This skillet is so insanely good we can't stop eating it.  I have made it so many times that I don't need the recipe.  So, one night I was talking to my Mom while I was preparing it and she asked me how I come up with all these recipes.
I told her everything inspires me!  Just a conversation about old family photos was all the inspiration that this Pineapple Chicken Skillet with Broccoli took.

After reminiscing over old family travel pictures of my husband’s grandparents, we started talking about the places we would like to visit to make our own family travel memories.  Where would you like to travel?  Hawaii is at the top of our list.  Can you believe I have never been to Hawaii?  Seriously.  When Hawaii came into the conversation, I started having a craving for Hawaiian-inspired flavors.

The next day I started thinking of ways to incorporate flavors that I associate with Hawaii into a fabulous chicken skillet.  The mixture of pineapple chunks and juice with soy sauce, honey, ginger, and garlic makes my taste buds sing.  Perhaps a nod to my love of Asian flavor as well, this Pineapple Chicken Skillet with Broccoli certainly satisfies that desire for island flavors.  I like to serve this over Simple Chicken Rice, but honestly, I love to eat it alone most often.

    Pineapple Chicken Skillet with Broccoli

    Pineapple Chicken Skillet with Broccoli is loaded with your favorite summer flavors and ready in just 30 minutes! The mixture of pineapple chunks and juice with Hawaiian flavors will make your taste buds sing.

    Ingredients

    • 1 pound boneless skinless chicken breasts
    • 1 tablespoon extra virgin olive oil
    • 1 (20-oz) can pineapple chunks in pineapple juice
    • 2 tablespoons low sodium soy sauce
    • 2 tablespoons honey
    • 2 teaspoons fresh ginger, minced
    • 2 teaspoons fresh garlic, minced
    • 1 (14-oz) bag frozen broccoli florets
    • 1 bell pepper, I used 1/2 red, 1/2 orange
    • 1/4 teaspoon kosher salt
    • 1/2 teaspoon fresh ground black pepper
    • 1 teaspoon corn starch
    • scallions and sesame seeds to garnish, optional

    Instructions

    1. Warm a large skillet over medium-high heat. Meanwhile, cut the chicken into thin strips. Add oil to skillet and then chicken. Sprinkle with salt and pepper. Cook until browned, then flip chicken and cook chicken until done, approximately 5 minutes total.
    2. In the meantime, combine pineapple chunks and juice, soy sauce, honey, ginger, and garlic in a medium bowl. Whisk to combine. Set aside until chicken is cooked. Slice peppers into strips.
    3. Once the chicken is cooked, add the pineapple mixture to the pan and turn it to high heat. Allow mixture to boil for about 5 minutes. Add broccoli and peppers, stir to combine. Cook until crisp-tender and using a slotted spoon transfer the chicken, vegetables and pineapple to a serving bowl.
    4. Combine cornstarch and 1 tablespoon water in a small bowl, pour into skillet. Whisk to combine and cook until the cornstarch thickens to a syrup-like consistency. Before serving pour the sauce over chicken and vegetables. Optional garnish: sprinkle chopped scallions and sesame seeds over top. Serve and enjoy!

    We are so excited to be partnering with International Delight®  to bring you another fabulous recipe. I don't know about you, but I love my coffee so I always have creamer in the house. I have found this to be an amazing convenient ingredient in cooking and baking sweets. So, of course when I started thinking about cheesecake salads I thought of International Delight.

    I am so hooked on cheesecake salads. I have several different recipes now and you all are loving them as much as I am. So, I started wondering what combination we could come up with that screams summer and is totally out of the ordinary. I have to say I love love love the flavors of a pina colada. The nutty coconut, sweet pineapple and buttery rum. It is utterly tropical and completely satisfying.

    Cheesecake salad is all the rage, and I am sure because it pretty much is everything. It is a side, it's a  salad and it's dessert all in one magnificent recipe. Rich and creamy cheesecake filling made with cream cheese, coconut cream pudding, our favorite creamer and some rum extract to get that true pina colada flavor. The creamer lends a richness and creaminess to the cheesecake filling and the perfect touch of sweetness. The filling is folded into fresh pineapple, strawberries, and mandarin oranges to create our latest taste sensation.

    I have to say, Chad, Munchkin and I all stood around the counter sampling this cheesecake salad we just couldn't get enough.

