This amazingly simple casserole recipe starts with a scrumptious layer of left over buttery biscuits, it's filled with my favorite breakfast components and ends with a generous amount of ooey gooey cheese. It is a complete breakfast. Just add coffee or orange juice.

Breakfast casseroles have been a long time favorite in our house.  I love to make it the night before and just pop it in the oven that morning.  These come in extra handy on special occasion days; like Easter, Christmas, Mothers/Fathers Day.  Pretty much every morning that I don't want to spend a lot of time in the morning preparing food, a breakfast casserole comes in handy.

This casserole combined my favorite flavors and left over biscuits.  You know in a bread loving family there are bound to be biscuits laying around.  If you don't have biscuits, feel free to substitute Italian bread.

Layers of buttery biscuits, sausage, ham, red peppers and cheese (cheese and more cheese) come together with fluffy eggs to create the best ever overnight cheesy casserole.  Perfect for everyday and every holiday.  It doesn't get much better than that!

  • If you do not have left over biscuits, you can substitute 4 cups cubed Italian bread

    What you will need to make Overnight Cheesy Breakfast Casserole:

    • 9x13 Baking Dish- I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.
    • Mixing Bowl- I like a variety of mixing bowls and prep bowls and this set has them all.

    Overnight Cheesy Breakfast Casserole

    This amazingly simple casserole recipe starts with a scrumptious layer of left over buttery biscuits, it's filled with my favorite breakfast components and ends with a generous amount of ooey gooey cheese. It is a complete breakfast. Just add coffee or orange juice.

    Ingredients

    • 4 cups cubes left over biscuits
    • 1 pound sage breakfast sausage, cooked
    • 2 cups cubed ham
    • 1/2 red bell pepper, chopped
    • 1 cup shredded Parmesan cheese
    • 12 large eggs
    • 2 cups milk
    • 1 teaspoon black pepper
    • 1/2 teaspoon kosher salt
    • 8 ounces mild cheddar, shredded
    • butter to grease the baking dish
    • chopped scallions to garnish

    Instructions

    1. Butter a 9x13 or similar size baking pan.
    2. Evenly place biscuits in pan.  Add sausage, ham, peppers and Parmesan cheese in an even layer over the top.
    3. In a medium mixing bowl, combine eggs, milk, salt and pepper.  Beat with a fork until well combined.  Evenly pour over top of casserole.  Cover with aluminum foil and chill in the refrigerator overnight.
    4. Preheat oven to 350°F.
    5. Remove casserole from refrigerator and place cold covered casserole in preheated oven.  Bake for 45 minutes.  Remove aluminum foil. Scatter cheddar cheese over the top and bake for an additional 15-30 minutes until casserole is set.  *Doesn’t wiggle when the pan is giggled.
    6. Allow casserole to cool for 10 minutes before serving. Sprinkle with scallions.
    7.  Serve and enjoy!

    Chicken Tetrazzini

    Now that it’s officially comfort food season, there’s one dish our family always loves… and that’s this mushroom chicken tetrazzini.  Traditionally, or at least, how I’ve seen it frequently, this dish is made with spaghetti pasta.  My family prefers it with egg noodles, so that’s what I’ve made to share with you all today! 
     One of the things I love about this chicken tetrazzini is that it Chicken Tetrazzini

    If you’d prefer spaghetti, that’s something you can easily substitute. One of the things I love about this chicken tetrazzini is that it’s made from scratch!  No condensed soups whatsoever.  Nothing against those soups, but I find meals taste better when made with everyday, whole ingredients.

    Hi everyone, it's Amanda from The Chunky Chef.  I'm so excited to being joining as a monthly contributor!  Each month I'll be sharing mouthwatering family recipes, all positively loaded with bold flavors.  Great food doesn't have to be complicated!

    Perhaps the best part about this meal is that I typically use a shredded rotisserie chicken for this meal, but you can easily make this without that component.  Just cook 2 chicken breasts until golden brown and cooked through.  Remove from the pot and shred with two forks… voila!  Shredded chicken.  Then just use the same pot and start with the recipe as written… easy peasy!




