Breakfast casseroles have been a long time favorite in our house.  I love to make it the night before and just pop it in the oven that morning.  These come in extra handy on special occasion days; like Easter, Christmas, Mothers/Fathers Day.  Pretty much every morning that I don't want to spend a lot of time in the morning preparing food, a breakfast casserole comes in handy.

This casserole combined my favorite flavors and left over biscuits.  You know in a bread loving family there are bound to be biscuits laying around.  If you don't have biscuits, feel free to substitute Italian bread.

Layers of buttery biscuits, sausage, ham, red peppers and cheese (cheese and more cheese) come together with fluffy eggs to create the best ever overnight cheesy casserole.  Perfect for everyday and every holiday.  It doesn't get much better than that!

    Overnight Cheesy Breakfast Casserole

    This amazingly simple casserole recipe starts with a scrumptious layer of left over buttery biscuits, it's filled with my favorite breakfast components and ends with a generous amount of ooey gooey cheese. It is a complete breakfast. Just add coffee or orange juice.

    Ingredients

    • 4 cups cubes left over biscuits
    • 1 pound sage breakfast sausage, cooked
    • 2 cups cubed ham
    • 1/2 red bell pepper, chopped
    • 1 cup shredded Parmesan cheese
    • 12 large eggs
    • 2 cups milk
    • 1 teaspoon black pepper
    • 1/2 teaspoon kosher salt
    • 8 ounces mild cheddar, shredded
    • butter to grease the baking dish
    • chopped scallions to garnish

    Instructions

    1. Butter a 9x13 or similar size baking pan.
    2. Evenly place biscuits in pan.  Add sausage, ham, peppers and Parmesan cheese in an even layer over the top.
    3. In a medium mixing bowl, combine eggs, milk, salt and pepper.  Beat with a fork until well combined.  Evenly pour over top of casserole.  Cover with aluminum foil and chill in the refrigerator overnight.
    4. Preheat oven to 350°F.
    5. Remove casserole from refrigerator and place cold covered casserole in preheated oven.  Bake for 45 minutes.  Remove aluminum foil. Scatter cheddar cheese over the top and bake for an additional 15-30 minutes until casserole is set.  *Doesn’t wiggle when the pan is giggled.
    6. Allow casserole to cool for 10 minutes before serving. Sprinkle with scallions.
    7.  Serve and enjoy!

    Fully Loaded Cheesy Breakfast Casserole

    Fully Loaded Cheesy Breakfast Casserole is all of our favorite things in an easy breakfast recipe that you can make ahead. Packed with eggs, potatoes, veggies, sausage AND bacon it is truly a full breakfast in one dish. The overnight cooking method makes this a winner in my house!

    Ingredients

    • 1 pound Jones Dairy Farm Cherrywood Smoked Bacon, cooked and chopped
    • 12 ouncesJones Dairy Farm Breakfast Sausage Rolls
    • 1 (28 ounce) package frozen cubed hash browns with peppers and onions, thawed
    • 2 cups (8-ounces) shredded medium cheddar cheese
    • 12 large eggs
    • 1/2 cup whole milk
    • 1 1/2 teaspoons kosher salt
    • 1 teaspoon fresh ground black pepper
    • 1 teaspoon garlic powder

    Instructions

    1. Preheat oven to 375°F. Butter a 9x13-inch baking pan.
    2. In a large skillet over medium heat, cook the sausage until browned, crumbling it with a spatula as it cooks.
    3. Add hash browns, sausage, bacon and cheese to the casserole dish. Toss to combine.
    4. In a large bowl combine eggs, milk, garlic, salt and pepper. Whisk until completely combined. Pour the egg mixture over the hash brown mixture.
    5. Bake for 35-40 minutes until a knife inserted in the center comes out clean.

    • To make it ahead

    Assemble everything, then cover and refrigerate overnight. Then, allow the casserole to sit on the counter for about 30 minutes before baking as directed. 

    • Handling peppers safely

    It’s always a good idea to wear gloves when handling jalapeΓ±os, especially when deveining and chopping. 

    The oils in the peppers can cause irritations to the eyes and skin, and soap and water don’t always remove them all. 

    • Shred your own cheese 

    Always buy blocks of cheese, then shred it yourself. Bags with shredded cheese contain a preservative to keep the cheese from clumping. 

    Unfortunately, the preservative also gives the cheese a waxy texture and also prevents the cheese from melting well.


    Flavor variations 

    Breakfast casseroles are very versatile, and it’s easy to add or substitute ingredients so it tastes just how you like it!

