, you can see the edges of the tomato are nice and browned.
        8. Remove pan from oven and transfer tomatoes to the bowl of a food processor.  Process until tomato sauce is at your desired consistency.  I like mine saucy, not too chunky.
          DONNA'S NOTES
          1. If you are doubling the recipe be sure to rotate the pans ½ way through.
          2. The tomatoes will cook faster if you remove the seeds, so watch your time.
          3. I have also made this without the onions and garlic.  I put the tomatoes on the pan and drizzled the olive oil over them.  Then sprinkled with the remaining ingredients.  The fresh garlic and onion impart such a deep level of flavors that I would recommend using these ingredients.
