I had to create a copycat recipe to cure my hankering for my favorite apple pies from my childhood.  Now you can enjoy one (or 6) too!

My family actually didn't eat out much as I was growing up.  My mom made sure we had a home cooked meal every night we were home.  I would get so excited about stopping for fast food during our vacations.  I have a few favorites, but when I think about McDonald's I remember those fabulous fried apple pies.

To have my copycat fresh apple pie in my hand was like a dream come true.,  Just like the original it is crisp flaky pie crust oozing with thick spiced apple pie filling and tender chunks of tart and sweet apples.  Purely heaven.  We devoured these and I am sure you will too.

McDonald’s Copycat Fried Apple Pies

Visions of McDonald's RETRO Fried Apple Pies have been dancing in my head. Remember those from the 80's? Crisp flaky, heavenly pie crust oozing with thick apple pie filling and tender chunks of spiced apple.

Ingredients

  • 2 cups 1/2” diced apples, (peeled, cored and diced) approx 2-3 medium apples (I used 1 gala and 1 granny smith apple)
  • 1/2 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon cinnamon
  • pinch nutmeg
  • 1/2 cup water
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon pure vanilla extract
  • neutral oil (vegetable, canola or coconut oil)
  • 2 sheets Puff Pastry

Instructions

  1. Remove puff pastry from freezer, unwrap pastry and place on a floured work surface to thaw.
  2. Meanwhile; in a large saucepan over medium heat combine apples, lemon juice, sugars, cinnamon and nutmeg.  Mix well.  Stir occasionally until mixture begins to bubble.
  3. Meanwhile combine water and flour in a mason jar or container.  Shake to combine.  Add to pot.  Continue boiling, stirring constantly until apples are softened, approximately 5 minutes.  Remove from heat, stir in vanilla.  Set aside to cool.
  4. In a heavy-bottomed pan with deep sides, heat about 1” oil to 350 degrees.
  5. Meanwhile, using a sharp knife cut each pasty sheet into 3 equal long pieces.  Lay pasty sheet strips out horizontally on floured work surface.  Place 1/4 cup apple pie filling on the left half of each dough strip.  Moisten your clean fingers and wet the edge of the pastry.  Gently pick up the right side of the dough and fold dough on top of the left side, encasing the filling (if any filling seeps out push it back in).
  6. Gently press along the edge with the tines of a fork.  Once all pies are assembled fry them 2 at a time.  Cook for 3-4 minutes total, carefully flipping them over halfway through.  Remove pies from oil when they are a nice golden brown.  Place pies on a stack of paper towels.  Sprinkle them with sugar and cinnamon.  Repeat until all pies are cooked.
  7. Serve and enjoy!

I have professed my love for Chipotle Mexican Grill time and time again. I can't help myself. I absolutely adore their food. My absolute favorite thing to order is a burrito salad. And I could eat it every day. I love my burrito bowl filled with Pork Carnitas, pinto beans, fresh salsa, guacamole and this Roasted Chili-Corn Salsa.

This corn salsa starts with sweet corn, smoky roasted poblano peppers, red onions, jalapeño peppers and cilantro. It is sweet, spicy, smoky and perfectly tart from the citrus juice. It is amazing on chips, on burritos, salads, tacos... Pretty much on everything. I tend to fix a bowl and eat it as a side with lunch and dinner.

This dish has a chile pepper that I have never shared with you before. But trust me. You want this pepper in your life. 

Poblano (pronounced "po-BLAH-no") is a dark green, heart-shaped pepper that is approximately 4 inches long and 2 inches wide.They are a mild variety of chili pepper and are common in Mexican dishes such as chiles rellenos. They are absolutely amazing and a great starter chile for people who are hesitant about cooking with chiles.

If you do not want to spend the time roasting the poblanos, substitute fire roasted green chiles. It makes for an even simpler recipe.

The roasted poblanos really brings this dish together. The smoky poblanos, with the sweet corn and spicy jalapenos come together to create an amazing dish that you will have on your table again and again.

