Chicken Tetrazzini

Now that it’s officially comfort food season, there’s one dish our family always loves… and that’s this mushroom chicken tetrazzini.  Traditionally, or at least, how I’ve seen it frequently, this dish is made with spaghetti pasta.  My family prefers it with egg noodles, so that’s what I’ve made to share with you all today!

If you’d prefer spaghetti, that’s something you can easily substitute. One of the things I love about this chicken tetrazzini is that it’s made from scratch!  No condensed soups whatsoever.  Nothing against those soups, but I find meals taste better when made with everyday, whole ingredients.

Hi everyone, it's Amanda from The Chunky Chef.  I'm so excited to being joining as a monthly contributor!  Each month I'll be sharing mouthwatering family recipes, all positively loaded with bold flavors.  Great food doesn't have to be complicated!

Perhaps the best part about this meal is that I typically use a shredded rotisserie chicken for this meal, but you can easily make this without that component.  Just cook 2 chicken breasts until golden brown and cooked through.  Remove from the pot and shred with two forks… voila!  Shredded chicken.  Then just use the same pot and start with the recipe as written… easy peasy!




So what if your evening is incredibly packed and you just have NO time to prepare this meal?  Good news… this chicken tetrazzini can be prepared the night before!  Prepare as directed, but don’t bake, then cover and refrigerate overnight.  While the oven is preheating, let the pot sit out on the counter at room temperature, then bake according to the recipe.  I love meals like that… because we all know there are some nights that are crazy busy, but we still want a home cooked meal right?


As the weather cools down, and your nights get busier, give this chicken tetrazzini a try… I’m sure you’ll enjoy it as much as my family does!

HELPFUL TIPS TO MAKE CHICKEN TETRAZZINI:

  • I really like to use cremini (also called baby Portobello) mushrooms in this chicken tetrazzini, as they bring a much meaty, earthy flavor to the dish but you can substitute button mushroom if you prefer. 
  • To make using fresh chicken breasts, add a drizzle of olive oil to pot over MED heat.  Season chicken breasts with salt and pepper, to taste, and cook 5-6 minutes per side, until cooked through and golden.  Remove chicken from skillet and drain excess grease.  Shred chicken with two forks and set aside.  Preheat oven, add butter and cook recipe as directed, starting with step 2 above.
  • As an added bonus, the leftovers are fabulous… so lunch the next day is covered too!

WHAT YOU WILL NEED TO MAKE CHICKEN TETRAZZINI:

  • 4 Qt Braising Pan - my go to pan for one-pot recipes and skillet meals. It is oven safe and so easy to clean up!
  • Wood turner - my most used spoon or spatula in my kitchen. It is amazing for sauteing vegetables. Browning meat and turning. A must have!

Toss it all in a pot and let it go.  It's so easy, that it just about cooks itself.  Now that's my kind of meal!

Chicken Tetrazzini
SERVES 8  |  ACTIVE TIME 20 Min  |  TOTAL TIME 55 Min

1/2 cup butter, plus 1 tablespoon melted
8 ounces sliced cremini mushrooms
1 medium yellow onion, diced
3-4 cloves garlic, minced
1 tablespoon fresh thyme, minced (can substitute 1 tsp dried thyme leaves)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/3 cup all-purpose flour
3 cups chicken stock
1 cup heavy cream
16 ounces egg noodles, cooked according to package directions
3 cups cooked, shredded chicken (or 2 large chicken breasts cooked and shredded – see recipe notes below)
2 cups frozen peas
1 1/2 cups shredded Parmesan cheese
1/3 cup Panko breadcrumbs

Preheat oven to 350°F.

Heat a large cast iron (or other oven safe pot) skillet over medium heat. Add 1/2 cup of butter and cook until melted. Add mushrooms and onion. Cook, stirring occasionally, until tender, about 5-6 minutes.  Add garlic and cook for 1 minute.

Stir in thyme, salt and pepper, then add flour, stirring to coat completely.

