I have been playing with some bread recipes lately and have fallen in love with the simplicity of beer bread. They are a bit more dense, but can be mixed with a spoon, there is no kneading and no rise time. That is a perfect option for times when you don't have 3 hours to make bread.

My first few loaves I made with a more flavorful beer and then used a light beer. I can tell you there was a difference. I would stick with a more flavorful beer. You can't taste the beer, but you get a nice flavor to the bread that could best be described as sourdough-esque. In fact the loaf has that firm textured crust and softer bread like sourdough as well.

After making a few recipes of a basic beer bread, I tried a few variations. The recipe I am sharing with you today is fantastic!!! Bacon and cheese in beer bread... OH MY!!! Munchkin swiped a slice and devoured it. She kept saying "Mmmmm" as she was eating it. It really is so good and so easy. Prep is in no time. Set oven to preheat and by the time it beeps you will be sliding your loaf in the oven. It's that fast!

I have made this recipe dozens of times and it is always a home run. Perfect for sandwiches, grilled cheese, french toast and more. How are you using your beer bread. I would love some more suggestions.

  • If you are sensitive to beer you can substitute lemon-lime soda, or ginger ale. I HIGHLY recommend using the beer though. It gives it an incredible flavor that you will miss out on using the substitutions.

    Bacon Cheddar Beer Bread

    Bacon Cheddar Beer Bread is a simple no-knead recipe that is mixed with a spoon and ready to go in the oven before it is done preheating! Loaded with cheese and bacon this is a winner!

    Ingredients

    • 3 cups all purpose flour (363 grams)
    • 1 tablespoon baking powder
    • 1 teaspoon salt
    • 3 tablespoons granulated sugar
    • 1 1/4 cup shredded cheese (I used Monterey Jack, Colby and Cheddar mixture)
    • 1 (12 ounce) bottle of beer (I used Blue Moon)
    • 4 slices of bacon, cooked and chopped (or 1/4 cup real bacon bits)
    • 2 tablespoons butter, melted

    Instructions

    1. Preheat oven to 350°.
    2. Prepare a 9"x5" bread pan by greasing with butter. Set aside.
    3. In a large bowl, combine flour, baking powder, salt and sugar with a whisk. Make a well in the center. Add bacon, about 3/4 of cheese and full beer into the well.
    4. Stir mixture with a spoon until combined.
    5. Pour mixture into prepared bread pan. Add remaining cheese. Drizzle with 1 tablespoon of butter. Bake for 30 minutes.
    6. Remove from oven and drizzle remaining butter over the top.
    7. Bake for an additional 25-30 minutes or until browned on top and loaf thumps when you tap the top.
    8. Remove to a wire rack and allow to cool for 5 minutes. Remove from pan and allow to cool on wire rack. You can brush with more butter if you choose.
    9. Enjoy!

    I can't get enough of pretzels lately.  I have made 6 different pretzels in the last few months and still more ideas keep popping into my head.  Luckily we bought a food saver and we just wrap them up and pop them in the freezer until we are ready to eat more.

    After working on a few ranch, cheese and bacon recipes over the last few weeks I knew it would be the perfect flavor combination for a pretzel!

    Ranch pretzels are absolutely amazing!  A tender dough bursting with flavor from the herbs and buttermilk in the seasoning.  Then as if that isn't enough to take it over the top, I stuffed them with cheese and bacon.  Total flavor explosion!  Easy to make and they freeze well too!

    Jalapeño Popper Cheesy Pretzel Bombs  are a soft and chewy pretzel poppers stuffed with ooey gooey cheese, crispy bacon and spicy jalapeños.  This scrumptious recipe is like nothing you have ever eaten before.

    Outrageously Cheesy Stuffed Pretzel Bombs are the perfect bite size appetizer to impress your guests.  Pretzel bites are loaded with cheddar cheese and baked to perfection.  All of this comes together in under an hour.

    A soft and tender pretzel with the most subtle sweetness is the recipe you have been dreaming of.  Even better, they are ready in just 30 minutes.  Quick and easy you can make these Best Ever Soft Pretzel Bites with or without a mixer!

    PRINT RECIPE

    Cheesy Bacon Ranch Stuffed Pretzel Bombs
    SERVES 36  |  ACTIVE TIME 42 Min  |  TOTAL TIME 50 Min

    2¼ teaspoons active dry yeast
    1 ½ cups warm milk (110°-120°)
    2 tablespoons honey
    3¼ cup all purpose flour
    3 tablespoons ranch seasoning mix (I used Hidden Valley)
    1 teaspoon kosher salt
    8 ounces mild cheddar cheese, shredded
    4 ounces cream cheese
    12 ounces bacon, cooked and diced into bite size pieces
    ½ cup baking soda
    1 large egg
    course salt

    Preheat oven to 450°.  Line a baking sheet with parchment paper or spray with cooking spray.