Chipotle Copycat Roasted Chili-Corn Salsa
SERVES 12 | ACTIVE TIME 25 MIN | TOTAL TIME 25 MIN











2 poblano chile peppers
4 cups frozen white sweet corn, defrosted and drained
1/2 red onion, finely diced
1/2 cup fresh cilantro, chopped
2 medium jalapenos, finely diced
1 tablespoon fresh lime juice
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt

Place an oven rack at the upper top position and preheat the oven to 425°F. Line a baking sheet with aluminum foil.

Place poblano peppers on the prepared baking sheet. Bake until the peppers are totally blistered and browned, about 15 to 20 minutes. Turn peppers every 5 minutes to roast all sides. Transfer the peppers to a bowl and cover with plastic wrap for 5 minutes. Peel the poblanos with your fingers. Careful the peppers are still hot. Cut them in half and remove seeds. Chop poblanos and place in a medium bowl with the remaining ingredients. Toss to combine. Serve and enjoy.

DONNA'S NOTES:  This is a great make-ahead dish, it gets even better the next day.

You can substitute fresh cooked corn when it is in season.

SHORTCUT: You can substitute 1 (4 ounce) can fire roasted diced green chiles for the poblanos. It will save you some time and it tastes amazing!

We are heading to Florida for a blogger conference before long.  Do you know what I am looking forward to while sitting in the terminal for 2 hours waiting for my flight?  Cinnabon and Starbucks.  I am pretty lucky and usually end up at a terminal with my 2 favorite airport treats.

I also enjoy Cinnabon when I go to the mall, I mean how can you miss it?  Head in the front door and you get hit in the face by the Makara cinnamon and sugar wafting down the mall.  Oh, how I love Cinnabon.


It seems unfair to have to wait to go to the mall or leave on a trip to enjoy Cinnabon's delicacies. So, we don't wait anymore. I am pretty proud to have conquered the Copycat Cinnabon Cinnamon Roll recipe.  My family goes nuts over them.  But, when you are in a dipping mood, Cinnabon Cinnamon Stix really call your name.

With that in mind I started working on the Stix.  The Cinnabon Cinnamon Stix are made from a Danish pastry dough, brushed with vanilla and butter and then coated in cinnamon and sugar and served with Cinnabon's rich cream cheese frosting.  Not a detail was missed here.

Let's just say we went NUTS over this recipe.  It is absolutely amazing!  Let me tell you that they are soooo good that I actually gave a batch of these as a birthday gift. Ok, maybe a little less than a batch, see...  I couldn't keep my hand off of them.

If you are pressed for time, check out the shortcut method and if you don't have a stand mixer, I have included a method for mixing by hand.  No matter how you make them, you are going to love 'em!

Copycat Cinnabon Stix

Copycat Cinnabon Cinnamon Stix are the perfect brunch item. Utterly cinnamon-sugar coated heaven! Served with homemade Cinnabon's rich cream cheese frosting. It doesn't get much better than that!

Ingredients

  • 8 ounces (1 cup) warm milk (110° to 120°)
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 large egg
  • 1 1/2 teaspoons kosher salt
  • 3 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, frozen
Toppings
  • 1 stick (1/2 cup) unsalted butter, melted
  • 1 tablespoons vanilla bean paste (or vanilla extract)
  • 1/2 cup granulated sugar
  • 1 tablespoon good cinnamon
  • Pinch kosher salt
Dipping Sauce
  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cups powdered sugar
  • 1/2 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt

