How to Make Crispy Brussel Sprouts

While there are many different ways to prepare Brussel sprouts, if you're wondering how to make crispy Brussel sprouts, I have a few simple tips for you to follow.

The secret to my recipe is to drizzle olive oil over the Brussel sprouts before roasting them in the oven.

These roasted Brussel sprouts with garlic come out perfectly crispy every time.

This recipe is great with bacon too.

Just cut up about 8 slices of thick cooked bacon and toss with the veggies. It truly takes this recipe over the top!

Some people prefer to add a dash of balsamic vinegar while cooking.

Tools needed You really don't need a lot of tools to make these crispy Brussel sprouts.

It's a simple recipe that requires very little preparation.
  • Jelly Roll Pans- (baking sheets with sides) - used for everything from cookies to roasting, a good baking pan will last for years.

Frequently asked questions

How to clean Brussel sprouts

The first step is to pick over the Brussel sprouts and remove any of the outer leaves that are discolored or wilted.

The leaves should be firm and bright green in color. Then, put the Brussel sprouts in a bowl filled with room temperature water.

The water should just cover them completely. Let them soak for about 10 minutes.

Then pour them into a strainer in the sink and rinse them with fresh lukewarm water. Now, you're ready to cook.

Why are my roasted Brussel sprouts soggy?

If you overcook your Brussel sprouts they will become soggy. This is because overcooked cabbage and Brussel sprouts release sulfur which makes them mushy.

To prevent this, be sure not to overcook them. They should be firm and have a mild flavor. If they are soggy, you can try to roast them using this recipe to give them a bit more crispiness.

But, it is better if you follow the recipe exactly and don't overcook them.

How to fix soggy sprouts

If you do find that you've overcooked your sprouts, you can easily fix that with this recipe. Just drizzle them with a little bit of olive oil and make sure they are completely coated.

Add a little bit of salt and pepper before you bake your crispy Brussel sprouts. And, roast them at 425°F until the outside is caramelized.

This will give them a slightly crispy texture.

Can I make crispy Brussel sprouts from frozen?

You can make this recipe from frozen Brussel sprouts provided they were not overcooked, to begin with. Just thaw them in the refrigerator and allow them to drain completely.

Then, proceed with the recipe as it's written. I really prefer the way they taste when I use fresh Brussel sprouts.

How do you make them taste better?

Brussel sprouts are an acquired taste for many people. If you want to make them taste better, be sure that you season them while they cook.

You can also try adding a little bit of brown sugar while you are cooking them. Or, add something spicy to them if you prefer like red pepper and Dijon mustard.

You can also add Parmesan cheese or your favorite cream sauce. Just think about your favorite flavors and add those.

Crispy Brussel Sprouts with Garlic

Crispy Brussel Sprouts are oven-roasted with garlic, so they're tender and flavorful, not mushy. Make this recipe for your family tonight.
Prep time: 10 Minutes Cook time: 20 Minutes Total time: 30 Minutes

Ingredients

  • 2 pounds fresh Brussels sprouts, cut in half (or quarters if sprouts are large)
  • 6 garlic cloves, rough chopped
  • 1 medium red onion, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper

Instructions

  1. Preheat oven to 450°F. Line a baking sheet with aluminum foil.
  2. Add Brussels sprouts, onions and garlic to pan. Drizzle with olive oil. Sprinkle with salt and pepper. Toss with clean hands, until coated. Wiggle the pan until Brussels spouts are in a single layer. Bake 20-25 minutes until fork tender.
  3. Serve and enjoy!

Roasted chicken and veggies have been a long time favorite of mine for as far back as I can remember. We always prepared it with chicken, potatoes, and carrots in a baking dish.

It's perfectly delicious, but when I am looking for a family-pleasing meal that will bring us all together (including my particular 6-year-old), I like to step outside the box and re-imagine those classic favorites.

Sweet heat chicken and roasted fall vegetables are perfect to please all of our palates and to take time away from the hustle and bustle of life and enjoy an amazing meal together.

This fabulous family dinner wouldn't be complete without Lipton iced tea. Living in Florida, I grew up on this southern favorite. Iced tea is the perfect accompaniment for a meaningful meal.

Helpful Tips to make One Pan Roasted Garlic Chicken and Vegetables :

  • New Mexico Chile Powder is made by grinding New Mexico chiles. It is not the same as chili powder. It has an earthy chile flavor and is smoky, with a moderately spicy bite. It is slightly sweet with fruity undertones. You can find it with the International spices at most grocery stores. You can substitute Ancho Chile Powder if necessary.
  • Small Brussels sprouts can be left whole if medium or larger cut them in half.