    I am stocking up on summer salad ideas and boy oh boy do we have a good selection to choose from. Summer Berry Cheesecake Salad, Strawberry Banana Cheesecake Salad, and Hawaiian Cheesecake Salad are three of our favorites!!!

    • Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way. Trust me on this one.
    • To make this ahead: prepare the cheesecake mixture and refrigerate in a bowl. Mix all of the fruit in a large bowl and refrigerate. Before serving, drain any excess liquid from the fruit and then fold the cheesecake filling into the fruit. Serve and enjoy!

      Piña Colada Cheesecake Salad

      Pina Colada Cheesecake Salad is my latest obsession. This simple recipe starts with a fresh pineapple fruit salad tossed with a rich and buttery coconut rum cheesecake filling (don't worry it's kid friendly) to create the most spectacular fruit salad ever!

      Ingredients

      • 1 (8-ounce) package cream cheese
      • 1 (3.4-ounce) package coconut cream flavored instant pudding, unprepared
      • 1 teaspoon rum extract 
      • 1 cup International Delight French Vanilla Creamer
      • 1 fresh pineapple cut into bite-size pieces (about 4 cups)
      • 1 pound strawberries, quartered
      • 4 mandarin oranges, peeled and sectioned

      Instructions

      1. In a medium tall bowl (I use my 8 cup measuring cup), using an electric mixer, whip the cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up. Add the dry pudding mix. Beat until it is well combined. Blend in the rum extract.
      2. With the mixer on low, slowly add the creamer to the cream cheese mix. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese, repeat until all of the creamer has been added to the mixture. Whip until smooth.
      3. In a large bowl, combine pineapple, strawberries, and oranges. Add the cheesecake mixture to the fruit. Gently fold cheesecake mixture into fruit. 
      4. Chill until ready to serve or serve immediately.

      DONNA'S NOTES

      We are so excited to be partnering with our friends at Jones Dairy Farm to bring you a scrumptious breakfast or brunch recipe perfect for the holidays with family and friends, starring one of my favorite ingredients: Ham!!!



      I have to admit I haven't been camping in the traditional sense since I was a kid. You know, sleeping on the dirt in a tent in the woods. We did an RV a few times when I was young, and I am thrilled to hike, fish, sit by the campfire and hang out with friends but at the end of the day this girl is ready to retire to my cozy bed. Now, whether that be in a cabin in the woods with the full amenities or in a nearby hotel is completely optional. I guess you could say I'd be more up for 'glamping'. But one thing I am always up for is grilling.

      Whether I am home or away I am happy to tackle the grill. Even when you are camping you don't have to stick with franks and beans. Cooking on the grill or over the campfire is really just like cooking in my kitchen but with fire. I love the smoky flavor of food cooked on the grill too, you really can't beat it.

      So last weekend it was 120°F in Phoenix. The funny thing is that when you are standing in front of the grill it is hot anyway so the heat doesn't seem to bother me as much. So I whipped up these scrumptious Grilled Hawaiian Ham Kabobs. They are the perfect breakfast or dinner.



      With My favorite Hawaiian flavors skewered together and brushed with a scrumptious sweet and tangy pineapple sauce and then grilled until the vegetables are perfectly crisp tender and smoky. I top them with baked tater tots to make them the most amazingly portable breakfast you have ever enjoyed.

      They are perfect for the campfire and being they are make with fully cooked ham steak, pineapple and vegetables there are so easy to prep ahead, store in the cooler and cook over the campfire or grill later. You are going to love them!

      Grilled Hawaiian Ham Kabobs
      SERVES 8 | ACTIVE TIME 30 Min | TOTAL TIME 45 Min

      Glaze Ingredients
      6 ounces pineapple juice
      1/4 cup extra virgin olive oil
      1/4 cup light brown sugar
      1/4 cup low sodium soy sauce
      1/4 cup apple cider vinegar
      2 teaspoons ginger paste (or minced ginger)
      3 garlic cloves, minced

      Kabob Ingredients
      2 (7 ounce) fully cooked Jones Dairy Farm Ham Steaks, cut into 1" pieces
      1 red pepper, cut into 1" pieces
      1 green bell pepper, cut into 1" pieces
      1 fresh pineapple, cut into 1" chunks
      1/4 red onion, cut into 1" pieces
      extra cooking oil for preparing grill grates
      1 bag tater tots rounds

      Soak 8 wood skewers in water for at least 30 minutes, this helps keep them from burning.