Instructions

  1. In the bowl of a stand mixer* fitted with a dough hook add sugar and milk.  Sprinkle yeast over top and swirl with spoon or fingers to combine.  Allow mixture to sit for about 5-10 minutes while the yeast blooms and becomes aromatic.
  2. While the yeast blooms; place a cheese grater on a cool plate (run it under cold water and dry it if it is warm) and shred butter on the side with the largest holes.  Place shredded butter into refrigerator until needed.
  3. With the stand mixer on low add egg, salt and 2 cups of flour.  Once flour is mostly absorbed add 1 cup flour. Turn mixer to medium and knead for 2-3 minutes.
  4. With stand mixer on medium begin adding the butter, a handful at a time as the mixer kneads it in.  (be quick as you do not want the butter to melt, chunks of butter help with the flakey dough).  Once you are done adding butter, remove dough hook and allow dough to rest.  It will be a sticky heap of dough at this point.
  5. Prepare a clean countertop with plenty of flour to prevent your dough from sticking. (Don’t worry, it will all get worked in).  Place dough onto floured countertop and sprinkle flour over top.  Flip dough and quickly form into a floured ball of dough.  Try to touch the dough as little as possible to keep the butter from melting.  Wrap dough in plastic wrap and place in the freezer for 1 hour (or refrigerator for 4 hours to overnight).
  6. Place bread on a clean floured countertop and smack down a bit with your rolling pin.  Roll dough out to a 3:1 rectangle.  The length should be about 3 times the height.  Throughout the preparation process, if the butter peeks through, lightly dust the spot and continue.
  7. Fold dough into 1/3’s like a letter.  Fold left side over, then right side.  You should have 3 layers of dough.  We are creating the flaky layers of the pastry by repeating this step.
  8. Dust the top of dough with flour and flip over. 
  9. Roll dough out into a 3:1 rectangle again.  Fold dough into 1/3’s like a letter.  Fold left side over, then right side.  You should have 3 layers of dough again.  Repeat again so you have done this 3 times total (note if you used the ‘by hand’ method in the cook’s notes, this will only be done 1 time after it comes out of the freezer).
  10. Preheat oven to 400°F.  Prepare 2 baking sheets with parchment paper.
  11. Allow the dough to rest in the refrigerator while you prepare the topping ingredients.
  12. In a small bowl combine cooled melted butter and vanilla.  Whisk to combine well.  Set aside.  In another small bowl, combine cinnamon, sugar and salt. Set aside.
  13. Remove dough from fridge and place on a lightly dusted countertop.  Roll out to a 10”x12” rectangle.  Lightly dust with flour and flip dough.
  14. Brush 1/2 of butter mixture over the top of the dough, sprinkle 1/2 of the cinnamon sugar over the top of the dough. Spread cinnamon sugar over the tops using finger tips.  Flip dough and brush the second side with remaining butter mixture and sprinkle the remaining cinnamon sugar over top.  Using a pastry cutter, bench scraper or butter knife cut dough into strips.
  15. Cut dough in half long ways to make two 5”x12” pieces, then cut each piece into twelve 1”x5” strips.
  16. Place strips onto a baking sheet giving them 3 twists as you place them on the sheet.  Chill in the refrigerator for 30 minutes for best results, but if you can’t wait…  Pop them in the oven.
  17. Bake for 15-20 minutes until the dough is flaky and golden brown.
  18. In the meantime prepare frosting; add cream cheese and butter in a large mixing bowl.  Beat with an electric mixer until light and fluffy.  Add sugar, lemon juice, vanilla and salt.  Beat until mixture is light and fluffy, about 5 minutes.  Set aside. 
  19. Serve and enjoy!

  3. Add whisked egg and salt to yeast mixture. Mix with a wooden spoon.  Add flour 1 cup at a time until you are no longer able to mix with a spoon. Total of 3 cups will need to be added.
  4. Roll dough out to a 3:1 rectangle.  The length should be about 3 times the height.  Sprinkle the shredded butter over dough, gently press butter into dough and fold dough into 1/3’s like a letter.  Fold left side over, then right side.  You should have 3 layers of dough.
  5. Dust the top of dough with flour and flip over.  Roll dough out into a 3:1 rectangle again.  Fold dough into 1/3’s like a letter.  Fold left side over, then right side.  You should have 3 layers of dough again.  Wrap in plastic wrap and allow dough to chill in the freezer for 1 hour.  Continue with the remaining recipe.

Is anything better than a warm creamy bowl of soup on a cold winter day?! Sure this Panera Copycat Broccoli Cheese Soup has butter and cream but there are lots of veggies too!

