Traditional Mexican cuisine would have you standing over a stove for hours, but who has that kind of time? This simple recipe is perfectly seasoned and creates tender meat with robust flavors.

The secret is a quick sear on the stovetop to lock in all of those succulent flavors and juices. After that, it gets cooked in the slow cooker until it is fork-tender and truly melts in your mouth. I toss it in and on everything.

So, back to this story...  It is absolutely amazing and I am sure you know why I had to make this recipe 8 times before we finally managed to get a photoshoot done. We just can't keep her hands off it!

Actually, my family is so spoiled with good food. We really prefer to eat at home. I just do not find myself enjoying eating out anymore, it is just such a disappointment most of the time.

I thought it was just me and then I started noticing my family had the same opinion. As a matter of fact when I was planning a little get together for my daughter's 1st-grade 'graduation', I thought we would have a little dinner out with my in-laws to mark the accomplishment.

I asked Munchkin where she wanted to go. I named all of her 'favorite restaurants'. She looked at me with the sweetest eyes and said "Mommy can YOU cook dinner? I want your Mexican Rice Skillet".

I am sure you know my heart grew 10 sizes that day (bursting with love and pride) and although we ended up going to dinner at a new restaurant that night, but you better believe I made her dinner that very next night.

I imagine it is the regional influence, but my family leans toward Mexican flavors, especially my daughter. Southwestern, Tex-Mex and of course Sonoran (a region of Mexico that borders Arizona) influences have really inspired the dishes that come out of my kitchen.

Growing up every celebration dinner featured Italian food, and I giggle inside as I think about my mom and dad coming to visit when my daughter was born and I had prepared "Mexican Lasagna". My dad was like "what the @$^& is Mexican Lasagna? Where's the pasta???" LOL.

Anyway, back to my point... I really love the food at Chipotle Mexican Grill. It is my go-to on road trips. My favorite is the burrito salad. I love to pile the lettuce with pork carnitas, pinto beans, guacamole, cheese and a huge spoon of fresh salsa as my dressing. It is fresh, flavorful and it doesn't bloat me up. Because who wants to sit in the car when you feel like your jeans are going to pop open.

So, when we are home and I am craving those spectacular burrito salads and Chad wants a burrito, I start recipe developing. I have created many of my favorite recipes from Chipotle and some other favorites. But, whenever we are having a party or on a game day get together a Chipotle Buffet usually wins out.

The star of the show is this simple Pork Carnitas recipe. It is simply seasoned with salt, pepper, rosemary, thyme, and bay. But, the flavor will knock your socks off.

It starts off being seared on the stovetop to create a layer of flavor that will really shine through.  The searing browns the meat and creates this caramelized reaction and the flavor is unbeatable!

Next, we transfer the pork to the crockpot and add in the remaining seasonings and deglaze the pan to scrape up all of the tasty brown bits stuck to the bottom of the pan. Pour the juices into the slow cooker and cook until the meat is fall-apart tender.

You will enjoy this on and in so many dishes. It is great to make ahead and use in tacos, burritos, on a salad, and even on a sandwich. I love to make nachos with these carnitas too. No matter what you do with it, you are going to absolutely love this recipe.

Helpful Tips to make Chipotle Copycat Slow Cooker Pork Carnitas:

  • Do not use non-stick pans for searing. Cast iron or stainless steel are great alternates to the dutch oven.
  • You can use bone-in or boneless pork but watch your cook time.
  • Searing the meat before placing it in the slow cooker adds another layer of flavor. While you could skip this step, I highly recommend taking the extra 15 minutes and doing it. Trust me the flavor is worth it!
  • If making this with fresh rosemary sprigs, I place them on the bottom of the slow cooker and put the pork roast on top.

Chipotle Copycat Slow Cooker Pork Carnitas

Chipotle Copycat Slow Cooker Pork Carnitas are a luscious slow cooked pork that is so soft and juicy, they melt in your mouth. Traditional Mexican cuisine would have you standing over a stove for hours, but who has that kind of time? This simple recipe is perfectly seasoned and creates a tender meat with robust flavors.
prep time: 15 minscook time: 6 hourtotal time: 6 hours and 15 mins

Ingredients

  • 5-pound pork shoulder (also known as pork butt)
  • 2 tablespoons extra light olive oil
  • 2 teaspoon kosher salt, divided
  • 2 teaspoon ground black pepper, divided
  • 4 dried bay leaves
  • 1 tablespoon dried rosemary (or 3 large fresh rosemary sprigs)
  • 1/2 teaspoon ground thyme
  • 1/2 cup water