      In a medium saucepan, over medium high heat, combine glaze ingredients. Whisk until well combined. Stir occasionally, until the liquid is reduced by half (you can skip this step but I love the thick coating of sauce on the kabobs).

      Meanwhile, prep the pineapple and veggies. Prepare tater tots according to package directions.

      Preheat grill to medium-high. Layer the ham, pineapple and veggies on skewers. Layer them so the ingredients are touching but not smashed together. Divide the ingredients out over 8 skewers.

      Wad a couple of paper towels into a ball and hold with grill tongs. Dip the wad of paper towels into a bowl of cooking oil. Rub paper towel over the hot grill grates to thoroughly coat them.

      Place the kabobs on the grill. Grill for 2 to 3 minutes per side until golden brown. Brush with reserved marinade when you place them on the grill and each time your turn the kabobs. Remove from the grill and top with hot tater tots. Serve and enjoy.

      Helpful Tips to make One Pan Hawaiian Pasta :

      • If you would like to save some time, you can buy cooked bacon or bacon crumbs, you can also roast it in the oven or skip it all together if you don’t like bacon.
      • For the best tomato flavor, I like to use canned San Marzano tomatoes when possible, they are sweeter, not that acidic and the flavor is amazing.
      • I like adding red bell pepper to this recipe, you can add green, yellow or orange bell pepper as well.
      • For a spicier kick, you can add some red pepper flakes or hot sauce.
      • I used mozzarella cheese and sharp cheddar. You can use your favorite cheese in this recipe.
      • The dried basil is optional, but it will add a nice, subtle flavor.
      • If you want a creamier version of this recipe, you can add 1 cup of cream to the pasta when cooking.
      • If the pasta absorbs all the broth, you can add 1 cup of water to continue cooking and avoid from drying it out.
      • Make sure to stir the pasta while cooking, so it doesn’t stick to the bottom of the pan.

      • Dry Basil - Delicious in this recipe, and its nice to have it in your pantry.
      • Dutch Oven or Deep Cast Iron Pan - great for so many recipes and perfect when you need to continue cooking them in the oven.

      One Pan Hawaiian Pasta

      One-Pan Hawaiian Pasta

      One-Pan Hawaiian Pasta is a quick and easy 30 minute dinner that packs all the punch that comes with Hawaiian flavors, in an easy to make, hearty dinner.
      prep time: 10 minscook time: 20 minstotal time: 30 mins

      Ingredients

      • 8 slices smoked bacon, chopped
      • 16 ounces cubed ham
      • 1 red bell pepper, chopped
      • 20 oz pineapple tidbits, drained
      • 1 tablespoon garlic, minced
      • 1/2 teaspoon dried basil 
      • 1/2 teaspoon salt 
      • 1/4 teaspoon pepper 
      • 1 (15 oz) can tomato sauce
      • 8 oz dry cellentani pasta
      • 2 cups chicken broth , low sodium
      • 1 cup mozzarella cheese, shredded
      • 1 cup sharp cheddar cheese, shredded
      • Cilantro, chopped

      Instructions

      1. Slice bacon into small pieces. 
      2. Place a large cast iron pan or deep skillet over medium heat, add bacon to it while the pan is still cold. Cook bacon until crisp stirring occasionally.
      3. Remove bacon from the pan once crispy and place on a paper towel lined plate to drain. Discard the bacon grease from the pan, leaving only about 1-2 tablespoons. 
      4. Add cubed ham to skillet. Cook, stirring frequently, until ham is browned, for about 2-3 minutes.
      5. Add chopped red bell pepper and half of the pineapple tidbits. Cook for about 1 minute, stirring occasionally.
      6. Add minced garlic, basil, salt and pepper. Stir to combine.
      7. Add tomato sauce, pasta and chicken broth, stir to combine.
      8. Bring mixture to a boil, then cover with a lid and cook over low-medium heat until pasta is tender, about 15 minutes. Stir often, to make sure pasta does not stick to the bottom of the pan, if needed add more broth or water, 1 cup at a time.
      9. When pasta is cooked, cover with cheese and stir to combine. Remove from heat.
      10. Stir in remaining pineapple if desired and reserved crispy bacon.
      11. Garnish with chopped cilantro before serving.

      I do love a good classic pulled pork sandwich but sometimes you've gotta switch things up a bit and add some more color and texture. After trying this sandwich, I don't think you'll go back to the ordinary one not to mention the other Hawaiian inspired recipes you can find here.