    So what if your evening is incredibly packed and you just have NO time to prepare this meal?  Good news… this chicken tetrazzini can be prepared the night before!  Prepare as directed, but don’t bake, then cover and refrigerate overnight.  While the oven is preheating, let the pot sit out on the counter at room temperature, then bake according to the recipe.  I love meals like that… because we all know there are some nights that are crazy busy, but we still want a home cooked meal right?


    As the weather cools down, and your nights get busier, give this chicken tetrazzini a try… I’m sure you’ll enjoy it as much as my family does!

    HELPFUL TIPS TO MAKE CHICKEN TETRAZZINI:

    • I really like to use cremini (also called baby Portobello) mushrooms in this chicken tetrazzini, as they bring a much meaty, earthy flavor to the dish but you can substitute button mushroom if you prefer. 
    • To make using fresh chicken breasts, add a drizzle of olive oil to pot over MED heat.  Season chicken breasts with salt and pepper, to taste, and cook 5-6 minutes per side, until cooked through and golden.  Remove chicken from skillet and drain excess grease.  Shred chicken with two forks and set aside.  Preheat oven, add butter and cook recipe as directed, starting with step 2 above.
    • As an added bonus, the leftovers are fabulous… so lunch the next day is covered too!

    WHAT YOU WILL NEED TO MAKE CHICKEN TETRAZZINI:

    • 4 Qt Braising Pan - my go to pan for one-pot recipes and skillet meals. It is oven safe and so easy to clean up!
    • Wood turner - my most used spoon or spatula in my kitchen. It is amazing for sauteing vegetables. Browning meat and turning. A must have!

    Chicken Tetrazzini
    SERVES 8  |  ACTIVE TIME 20 Min  |  TOTAL TIME 55 Min

    1/2 cup butter, plus 1 tablespoon melted
    8 ounces sliced cremini mushrooms
    1 medium yellow onion, diced
    3-4 cloves garlic, minced
    1 tablespoon fresh thyme, minced (can substitute 1 tsp dried thyme leaves)
    1/2 teaspoon kosher salt
    1/4 teaspoon black pepper
    1/3 cup all-purpose flour
    3 cups chicken stock
    1 cup heavy cream
    16 ounces egg noodles, cooked according to package directions
    3 cups cooked, shredded chicken (or 2 large chicken breasts cooked and shredded – see recipe notes below)
    2 cups frozen peas
    1 1/2 cups shredded Parmesan cheese
    1/3 cup Panko breadcrumbs

    Preheat oven to 350°F.

    Heat a large cast iron (or other oven safe pot) skillet over medium heat. Add 1/2 cup of butter and cook until melted. Add mushrooms and onion. Cook, stirring occasionally, until tender, about 5-6 minutes.  Add garlic and cook for 1 minute.

    Stir in thyme, salt and pepper, then add flour, stirring to coat completely.

    Add chicken stock and cream, stirring frequently to remove any lumps. Cook, stirring often, about 8-10 minutes, or until thickened.

    Stir in cooked egg noodles, shredded chicken, peas and Parmesan cheese.

    In a small bowl, stir together melted butter and panko breadcrumbs, then sprinkle over the top of the dish.  Season with additional pepper if desired, then bake 35-45 minutes, until bubbly and golden brown.

    Helpful Tips to make Crockpot Beef Stroganoff:

    •   You can use regular egg noodles, or for a healthier version, whole wheat.
    •   To make the prep go even quicker, buy pre-cut mushrooms.
    •   If you need the recipe gluten free, substitute gluten-free noodles.
    •   Regular or light sour cream works in this recipe.
    •   This dish is even better the next day for lunch or leftover dinner!

    What you will need to make Crockpot Beef Stroganoff:

    • Slow Cooker - the slow cooker is almost my most used kitchen gadget, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
    • Beef Stock- this beef stock is a staple in my pantry! It is reduced sodium (47% less) with all the flavor.

    Crockpot Beef Stroganoff

    Crockpot Beef Stroganoff is an easy and delicious recipe. Hearty and flavorful with beef, mushrooms, onions and garlic that slow cooked all day long!!! It is an amazing crockpot version of the family favorite classic beef stroganoff.