Hello friends! It’s Melanie again from Garnish & Glaze. I'm originally from St. Louis where Panera Bread Company began. There, it's actually called St. Louis Bread Co. It was one of my very favorite places to eat growing up. My favorite thing to get was a "you pick two"- half a Frontega Chicken Sandwich and a side of broccoli cheese soup.

All you have to do for this soup is chop and cook up some onions, celery, broccoli, and carrots, add some cream and broth. At the end, just stir in some sharp cheddar cheese (extra sharp for a stronger flavor) and you’re done. Serve with some fresh crusty bread and you've got a delicious comforting meal.

HELPFUL TIPS TO MAKE PANERA COPYCAT BROCCOLI CHEEDDAR SOUP:

  • Cut the broccoli in small florets. This makes them easier to eat and faster to cook. 
  • Turn off the heat before adding the cheese. The soup was simmering so it was plenty hot to melt the cheese. Cooking the cheese too long creates a grainy soup.
  • Since this is a thick soup, it’s perfect for serving in a bread bowl. Plus, it’s adds an extra level of comfort.

WHAT YOU WILL NEED TO MAKE PANERA COPYCAT BROCCOLI CHEESE SOUP:

  • 4-quart Stock Pot- Great for soups, roasts, frying... I use this all the time.
  • Ladle- This is necessary for dishing up soup. Like, how can you even serve soup without one?
  • Cheese Grater- As much as I love buying shredded cheese because I'm lazy, fresh grated cheese melts down so much better and creates a smoother soup.

Panera Copycat Broccoli Cheddar Soup 
SERVES 6  |  PREP TIME 10 Min  |  COOK TIME  30 Min

2 tablespoons butter
1 stalk celery, diced
1/2 onion, diced
1/4 cup all-purpose flour
3 cups half-and-half cream
2 cups chicken broth
3 cups broccoli florets, chopped
1 cup carrots, shredded
2 cups extra sharp cheddar cheese, shredded
1/4 teaspoon nutmeg
1 teaspoon salt
1/2 teaspoon fresh cracked pepper

Melt butter in a large pot over medium heat. Add onions and celery and cook until tender. Mix in the flour and cook for 2-3 minutes while constantly stirring. Mix in the cream a little at a time and then add in the chicken broth. Bring to a simmer on low for 20 minutes.

Add the broccoli florets and simmer for 7 minutes and then add the carrots and continue to simmer for 3 more minutes. Turn off the heat and mix in the cheese and seasonings until melted and smooth.

Serve soup in a bread bowl or with a slice of crusty bread.

HELPFUL TIPS TO MAKE OLIVE GARDEN® COPYCAT ZUPPA TOSCANA:

  • I like to use Russet potatoes in this recipe.  They give it a nice flavor and create the perfect texture.
  • If you're not a fan of kale, you can substitute spinach in this recipe.
  • We like to cook our bacon in the oven to keep the bacon smell from getting all over the house, but the stove top works too!
  • Although the recipe calls for hot Italian sausage, you can cut down on the spice by using mild Italian sausage.
  • Thicker soups are preferred at our house, so I smash some of the potatoes before adding the kale.  If you like your soup to have a thinner texture, skip this step.

  • 4-quart Stock Pot- Great for soups, roasts, frying... I use this all the time.
  • Ladle- This is necessary for dishing up soup. Like, how can you even serve soup without one?
  • Cheese Grater- As much as I love buying shredded cheese because I'm lazy, fresh grated cheese melts down so much better and creates a smoother soup.

Olive Garden Copycat Zuppa Toscana

Olive Garden® Copycat Zuppa Toscana with sausage, potatoes and fresh kale in a perfectly seasoned rich and creamy broth makes this Tuscan-inspired soup a hit from the first bite. A simple recipe that is hearty and delicious, you can't go wrong with this one-pot meal!

