Crockpot Corn on the Cob

I can't even count how many times I have professed our love for corn around here... I am a born corn lover and Chad is from Iowa, so needless to say we are a corn lovin' family.

I have prepared it just about every way you can imagine: Oven Roasted Corn on the Cob, Simple Stove Top Corn on the Cob, Grilled Corn on the Cob and of course I have tossed it in a skillet and also microwaved it, but we will get to those later. {Click on the bold recipe titles to see those recipes}

To be honest, I have been oven roasting corn for the ease of prep and let it go. But it still heats up my kitchen, which during the summer in Arizona, I do not prefer.  So a few months ago I decided to try popping it in the crockpot and seeing what happened.

I was pretty blown away by the results. I have prepared it this way all summer long, for every party and every gathering and I have to say that all I have heard are compliments. It creates a perfectly tender and flavorful corn with the easiest clean up ever!

I pack it with all the seasoning and butter that is required to eat it and then just let everyone grab their own pouch.  Open carefully. Pop in some corn holders (or use your fingers) and eat over the foil. When they are done, pop out the holders and wrap up the cob in the foil.  Easy peasy.

It all starts by placing the corn on a piece of foil, topping with butter and seasonings and wrapping it. It is really that easy.  I have used salt, pepper and cayenne for a spicy version which is excellent.  However I have found of course that butter, salt and pepper is a crowd pleaser and I usually go with that version any time we are having people over or going to a potluck.

For Chad's birthday party I prepared some burgers, Crockpot Brats, Crockpot Corn on the Cob and a salsa bar (staring 3 heat varieties of our Lazy Day Salsa and several fruit salsas). Needless to say we ate a lot! Everyone went nuts over the corn and brats and I gave out a lot of recipes. You are going to love them too!

I have even tried this recipe with coconut and extra virgin olive oil and it is perfect every time!

Helpful Tips to make Crockpot Corn on the Cob:

  • You can mix butter, salt and pepper in a small mixing bowl and dollop about 1/2 tablespoon on each ear of corn.
  • You can use your favorite spice mixture to kick up the flavor. I sometimes add 1 teaspoon (to taste) cayenne pepper to the mixture. If you add spices, be sure to smear butter mixture on the corn or you will end up with a pile of spices on the corn when you open it.
  • If you are watching what you eat, brush lightly with coconut oil or extra virgin olive oil instead.

Crockpot Corn on the Cob

Perfectly cooked, tender and flavorful corn on the cob cooked right in your slow cooker without heating up the kitchen. It couldn't be easier with this set it and forget it simple recipe.
prep time: 5 minscook time: 2 hourtotal time: 2 hours and 5 mins

Ingredients

  • 8 ears corn, shucked and trimmed to fit crockpot
  • 4 tablespoons unsalted butter
  • salt and pepper to taste (I used about 1 teaspoon each)

Instructions

  1. Place each ear of corn in a piece of aluminum foil (about 12"). Add 1/2 tablespoon butter, salt and pepper to taste. You can smear the butter over the corn, but I usually just dollop it in there.
  2. Fold aluminum foil by bringing 2 long edges of foil together. Fold them over until you reach the corn. Then, pull sides of foil up to center top. Place corn in the crockpot with the seam side up. I use a 6 quart crockpot.
  3. Repeat until corn is all wrapped. (I can fit 8 trimmed pieces of corn in my crockpot).  Pour 1/2 cup water in the bottom of the crockpot.
  4. Cook on high for 2 hours or low 4-5 hours.  Once corn is done cooking, reduce temperature to warm for up to 2 hours, until ready to serve. Add a splash more water if needed longer than that.

DONNA'S NOTES

Making Instant Pot Corn on the Cob

Making corn in an Instant Pot couldn't be easier. All you need to do is to add the water to your pressure cooker.

Then, add the trivet and layer the corn inside. Finally, close the lid and cook until done allowing for release time.

You will get perfectly cooked corn on the cob every time with this recipe.

Tips for perfect pressure cooker corn

  • When buying corn, look for husks that are bright green in color with kernels that are plump and brightly colored. The silk should be soft and moist, not brown. Never buy corn that is brown or looks dried out.

  • Remove the ends of the corn so you can fit more ears in your Instant Pot. 

  • If they are too long, you can cut them in half so they fit inside more easily.

  • You can place fresh green beans or another vegetable underneath the rack and cook them at the same time.

  • Using a trivet will allow you to put more ears of corn in your Instant Pot than if you use a steamer basket.

How long do you steam corn in an Instant Pot?

To make pressure cooker corn, you will need a total of 25 minutes. That includes the cooking time and the release time.

The corn cooks for 2 minutes on HIGH. If you are cooking your corn on the cob with the husks on, you will need to add 1 more minute to the cooking time.