     

    • Mix-ins - Include black beans in one of the layers for added protein, or try corn and bell peppers for an extra serving of veggies.
    • Other meats - Convert this to an egg and sausage casserole recipe by replacing some or all of the bacon with ground pork, chicken, or turkey sausage.
    • Add avocado - Have a bowl of fresh avocado chunks available to sprinkle over the top just before eating.
    • Make it vegetarian - Use plant-based bacon, vegan crumbles, or sauteed mushrooms instead of the pork bacon.
    • Extra spicy - Stir a few dashes of your favorite hot sauce in with the egg mixture, or dice a chipotle chile in adobo to add to the jalapeno.

    Can I use flour tortillas instead of corn tortillas? 

    The recipe works fine with flour tortillas, although they will be softer and may not hold their shape as well. 

    How long can you keep an egg casserole in the fridge?

    A baked breakfast casserole like this is typically safe to eat for up to 5 days. Store well covered or transfer to an airtight container to keep it fresh.

    Can I freeze this casserole? 

    Yes! After baking the casserole, allow it to cool. Then, cover the casserole dish with foil and you can keep it in the freezer for up to 2 months.  

    Before you reheat it, allow the dish to thaw in the refrigerator overnight. Then, bake at 350 degrees F for 20-20 minutes, or until warmed through. 

    NOTE: If your casserole dish isn’t freezer-safe, you will need to transfer the contents to a freezable container.

    Mexican Breakfast Casserole

    This casserole is a simple dish with Tex-Mex flavors. Make this Mexican lasagna recipe for an easy weekend brunch with friends or family! 

    Prep time: 15 Minutes     Cook time: 45 Minutes     Total time: 60 Minutes

    Ingredients
    • 12 large eggs
    • 2 cups whole milk
    • 2 teaspoons New Mexico chili powder
    • 1 teaspoon ground cumin
    • 1 teaspoon kosher salt
    • 6 medium roma tomatoes, chopped
    • 1/4 medium white onion, diced
    • 2 jalapeΓ±os, deveined and minced
    • 4 garlic cloves, minced
    • 12 corn tortillas
    • 1 (16 oz) package Jones Dairy Farm Dry Aged Bacon, cooked and cut into bite-sized pieces
    • 8 ounces pepper jack cheese, shredded
    • 8 ounces medium cheddar cheese, shredded
    • 1/4 cup fresh cilantro, chopped
    Instructions
    1. Preheat oven to 350°F. Spray 9x13-inch baking pan with non-stick spray.
    2. In large bowl combine eggs and milk. Sprinkle chili powder, cumin and salt over the bowl while whisking to prevent large clumps from forming. Whisk until completely combined.
    3. In medium bowl combine tomatoes, onion, jalapeno and garlic. Toss to combine.
    4. Line bottom of prepared baking pan with 4 corn tortillas, overlapping if necessary. Top tortillas with 1/4 of tomato mixture, 1/4 of bacon and 1/4 of each cheese. Repeat layers 2 more times beginning with 4 tortillas and ending with cheeses.
    5. Pour egg mixture over casserole.
    6. Bake uncovered for 40-50 minutes, or until a knife inserted in center comes out clean. Top with remaining cheese and broil until melted, about 2 minutes.
    7. Sprinkle remaining tomato salsa and bacon over top and garnish with cilantro. Serve and enjoy!

    1. Refrigerate overnight. Allow casserole to sit on counter for about 30 minutes before baking.

    This recipe is an old family favorite that was originally shared with you 6 1/2 years ago. It is DEFINITELY a reader favorite.

    So, we decided to share it with you again. We enjoy this breakfast on holidays and sometimes just because. It has truly become a tradition that we look forward to.

    Special occasion meals

    Father's Day is such a special day for us, as it is for most people. 

    Take the day to really celebrate the important man in your life! Make a special breakfast to remind him just how special he is.

    My husband is a wonderful father to our Munchkin, and an amazing husband as well. We spend the day taking part in our favorite family activities.  So, I like to start off with a very special breakfast. 

    By special, I mean out of the ordinary for us.  We tend to have a very healthy breakfast each day. Once in a while, we go out on a limb, making buttermilk pancakes on a Sunday.

    Well, I have been making Sugar Cookie French Toast for special occasions for quite some time.  Any kind of french toast is my husbands favorite. 

    French Toast Casserole


    So for this special occasion, I decided to try this French Toast Casserole I have been drooling over for quite some time. 