Instructions

  1. Rinse pork roast under cool water. Pat dry with a paper towel (do not skip this step, patting it dry helps create less steam and creates a better sear).
  2. Preheat a dutch oven over medium-high heat. Add 2 tablespoons olive oil. Place pork on a plate and sprinkle on all sides, with 1 teaspoon salt and 1 teaspoon pepper. Once the oil is shimmering and hot, carefully place pork in a Dutch oven (do not wait or the seasoning will begin to draw out moisture). Sear each side. Allow pork to sizzle in the pan without touching it for at least 2 minutes.
  3. The pork will naturally release from the pan once it is properly seared. If it is sticking to the bottom of the pan, it is most likely not seared yet. It will take 2-5 minutes per side. Reduce heat if the pan is getting too hot.
  4. Add bay leaves to the bottom of  your crockpot (I use a 6-quart slow cooker), place pork on top of bay leaves and carefully pour remaining cooking liquid from your Dutch oven over the pork. Add 1/2 cup water to Dutch oven, return to medium-high heat. Use a silicone spatula or wooden spoon to scrape the stuck browned bits from the bottom. Once the mixture is boiling, pour it over the pork in the slow cooker. Sprinkle rosemary, thyme and remaining salt and pepper into the slow cooker and over the pork. Flip the pork once to season the other side.
  5. Cover and cook on high for 5-6 hours (alternately cook on low for 10-12 hours). When the pork is tender, use 2 forks to shred meat. Taste for seasoning, if necessary add salt to taste (mine did not need salt).
  6. Stir to coat pork in cooking liquid. Cover and cook for 30-60 minutes to help the pork absorb the juices. Serve and enjoy!

This pulled pork is the perfect dish year round - great in summer for parties and picnics, and comforting in fall and winter when you want to cuddle up with a hot and hearty meal. It makes perfect wraps, sandwiches, tacos, burritos, and is even great in pulled pork salad or mac and cheese!

This pulled pork even creates its own rich and delicious sauce that will have you licking your fingers and waiting to make it again and again.

Helpful Tips to make Slow Cooker Chipotle Honey Pulled Pork Sliders:

  • Don't worry if the liquid in the slow cooker is thin and seems to be too much - you'll be making a rich and delicious spicy sauce with it when the cooking is done!
  • The slower the better. Don't rush your pork shoulder or it won't be tender and juicy, and the fat won't render properly, making it tough. 
  • Take the chipotle peppers out of the sauce before blending - they are HOT! Blend your sauce, then taste it. If you'd like more heat, add them back, one by one, until you get a perfectly spicy heat for your taste.

Chipotle Honey Slow Cooker Pulled Pork Sliders

Chipotle Honey Slow Cooker Pulled Pork Sliders are a simple recipe for a delicious easy dinner that's perfect for a busy weeknight!

ingredients

  • 2 tablespoons light tasting olive oil
  • 3 pound pork shoulder
  • 2 tablespoons kosher salt
  • 1 can chipotle peppers in adobo sauce
  • 1/3 cup apple cider vinegar
  • 2 tablespoons garlic powder
  • 2 tablespoons dried oregano
  • 1/4 cup good honey

instructions

  1. In a Dutch oven, heat oil on medium-high heat until shimmery. Add pork shoulder to pan and brown on all sides, about 3-5 minutes per side.
  2. When pork shoulder is browned, add to slow cooker.
  3. Add all other ingredients except honey to slow cooker, cook on low for 8 hours. When pork has pulled away from bone and falls apart with light pressure, it is ready.
  4. Remove pork from slow cooker and place it in a bowl;  remove liquid, placing it back in the Dutch oven, over medium-high heat and drizzle honey into it, stirring while you add the honey to prevent it from sinking to the bottom and sticking. Cook until reduced.
  5. Let sauce reduce, about 5 minutes. Remove chipotle peppers from sauce, and set aside (you'll want to taste the sauce after blended before adding peppers back, one by one, so it doesn't get too spicy!)
    When sauce begins to thicken, blend with an immersion blender.
  6. When pork has cooled slightly, shred and remove bone and any extra fat.
  7. Serve with sauce and enjoy!

How to Make Crock Pot Pork Chops

Making slow cooker pork-chops is seriously so easy. Just toss the ingredients into the pot and set it to low.

This recipe takes just a few minutes of preparation and your Crockpot does the rest. Come back to it hours later and you'll find perfectly tender, melt in your mouth pork ready to serve!