    One Pan Roasted Garlic Chicken and Vegetables

    One Pan Roasted Garlic Chicken is a simple recipe for a sheet pan supper that your family will thank you for. Moist and tender chicken is bursting with flavor from the sweet heat honey garlic marinade. Brussels sprouts and sweet potatoes are roasted to caramelized perfection. The ultimate family dinner, this one pan recipe is one that you will be making again and again.

    Ingredients

    • 2 medium sweet potatoes (about 1 pound), cut into 3/4"-1" cubes
    • 1 pound small Brussels sprouts, (if they are bigger, cut them in half)
    • 1 medium red onion, cut into slices
    • 3 tablespoons extra virgin olive oil, divided
    • 2 teaspoons kosher salt, divided
    • 1 teaspoon fresh ground black pepper, divided
    • 1 1/2 pound boneless skinless chicken breasts
    • 4 tablespoons honey
    • 2 tablespoons Dijon Mustard
    • 2 teaspoons New Mexico chili powder
    • 2 teaspoons smoked paprika
    • 6 cloves garlic, minced
    • optional garnish: Parsley, chopped

    Instructions

    1. Preheat oven to 425°F. Line a baking sheet with aluminum foil, for quick clean up. Place the baking sheet into the oven to preheat the pan with the oven; this will help the vegetables caramelize faster.
    2. In a medium bowl combine 2 tablespoons olive oil with the honey, mustard, chili powder, smoked paprika, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper. Whisk to combine. Add chicken and toss to coat. Set aside.
    3. Add sweet potatoes, Brussels sprouts, onion, and garlic to the preheated sheet pan. Drizzle with 1 tablespoon olive oil. Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Toss vegetables with a spoon, until coated well.
    4. Clear a space for chicken breasts around the pan. Place coated chicken breasts on the baking sheet. Spoon the remaining honey mustard marinade over the chicken. Wiggle the pan until the vegetables are in a single layer.
    5. Bake 30-35 minutes until chicken is cooked through and vegetables are fork tender. Set oven to broil high for 2 minutes or until the edges of the vegetables begin to brown.
    6. Serve and enjoy!

      I started making oven roasted vegetables a few years ago and completely fell in love with the flavor.  The caramelization that occurs during slow roasting bringing out the sugars in the vegetables is incredible. But, I had never made potatoes that way, until...

      Last year we grilled ribeye steaks and I decided nothing would go better than oven roasted fingerling potatoes.  I seasoned them with garlic and rosemary, they were like candy.  Chad (my picky husband) and I were head over heals in love.

      Needless to say, I have been making them this way ever since.  Costco always has a lovely bag of fingerling potatoes and fresh cleaned corn on the cob.  Grab both and pop them in the oven together.  Click on the corn pic below to see the oven roasted corn recipe.  They go perfect with everything.  Trust me, you are going to love them.

      Oven Roasted Rosemary Garlic Fingerling Potatoes

      The easiest side dish recipe you will ever make. Fingerling potatoes roasted to perfection with rosemary and garlic is our favorite potato dish ever!
      prep time: 5 minscook time: 60 minstotal time: 65 mins

      Ingredients

      • 3 pound fingerling potatoes
      • 2 tablespoons extra virgin olive oil
      • 6 garlic cloves, minced
      • 2 tablespoons chopped rosemary (about 4 sprigs)
      • 1 teaspoon kosher salt
      • 1/2 teaspoon fresh ground black pepper

      Instructions

      1. Preheat oven to 400°F.
      2. Rinse potatoes. Place potatoes in a 7”x10”x3” baking dish (or similar size).
      3. Combine remaining ingredients in a small bowl.  Stir to combine.  Pour over potatoes. Toss with clean hands until potatoes are well coated. 
      4. Bake 60-70 minutes, stirring occasionally until potatoes are fork tender. (Mine cooked 60 minutes).
      5. Serve and enjoy!

      Baked on a bed of rosemary and lemon this chicken takes on so much flavor it will KNOCK.YOUR.SOCKS.OFF!

      You know that happy dance I told you about?  The one I do in the kitchen?  No?  OK, so I am a total food geek.  I get the biggest thrill out of recipe development.

      So, when I create a recipe I am the first to taste it.  If it blows my mind...  I do this really embarrassing hip and fun dance in the kitchen.

      I would video for you, but I will spare you.  Just imagine some really entertaining 1980's dance off, now add a few years, a fork and a mouthful of food.

      Oh and a lot of MMMMM's.  You get the point.  LOL

      So, if I haven't lost you by now.  You can tell how excited I am about this chicken.  It is that good.

      The lemon and rosemary steam right into the chicken and it absorbs the most incredible combination of flavors ever.  The roasted lemons, rosemary and garlic on top give it an entirely new dimension of flavor.

      I ate the chicken all by itself.  The chicken, the lemons, with the garlic and juice drizzled over top, with some extra fresh rosemary.  OH.MY.WORD!