    Pour milk into the bowl of a stand mixer (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add honey and stir.  Allow yeast to bloom for 5-10 minutes.  Once it is nice and foamy, it is ready.

    Meanwhile in a medium mixing bowl combine cheeses and bacon.  Mix together.  You may need to use a wood spoon to get it well mixed. 

    In a small bowl beat egg and 1 tablespoon water, set aside.  Sprinkle clean counter top with 2 tablespoons flour.  Line a baking sheet with parchment paper and spray with cooking spray.  Set aside.

    Fill a medium (4 cup) bowl with 2 cups of boiling water and add baking soda carefully (it will bubble up).  Place baking sheet, baking soda water and cheese mixture on the counter that you are working on.

    Add flour, ranch seasoning and salt to mixer.  Knead for 3-5 minutes until the dough comes together in one ball.  Add more flour a tablespoon at a time as needed, if bread is too sticky to come together.  Dough should be tacky when you pull it out of the mixer, not sticky.

    Place dough on lightly floured counter top.  Form dough into a ball.  We are going to cut this ball into 36 (somewhat) even pieces.  First quarter the ball of dough.  Roll each quarter into a fat log.  Cut that into 3 pieces.  Roll each piece into a log and cut into 3 pieces.  When you are done you will have 36 pieces.

    Roll each dough piece (one at a time) into a ball and then flatten it into a circle.  Add a little less than 1 tablespoon of cheese mixture in the center *I used a tablespoon scooper.  Carefully pull each side over the filling to create a ‘cheese package’, pinching the edges closed.  Roll the dough into a ball.  Be careful to make sure you can not see the cheese through the dough.  Tap fingers in flour, pinch any tears and roll again. 

    Set aside and repeat until you have 3 stuffed dough balls.  Transfer 3 stuffed dough balls to hot water mixture and allow to set while you prepare the next 3.  Prepare the next 3 dough balls.  Remove dough balls from water with a slotted spoon and place on prepared baking sheet.  Place 3 newly prepared balls into the water and prepare 3 more.  Repeat until all dough balls are on the cookie sheet.

    Arrange all pretzel balls on parchment so they are not touching.  Brush egg wash onto each one and sprinkle with course salt.

    Bake for 8-10 minutes until the tops are browned.

    The ooey gooey cheese may escape some of your pretzel bombs.  That is a beautiful thing!  Scoop all that cheesy goodness up onto the plate and serve.  Your guests will go crazy over them.

    DONNA'S NOTES:  You can mix the dough by hand if you do not have a stand mixer.  Add milk, yeast and sugar to a large bowl.  Once the yeast blooms stir in the salt, ranch seasoning and flour.  Mix with a spoon.  Turn dough out onto floured counter top and knead for 3-5 minutes until dough is no longer sticky.  Proceed with remaining instructions.

    You can use 36 frozen dinner rolls (I use Rhodes) in place of the dough recipe.

    We have shared some lighter chicken options the last few weeks. The  Garlic Beer Marinaded Grilled Chicken  and Simple Rosemary Lemon Marinaded Grilled Chicken are both incredible chicken recipes, and great for watching your waistline. This week we decided to kick it up a notch or two.  We spiked the barbecue sauce and covered the chicken in bacon!!!  Seriously.  This could be the best chicken to ever come off of my grill.
    I saw the idea of using a bacon paste when perusing Cooks Illustrated.  Although I understood the rationale; the chicken is kept moist by the bacon and it does not cause flair ups, I wasn't thrilled about pureeing bacon.  However, after that kabob came off the grill and I took my first bite, that all changed.  I would catch the pig and prepare it myself (theoretically) if that is what it took to make this again.  It is AMAZING!

    Chicken pieces smothered in spicy bacon puree, brushed with a drunken barbecue sauce and grilled to perfection.  Unbelievably divinely decadent!!!  What more could you ask for?  Nothing.  Skip the sides and have a whole kabob!  You won't be sorry.

      Bacon Bourbon Barbeque Chicken Kabobs

      Bacon Bourbon Barbeque Chicken Kabobs are chicken pieces smothered in spicy bacon, brushed with a drunken barbecue sauce and grilled to perfection. One that will truly knock your boots off!