Add chicken stock and cream, stirring frequently to remove any lumps. Cook, stirring often, about 8-10 minutes, or until thickened.

Stir in cooked egg noodles, shredded chicken, peas and Parmesan cheese.

In a small bowl, stir together melted butter and panko breadcrumbs, then sprinkle over the top of the dish.  Season with additional pepper if desired, then bake 35-45 minutes, until bubbly and golden brown.

With a picky family including a 4 year old; mac and cheese is a 5 star meal around here.  How can it not be?  There are so many possibilities.  We have come so far from the blue box.  I have had Philly Cheesesteaks on the brain and when dinner time came it was the perfect opportunity for a dinner fusion.


This one skillet meal starts with pasta cooked in butter and milk to create a soft and tender macaroni.  Provolone and Parmesan cheeses give this sauce the perfect cheesy goodness and a full pound of ground beef  makes this the beefiest mac and cheese.  I love my cheesesteaks loaded with peppers so we added roasted red peppers and peperoncini to really pump up the flavor.

Chad and I both are nuts for this recipe.  It goes from start to finish in just 25 minutes and all in one pot.  It is certain to be on our table again.

  • If you prefer caramelized onions, add 1 large sliced onion and 2 tablespoons olive oil to a skillet over medium heat and cook until caramelized, stirring occasionally. Cook time approximately 30-40 minutes.

    • A large skillet  – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.

    Philly Cheesesteak Mac and Cheese

    In just 25 minutes you can be devouring this incredible one pot recipe. If you like Philly cheesesteaks you are going to go nuts over this cheesy Philly Cheesesteak Mac and Cheese, loaded with roast beef, cheese and pasta.

    Ingredients

    • 1/4 cup (4 Tbsp) unsalted butter
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon fresh ground black pepper
    • 3 1/2 cups + 2 Tbsp whole milk (divided)
    • 8 ounces dried elbow pasta
    • 1 pound thick cut deli roast beef, chopped
    • 12 ounces provolone cheese, shredded (divided)
    • 4 ounces Parmesan cheese, shredded
    • 2 tablespoons all-purpose flour
    Optional
    • 1 (12 ounce jar) roasted red peppers, drained and chopped
    • 1/2 cup chopped peperoncini or sliced banana peppers
    • caramelized onions
    • fresh parsley, chopped (garnish)

    Instructions

    1. In a large skillet over medium high; add butter, salt and pepper. Stir to combine. Add 3 1/2 cups of milk, then cover.
    2. Once milk starts bubbling add pasta. Allow to bubble for 4-5 minutes, until pasta is almost cooked though, stirring occasionally.
    3. Meanwhile, chop peppers into bite size pieces.  Set aside.  Chop beef into bite size pieces.  Set aside.
    4. Add beef to skillet and stir to combine. Allow to bubble for 2 minutes.
    5. Meanwhile in a resealable jar create slurry; combine 2 tablespoons milk and 2 Tablespoons flour. Shake until well combined. Set aside.
    6. Preheat oven to broil (broil-high).
    7. Stir 8 ounces provolone cheese and Parmesan cheese into skillet. Add slurry. Stir to combine. Add peppers (optional).  Stir to combine.  If mac and cheese is too thick, add a splash of milk and stir, repeat until it is loosened up.  *cheese sauce with thicken as it cools
    8. Sprinkle with remaining 4 ounces of cheese. Place under broiler for 2-3 minutes until cheese is melted and golden browned.  Top with fresh parsley.
    9. Serve and enjoy!

    Helpful Tips to make Ranch Baked Pork Chops:

    • If you don’t have time to make homemade ranch seasoning mix you can use 2 packets of ranch dressing mix.
    • You can find the dry buttermilk powder for the ranch seasoning mix in the baking section of your grocery store near the evaporated milk. 
    • Save yourself a little clean-up time and line your baking sheet with aluminum foil before baking your pork chops.
    • The thickness of your pork chops will affect the baking time. Use a meat thermometer to ensure your baked pork chops are fully cooked. Pork chops are done when they reach and internal temperature of 145 degrees F. 