    I have to tell you it is so decadent, so flavorful, so divine....  There are barely words! 

    The bread has a consistency like the most incredible bread pudding.  The custard mixture bakes into the bread, and the topping is such a delightful treat. 

    You can leave the maple syrup off this french toast.  I think it would spoil the flavor.  It is THAT good!!!


    Updated 5/10/14:  We love this recipe so much we have made it countless times over the last 4 years.  I have made some changes and added several notes to the bottom of the recipe.  Be sure to check out the notes.

    Helpful tips for making French toast casserole

    How to prevent soggy French toast
    • We have been enjoying this recipe for 6 years.  I have made a few changes.  There is less milk/cream than in the original recipe, as the bread is sometimes too moist for my taste.
    Substitute for half and half
    • Half and half is a dairy product found in the USA.  You can substitute half cream and half milk for half-and-half.  You can also use any combination of all cream to all milk as long as you are adding 1-1/2 cups total.
    Praline topping
    • In the original casserole recipe, the praline topping included corn syrup.  It really doesn't need it, so it is no longer in the recipe.
    Serving suggestions
    • This french toast casserole is amazing served with fresh berries instead of the praline topping if you are looking to lighten it up. 
    Freezing the casserole
    • The leftovers freeze VERY well!  We eat about 1/4 of the pan.  I freeze the leftovers in 3 containers, so when we want a special breakfast I just thaw it and pop it in the oven at 350 for about 10 minutes.  Perfect.

    Make Ahead French Toast Casserole

    Prep the night before and throw it in the oven while you are getting ready for the day. Easy breakfast recipe that your family will thank you for!

    Ingredients
    • butter (for preparing baking dish)
    • 1 loaf French bread
    • 8 large eggs
    • 1 cup half-and-half
    • 1/2 cup milk
    • 2 tablespoons granulated sugar
    • 1 tablespoon vanilla extract (or vanilla bean paste if you want to really jazz it up)
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon salt
    Praline Topping
    • 2 sticks unsalted butter, room temperature
    • 1 cup packed light brown sugar
    • 1 cup chopped pecans
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    Instructions
    1. Prepare a 9"x13" baking dish by generously buttering the entire inside of the dish.  Set the baking dish aside.
    2. Slice the French bread, on the bias approximately 1-inch thick. Arrange slices in your prepared baking dish in 2 rows, overlapping the slices. Set dish aside.   In a large bowl, whisk eggs. Add half-and-half, milk, sugar, vanilla, cinnamon, nutmeg, and salt. Whisk until well combined.
    3. Pour the egg mixture over the bread slices, making sure they are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. I like to make sure all my slices are good and coated.  Even dunking them in the mixture sometimes. Cover with foil and refrigerate overnight.
    4. The next day, preheat oven to 350°F. Meanwhile, prepare the praline topping by combining all ingredients in a medium bowl and mix to combine.  Scoop out praline topping and make 8 dollops of topping.  Then spread Praline Topping evenly over the bread (like you are icing a cake).
    5. Bake for 40 minutes, until puffed and lightly golden.
    6. Serve and enjoy!

    That is one of the many reasons we are so excited to be partnering with Jones Dairy Farm.

    I am sure I have mentioned it before, but I am the "queen of over overnight and make ahead breakfasts". It's not some exciting honor that has been bequeathed to me. It actually arose out of necessity and I blame my mom as I am sure it's some gene that she passed along to me. I am a total night owl. I can go until the wee hours of the morning without batting an eye, but I am slow going when I wake up.

    I remember trying to get my mom to wake up Christmas morning so we could open presents. It just about took a pot of coffee and a funnel. haha. In her defense, she was up until 4am 'waiting for Santa'. 

    So, needless to say, Christmas morning breakfast would be a major challenge or it would be served at lunch time if I didn't plan ahead.  So, I started creating ways to make breakfast the night before and enjoy it the next morning hot out of the oven, like these and these.


    Feeding a crowd during the holidays is that much less stressful too. I stumble out of bed and grab the casserole that I prepared the night before (during my normal hours), and I toss it in the oven. Now, I have time to wake up while breakfast is cooking. Easy peasy!

    My latest obsession is this Cheesy Sausage Overnight Breakfast Casserole that starts with Jones Dairy Farm All-Natural Pork Sausage Roll. It is my absolute favorite sausage. With just 4 ingredients (Pork, water, salt, spices) I can feel good about feeding my family.