Tips for making the best boneless pork chops

Using thick-cut chops is essential. Thinner cuts cook too quickly so you will not have the same results.

Add chili paste according to your desired heat level. We use 3 tablespoons for a little kick. If you prefer a milder flavor, add less or omit it altogether. It is fabulous either way.

Cook times will vary based on your Crockpot and the thickness of your chops. It's important that you don't overcook your meat or it will be dry and tough.

  • A Slow Cooker - I like mine that is programmable so it’ll only run as long as I want it to then it turns to warm, so food doesn't get overcooked.

  • Garlic Press - One of my most used kitchen tools! I received mine as a gift years ago and I can't imagine why I never had one. It minces garlic with one squeeze, with the peel still on!

Why we use boneless pork chops


We like to use boneless meat for this recipe because it reduces the cooking time. Just be sure that you use a thick-cut chop so the meat stays juicy.

Also, when choosing the meat, look for cuts that have some fat (marbling).

Lean meat isn't the best choice for crockpot cooking - you need the fat and marbling to keep the food moist.

When it's time to remove them from the slow cooker, you will need to use a spatula to take them out of the slow cooker. This is because they are so tender, they may even fall apart.

Will the recipe work with bone in pork chops?

Yes, you can make this recipe with bone in chops if you want to.

Be sure to look for chops between 1 and 1 1/2 inches thick. Also, be careful not to cook them for too long. Overcooked meat will be dry and tough.

Can you freeze the leftovers?

Yes, you can easily freeze leftover chops. Just place them in an airtight container or a freezer bag. Then, store them in the freezer and use them within 6 months.

How to reheat leftovers

Reheating leftover pork couldn't be easier!

  1. Preheat the oven to 350F. Then, add 2 tablespoons of water or beef broth to a baking pan.
  2. Place the meat in the pan and cover it with aluminum foil.
  3. Then, cook them for between 10 and 15 minutes, depending on the thickness of your chops.

Crock Pot Pork Chops

Crock Pot Pork Chops are made with the easiest slow cooker recipe ever. Toss the ingredients in and return to juicy chops, ready to eat!

Ingredients

  • 1/2 cup light brown sugar, packed
  • 1/2 cup ketchup
  • 1/4 cup low sodium soy sauce
  • 1-3 tablespoon red chile paste (I used Gourmet Garden)
  • 1 teaspoon minced garlic
  • 1 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 3-5 pounds boneless pork chops (thick cut 1"- 1 1/2")
  • 1/4 cup cornstarch

Instructions

  1. Add ingredients (except pork chops and corn starch) in a 6-quart slow cooker. Stir to combine. Add pork chops. Toss to coat with the sauce. Cook on low 4 hours.
  2. After 4 hours, combine equal amounts cornstarch and water in a mason jar. Close the lid, to seal the jar. Shake the living tar out of it, to create a slurry. Add the slurry to the crockpot. Stir and cover, cook 1 more hour.
  3. Check for doneness. If the pork chops need longer let them cook until tender and done.
  4. Serve and enjoy!
DONNA'S NOTES

Seared beef is slow cooked in a spectacular spicy adobo sauce and combination of flavors that create the perfect moist and tender Mexican shredded beef.

Over the last few years I have created make at home versions for many of our favorite Chipotle recipes:


Once again, I began researching and taste testing to develop this copycat recipe.  When the dish was perfect, I hosted an awesome party and invited my friends to partake in a burrito bar starring our Chipotle's Copycat Barbacoa.


What is Barbacoa?

It's tender and moist seared beef, braised in an incredible blend of adobo, lime, cumin, garlic and oregano that come together to blow away any barbacoa you have ever tasted.

Burritos loaded with pico de gallo, Chipotle's Cilantro Lime RiceGuacamole and barbacoa will be the star of any Mexican dinner party.

Helpful tips for making crockpot barbacoa:

  1. Rinse the uncooked roast in cold water and pat dry. This helps keep the meat from steaming and allows it to sear so you get an amazing flavor and crisp coating on the outside of the roast.
  2. To prepare the sauce without a blender, mince the garlic and chipotle peppers.  Combine sauce ingredients in a bowl and mix until well combined.
  3. Do not use non-stick pans for searing. Cast iron or stainless steel are great alternates to the dutch oven.