    Ingredients

    • 1 1/2 pounds cut beef stew meat
    • 1 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 1 1/4 cups low-sodium beef broth
    • 2 cups (about 6 ounces) coarsely chopped white mushrooms
    • 1 medium onion, chopped
    • 3 tablespoons Worcestershire sauce
    • 2 garlic cloves, minced
    • 1 heaping tablespoon dijon mustard
    • 1 teaspoon dried parsley
    • 1/2 teaspoon dried thyme
    • 1 (12 ounce) package egg noodles
    • 1 cup sour cream (light or regular)

    Instructions

    1. Place beef in 6-quart crockpot, add salt and pepper. Then add beef broth, mushrooms, onion, Worcestershire sauce, garlic, Dijon mustard, parsley and thyme. Mix well.
    2. Cook on low 8-9 hours, or high 4-5 hours. I prefer cooking the beef on low to make sure it's nice and tender.
    3. Cook egg noodles according to the package directions.
    4. Add the cooked and drained noodles to the crockpot as well as sour cream. Mix well. Let simmer for another 15 minutes, stirring occasionally.

    With a picky family including a 4 year old; mac and cheese is a 5 star meal around here.  How can it not be?  There are so many possibilities.  We have come so far from the blue box.  I have had Philly Cheesesteaks on the brain and when dinner time came it was the perfect opportunity for a dinner fusion.


    This one skillet meal starts with pasta cooked in butter and milk to create a soft and tender macaroni.  Provolone and Parmesan cheeses give this sauce the perfect cheesy goodness and a full pound of ground beef  makes this the beefiest mac and cheese.  I love my cheesesteaks loaded with peppers so we added roasted red peppers and peperoncini to really pump up the flavor.

    Chad and I both are nuts for this recipe.  It goes from start to finish in just 25 minutes and all in one pot.  It is certain to be on our table again.

      Philly Cheesesteak Mac and Cheese

      In just 25 minutes you can be devouring this incredible one pot recipe. If you like Philly cheesesteaks you are going to go nuts over this cheesy Philly Cheesesteak Mac and Cheese, loaded with roast beef, cheese and pasta.

      Ingredients

      • 1/4 cup (4 Tbsp) unsalted butter
      • 1/2 teaspoon kosher salt
      • 1/2 teaspoon fresh ground black pepper
      • 3 1/2 cups + 2 Tbsp whole milk (divided)
      • 8 ounces dried elbow pasta
      • 1 pound thick cut deli roast beef, chopped
      • 12 ounces provolone cheese, shredded (divided)
      • 4 ounces Parmesan cheese, shredded
      • 2 tablespoons all-purpose flour
      Optional
      • 1 (12 ounce jar) roasted red peppers, drained and chopped
      • 1/2 cup chopped peperoncini or sliced banana peppers
      • caramelized onions
      • fresh parsley, chopped (garnish)

      Instructions

      1. In a large skillet over medium high; add butter, salt and pepper. Stir to combine. Add 3 1/2 cups of milk, then cover.
      2. Once milk starts bubbling add pasta. Allow to bubble for 4-5 minutes, until pasta is almost cooked though, stirring occasionally.
      3. Meanwhile, chop peppers into bite size pieces.  Set aside.  Chop beef into bite size pieces.  Set aside.
      4. Add beef to skillet and stir to combine. Allow to bubble for 2 minutes.
      5. Meanwhile in a resealable jar create slurry; combine 2 tablespoons milk and 2 Tablespoons flour. Shake until well combined. Set aside.
      6. Preheat oven to broil (broil-high).
      7. Stir 8 ounces provolone cheese and Parmesan cheese into skillet. Add slurry. Stir to combine. Add peppers (optional).  Stir to combine.  If mac and cheese is too thick, add a splash of milk and stir, repeat until it is loosened up.  *cheese sauce with thicken as it cools
      8. Sprinkle with remaining 4 ounces of cheese. Place under broiler for 2-3 minutes until cheese is melted and golden browned.  Top with fresh parsley.
      9. Serve and enjoy!

