Cheesy Sausage Jalapeno Popper Empanadas

Cheesy Sausage Jalapeno Popper Empanadas are the perfect portable Brinner. This simple recipe is a fusion of your favorite appetizer (jalapeno poppers) in a fun empanada. It is stuffed with 2 ooey gooey melty cheeses, jalapenos and sausage!



We are so excited to be partnering with our friends at Jones Dairy Farm to bring you a scrumptious breakfast or brunch recipe perfect for the holidays with family and friends, starring one of my favorite ingredients: Fully Cooked Chicken Sausage Patties!!! My freezer is loaded with these sausage patties, and I love to add these to my breakfast, but when I am thinking about Brinner (breakfast for dinner), these are absolutely perfect to make quick work of prep.



These Cheesy Sausage Jalapeno Popper Empanadas start with frozen puff pastry and fully cooked chicken sausage (yes that simple). The puff pastry is rolled out and loaded up with your favorite jalapeno popper fixings (cheese, sausage, and jalapeno). Then you fold it over and crimp the edges to seal the empanadas and bake it in the oven.

I fell in love with creating recipes that I stuff different ingredients into dough or pastry. Much like the Cheesy Bacon and Eggs Breakfast Bombs that everyone goes nuts over. This is truly an extension of that love. And you are going to love love love these!

They are perfect for breakfast, lunch or Brinner. Brinner is my favorite meal, and I can remember as far back as 6 or 7-years-old when my mom would tell me that we were having breakfast for dinner I would flip with excitement. Brinner. Breakfast for dinner. YES! I am still a huge fan, and my daughter who is now 7-years-old has the same excitement as I do. Between the two of us, it's a wonder that we will ever eat a regular dinner again. Brinner rules!

Cheesy Sausage Jalapeno Popper Empanadas
SERVES 8 | ACTIVE TIME 15 Min |TOTAL TIME 35 Min
8 ounces cream cheese, softened
1 (5-ounce) package Jones Dairy Farm Fully Cooked Chicken Sausage Patties, diced
1 medium jalapeno, diced
1 large egg, beaten
1 package of puff pastry (2 sheets)
8 ounces Colby Jack cheese, shredded
kosher salt, for sprinkling
cilantro, chopped

Preheat oven to 425°F. Line a baking sheet with aluminum foil and spray with non-stick spray. Set aside.

In a medium bowl combine cream cheese, sausage, and diced jalapeno. Mix until well combined. Set aside. In a small bowl combine 1 egg and a tablespoon of water. Whisk until well combined. Set aside.

Lay 1 sheet of puff pastry on a floured counter top and gently roll it out to about 8 by 8 inches. Use a 4-inch cookie cutter or bowl to cut the pastry into 4-inch rounds. Place the rounds on the baking sheet. Repeat with the second sheet.

Add a scoop of sausage and cheese mixture to the center of the puff pastry and top with Colby Jack cheese, leaving a 1/2-inch border. Pull the sides together to create a half circle and press the edges together to seal, pushing in any escapees that are on the edges.

Use two fingers to create a ruffle crimp around the edges or use a fork to crimp closed. Brush the tops of the empanadas with egg wash and sprinkle with salt.

Bake for 20 to 25 minutes, or until golden brown. Sprinkle with chopped cilantro.

Serve and enjoy!

Most mornings around here start with their Jones Dairy Farm fully cooked breakfast links. I especially love their chicken sausage links for my quick and easy make ahead breakfast. I make up a weeks worth of scrambled eggs with sausage and cheese in little bowls that I can quickly heat up and eat. I know I have mentioned that I am not much of a morning person. I mean I want to be, but I am pretty much a zombie in the morning.

That is where easy breakfasts come in. I know you all loved Cheesy Bacon and Egg Breakfast Bombs so much. So I decided to share another scrumptious breakfast bombs creation with you. Being it's National Frozen Food Month and all, my shortcut using frozen dinner rolls work out perfect here. If you prefer homemade though you can check out the Jalapeno Popper Cheesy Pretzel Bombs and use the dough recipe from that one.



Being I always have Jones Dairy Farm All Natural Fully Cooked Sausage in my freezer, I figured what could be an easier breakfast that to make a scrumptious Garlic Parmesan Cheesy Sausage Bomb?



They start with frozen dinner rolls (yes that simple). The bread roll is rolled out and stuffed with huge chunks of mozzarella cheese and scrumptious bite-size pieces of sausage! Then you wrap it up like a little package, top it with garlic butter and Parmesan cheese and bake it in the oven (or pop it in the fridge until morning). And you can customize these to make them whatever you like. They are your favorite breakfast items rolled into one scrumptious, portable taste sensation!

