Corn is one of my favorite foods. Well, actually the entire family would concur.

With Chad being from Iowa, I am sure growing up with corn around you really lent itself to his love of corn. Me on the other hand. I grew up in an Italian family and we had corn with turkey roasts and pot roast.

Of course growing up my mom never cooked anything like this divine creation. hahaha I bet you are wondering how on earth I put this recipe together.

Well, I have a great story to share about the marriage of corn and bacon and how it came to be but the bottom line is that this is absolutely life changing and you have to try it.

The corn on the cob is wrapped with thin cut bacon so it can get nice and crispy. Then it's sprinkled with brown sugar.

Candied Bacon Wrapped Oven Roasted Corn

The best corn recipe you have ever tasted, Candied-Bacon Wrapped Corn is what dreams are made of! It all starts with tender sweet corn wrapped in crisp smoky bacon and topped with caramelized brown sugar. It is sweet smoky and utterly, gloriously delicious!
prep time: 10 MINScook time: 45 MINStotal time: 55 mins

Ingredients

  • 8 ears corn, cleaned 
  • 16 slices thin cut bacon (about 1 pound)
  • 1/2 cup light brown sugar 

Instructions

  1. Preheat oven to 400°F.  Line a baking sheet with aluminum foil.
  2. Place corn on the prepared baking sheet. Wrap each ear of corn with 2 slices of bacon, starting at one end, pull gently and spin the corn as you wrap it with the bacon. Start the second slice where the first slice ends. Place the end of the bacon on the bottom as you set it on the baking sheet; this will help hold it in place.
  3. Starting with the bottom side of the corn (where the bacon ends), press about one tablespoon brown sugar onto each ear of corn. Spinning as you press until all of the bacon is lightly coated with brown sugar. Place the corn back on the baking sheet with the end of the strips of bacon on the bottom; this will help keep it in place.
  4. Bake for 40-45 minutes, until the bacon, is crisp cooked. Carefully rotate corn 1/4 turn every 10 minutes, using tongs, try not to knock the bacon off. If the bacon comes off, just use the tongs to wrap it back on the corn.
  5. Remove from oven. 
  6. Serve and enjoy!

I started making oven roasted vegetables a few years ago and completely fell in love with the flavor.  The caramelization that occurs during slow roasting bringing out the sugars in the vegetables is incredible. But, I had never made potatoes that way, until...

Last year we grilled ribeye steaks and I decided nothing would go better than oven roasted fingerling potatoes.  I seasoned them with garlic and rosemary, they were like candy.  Chad (my picky husband) and I were head over heals in love.

Oven Roasted Rosemary Garlic Fingerling Potatoes

The easiest side dish recipe you will ever make. Fingerling potatoes roasted to perfection with rosemary and garlic is our favorite potato dish ever!
prep time: 5 minscook time: 60 minstotal time: 65 mins

Ingredients

  • 3 pound fingerling potatoes
  • 2 tablespoons extra virgin olive oil
  • 6 garlic cloves, minced
  • 2 tablespoons chopped rosemary (about 4 sprigs)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Rinse potatoes. Place potatoes in a 7”x10”x3” baking dish (or similar size).
  3. Combine remaining ingredients in a small bowl.  Stir to combine.  Pour over potatoes. Toss with clean hands until potatoes are well coated. 
  4. Bake 60-70 minutes, stirring occasionally until potatoes are fork tender. (Mine cooked 60 minutes).
  5. Serve and enjoy!

Broccoli is my favorite 'healthy' vegetable.  I have to clarify that because I could eat corn and potatoes every day for the rest of my years and be a happy girl.  Munchkin (my 4 year old) and I share a love for broccoli, especially when it is covered in ooey gooey cheese.  I digress.  I would probably eat cardboard if you put enough cheese on it.  Just sayin'!