    What you will need to make Ranch Baked Pork Chops:

    • Baking SheetA good quality baking sheet is important when you are cooking at high temperatures. 
    • Meat Thermometer – I can’t live without my meat thermometer. It takes the guess work out of cooking meat to the perfect temperature.
    • Dry Buttermilk Powder – Just in case you can’t find it at your local grocery store!

    Ranch Baked Pork Chops

    Ingredients

    • 4 boneless pork chops (thick cut 1")
    • 1/4 cup dry buttermilk powder 
    • 2 teaspoons dried parsley
    • 2 teaspoons garlic powder
    • 2 teaspoons paprika
    • 1 teaspoon dried dill weed
    • 1 teaspoon dried minced onions
    • 1 teaspoon sea salt
    • 1/2 teaspoon dried chives
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon ground black pepper
    • Scallions, sliced (optional garnish)

    Instructions

    1. Preheat oven to 400 degrees F. 
    2. Combine the dry ingredients in a bowl and mix thoroughly to make your ranch seasoning.
    3. Dip each pork chop in the ranch seasoning turning it over until it is fully coated. Shake off excess before placing on a baking sheet. 
    4. Place pork chops in the oven and bake for 15 - 25 minutes. The pork chop is done when it reaches an internal temperature of 145 degrees F.
    5. Let pork chops rest for 5 minutes before serving.  Sprinkle scallions over top and enjoy!

    It’s hard to go wrong with a cheesy pasta dish, but when you add savory ground beef and some simple herbs and spices? Now you’ve got an easy dinner that’s sure to be a hit.

    And if that wasn’t enough, this cheeseburger macaroni is made in one pan in about 20 minutes.
    Easy and delicious? Talk about a win-win!

    One pot recipes really are a thing of magic, but the process is simple enough. Use the right ingredients in the right order and you’ll only need to wash one pan when you’re done.
    • Step 1 – Cook and crumble the ground beef in a large skillet. You can use olive oil and season with minced garlic if you’d like.
    • Step 2 – Add your spices and mix them in with the cooked meat. For this recipe, it has Dijon mustard, Worcestershire sauce, onion powder, and a pinch of salt and pepper to taste.
    • Step 3 – Add the liquid (typically chicken broth or water) and uncooked pasta (this recipe uses elbow pasta).
    • Step 4 – Bring to a boil, then cover the skillet and cook until pasta is tender, typically 10-15 minutes.
    • Step 5 – Mix in cheeses and any other additions you’d like. Cover the pot again and let the cheese melt for 2-4 minutes.
    • Step 6 – Serve and enjoy!

    Helpful Tips to make One-Pot Cheeseburger Macaroni :

    • I like to add canned tomatoes for a more authentic “cheeseburger” experience, but you can get creative with this step. I used canned tomatoes, but feel free to use your favorite fresh tomatoes. You could also use any other type of canned tomatoes (like salsa or tomatoes with green chilies) to add a bit more flavor.
    • This recipe calls for cheddar cheese, but feel free to use any type of cheese that you like! Try Mexican blend or American cheese.

    • A large skillet with a lidTo help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.

    Ingredients

    • 1 tablespoon olive oil
    • 1 tablespoon minced garlic

    • 1 tablespoon Dijon mustard
    • 1 teaspoon Worcestershire sauce
    • 1 teaspoon onion powder
    • 1 pinch salt, to taste
    • 1 pinch black pepper, to taste
    • 1 cup chicken broth
    • 8 ounces uncooked cellentani pasta (or elbows)
    • 2 cup shredded cheddar cheese
    • 16 oz diced tomatoes, drained (optional)
    • parsley, for garnish (optional)

