Chad and I have really caught this travel bug. It is actually funny because we are the type of people that enjoy 'home life' so much.

We generally prefer eating at home over eating out. Entertaining at home is our favorite way to get together with friends.

But, for the last few months, we can't seem to get enough of traveling and touring the best food each city has to offer. It has been amazing.

And the bug has bitten us again so we are working extra hard so we can take a few days off to head to Sedona. Have you ever been?

It is so amazing! I can't wait to share our trip with you. I am sure we will have some fabulous food photos and red rock mountain photos to share with you.

We are going to catch a glimpse of what fall really looks like. We only have 2 seasons in Phoenix: hibernating season and tourist season, and neither of them offers pretty colored trees.

Of course in the hub bub of getting ready for the trip, Lazy Day cooking is king!

I had a hankering for Sloppy Joe's and not a lot of time to prepare dinner so I put a quick and easy spin on my regular recipe and came up with these sensational Joe's.

My favorite meatloaf has a sweet ketchup topping that is out of this world! I add balsamic vinegar for a little zip and I tell you it adds just the right touch of sweet/tangy and a hint of smokiness. Combining those flavors with my sloppy Joe's really kicked them up a notch.

Chad and I devoured these Lazy Day Sloppy Joe's every time I made them and I know you are going to love them too.

Crockpot Chicken Fajitas (VIDEO)

Crockpot Chicken Fajitas are perfect for a fabulous no-fuss dinner! This simple recipe comes together in a flash. You simply layer the ingredients and go. It just about cooks itself. This dish is absolutely bursting with flavor and sure to be a go-to in your house too!

Serve them with warm flour tortillas and Mexican rice and you may never go out to dinner again. This is surely destined to be our next game day dinner.

I absolutely love fajitas and Chad and I order them every time we go to a Mexican restaurant and I still can't get enough. I have made them at home, but I was looking for a simple recipe that is no-fuss after a long day of work and I finally have it for you.

I am always looking for quick and easy dinner ideas and I saw a video one day from Buzzfeed that showed taking the chicken out of the slow cooker after 3 hours on high to get chicken strips where as chicken at 8 hours on low will give you shredded chicken.

So I decided to give it a go.  I am usually too impatient to wait for cooking all day so I usually cook on high so this was absolutely perfect for my chicken fajitas dish I had been thinking about.

I started with the standard chicken fajita fixin's.  I started with my favorite salsa flavors (tomatoes, white onions, jalapeno, garlic and lime juice) and add the bell peppers. The chicken is seasoned with my homemade taco seasoning and that brings in the rest of the flavor party! This dish is very versatile, so feel free to use your favorites.

Needless to say these are my go to Chicken Fajitas. The chicken is moist and tender. This dish is bursting with flavor. I truly ate these fajitas for lunch every day for a week. They are so good I couldn't help myself. Enjoy.

Helpful Tips to make Crockpot Chicken Fajitas:

  • The longer it cooks the more tender it will become. If you remove it sooner, you will be able to slice it. About 3 hours on high or 6 hours on low. Longer time will yield pulled chicken, which is equally delicious. If that is what you desire, remove chicken from slow cooker after long cook time and shred with 2 forks.
  • Why New Mexico Chile Powder? It has a deep dark reddish brown color and features an earthy, sweet flavor and subtle, spicy heat. It is mildly hot and absolutely perfect in this. It creates a truly authentic flavor! New Mexico Chili Powder can be found in the international aisle in the bulk bags or on Amazon. if you are afraid the heat will be too much you can use half New Mexico Chili Powder and 1/2 regular chili powder.

What you will need to make Crockpot Chicken Fajitas:

  • Slow Cooker - the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
  • New Mexico Chile PowderThis is one of my favorite spices. See the notes above.

Enjoy!