Garlic Parmesan Cheesy Sausage Bombs

Garlic Parmesan Cheesy Sausage Bombs are soft and tender portable poppers, loaded with ooey gooey mozzarella cheese and scrumptious bites of sausage. Topped with garlic butter and Parmesan cheese breakfast with a simple recipe doesn't get much better than this!
prep time: 20 Mcook time: 15 Mtotal time: 35 M

Ingredients

  • 2 tablespoons all-purpose flour
  • 12 frozen white dinner roll dough balls
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • 12 ounces mozzarella cheese, cut into 12 (1-ounce) pieces
  • 1 (7 ounce) package Jones Dairy Farm Mild Pork Breakfast Sausage Links, chopped into bite size pieces
  • 2 tablespoons fresh shredded Parmesan cheese
  • 1 teaspoon dried parsley

Instructions

How to cook Garlic Parmesan Cheesy Sausage Bombs

  1. Preheat the oven to 425°F. Move the oven rack to the center. Lightly flour the counter top.
  2. Place 12 dinner rolls on a microwave safe plate and microwave on defrost for about 2 minutes (or until dough is no longer frozen, but not cooked).
  3. Meanwhile cut the cheese into 12 (1-ounce) pieces and chop the sausage into bite size pieces. Prepare a baking sheet with a silicone baking mat or parchment paper.
  4. In a small bowl melt the butter and add the salt and the garlic powder. Stir the mixture until the it is combined. Set aside.
  5. Toss 1 dough ball in the flour and flatten and stretch it like you are making a mini pizza. Stretch the dough to about 3” across. Add 1 cube of cheese and a 2 tablespoons of chopped sausage to the center of the dough. Pull the edges of the dough together to create a ball. If the ball won’t seal, tap your finger tips into the flour and crimp the seal together.
  6. Place the bombs on the baking sheet, crimped side down. Repeat until they are all on the baking sheet. Brush the bombs with about 1/2 of the butter and then sprinkle with the Parmesan cheese.
  7. Bake the bombs for 12-15 minutes until the tops are golden brown and the bombs are no longer doughy.
  8. Meanwhile, add the parsley to the remaining butter.
  9. Remove the tray from oven and brush them with the remaining butter.Place them on a serving tray. Serve with marinara or alone. Enjoy!

Breakfast casseroles have been a long time favorite in our house.  I love to make it the night before and just pop it in the oven that morning.  These come in extra handy on special occasion days; like Easter, Christmas, Mothers/Fathers Day.  Pretty much every morning that I don't want to spend a lot of time in the morning preparing food, a breakfast casserole comes in handy.

This casserole combined my favorite flavors and left over biscuits.  You know in a bread loving family there are bound to be biscuits laying around.  If you don't have biscuits, feel free to substitute Italian bread.

Layers of buttery biscuits, sausage, ham, red peppers and cheese (cheese and more cheese) come together with fluffy eggs to create the best ever overnight cheesy casserole.  Perfect for everyday and every holiday.  It doesn't get much better than that!

  • If you do not have left over biscuits, you can substitute 4 cups cubed Italian bread

    Overnight Cheesy Breakfast Casserole

    This amazingly simple casserole recipe starts with a scrumptious layer of left over buttery biscuits, it's filled with my favorite breakfast components and ends with a generous amount of ooey gooey cheese. It is a complete breakfast. Just add coffee or orange juice.

    Ingredients

    • 4 cups cubes left over biscuits
    • 1 pound sage breakfast sausage, cooked
    • 2 cups cubed ham
    • 1/2 red bell pepper, chopped
    • 1 cup shredded Parmesan cheese
    • 12 large eggs
    • 2 cups milk
    • 1 teaspoon black pepper
    • 1/2 teaspoon kosher salt
    • 8 ounces mild cheddar, shredded
    • butter to grease the baking dish
    • chopped scallions to garnish

    Instructions

    1. Butter a 9x13 or similar size baking pan.
    2. Evenly place biscuits in pan.  Add sausage, ham, peppers and Parmesan cheese in an even layer over the top.
    3. In a medium mixing bowl, combine eggs, milk, salt and pepper.  Beat with a fork until well combined.  Evenly pour over top of casserole.  Cover with aluminum foil and chill in the refrigerator overnight.
    4. Preheat oven to 350°F.
    5. Remove casserole from refrigerator and place cold covered casserole in preheated oven.  Bake for 45 minutes.  Remove aluminum foil. Scatter cheddar cheese over the top and bake for an additional 15-30 minutes until casserole is set.  *Doesn’t wiggle when the pan is giggled.
    6. Allow casserole to cool for 10 minutes before serving. Sprinkle with scallions.
    7.  Serve and enjoy!

      Sugar Cookie French Toast Casserole

      Sugar Cookie French Toast Casserole is a simple recipe that comes together in just 5 minutes and is ready to eat in 30 minutes. It is the perfect breakfast to create an extra special morning. Simply whip together the ingredients and toss it in the oven while you get ready for the day. This casserole is perfectly cooked with slightly crisp edges and is topped with the most spectacular sugar cookie icing and sprinkles.
      prep time: 5 minscook time: 25 minstotal time: 30 mins

      Ingredients

      • butter, to grease pan
      • 1 loaf french bread (approximately 14 ounces)
      • 5 large eggs
      • 1 cup plus 1-2 tablespoons International Delight Frosted Sugar Cookie Creamer, divided
      • 3/4 cup powdered sugar
      • 1/4 teaspoon almond extract
      • 1/4 teaspoon pure vanilla extract
      • pinch salt
      • optional: sprinkles