      Maid-Rite Copycat (Loose Meat Sandwiches) + VIDEO

      The classic Maid-Rite is a loose meat sandwich made with perfectly seasoned, tender slow-cooked ground beef served on a warm slightly sweetened bun. We have tried to replicate it for years and at long last, we have the perfect crock pot recipe and it is one to keep! If you have never tried one, run (do not walk) to your kitchen and make this!

      A few years ago Chad and I traveled to Iowa for his high school reunion.  It was a much anticipated trip.

      I have wanted to see Iowa for years, not just for the corn (although I would fly out just for that).  Ever since I first met him he had spoke of his favorite places in Cedar Rapids, so we had a long list of things to see and do.  Visiting a Maid-Rite restaurant was at the top of the list.

      I remember hearing all about Maid-Rite's in just about every conversation about Iowa for as long as I have know him.

      Interestingly, Maid-Rite has been an Iowa tradition since 1926 (and a mid-west staple for many years).  A Maid-Rite is a loose meat sandwich made with perfectly seasoned tender slow cooked ground beef served on a warm bun.

      First of all, it is definitely NOT a sloppy joe.  It is an unformed burger, featuring beef slow cooked in seasoning liquid leaving you with the most tender seasoned beef.

      Simply served on a warm slightly sweet bun.  It is the most spectacular simple sandwich you will ever sink your teeth into.  Truth be told, I didn't 'get it' until I had my first sandwich.

      Many family members have tried to replicate the magic that is the Maid-Rite.  Many have failed.

      My father-in-law like the rest of Chad's family, grew up on Maid-Rite's Loose Meat Sandwiches and a few months back he informed my husband that at long last, he had a recipe that was the best Maid-Rite he had ever eaten, perhaps better than the original.

      I was so excited to get to work on the recipe. A few tweaks here and there and Chad was over the moon!  SCORE.  The sandwich starts with lean ground beef, slow cooked in a mixture of onion, beef and chicken broth with vinegar, brown sugar and a hand full of other flavorful ingredients that are cooked in a crock pot, tenderizing the meat and infusing the flavors from the broth right into the beef.

      Scoop your beef onto a warm bun and you have a Maid-Rite even better that the original.  Customize your sandwich by choosing your toppings.  I am a cheese gal, so I love cheddar cheese, onion, pickle and ketchup on mine. I realize that ketchup was not traditionally served with a Maid-Rite until recently, but I am a rebel like that!

      Use you imagination and custom create your own favorite!  Maid-Rite's and sweet corn are the plan for our party.  Perfect combo.

      Helpful Tips to make Maid-Rite Copycat:

      • Maid Rite is traditionally served with mustard, but I am not one to follow the pack. Try it with ketchup and pickles or your favorite topping.

        Maid-Rite Copycat Recipe

        The classic Maid-Rite is a loose meat sandwich made with perfectly seasoned, tender slow-cooked ground beef served on a warm slightly sweetened bun. We have tried to replicate it for years and at long last, we have the perfect crock pot recipe and it is one to keep! If you have never tried one, run (do not walk) to your kitchen and make this!
        prep time: 10 minscook time: 4 hourtotal time: 4 hours and 10 mins

        Ingredients

        • 1 cup warm water
        • 1 tablespoon dried minced onion
        • 1 teaspoon low sodium beef base (or a bouillon cube)
        • 1 teaspoon low sodium chicken base (or a bouillon cube)
        • 2 tablespoons packed light brown sugar
        • 2 tablespoons apple cider vinegar
        • 1 tablespoon low sodium soy sauce
        • 2 tablespoons Worcestershire sauce
        • 3 pounds lean ground beef, uncooked
        • 8 hamburger buns
        • Optional toppings:  cheese, ketchup, pickles, onions, mustard

        Instructions

        1. Set slow cooker to high.  Add all ingredients (except beef).  Stir to combine. Add beef and stir until all combined and beef is completely coated.
        2. Cover and cook for 1 hour.  Stir occasionally to break up ground beef.  Uncover after 1 hour of cook time.  Continue cooking on high for 2 ½ - 3 hours (with the lid off), until most of the liquid has cooked off.  Continue to stir occasionally and break up any chunks of beef.
        3. Using a slotted spoon, serve a heaping spoonful on a warm bun and load it up with your favorite toppings.  We love cheese, ketchup and pickles!
        4. Serve and enjoy!