How many ears of corn fit into a 6-quart pressure cooker?

A lot will depend on the size of the ears of corn. But, you should be able to easily fit 5 to 6 ears of corn. You can cut off the ends if you need to.

If you want to fit more than that, you can try standing the ears on their end rather than layering them. Or, an 8 quart Instant Pot will allow you to cook even more.

Do I need to wrap the corn in foil?

No, you don't need to wrap the ears of corn in foil when you use the Instant Pot. Foil is used on the grill to prevent the corn from getting too dark.

But, you don't need it when you make pressure cooker corn. The corn comes out perfectly every time.

Can I cook frozen corn in the Instant Pot?

Fresh corn on the cob is so much better than frozen. But, you can cook frozen corn using this method as well. Just follow the same method.

Place the frozen corn cobs on the trivet. And, cook for 4 minutes on HIGH. Let the pressure release naturally for 5 minutes. Then, follow up with a quick release.

Instant Pot Corn on the Cob

Instant Pot corn on the cob is tender, steamed sweet corn without boiling water or shucking! Make this pressure cooker corn recipe in 5 minutes!
Prep time: 5 Minutes Cook time: 2 Minutes Total time: 25 Minutes (includes time to pressurize and release)

Ingredients

  • 6 ears corn on the cob, husked and cleaned
  • 1 cup cold water

Instructions

  1. Pour water into the Instant Pot.
  2. Place the trivet into the pot.
  3. Add the corn on top of the trivet.
  4. Close the lid and set to HIGH PRESSURE for 2 minutes.
  5. It will take about 15 minutes to pressurize before it starts to cook.
  6. When it's done cooking, immediately release the pressure.
  7. Carefully open the lid and remove corn.
  8. Serve immediately with your favorite toppings.

Tips for Making Corn on the Cob in the Oven

  • We also love to add a dash of cayenne pepper when we make baked corn on the cob.  The best way to do that is to place 4 tablespoons of butter in a small dish.  Add the desired amount of cayenne pepper and mix it together. Smear butter on it and then continue with the recipe.
  • Make your own compound butter to finish it with. Try different flavor combinations.
  • Be sure to use unsalted butter. You don't need the extra salt when you add other seasonings.

Frequently Asked Questions

Can you make this recipe using frozen corn? 

Yes, you can make this recipe starting with frozen. Simply follow the recipe below and substitute frozen for fresh.

There's no need to do anything differently when you make the recipe.

You can also wrap each ear in tin foil if you prefer. You will want to roast them in the oven for about 30 minutes in total. There is no need to turn them if you wrap them in foil.

Do you remove the husks before roasting corn in the oven? 

In this recipe, I remove the husks. It makes it easier to apply the flavored butter to it.

But, you can carefully turn back the husks, then apply the flavored butter if you want to keep them on. Finally, close up the husk again and bake.

Or, you can skip the flavored butter and simply roast it with the husks on and apply butter, fresh herbs, and seasonings when you take it out of the oven.

Toppings for corn on the cob in the oven

You can use the flavored butter that I've included in this post. But, there are lots of different types of toppings and seasonings that you can use.

Why not try fresh smoked paprika, your favorite herbs from the garden, or even an orange or lemon compound butter.

Other options include grated parmesan cheese, Old Bay seasoning, or even ranch seasoning.

How long can I store leftovers?

We don't often have leftovers when we make it this way. But, if you do, you can store leftover oven corn on the cob in an airtight container in the refrigerator. They will stay good for up to 5 days.

Or, you can put it in the freezer for 6 months. Just make sure that each ear is well wrapped.

To reheat it let it thaw in the refrigerator.

Then you just need to wrap it in tin foil with a little bit of butter inside. Finally, place it in the oven for about 10 minutes at 350F. It comes out perfectly every time.

Corn on the Cob in the Oven

Corn on the Cob in the Oven is prepped and ready to bake in just 10 minutes. It is utterly life-altering! You have to try it.

Ingredients

                • 8 ears corn, cleaned
                • 1 stick (8 tablespoons) unsalted butter, room temperature
                • kosher salt, to taste
                • fresh ground black pepper, to taste

                              Instructions

                                    1. Preheat oven to 400°F.  Line a baking sheet with aluminum foil.
                                    2. Place the corn on the baking sheet.  Reserve about 1/2 of the butter.  
                                    3. Spread the remaining butter on all of the corn.  
                                    4. Sprinkle liberally with salt and pepper (I use about 1 teaspoon of each).
                                    5. Bake for 30-45 minutes, until starting to brown. 
                                    6. Turn corn occasionally. Remove from the oven and spread the remaining butter over the top of the corn.  Sprinkle with more pepper as desired.
                                    7. Serve and enjoy!