Ingredients

  • 1 pound hot Italian sausage, casings removed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 3 large russet potatoes, peeled and diced
  • 1 bunch curly kale, leaves stripped and chopped
  • 3/4 cup heavy cream
  • 4 slices cooked bacon, chopped
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 cup freshly grated Parmesan or Romano cheese, for serving

Instructions

  1. In a large pot over medium-high heat, cook sausage until browned and no longer pink, 5 to 7 minutes. Break into smaller pieces with your spatula as you cook,  Transfer to a plate to drain.
  2. Add onion to pot and cook until soft, 5 minutes, then add minced garlic and cook until fragrant, about 1 minute more. Season to taste with salt and pepper. Add chicken broth and potatoes and cook until potatoes are tender, 23 to 25 minutes. Smash a few of the potatoes to create a creamy texture.
  3. Stir in kale and let cook until leaves are tender and bright green, 3 minutes, then stir in heavy cream, sausage, and bacon and simmer 5 minutes more.
  4. Garnish with Parmesan or Romano and serve.

Helpful Tips to make Copycat Outback Alice Springs Chicken:

  • Use a plastic Zip lock bag to marinade your chicken in. Doing this allows the chicken to be fully immersed in the honey mustard sauce and makes for easier cleanup, too.
  • Add a pinch of salt to the mushrooms while they are cooking. The salt not only seasons the mushrooms, but helps them release their moisture, which means a faster cooking time.
  • Use parchment paper to line your baking sheet. The sweet honey mustard sauce will run off the chicken and burn onto the baking sheet as it cooks. Lining it with parchment paper creates a non-stick surface for the chicken and makes cleanup a breeze! 

What you will need to make Copycat Outback Alice Springs Chicken:

  • Baking Sheets - Good, sturdy baking sheets will last for years and bake much more evenly than cheaply made ones.
  • Heavy-bottomed Skillet – Whether it’s stainless steel, cast iron, or non-stick, a good, heavy bottomed skillet will, just like the baking sheets, cook more evenly and allow you to get that nice, pretty sear on the chicken that adds a lot of flavor.
  • Cheese Grater – Hand grated cheese melts better than store-bought shredded cheese because it doesn’t have the added starches that prevent caking. I much prefer to grate my own cheese whenever possible and a good cheese grater makes the job a lot easier!

Outback Copycat Alice Springs Chicken

Outback Copycat Alice Springs Chicken is bursting with flavor and so easy to prepare! It is no wonder its one of the most popular menu items at Outback Steakhouse! Tender chicken, honey mustard sauce, sautéed mushrooms, bacon and Swiss cheese turn ordinary, plain chicken into a meal you’ll want again and again!
prep time: 1 hour 10 Min cook time: 35 minstotal time: 1 hours and 45 mins

Ingredients

  • 1/2 cup honey
  • 1/2 cup Dijon mustard
  • 3 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • salt and pepper
  • 4 boneless skinless chicken breast halves
  • 2 tablespoons olive oil
  • 6 slices bacon, cooked until crispy and cut in half
  • 2 cups button mushrooms
  • 1 tablespoon butter
  • 1 cup Monterrey Jack Cheese, grated
  • Fresh Parsley, chopped

Instructions

  1. Whisk together honey, Dijon mustard, mayonnaise, and lemon juice in a small bowl until smooth. Reserve ½ cup of sauce and set aside. Pour remaining honey mustard sauce into a gallon-sized Zip lock bag and add chicken. Marinade for 1 hour, up to 24 hours. 
  2. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  3. In a heavy-bottomed skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers. 
  4. Remove chicken from the marinade with tongs and place into hot skillet. Season each side with salt and pepper and cook until golden brown but not cooked through, working in batches as not to over-crowd the pan.
  5. Place browned chicken on prepared baking sheet. 
  6. In the same skillet, add butter and melt over medium heat. Stir in mushrooms and a pinch of salt, and cook until tender and starting to brown. Remove from heat. 
  7. Divide and spoon mushrooms over the chicken breasts, followed by 2 slices of bacon, and the Monterrey jack cheese. 
  8. Bake for 10-15 minutes or until the thickest part of the chicken reaches 165 degrees.
  9. Top with fresh parsley and serve with reserved honey mustard sauce for dipping.