    Instructions

    1. In a large skillet over medium heat, warm olive oil. Add garlic and cook until golden brown and fragrant, about 1-2 minutes.
    2. Add ground beef to skillet and cook and crumble until browned, about 5-8 minutes. If necessary, drain any excess grease from the pan.
    3. Add Dijon mustard, Worcestershire sauce, onion powder, salt, and pepper to ground beef, then quickly stir to coat the ground beef.
    4. Pour in chicken broth and elbow pasta to skillet, then stir. Bring mixture to a boil, cover, and allow to cook until pasta is tender, about 10 to 15 minutes.
    5. Remove saucepan from heat. Lift lid and add cheddar cheese and diced tomatoes, then stir to mix. Return lid and let cheeseburger macaroni sit for 2-4 minutes or until cheese has melted.
    6. Serve cheeseburger macaroni immediately with chopped parsley as garnish.

It's the spices that make these meatballs so different. Nutmeg and allspice are used to give the meatballs a sweet, spicy taste that sets them apart from your classic Italian meatball. To cook the meatballs you pan fry them until they are perfectly browned and cooked through. Then they go into that rich creamy sauce.

    Oh that sauce! It's what dreams are made of. This creamy brown sauce is similar to gravy. Beef broth is added to a roux and whisked slowly until it because a smooth sauce. Then you add a bit of Worcestershire to give it some added flavor, and heavy cream to turn it into a luscious, rich, sauce that you're going to want to put on everything. Add your meatballs to it and let them cook in the sauce for a few minutes and you're ready to serve. I suggest serving them over egg noodles or mashed potatoes. Yum!

    HELPFUL TIPS TO MAKE CREAMY SWEDISH MEATBALLS:

    • I highly recommend using a mixture of pork and beef for the meatballs but you can substitute with all beef if you prefer.
    • The size of the meatball will affect how long you need to cook it so make sure you test one to ensure they are fully cooked.
    • Don't have beef broth? You can substitute chicken broth in the sauce.

    WHAT YOU WILL NEED TO MAKE CREAMY SWEDISH MEATBALLS:

    • Large skillet with a lid- I would suggest at least a 12-inch skillet for this recipe!
    • Whisk - Use a whisk to keep your sauce smooth and creamy.

    Creamy Swedish Meatballs

    Creamy Swedish Meatballs are a traditional Swedish dish with perfectly browned, flavorful homemade meatballs coated in a rich cream sauce. These are truly the best Swedish Meatballs Ever. Move over IKEA!

    Ingredients

    • 8 ounces ground pork
    • 8 ounces ground beef
    • 1 medium yellow onion, finely diced
    • 1 large egg
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/4 cup breadcrumbs
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground allspice
    • 2 tablespoons fresh parsley, finely chopped
    • 3 tablespoons butter
    Sauce
    • 3 tablespoons butter
    • 1/4 cup all-purpose flour
    • 3 cups beef broth
    • 2 teaspoons Worcestershire sauce
    • 1/4 cup heavy cream

    Instructions

    1. In a large bowl combine ground pork, ground beef, onion, egg, salt, pepper, breadcrumbs, nutmeg, allspice, and parsley. Mix the ingredients thoroughly then roll into 1 1/2 inch balls.
    2. Place butter in a large skillet and, working in batches, begin frying the meatballs, cooking them on all sides until they are perfectly browned and cooked through, about 10 minutes.
    3. Once meatballs are cooked set them to the side and begin making your sauce. Add butter to the skillet and once it is melted add the flour whisking quickly and forming a roux. Cook for 1-2 minutes or until it begins to turn a golden color.
    4. Slowly add beef broth whisking the whole time to keep it from getting lumpy. Once all of the broth has been added cook for 5-7 minutes or until the sauce begins to thicken.
    5. Add Worcestershire and heavy cream and continue cooking until the sauce is thickened enough to coat the back of a spoon.
    6. Add the meatballs to the sauce and cook them together for about 5 minutes.
    7. Serve over egg noodles or mashed potatoes.

    COOK'S NOTES

    1. If your skillet has too many burned bits after you finish cooking the meatballs you can wash it out before starting your sauce.