2-Ingredient Salsa Chicken Crockpot

Salsa Chicken Crockpot is so easy it just about cooks itself. Chunks of tomato, onion, and chiles are speckled through the perfectly tender and juicy chicken.   and chiles are speckled through the perfectly tender and juicy chicken 2-Ingredient Salsa Chicken Crockpot
As well as serving suggestions and ideas for the leftovers. This is a go-to in my "what's for dinner?" arsenal, and it will be in yours too.

One day I was talking to my friend and she told that I can make the easiest dinner ever by tossing in a jar of salsa with some chicken. I said, what? Just salsa and chicken? So I gave it a try.

Well, after several tests I came up with the most amazing simple dinner and it is a go-to in my house. When you are working with 2 ingredients you really want them to be the best ingredients you can find. Whether that means homemade salsa or store-bought is up to you. But, I have a few tips for add-ins and using what you have on hand to stretch this meal.

and chiles are speckled through the perfectly tender and juicy chicken 2-Ingredient Salsa Chicken Crockpot

Cooking from your pantry can add some creative twists to this Salsa Chicken Crockpot.

  • Add a can of rinsed and drained black beans or kidney beans to the bottom of the slow cooker.
  • Add a can of drained niblet corn or 2 cups of frozen corn to the bottom of the slow cooker.
  • Add in a couple tablespoons of your favorite taco seasoning to really make the flavor pop.
  • Add Colby Jack cheese.
  • If you are short on salsa, use a can of diced tomatoes with peppers or a can of diced tomatoes and a can of jalapenos or green chilis. This recipe is really forgiving. Get creative and see what you can come up with.
  • Add a couple tablespoons of cream cheese for a creamy version.

What to Serve with Salsa Chicken Crockpot

  • Salsa Chicken Crockpot is amazing served on a flour or corn tortilla.
  • Serve it over a rice and veggies for a scrumptious rice bowl.
  • This is delish on a bed of lettuce for an amazing salad.
  • Try on crunchy taco shells with lettuce and cheese on top.
  • Are you a nacho lover? This could be a new favorite. Lay down tortilla chips, then salsa chicken, then top with cheese, black olives, sour cream and guacamole. YUM!
  • My family loves flautas (flour taquitos). So, I took the leftover salsa chicken and mixed it with cream cheese and Colby Jack cheese and rolled it up in flour tortillas. I froze them and when I am ready to make them, I pop them in a preheated 425°F oven for 20 minutes, until tortilla is crisp and the ends are beginning to brown and cooked through and my family goes crazy over them!
Whatever you choose, go with whatever works for you. Because honestly this salsa chicken is absolutely amazing!!!

5-Ingredient Easy Chili

5-Ingredient Easy Chili Recipe is the perfect comforting meal for pantry cooking. It uses just 5 ingredients most people have on hand (in their pantry). Truly one of our favorite chili recipes ever.

is the perfect comforting meal for pantry cooking 5-Ingredient Easy Chili

One of my favorite cooking methods is working with what I have on hand and finding inspiration in my pantry.

Actually pantry cooking has resulted in some of the most delicious recipes I have ever created and this was one of them.

I injured my knee at the beginning of January and I was laid up on the couch for a week. I only had Chad running to the store for staples (like milk and bread).

After about a week of fast food and dry cereal, I decided I had enough and I was going to cook something, so I grabbed some cooked ground beef out of the freezer and headed for the pantry to find some dinner inspiration.

I keep my pantry pretty well stocked for occasions exactly like this.

After surveying the pantry the beans caught my eye and I decided I would whip up a chili.

Beef, beans, tomatoes, jalapenos and some crushed red pepper. Just a few minutes later I had the most scrumptious chili.

I still can't believe how delicious it was. So, I tried the recipe again and again. Feeding it to friends and family.

Everyone raved about it and no one believed it was so quick to make.

is the perfect comforting meal for pantry cooking 5-Ingredient Easy Chili

Eventually, I settled on fresh ground beef because you don't always have cooked ground beef on hand, but if you have it cooked already you can whip this up this fabulous recipe in just about 7 minutes.