      Ingredients

      • 16 ounces barbecue sauce, I used my homemade sauce
      • 1/4 cup bourbon whiskey (I prefer Maker's Mark)
      • 2 tablespoons apple cider vinegar
      • 4-5 lbs boneless skinless chicken breasts, cut into 1”x1” pieces
      • 2 teaspoons kosher salt
      • 1 teaspoon fresh black pepper
      • ¼ cup sweet paprika
      • 3 tablespoons packed dark brown sugar
      • 1 tablespoon smoked paprika
      • 6 slices bacon , cut into small pieces (uncooked)
      • 8 12-inch wooden skewers (soaked in water for an hour)

      Instructions

      1. In a medium bowl combine barbecue sauce, vinegar and whiskey. Whisk to combine. Set aside and allow flavors to meld.
      2. Add bacon to the bowl of your food processor and blend until bacon becomes a paste. Add salt, pepper, paprikas, and sugar. Pulse until well combined.
      3. Pat chicken with a paper towel to dry. Add bacon paste mixture to chicken; mix with hands until chicken is completely coated. Place chicken on skewers.
      4. Place on preheated grill. Cook on each side for 2-3 minutes. Brush cooked surface with barbecue sauce and cook each side (coated in sauce) for 1 additional minute.
      5. Remove kebabs from grill. Pour remaining barbecue sauce into a small saucepan and bring to a boil. Pour into a serving container and serve barbecue sauce along side kebabs. Enjoy!

      This recipe has been so popular lately that I decided to share it with you again...

      Did you know October is national pork month?  Seriously.  I am pretty sure they made this holiday just for us.  You have seen my bacon recipe collection, correct? We are so excited to be partnering with the National Pork Board. We are a match made in heaven.

      This year one of my favorite stores is partnering with the National Pork Board to celebrate. Costco, which let's face it would be my only store if I had a bigger family and more freezers, has partnered with the National Pork Board with an entire month dedicated to pork.  It's 'Porktober'! Costco will be bringing you sales on different cuts of pork all month long.

      This week they are featuring the pork tenderloin which I absolutely love!  I have been on a jalapeno popper kick for a few months and I knew exactly what I wanted to create with these fabulous pork tenderloins. I was already dreaming of jalapeno popper pork.  {{slurp}}

      Chad, Munchkin and I headed out to Costco for our weekly shopping trip.  Wednesdays and Thursdays seem to be the best days for shopping around us, less people and you can still catch the sample people on Thursday, which Munchkin loves. We love getting our pork at Costco, they have an awesome variety of cuts and you can't beat the prices. Not to mention the quality is truly a step above.


      Chad actually worked as an art director for many years. I remember the process his old employer went through to get their products approved to sell at Costco. It is quite an arduous task. It took well over 6 months to meet their stringent requirements. As much of a pain that it was, as a customer, I am thrilled that they take that kind of time to screen the perfect companies and products. It makes me confident in my purchases and this day was no different.

      I headed out for all the fixin's for my Jalapeno Popper Stuffed Pork Tenderloin. Cream cheese, Colby Jack cheese (I buy the bricks and grate myself), bacon crumbles and of course the pork tenderloin.  I was thrilled to discover there were 4 tenderloins in each 2 pack. Yay me!

      Perfectly seasoned cream cheese, Colby Jack cheese, bacon crumbles and jalapenos create the perfect filling for this Jalapeno Popper Stuffed Pork Tenderloin. I guess that is technically double the pork and double the cheese {{swoon}}.  No complaints there.

      A really simple recipe, it comes together in a snap.  It all starts by butterflying the tenderloin and pounding it thin.  Then a glorious layer of jalapeno popper filling is spread over top.  It is baked to perfection and the end result is a tender, juicy pork tenderloin that is bursting with flavor and will surely knock your socks off!

      Chad and I went nuts over this recipe.  It was so good I actually made a second one. Served this with au gratin potatoes and veggies.  Homerun.

      I was a little skeptical when I first started preparing pork, I guess it was a fear of over cooking it but now I just remember that for a flavorful, tender and juicy dish, cook loin roasts, chops and tenderloins to an internal temperature between 145°F (medium rare) and 160°F (medium), followed by a three-minute rest, using a digital thermometer to ensure accuracy. Bullseye every time! I also found this awesome video on how to stuff a pork tenderloin to help you.

      • Why New Mexico Chile Powder? It has a deep dark reddish brown color and features an earthy, sweet flavor and subtle, spicy heat. It is mildly hot and absolutely perfect in this sauce. It creates a truly authentic flavor! New Mexico Chili Powder can be found in the international aisle in the bulk bags or on Amazon. if you are afraid the heat will be too much you can use half New Mexico Chili Powder and 1/2 regular chili powder.