    Ingredients

    • 1 1/2 pounds fresh broccoli florets
    • 1/2 red onion, sliced
    • 3 garlic cloves, sliced
    • 2 tablespoons extra virgin olive oil
    • 1 teaspoon kosher salt
    • 1 teaspoon fresh ground black pepper

    Instructions

    1. Preheat oven to 450°F.  Line a baking sheet with aluminum foil.
    2. Add broccoli, onions and garlic to pan.  Drizzle with olive oil.  Sprinkle with salt and pepper.  Toss with clean hands, until coated.  Wiggle the pan until broccoli is in a single layer. Bake 20-25 minutes until fork tender.
    3. Serve and enjoy!

    As a matter of fact it is sooo good that my picky 4 year old said to me tonight "Mommy, we should eat dinner before we eat dessert" as she was devouring her creamed corn. Yes that good.

    This has consistently been one of our top recipes year after year, so we put together a video for you. You are going to love it!

    I know I have mentioned a time or 10 how much I love corn, honestly I love it so much that I when I was younger I would eat a bowl of sweet corn for breakfast.

    Well, now I am a bit more practical (most days), but I still love corn just about anyway I can get it.

    • 1 cup whole milk
    • 1/2 cup heavy cream
    • 1/4 cup (1/2 stick) unsalted butter
    • 3 tablespoons granulated sugar
    • 1 teaspoon kosher salt
    • 2 pounds frozen corn
    • Optional: black pepper

    Instructions

    1. Combine ingredients in your slow cooker. Stir to combine. Cover and cook on low for 4 hours. At about 3 hours it will completely come together. Allow to cook for the full 4 hours for the best results.
    2. Add black pepper to taste.
    3. Serve and enjoy.

    I just love baked corn on the cob in the summertime. Whether I'm at a picnic, barbecue, or family outing, it is one of my favorite summer recipes.

    Tips for Making Corn on the Cob in the Oven

    • We also love to add a dash of cayenne pepper when we make baked corn on the cob.  The best way to do that is to place 4 tablespoons of butter in a small dish.  Add the desired amount of cayenne pepper and mix it together. Smear butter on it and then continue with the recipe.
    • Make your own compound butter to finish it with. Try different flavor combinations.
    • Be sure to use unsalted butter. You don't need the extra salt when you add other seasonings.

    Frequently Asked Questions

    Can you make this recipe using frozen corn? 

    Yes, you can make this recipe starting with frozen. Simply follow the recipe below and substitute frozen for fresh.

    There's no need to do anything differently when you make the recipe.

    You can also wrap each ear in tin foil if you prefer. You will want to roast them in the oven for about 30 minutes in total. There is no need to turn them if you wrap them in foil.

    Do you remove the husks before roasting corn in the oven? 

    In this recipe, I remove the husks. It makes it easier to apply the flavored butter to it.

    But, you can carefully turn back the husks, then apply the flavored butter if you want to keep them on. Finally, close up the husk again and bake.

    Or, you can skip the flavored butter and simply roast it with the husks on and apply butter, fresh herbs, and seasonings when you take it out of the oven.

    Toppings for corn on the cob in the oven

    You can use the flavored butter that I've included in this post. But, there are lots of different types of toppings and seasonings that you can use.

    Why not try fresh smoked paprika, your favorite herbs from the garden, or even an orange or lemon compound butter.

    Other options include grated parmesan cheese, Old Bay seasoning, or even ranch seasoning.

    How long can I store leftovers?

    We don't often have leftovers when we make it this way. But, if you do, you can store leftover oven corn on the cob in an airtight container in the refrigerator. They will stay good for up to 5 days.

    Or, you can put it in the freezer for 6 months. Just make sure that each ear is well wrapped.

    To reheat it let it thaw in the refrigerator.

    Then you just need to wrap it in tin foil with a little bit of butter inside. Finally, place it in the oven for about 10 minutes at 350F. It comes out perfectly every time.

                  • kosher salt, to taste
                  • fresh ground black pepper, to taste

                                Instructions

                                      1. Preheat oven to 400°F.  Line a baking sheet with aluminum foil.
                                      2. Place the corn on the baking sheet.  Reserve about 1/2 of the butter.  
                                      3. Spread the remaining butter on all of the corn.  
                                      4. Sprinkle liberally with salt and pepper (I use about 1 teaspoon of each).
                                      5. Bake for 30-45 minutes, until starting to brown. 
                                      6. Turn corn occasionally. Remove from the oven and spread the remaining butter over the top of the corn.  Sprinkle with more pepper as desired.
                                      7. Serve and enjoy!