      Now, you could also throw a pan of The Best Ever Garlic Roasted Brussels Sprouts and a couple russet potatoes into the oven call it dinner and lunch for the week.

      But, personally, my plate was piled high with chicken and roasted lemons.  Even now my mouth is watering just thinking about it.

      • You can double, triple, quadruple, etc this recipe.  I make it with 5 pounds of chicken so we have enough to eat all week.
      • If you prefer your chicken more browned on top, at the end of your cook time turn the broiler on and cook for 2-3 minutes until chicken and lemons are browned.

      Looking for the best-roasted chicken recipe ever? Well, you have found it! I am absolutely head over heels in love with this Rosemary Lemon Roasted Chicken! Moist, flavorful and miles away from ordinary.
      prep time: 5 minscook time: 25 minstotal time: 30 mins

      Ingredients

      • 1-2 medium lemons, sliced
      • 2 sprigs rosemary
      • 2 garlic cloves, quartered
      • 1 pound uncooked boneless skinless chicken breasts
      • 1 tablespoon extra virgin olive oil
      • 1 teaspoon kosher salt
      • 1/2 teaspoon fresh ground black pepper

      Instructions

      1. Preheat oven to 425°F.  Layer 1/2 lemon slices and 1 sprig of rosemary on the bottom of a baking dish.  Scatter 1/2 of garlic around the pan.
      2. Season both sides of chicken with salt and pepper.  Lay chicken on top of lemon rosemary bed.  Place remaining lemon slices on top of chicken breasts.  Place rosemary sprig between the chicken breasts.  Sprinkle with remaining garlic.  Drizzle chicken breasts with olive oil.

      3. Bake for 25-30 minutes until chicken is cooked through (1 pound takes about 25-30 minutes, 5 pounds takes 45-60 minutes).  Cover with aluminum foil for 5 minutes and let the chicken rest.  Serve and enjoy!

      DONNA'S NOTES

      1. You can double, triple, quadruple, etc this recipe.  I make it with 5 pounds of chicken so we have enough to eat all week.
      2. If you prefer your chicken more browned on top, at the end of your cook time turn the broiler on and cook for 2-3 minutes until chicken and lemons are browned.

      Onions are one of my favorite foods, I could eat them all day. The health benefits are just incredible. As good as they are I bet you are thinking that this dish look amazing, but what do you serve them with?! I made this with the chicken piccata.

      It was the perfect compliment to the dish, the flavors are amazing. The onions are caramelized in the oven with the fruity olive oil and the tang of the dijon mustard and the freshness of the lemon really comes through.

      These onions are amazing. Truth is I had to reshoot them because they were so good that I ate too many before I took pictures.

      This time I made a double batch. Luckily, I am the only onion junkie in the house so I am hoping I can still eat some and have enough left for pictures. Did I mention these are incredible???

      It all starts by properly trimming the onion so you can get perfect wedges. I trim off the stem and root ends. Then stand them on their end and cut into wedges.

      Whip up this perfectly delicious and simple dressing in a medium bowl (see in this batch I used dried rosemary (1/2 tablespoon) because I ran out of fresh. Whisk until well combined.

      Pour the dressing over the onions and toss to coat. Then bake on a baking sheet. It is so easy it just may become your go to side dish.

        Rosemary Roasted Onions

        Rosemary Roasted Onions is such a simple recipe and the flavor is amazing. Rich, robust, tender, sweet and slightly caramelized, these onions are tossed in a tangy dressing make this a go to side dish that you will be using again and again.

        Ingredients

        • 2 medium red onions
        • 1 medium sweet yellow onion
        • 1/4 cup extra virgin olive oil
        • 1 lemon, juiced
        • 1 teaspoon Dijon mustard
        • 3 cloves garlic, minced
        • 2 sprigs fresh rosemary, stems removed and chopped
        • 1 teaspoon kosher salt
        • 1/2 teaspoon freshly ground black pepper 

        Instructions

        1. Preheat oven to 400° F.
        2. Trim onion both the root and stem sides of the onion. Be sure to leave the root intact (cut so that the dried brown roots are cut off and only a white nub remains).
        3. Peel onions. Place the onion with a cut side down on the board and cut into wedges.
        4. Place onions onto a baking pan.  Set aside.
        5. In a medium bowl combine olive oil, lemon juice, mustard, garlic, rosemary, salt and pepper. Whisk until well combined.
        6. Pour the dressing over the onions and toss well (I tried to use spoons, but the hands are the perfect tool for this job).
        7. Bake onions for 30 to 45 minutes, until tender and browned. Toss the onions once during cooking.
        8. Remove from the oven, toss again.
        9. Serve and enjoy!