      Instructions

      1. Preheat oven to 350°F.
      2. Generously butter a 6"x10" baking dish. Set baking dish aside. Cut bread into cubes. Add cubes to the prepared baking dish. Set dish aside.
      3. In a large bowl whisk eggs and 1 cup creamer until blended. Pour mixture over the bread cubes. Use a spoon to toss the cubes into the mixture remaining on the bottom of the dish until all cubes are well coated.
      4. Bake 25-30 minutes or until puffed and golden brown.
      5. Meanwhile combine powdered sugar, extracts, 1 tablespoon creamer and salt in a small bowl and stir until well combined to make the icing. Add remaining 1 tablespoons creamer as necessary to create a thick frosting that will drizzle.
      6. Remove casserole from oven. Drizzle icing over casserole and scatter sprinkles over the top.
      7. Serve and enjoy.

      1 cup heavy cream (or half and half)
      1 teaspoon onion powder
      1 teaspoon salt
      1/2 teaspoon black pepper
      1/4 teaspoon crushed red pepper flakes
      1 (20 ounce) bag refrigerated hash browns
      1 (5 ounce) package Jones Dairy Farm fully cooked chicken sausage links, sliced into coins
      8 ounces shredded mozzarella cheese, divided
      4 ounces shredded Parmesan cheese, divided
      1/2 cup chopped sun dried tomatoes, divided
      1/2 cup chopped fresh basil, divided
      cooking spray

      Spray a slow cooker with non-stick cooking spray. I used a 6 quart crockpot. Set aside.

      In a medium bowl or 4 cup measuring cup combine eggs and cream. Whisk until well combined. Sprinkle spices (onion powder, salt and both peppers) over egg mixture while whisking. Whisk until completely combined. Set aside.

      In slow cooker, combine all of the hash browns and about 1/2 of each of the remaining ingredients (Parmesan cheese, mozzarella cheese, sliced sausage links, sun-dried tomatoes and basil). Using fingers, gently toss hash brown mixture until combined. Pour egg mixture over casserole. If necessary use a spatula to smooth out the top.

      Set aside about 1/2 of the mozzarella cheese (approximately 2 ounces). Sprinkle the remaining reserved ingredients over the top of the casserole. Cover the slow cooker and cook for 6-8 hours on low or until a thermometer inserted into the center of the casserole reads 160°F. Once the center of the casserole is cooked through, it is done.


      Sprinkle casserole with remaining cheese, serve and enjoy!

      Things just seem to get busier and busier no matter how hard I try and busy leads to not having 30 minutes to cook dinner or time to shop for ingredients. That lands us in a drive thru. I didn't realize how much we were having fast food until we looked over our statements. It was like every other day for 2 weeks.

      That is when I decided I had to take more time to pull together some make ahead items. So that way, on those insanely busy days I could still manage dinner and feel good about it.  I have made this make ahead crockpot shredded chicken recipe 3 times in the last month and I have to tell you it has come in handy so many times, I can't even count.


      This Saturday we spent all afternoon and evening at the park. Munchkin and her friends were riding mini ATV's, Chad was flying his drone and playing frisbee with the guys and I was taking in some mommy time and holding down the fort while I got in some great conversation with friends.

      Before we knew it, we couldn't see 5 feet in front of us and it was almost 8 o'clock.  So, we headed home and unloaded the crew. I had a hungry group on my hands and nothing planned for dinner. I reached in the fridge and pulled out a container of shredded chicken and whipped up some of the best sandwiches we have ever had.

      Helpful Tips to make Crockpot Shredded Chicken:

      • Portion in 12 ounce packages (which is about 1 pound pre-cooked weight) to use in quick recipes.
      • Add whatever spices you like. A teaspoon of crushed red pepper flakes is fabulous. A tablespoon dried parsley adds great flavor.

        Crockpot Shredded Chicken

        Crockpot shredded chicken is the perfect make ahead recipe. It will give you tons of possibilities and its prepared in the slow cooked with very little work. This recipe makes quick dinners so amazingly easy.
        prep time: 15 minscook time: 6 hourtotal time: 6 hours and 15 mins

        Ingredients

        • 5 pound boneless skinless chicken breasts
        • 2 cups chicken stock
        • 1 teaspoon garlic powder
        • 1 teaspoon onion powder
        • 1 teaspoon fresh cracked black pepper
        • 1/2 teaspoon kosher salt (to taste)

        Instructions

        1. Add chicken to crockpot and top with remaining ingredients. Stir and cover. Cook 6-7 hours on low or 3 hours on high. After 5 - 6 hours (or about 2 1/2 hours on high) use 2 forks to pull chicken apart and submerge into cooking liquid. If chicken does not pull apart easily it is not ready to pull apart. If this happens. Allow 30 minutes to cook and try again.
        2. Taste and add an additional 1/2 teaspoon salt IF NECESSARY (it will depend on how salty your chicken stock is). Allow to cook 1 more hour on low (1/2 hour more on high).
        3. Serve and enjoy or portion out for future use.