                                        Seriously though, I spent every Thanksgiving at my parents house until I moved to Arizona.  Since then, Chad and I have spent every Thanksgiving at his parents house.

                                        So, luckily I am not usually the one to prepare the bird. But I wanted to learn how just in case Chad's mom decided to fly to Hawaii or something.

                                        I didn't want to be practicing my first whole bird ever on Thanksgiving day.  Talk about added pressure. Well, even if you have the added pressure of preparing your first turkey this Thanksgiving, this recipe will ease the stress.

                                        I can't help but think of my Mom when I think of that first turkey. My grandma moved out of state when I was about 7.

                                        Like me, my mom had never hosted Thanksgiving. She was preparing the turkey and didn't know all the tricks.

                                        She had managed to remove the innards and wash the bird, but when she was stuffing the turkey she starts hollering for my dad.

                                        My dad, the hero, rushes to the kitchen and my mom is standing there with a turkey hanging off the end of her arm.

                                        She never realized that you can remove the metal closure on the legs. LOL So my dad busts up laughing and then takes a picture. Happy Thanksgiving Mommy. (We miss you!) I so need to find that photo.

                                        I have had some less than spectacular turkey in my life, so my number one goal was to make this turkey moist and flavorful. I loaded it with an herb butter mixture made from my favorite herbs.

                                        You start by separating the skin from the turkey and rubbing the herb butter over the meat and on top of skin. Pour water in pan and cover.  You don't even have to baste the turkey, but you can if you want to. Truly the best turkey I have ever eaten and the perfect Thanksgiving dinner!

                                        Helpful Tips to make Best Ever Herb Roasted Turkey:

                                        • Run a checklist in your head BEFORE you put the turkey in the oven.  Make sure you have added the water, smothered the turkey in the butter mixture and tucked the wings.  Now, if you happen to forget to tuck the wings...  Like I did.  You can use tongs to do this after it is in the oven, but be warned your turkey is less cooperative once it has started baking. (imagine that).  It took me and Chad and a lot of patience to get those slippery partially cooked wings tucked.  Not to mention they poked through my aluminum foil.

                                          Simple Herb Roasted Turkey

                                          Our Herb Roasted Turkey is so moist and flavorful it is the only recipe you will ever need. Nothing beats this buttery herb infused flavor in your turkey. A simple recipe that you will use again and again. So easy there is no basting required!

                                          Ingredients

                                          • 1 (12-14 pound) whole, turkey (defrosted)
                                          • 2 sticks unsalted butter, softened
                                          • 2 tablespoons garlic powder
                                          • 1 tablespoon dried rosemary
                                          • 1 tablespoon dried basil
                                          • 2 teaspoons ground sage
                                          • 1 teaspoon salt
                                          • 1/2 teaspoon black pepper
                                          • 2 cups water

                                          Instructions

                                          1. Preheat oven to 325°F.
                                          2. Prepare your turkey by removing innards and washing inside and out in cold water.  Set turkey on rack in roasting pan.  Slide hand under skin to separate skin from meat.  Tuck wings under turkey.
                                          3. In a small bowl, combine butter, garlic, basil, rosemary, sage, salt and pepper with a fork. 
                                          4. Using your hands coat turkey with your butter mixture.  Slide hands under skin to rub herb butter mixture over meat.  Rub mixture all over top, side and legs as well as under the skin.  Pour water into pan.
                                          5. Cover turkey with aluminum foil. Bake for 3 1/2 hours (basting occasionally if you prefer), or until temperature in the thickest part of the thigh reads 165° or more.  (Turkey will continue to cook once removed from the oven).  Remove the foil for the last hour to allow the turkey to brown completely.
                                          6. Serve and enjoy!