Good pantry cooking really comes down to choosing your ingredients well.

Fire-roasted tomatoes and chili beans give this chili an incredible slow-cooked flavor and the peppers give it a little kick (not too much). Your friends and family will never believe you whipped this up in just 15 minutes.

10-Minute Italian Zucchini Noodle Skillet with Sausage

Italian Sausage and Zucchini Noodle Skillet is my new favorite with oodles and oodles of zoodles (zucchini noodles)!

This amazingly simple Italian skillet recipe comes together in just 10 minutes with 5 real ingredients, all in one skillet. FINALLY, a dinner you can feel good about feeding your family and still have enough time to enjoy your evening.

Italian Sausage and Zucchini Noodle Skillet 10-Minute Italian Zucchini Noodle Skillet with Sausage
I have wanted to start adding zucchini to our meals for quite some time now. But, I have not really worked with zucchini much, except adding it to meatballs and in a roasted pasta salad so, I was a little intimidated.

Italian Sausage and Zucchini Noodle Skillet 10-Minute Italian Zucchini Noodle Skillet with Sausage

You know you have seen them everywhere: zoodles, voodles, zucchini noodles... whatever you call them, I wanted them. I even researched different methods of making zucchini noodles. In case you are wondering, there are several methods:

Box Grater - Lay a box grater on its side, using the largest size and carefully shred zucchini along the box grater ( the long side of the zucchini against the grater). Use a kitchen towel to hold the zucchini.

Julienne peeler or Mandoline with julienne attachment - Cut off the stem. Press the julienne peeler at the top of the zucchini and peel it from top to bottom, rotating the zucchini to peel all four sides. Stop once you get to the seeds.

After trying these methods, which are good, but just not quite spaghetti shaped. I decided to go ahead and order The Spiralizer. It makes perfectly shaped vegetable spaghetti. SCORE! It's my new favorite kitchen tool, and I literally spiralize everything (well a lot of vegetables anyway).

So spiralizer in hand, I have been keeping my eye out for something that looked delicious and simple, but nothing really piqued my attention. So, one day for lunch I decided to make a quick onion and sausage skillet, and as I was putting it together it evolved into the most magnificent creation ever!

Italian Sausage and Zucchini Noodle Skillet 10-Minute Italian Zucchini Noodle Skillet with Sausage

It all starts with thinly sliced onions, juicy tomatoes and Italian sausage. I buy the fully cooked organic sweet Italian chicken sausage from Costco. It is amazing. The sausage lends so much flavor that the only seasoning you will need to add is salt and pepper. The grape tomatoes help create a magnificent sauce (look at the next photo) for this dish. The zucchini is cooked just until it is al dente and it is topped with Parmesan cheese.

I seriously ate this every day for lunch for three weeks. I made a single portion each day because I like the zucchini al dente, and it will be tender if you reheat it. I know you are going to love it! It is so amazing I even made this meal for a friend that was having a tough day last week. It took me 10 minutes, and it made her night easier. Can't ask for much more than that.

What you will need to make 10-Minute Italian Zucchini Noodle Skillet with Sausage:

10-Minute Italian Zucchini Noodle Skillet with Sausage

This amazingly simple Italian skillet recipe comes together in just 10 minutes with 5 real ingredients, all in one skillet. FINALLY a dinner you can feel good about feeding your family and still have enough time to enjoy your evening. Italian Sausage and Zucchini Noodle Skillet is my new favorite with oodles and oodles of zoodles (zucchini noodles)!