        Jalapeno Popper Stuffed Pork Tenderloin

        Perfectly seasoned cream cheese, Colby Jack cheese, bacon crumbles and jalapenos create the perfect filling for this Jalapeno Popper Stuffed Pork Tenderloin. A really simple recipe, it comes together in a snap. The end result is a tender, juicy pork tenderloin that is bursting with flavor and will surely knock your socks off!
        prep time: 30 minscook time: 35 minstotal time: 65 mins

        Ingredients

        • 1 1/2 pound pork tenderloin
        • 1/2 (8 ounce) package cream cheese, softened
        • 1/2 teaspoon New Mexico Chile Powder
        • 1/4 teaspoon ground cumin
        • 1/4 teaspoon kosher salt
        • 1/4 teaspoon onion powder
        • 1/8 teaspoon garlic powder
        • 1/4 cup bacon crumbles (or 4 strips of bacon precooked and crumbled)
        • 1/2 cup shredded Colby Jack Cheese
        • 2-3 jalapenos, (seeded, deveined and diced)
        • salt and pepper to taste
        • olive oil

        Instructions

        1. Preheat oven to 350°F. Line a baking sheet with aluminum foil. Set aside.
        2. Drizzle 1 tablespoon olive oil into a medium skillet over medium - medium-high heat. Add jalapenos. Sauté until jalapenos are slightly browned.
        3. Meanwhile in a medium size bowl; combine cream cheese and spices. Mix until combined. Add bacon and cheese. Stir until combined. Add jalapenos and stir one last time. Taste. Add salt if necessary.
        4. Cut a lengthwise slit down the center of the pork tenderloin to within 1/2-inch of bottom (careful not to cut all the way through). Open tenderloin so it lies flat. Cover with plastic wrap. Flatten to 1/4-1/2 inch thickness by gently pounding with the flat side of a meat mallet, starting from the middle and working outward. Remove plastic wrap.
        5. Lay pork tenderloin on the counter top with the long sides being the top and bottom and the short sides being at the left and right sides.
        6. Smear jalapeno popper mixture over the pork, leaving a 1" edge around the bottom and left and right sides uncoated. Roll the pork toward you. Meet the two long edges together and tuck the coated edge under the uncoated edge. Lay seam side down and tie the roast at 1-1/2-inch to 2-inch intervals with kitchen string. The tuck the ends under the roast and wrap string around the roast longways to hold closed.
        7. Drizzle the tenderloins with a little olive oil. Sprinkle with salt and pepper. Place in the oven and bake for 25-30 minutes or until a thermometer inserted into the center of the pork registers 140°F.
        8. Turn oven setting to broil (broil hi) and cook until the top is nicely browned. About 3-5 minutes.
        9. Transfer to a cutting board to rest, about 10 minutes. Slice and serve.
        10. Enjoy!

        50/50 Beef Bacon Burger

        Our 50/50 Burger is most definitely the most divine burger you will ever sink your teeth into. Smoky bacon and ground beef come together in the most spectacular way in this simple recipe. The real trick is how to get the bacon in there and after a lot of testing, I finally figured it out. And you are going to flip over this one!

        This burger brings back so many amazing memories. It was the summer of 2011. We were planning the menu for our barbecue for the following weekend when one of our friends launched into a story about this burger place in California that makes a beef and bacon burger. It's called the 50/50 burger. I had never been to the restaurant, but a burger made half of beef and half of bacon sounded like something I needed to taste for myself!

        We got to work on testing the recipe. We tried many different methods of combining the beef bacon to get it just right and then we chopped it up and added it to our ground beef. Magic. Pure magic.

        Let me just say, OH MY GOSH!!! I can not get over this burger. It was absolutely one of my favorite burgers ever, and I am so excited to share it with you.

        The magic of this burger is the Applewood smoked bacon. It adds so much flavor to the burger that you don't need to add anything else.

        Just choose your fixin's. We loved everything from mayonnaise, ketchup, mustard, lettuce, tomato, pickle and onion to just cheese and bacon strips on top.

        No matter how you top it, this burger is one you will remember.

          50/50 Beef Bacon Burgers

          Our 50/50 Burger is most definitely the most divine burger you will ever sink your teeth into. Smoky bacon and ground beef come together in the most spectacular way in this simple recipe. The real trick is how to get the bacon in there and after a lot of testing, I finally figured it out. And you are going to flip over this one!