Copycat Chipotle Barbacoa Recipe

Seared beef is slow cooked in a spectacular spicy adobo sauce with a combination of flavors that create the perfect moist and tender Mexican shredded beef.
prep time: 15 mins  cook time: 6 hours  total time: 6 hours and 15 mins

Ingredients
  • 2 teaspoons kosher salt, divided
  • 3-4 pound chuck roast, fat trimmed
  • 2 tablespoons extra virgin olive oil
  • 2 bay leaves
Sauce
  • 1/4 cup apple cider vinegar
  • 6 cloves garlic
  • 4 teaspoons ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoons ground black pepper
  • 1/8 teaspoon ground clove
  • 4 chipotle peppers (from a can, packed in adobo sauce)
  • 1 tablespoon adobo sauce (from the chipotle pepper can)
  • 1 cup chicken broth (or 1 cup water and 1 teaspoon chicken base)
  • 1/4 cup fresh lime juice

Instructions

  1. Prepare roast.  Make sure all visible fat is trimmed.  Rinse the uncooked roast in cold water and pat dry with paper towels. This helps keep the meat from steaming and allows it to sear so you get an amazing flavor and crisp coating on the outside of the roast. Cut into 8 chunks.  Sprinkle all sides of cut beef with ½ of the salt (1 teaspoon), reserving the remaining 1 teaspoon.  Set aside.
  2. In a blender or food processor combine the sauce ingredients.  Blend until smooth.  Set aside.  If you do not have a food processor or blender, see cook’s note.
  3. Warm a Dutch oven or heavy bottom pot over medium-high heat, until water dripped over top sizzles.  Add the oil. Sear all sides of cut beef.  Don’t skip this step. We are adding layers of flavor here. Once the roast is nicely seared with a good crust, remove it from the Dutch oven and place it in your slow cooker. Set slow cooker temperature to high.  Pour the blended  sauce over top. Add bay leaves. Cook for 5-6 hours on high (or 8 hours on low) covered.
  4. After about 5 hours (or 7 hours on low) shred beef using 2 forks to pull it apart.  Taste, and add additional teaspoon of salt (as needed), stir to completely coat in sauce.  Cover and cook for 1 more hour.  After this time you can serve and enjoy or turn slow cooker to warm until ready to serve.
  5. To create burrito:  Layer* pico de gallo, Chipotle’s Copycat Cilantro Lime Rice and Chipotle’s Copycat Barbacoa on a large flour tortilla.  Additional toppings of Chipotle’s Copycat Guacamole, sour cream and cheddar cheese are also exceptional. *Click on link for recipes

Living in the southwest, a good guacamole recipe is pretty much a requirement.  I have to say I have sampled truckloads of guacamole in the years I have lived here.

But, there is one that always sticks in my mind.  The guacamole from Chipotle, is incredibly memorable.  I knew I had to recreate it so I could enjoy it at home.

How to Make Chipotle Guacamole at Home

Chipotle guacamole recipe is super easy to make. Simply combine jalapeno, cilantro and red onion with the avocado and use a fork to smash it. Add lemon, lime and salt. Stir to combine and serve.

It couldn't get easier than that! It comes together in a snap and is the only homemade guacamole we ever serve in our house.  It is that amazing. Serve as a side for burritos or with chips, either way it is sure to be a hit.

Every party needs this guacamole to make it complete. As a matter of fact preparing an entire Chipotle bar at home is one of my favorite party meals.

Helpful Tips to make The Best Ever Guacamole - Chipotle Restaurant Copycat:

  • You can adjust the heat level according to your preference. The creaminess of the avocado really balances out 1 jalapeno but if you think that may be too much you can eliminate it or use 1/2.

    The Best Ever Guacamole - Chipotle Restaurant Copycat

    The Best Ever Chipotle's Copycat Guacamole recipe. Featuring bits of jalapeno, red onion and fresh herbs that speckle the creamy chunks of avocado. Citrus juices and salt complete this simple and fresh guacamole. Trust me this is the last guacamole you will ever need to to sample.

    Ingredients

    • 1 medium jalapeño, (deseeded, deveined and minced)
    • 1/4 cup fresh minced red onion
    • 2 tablespoons chopped cilantro
    • 8 ripe avocado
    • 1 tablespoon fresh lemon juice
    • 1 teaspoon fresh lime juice (a squeeze)
    • 1 teaspoon kosher salt

    Instructions

    1. Add jalapeño, onion and cilantro in a medium size bowl. Slice avocados in half and place one pit in the bowl. Scoop out avocado and add to bowl. Add lemon and lime juices and salt. Use a fork to mash avocado to preferred consistency.
    2. Cover avocado pit with guacamole to keep it from oxidizing (it really works) and press plastic wrap on to top of guacamole until ready to serve.
    3. Enjoy!