Ingredients

  • 2 tablespoons coconut oil (or olive oil)
  • 1 medium yellow onion, thin sliced
  • 1-pint grape tomatoes, sliced in half
  • 4 fully cooked Italian sausage links, sliced into coins
  • 4 medium zucchini, (or 3 large)
  • 2 ounces fresh Parmesan cheese, shredded
  • salt and pepper (to taste)

Instructions

  1. Warm a large skillet over medium-high heat. Once you can feel the heat from 6" above the pan, add oil.
  2. Meanwhile: cut the onion in half and peel the outer layer. Slice the onion into thin strips. Toss onion slices in the pan when it's ready. Sprinkle with salt and pepper (about 1/4 teaspoon of each).
  3. Meanwhile:  Rinse tomatoes and slice in half. I recommend this tomato slicing tip to make quick work. Cut sausage into coins.
  4. Once the onions are beginning to look translucent, add tomatoes and sausage. Add salt and pepper (about 1/4 teaspoon each). Your tomatoes will begin to release their juices, and it will collect in the pan, once you see the tomato juice, you are ready to add zucchini.
  5. Meanwhile: Wash zucchini and make zucchini noodles (see above for options on making the noodles).
  6. Add zucchini noodles to skillet. Add salt (about 1/2 teaspoon). Use tongs to toss and coat zucchini. Cook until desired texture is reached. I like mine like al dente pasta, about 3 minutes.
  7. Taste. Season with salt and pepper as necessary.
  8. Shred Parmesan cheese over the skillet. Serve and enjoy!

DONNA'S NOTES

  1. For a single portion, cut the recipe by 1/4, cook on medium heat and use a smaller skillet (I like my medium (10")  skillet for this recipe).
  2. STRESS-FREE RECIPE NOTES: To make this a stress-free recipe you can prep the ingredients ahead of time. It will take an extra 5 minutes, but if you are a newer cook, it will go much smoother.

I love to add this recipe to a few pounds of chicken in the crockpot and have the best ever salsa chicken.

It is so good that we made it twice this weekend and then made one more batch Monday as a thank you gift.

We eat so much salsa in our house that we could just about live on it. Funny thing is, I never even tried salsa until I moved to Arizona.

Boy was that a mistake! As soon as I had my first bite I was hooked.

It is a household staple. So much flavor in such a small package.

I even love salsa on omelets, salads, potatoes and tossed into anything I can think of! Yes, I am an official southwestern gal.  LOL

You know if you think about it... Salsa and Italian red sauce start off the same way; tomatoes, onions and garlic. So, maybe it was destiny.

As much as we love homemade salsa, some days there is just not enough time (or energy) to do all the chopping.

So, I turned to my well-stocked cantry. Perfect for these kinds of days. Tomatoes picked at the peak of ripeness and canned to lock in the nutrients just hours after picking.

Not to mention utterly convenient! I look preparing quick and easy meals and often turn to my pantry for help.

Fire-roasted tomatoes, diced jalapeno, onion, and garlic come together to create a magnificent base for this salsa, but the addition of fresh cilantro and lime juice really takes it over the top.

Yield: 4 (1/2 cup)

Lazy Day Salsa

This perfectly scoopable Lazy Day Salsa is a classic tomato salsa that is whipped up in a flash (no chopping required). It is speckled with bits of onion, garlic, and cilantro for an extra freshness. This salsa is so easy you can make it in 10 minutes (it takes me 5) . The best part is, you can add it to left over chicken, burgers, casseroles and viola you have the perfect left over dinner.

Ingredients

  • 1/4 medium white onion, peeled

  • 2 cloves garlic, peeled
  • 1 (14.5 ounce) can Hunt's fire roasted diced tomatoes with garlic
  • 1/2 fresh lime, juiced
  • 1/2 teaspoon kosher salt
  • 2 tablespoons fresh cilantro

Instructions

  1. Add onion, jalapeno and garlic to the bowl of a food processor. Pulse until the bits are your desired size, about 5 or 6 times. Open cover, scrape down sides. Add remaining ingredients, pulse 1 or 2 times to combine.
  2. Transfer to a serving dish and serve immediately or transfer to a pint jar and store in the refrigerator. It becomes even more flavorful the next day.
  3. Enjoy!