          Ingredients

          • 1 pound thick cut Applewood smoked bacon 
          • 1 pound 85% lean beef 
          • 4 hamburger buns 
          • butter 
          • 4 slices American cheese 
          • optional toppings: (mayonnaise, ketchup, mustard, lettuce, sliced tomatoes, sliced onions, pickles) 

          Instructions

          1. Cover a cookie sheet with aluminum foil. Place bacon on foil. Make sure the bacon is not touching. Bake for 10-15 minutes until the bacon is partially cooked. Remove and place on paper towels to drain the grease. Once bacon is drained and cool enough to handle, place on cutting board and dice bacon or cut with kitchen shears. 
          2. Preheat grill to high.
          3. In a large bowl combine bacon and beef. Mix until combined. Form mixture into 4 patties, not too thick or they will not cook evenly. Using your thumb, make a slight indentation in center of patties on one side to prevent it from doming up in the center. 
          4. Place patties on the grill, make sure they are not touching.  Grill burgers until golden brown and slightly charred on the first side. Flip and grill for 3 to 5 minutes depending on your preferred doneness. 
            Top with cheese for the last few minutes.
          5. Meanwhile, Brush your buns with butter and toast on the grill. Cook until golden brown with grill marks.
          6. Serve with your favorite toppings.
          7. Enjoy!

          We really love pizza and we could eat it everyday!  Munchkin goes crazy for pizza and she lets us know when we are driving past our favorite pizza place.  As in, "what are you doing?  The pizza is back there!!!".  We all love the meat lovers pizza; loaded with pepperoni, beef, sausage and bacon.  It makes my heart go pitter patter.


          This Meat Lover's Pizza Pasta Bake is my spin on our favorite pizza.  My picky 3 year old squeals when she hears "pizza pasta for dinner" and gobbles it down as quick as I can get it on her plate.  Chad is no different he certainly loves it too!  And Me?  Well, let's just say you don't need to go gettin' all fancy on me and bother takin' it out of the pan.  Just give me a fork!   Just be glad I am civilized about this and using a fork.  Seriously I could dive into this pan.

          Why do I love thee so???  Let me count the ways...   Pepperoni, sausage, beef, bacon and ooey gooey cheese.  I love it for so many reasons, it tastes unbelievable and it can be on the table in half an hour!

          This bread is super simple, great for a party, and can be prepped ahead of time if you're in a pinch when party planning. It's a great touch on a holiday table as an alternative to traditional rolls.

          Meat Lover's Pizza Pasta Bake

          Meat Lover’s Pizza Pasta Bake is exactly what I like to make when pizza comes up on a busy weeknight. It’s loaded with ooey gooey cheese, fun twisty pasta, seasoned beef, pepperoni, sausage and bacon… Need I say more? This is our family favorite choice for a weeknight “pizza night” and I am sure it will be yours, too!
          prep time: 15 minscook time: 15 minstotal time: 30 mins

          Ingredients

          • 8 ounces dried cellentani pasta (or elbow)
          • 20 slices pepperoni
          • 2 cooked Italian sausage links (about 1/2 pound total)
          • 5 slices uncooked bacon
          • 1/2 pound lean ground beef
          • 1 (14.5 ounce) can diced tomatoes
          • 1 (8 ounce) can tomato sauce
          • 1 tablespoon + 1 teaspoon Italian seasoning (divided)
          • 1 teaspoon kosher salt (plus more for pasta water)
          • 1/2 teaspoon fresh ground black pepper
          • 1/2 teaspoon onion powder
          • 1/2 teaspoon garlic powder
          • 8 ounces Italian blend shredded cheese
          • 5 ounces fresh grated Parmesan cheese

          Instructions

          1. Preheat oven to 425°F.
          2. Bring a covered 8 quart pot of water to a boil over high heat. Add pasta and a handful of salt. Cook according to package directions (approximately 7-10 minutes). Remove from heat when pasta is al dente. Drain.
          3. Meanwhile, heat a medium skillet over medium-high heat. Brown ground beef with a sprinkle of kosher salt and a teaspoon of Italian seasoning.
          4. On a microwave safe plate, cook bacon between 4 paper towels in microwave for 4-5 minutes or until cooked. Dice bacon. Set aside. Heat precooked sausage in microwave for 1 minute. Slice and set aside.
          5. In a blender combine diced tomatoes, tomato sauce, 1 tablespoon Italian seasoning, 1 teaspoon kosher salt, pepper, garlic and onion powders. Blend until smooth.
          6. Once pasta is drained, immediately add sauce, 3/4 of both cheeses, 1/2 of pepperoni, 1/2 of sausage, ground beef, and bacon to hot saucepan and stir with pasta until combined.
          7. Pour pasta mixture into a 9” deep pie pan cover top of pasta with remaining sausage and pepperoni. Sprinkle remaining cheese over top and bake for 10 minutes, until cheese is melted and bubbly.
          8. Serve and enjoy!