                                      Tips for making air fryer corn on the cob

                                      You should prep your corn by removing the husks and trimming the edges. Be sure to cover the ears of corn completely with melted butter.

                                      It helps them cook evenly and they taste so much better that way.

                                      If you prefer to keep this recipe vegan, instead of butter, you can spray the corn with olive oil or a butter-flavored cooking spray.

                                      But, just don't put them in plain. When you make air-fried corn on the cob, they need to have some sort of coating whether that's oil or butter.

                                      If you are concerned about the ears of corn getting too crispy, you can try adding a spray of olive oil to the cobs when you first put them in.

                                      And, then halfway through, you can coat them with butter. Make sure that you flip them over partway through so they get crispy and grilled on all sides.

                                      For a smaller air fryer, you can cut the cobs in half if you need to in order to fit them in better.

                                      Making corn in the air fryer works just as well with fresh corn as it does with frozen corn.

                                      You may need to cook it closer to 10 minutes than 8 minutes but you should not have to make any other changes to this recipe.

                                      Is it safe to use foil in an air fryer? 

                                      While it is safe to use foil in your air fryer, your food won't cook as well. Air frying works because the air circulates freely around the food to cook it.

                                      If you cover the food with foil, you just won't get the same results. Save the foil for the grill. You don't need it in this air fryer corn on the cob recipe.

                                      How many ears you can cook really depends on the size of your air fryer and how large the corn on the cob is.

                                      Do not crowd the corn into the air fryer or lay them on top of each other. Place each corn on the basket and allow for room for the air to circulate.

                                      We can fit about 4 ears of corn in ours. But, yours may vary. It only takes a few minutes to make more.

                                      We normally add butter and salt and pepper to our corn in the air fryer. But, if you want a kick of flavor, you can try adding a little bit of cayenne pepper.

                                      Here are a few more ideas you might want to try.
                                      • Garlic, lime zest, and cilantro
                                      • Butter and parmesan cheese
                                      • Fresh herbs like oregano or parsley
                                      • Paprika, sea salt, and pepper

                                      • 4 ears of corn, cleaned (husks and silks removed. Then rinsed and dried.)
                                      • 4 tablespoons butter, melted (or olive oil in a spray bottle)
                                      • Salt and pepper, to taste

                                      Instructions

                                      1. Preheat your air fryer to 400°F for 3 minutes.
                                      2. Meanwhile, brush the corn with melted butter.
                                      3. Cook in the air fryer for 8-10 minutes, until starting to brown.
                                      4. Flip the corn halfway through cook time and brush with more butter. If you want it a little more golden, cook it longer.
                                      5. Remove and brush with more butter and sprinkle with salt and pepper to taste.

                                      Corn is one of my favorite foods. Well, actually the entire family would concur.

                                      With Chad being from Iowa, I am sure growing up with corn around you really lent itself to his love of corn. Me on the other hand. I grew up in an Italian family and we had corn with turkey roasts and pot roast.

                                      • We also love to add a dash of cayenne pepper to the brown sugar.  The best way to do that is to place brown sugar in a small dish.  Add the desired amount of cayenne pepper and mix. Then apply to the bacon.

                                      Candied Bacon Wrapped Oven Roasted Corn

                                      The best corn recipe you have ever tasted, Candied-Bacon Wrapped Corn is what dreams are made of! It all starts with tender sweet corn wrapped in crisp smoky bacon and topped with caramelized brown sugar. It is sweet smoky and utterly, gloriously delicious!
                                      prep time: 10 MINScook time: 45 MINStotal time: 55 mins

                                      Ingredients

                                      • 8 ears corn, cleaned 
                                      • 16 slices thin cut bacon (about 1 pound)
                                      • 1/2 cup light brown sugar 

                                      Instructions

                                      1. Preheat oven to 400°F.  Line a baking sheet with aluminum foil.
                                      2. Place corn on the prepared baking sheet. Wrap each ear of corn with 2 slices of bacon, starting at one end, pull gently and spin the corn as you wrap it with the bacon. Start the second slice where the first slice ends. Place the end of the bacon on the bottom as you set it on the baking sheet; this will help hold it in place.
                                      3. Starting with the bottom side of the corn (where the bacon ends), press about one tablespoon brown sugar onto each ear of corn. Spinning as you press until all of the bacon is lightly coated with brown sugar. Place the corn back on the baking sheet with the end of the strips of bacon on the bottom; this will help keep it in place.
                                      4. Bake for 40-45 minutes, until the bacon, is crisp cooked. Carefully rotate corn 1/4 turn every 10 minutes, using tongs, try not to knock the bacon off. If the bacon comes off, just use the tongs to wrap it back on the corn.
                                      5. Remove from oven. 
                                      6. Serve and enjoy!