        At long last, Chad finally gets his favorite meal.  Yes, I know how shocking it is that out of all the fabulous Italian food and flavors that I provide him, he is still a Midwest meat and potatoes man. 

        No matter what I do, that is who he is. Meat and potatoes with a side of corn on the cob and he is surely in heaven!!!

        Not to mention, this classic meatloaf makes for the best meat loaf sandwiches I have ever eaten.

        Tips for making the best meatloaf ever


        I have been making this recipe for well over 10 years now. I love that it has a little Italian flair.

        Also, it's freezer-friendly! I bake one and portion it out, freeze it and pull it out as we want to eat it... Which is pretty often.

        I have a few tips for you:
        • Don't skip the balsamic glaze recipe!
        The magic ingredient: Balsamic vinegar!  The balsamic vinegar glaze on top consists of ketchup (I know, but it is delicious), balsamic vinegar and brown sugar.
        • Uncover for better flavor
        Remove the cover from the loaf pan during the final 15 minutes of cook time. As a result, the glaze will caramelize and give more flavor to the meal!

        I have to say I love my Mom's meatloaf, but this is miles away from her recipe (sorry Mom).

        Serving Suggestions

        Munchkin loves this meal too, but likes the meatloaf mixed with mashed potatoes.

        Chad likes it with a side of Spicy Baked Brown Rice.

        I like it straight out of the pan, served with a baked potato or rice, with a vegetable and especially served cold on some delicious Milk and Honey White Bread.

        Tonight we ate it with a side of green beans with garlic olive oil and it was perfect.

        Chad of course had his with rice.  You didn't think he ate green beans, did you?

        • 9x13 Baking Dish - I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.
        • Mixing Bowls - I like a variety of mixing bowls and prep bowls and this set has them all.

        Best Meatloaf Ever with Balsamic Glaze

        Best Meatloaf Ever with Balsamic Glaze is amazing comfort food! Moist and delicious, this recipe comes together quickly and freezes perfectly.

        prep time: 5 minscook time: 50 minstotal time: 55 mins

        Ingredients

        • 1 pound lean ground beef
        • 1 cup Italian bread crumbs
        • 1/2 cup whole milk
        • 4 tablespoons ketchup, divided
        • 1 1/2 tablespoons balsamic vinegar, divided
        • 1/4 teaspoon nutmeg
        • 1/4 teaspoon fresh ground pepper
        • 1/2 teaspoon salt
        • 1/2 teaspoon onion powder
        • 1 large egg
        • 1/2 tablespoon brown sugar

        Instructions

        1. Preheat oven to 350°F.
        2. In a large bowl add beef, bread crumbs and milk.  Pour the milk directly over the bread crumbs.  Add 2 tablespoons ketchup, 1 tablespoon balsamic vinegar, nutmeg, pepper, salt and onion powder. Set aside.
        3. In a small bowl, crack egg and beat it slightly.  This helps prevent overworking the meat while combining.  Add egg to the meat mixture.  Combine well with hands, do not overwork the meat mixture.
        4. Form meatloaf in bowl, into a loaf form and then transfer to a roasting pan (I use glass).  Free form into a loaf shape.  You may notice cracks in the loaf.  Run your hands under warm water and then across the meatloaf to smooth the cracks out.  Set meatloaf aside.
        5. In a small bowl combine 2 tablespoons ketchup, 1/2 tablespoon balsamic vinegar and 1/2 tablespoon brown sugar.  Mix well with a fork. 
        6. Apply glaze evenly to the top of your meatloaf.
        7. Cover pan with aluminum foil.  Place meatloaf in the oven and bake for 35-40 minutes.  Sides should be lightly browned when ready to uncover foil.
        8. Remove foil and bake for an additional 15 minutes.  Remove from oven.  Allow to rest uncovered for 10 minutes.  Slice and serve with your favorite sides!