    I love being able to start with a flavorful canvas and really take it over the top. So, I fry up the sausage with red pepper and maple syrup to create a heavenly fusion of my favorite flavors. It is heat and sweet all in one savory bite. Imagine that speckled throughout this fabulous breakfast! 

    Fluffy seasoned eggs and cubes of sourdough bread, sweet heat sausage and sharp cheddar come together to create a glorious breakfast casserole that they will be talking about long after the dishes are cleared.

    Helpful Tips to make Cheesy Bacon and Egg Breakfast Bombs:

    • If you would like these to be round (more like our traditional bomb series) and less like a pull-apart bread you can bake them on a cookie sheet about 2-3 inches away from each other.
    •  If you prefer, you can use a pastry roller or small rolling pin to roll these bombs out.

    What you will need to make Cheesy Bacon and Egg Breakfast Bombs:

    • Jelly Roll Pans (baking sheets with sides) - used for everything from cookies to roasting, a good baking pan will last for years.
    • Mixing bowlsCombine all of the ingredients for this salad in a large mixing bowl.
    • Whisk - I have had this set for over 10 years and it is still as good as the day I bought it. With 3 sizes there is a whisk for every job.
    • Cheese Grater- As much as I love buying shredded cheese because I'm lazy, freshly grated cheese melts down so much better and creates a smoother recipe.

    Cheesy Bacon and Egg Breakfast Bombs

    Cheesy Bacon and Egg Breakfast Bombs are soft and tender portable poppers, stuffed with smoky bacon, scrambled eggs and ooey-gooey cheese! This scrumptious recipe is the pull-apart breakfast of your dreams!

    Ingredients

    • 1 pound Applewood smoked bacon
    • 4 large eggs
    • 2 tablespoons whole milk
    • 1/8 teaspoon kosher salt
    • pinch black pepper
    • 16 frozen dinner yeast roll dough balls
    • flour (to dust counter)
    • 8 ounces shredded mild cheddar cheese
    • 1 medium jalapeno, diced
    • 1/4 cup roasted red peppers, diced
    Garlic Herb Butter
    • 4 tablespoons unsalted butter
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon dried parsley
    • 1/4 teaspoon kosher salt

    Instructions

    1. Prepare bacon. I love my bacon in the oven. Bake at 400ΒΊF on a baking sheet. Cook 15-25 minutes or until desired crispness is reached. Remove from the oven. Allow to cool and chop into bite-size pieces.
    2. Meanwhile: Prepare the eggs. In a medium bowl combine eggs, milk, salt, and pepper. Whisk until completely combined. Spray a small skillet with non-stick cooking spray. Heat skillet over medium heat. Add the egg mixture and stir occasionally until the eggs are scrambled, and no liquid is left in the pan, about 3-4 minutes. Do not cook until they are completely dry, or they will be very dry in the breakfast bomb. Set aside to cool.
    3. Place dinner rolls on a microwave-safe plate and microwave on defrost for about 3-4 minutes (or until dough is no longer frozen, but not cooked). Butter a 9" pie plate or a 9"x9" baking pan and set aside.
    4. Lightly flour your countertop. Toss 1 piece of dough in flour and flatten and stretch like you are making a mini pizza. Stretch dough to about 3-4” across.
    5. Sprinkle a tablespoon of cheese over the dough and press into the dough with the palm of your hand. Top with one tablespoon eggs, one tablespoon bacon, 1/2 teaspoon jalapenos, and 1/2 teaspoon red peppers onto the center of the dough round. Pull the top and bottom edges of the dough together and then add the left and right edges. Pinch the dough together to create a ball. If the ball won’t seal, tap your fingertips into the flour and then crimp the seal together. Place dough ball in prepared dish. Repeat until all breakfast bombs are in the dish.
    6. Spray a piece of plastic wrap with non-stick spray, place the wrap sprayed side down on the breakfast bombs. Refrigerate until morning or proceed with instructions immediately (cook time will be about 30-35 minutes if not refrigerated).
    7. Preheat oven to 350°F.
    8. Remove baking dish from the refrigerator, remove plastic wrap. Bake for 40-45  minutes until the tops are golden brown and the breakfast bombs are no longer doughy. You can pull one of the edge pieces out and if it is still doughy cook it for another 5 minutes. Cover with foil if the tops start getting too brown (I covered mine at 25 minutes).

    9. Meanwhile: In a small bowl melt butter in the microwave, about 30 seconds or until butter is melted. Add garlic, parsley, and salt.  Stir with a pastry brush. Remove breakfast bombs from the oven. Brush them with melted butter mixture. 
    10. Serve and enjoy!