      The first step is elevating the flavor of the slow cooker pulled pork. Instead of cooking the pork with water or soda, you'll pour in some pineapple juice.

      This adds sweetness as well as more of a Hawaiian flavor profile. You'll also add pineapple juice to the barbecue sauce and cook it down so it thickens.


      I'm not a big fan of coleslaw as a side dish but it's a must on shredded meat sandwiches like my

      It's seriously my favorite way to eat pineapple and tastes amazing with pork. It seems a little strange to put pineapple on a sandwich but it totally works. You'll love it!

      Helpful Tips to make Slow Cooker Hawaiian Pulled Pork Sandwiches:

      • Plan ahead! Since you're working with the slow cooker, be sure to put the pork in sometime in morning so it has enough time to cook and get tender. It will take you all of 5 minutes to throw it in there so no excuses.
      • Make the barbecue sauce during the morning or day when you have time or at least 15 minutes before you're ready to shred the meat.
      • I recommend using a spicy barbecue sauce that isn't already too sweet. My go-to is Open Pit (Original). It's a great base and I'm able to add as much sugar as I want and tone down the heat by adding a little ketchup.
      • Buy the pineapple juice in small 6 ounces cans. They sell them in a set of 8. This way you won't waste any or have to store a big bottle of pineapple juice in the fridge. But if you do buy it in a bottle and don't know what to do with the rest, use it in smoothies!
      • Use fresh pineapple. After cutting off the skin, slice the pineapple into rings. Use a small round biscuit or cookie cutter to remove the middle core.
      • For a more colorful coleslaw, make your own mix of green and purple cabbage and carrots. Sometimes stores will make fresh coleslaw mixes and have them in next to the refrigerated salad dressings.

      What you will need to make Slow Cooker Hawaiian Pulled Pork Sandwiches:

      • Slow Cooker- Every home needs a slow cooker. I love using it in the summer so I don't heat up the whole house and it is just makes cooking so much easier because you just set it and let it do all the work.
      • Small Sauce Pan- I use my small sauce pan all the time for steaming vegetables to making all kinds of delicious sauces for dinner and desserts.
      • Grill Pan- I love having a grill pan for small things like the pineapple in this dish or for the winter. You still get the beautiful grill marks without having to heat up the whole grill and walk in and out of the house.

      Hawaiian Pulled Pork Sandwich

      Take your pulled pork to the next level with these summery Slow Cooker Hawaiian Pulled Pork Sandwiches

      Ingredients

      For the Pork
      • 3 pounds pork shoulder roast
      • 6 ounces pineapple juice
      • 1 teaspoon salt
      • 1 teaspoon garlic powder
      • 1 teaspoon onion powder
      • 1/2 teaspoon black pepper
      • 6 challah buns
      For the Pineapple Barbecue Sauce
      • 1 cup barbecue sauce (I use Original Open Pit)
      • 6 ounces pineapple juice
      • 1/2 cup ketchup
      • 1/3 cup brown sugar
      For the Coleslaw
      • 2 cups coleslaw mix
      • 3 tablespoons mayonnaise
      • 1 teaspoon apple cider vinegar
      • 1 teaspoon Dijon mustard
      • 1/4 celery salt
      For the Grilled Pineapple
      • 6 rings pineapple
      • 1 tablespoon butter melted
      • 2 tablespoons brown sugar

      Instructions

      For the Pork
      1. Place pork in the bottom of the slow cooker. Pour the pineapple juice on top and then sprinkle the meat with all the seasonings. Cook on high for 6-8 hours or low for 8-10. Remove meat from pot and shred. Mix in the barbecue sauce.
      For the Pineapple Barbecue Sauce
      1. Mix barbecue sauce, pineapple juice, ketchup, and brown sugar together in a small sauce pan over medium-high heat. Bring to a boil, reduce heat, and let simmer for 10 minutes.
      For the Coleslaw
      1. Mix mayonnaise, vinegar, mustard, and salt together. Toss with the slaw.
      For the Pineapple
      1. Brush both sides of pineapple rings with butter and sprinkle with brown sugar. Work in batches to cook on a grill or fry pan over medium-high heat until golden and then flip and cook the other side.
      For Assembling
      1. Place a ring of pineapple on the bottom bun. Top with shredded pork, coleslaw, and the top bun. 
      2. Serve immediately.
