I had to create a copycat recipe to cure my hankering for my favorite apple pies from my childhood.  Now you can enjoy one (or 6) too!

My family actually didn't eat out much as I was growing up.  My mom made sure we had a home cooked meal every night we were home.  I would get so excited about stopping for fast food during our vacations.  I have a few favorites, but when I think about McDonald's I remember those fabulous fried apple pies.

To have my copycat fresh apple pie in my hand was like a dream come true.,  Just like the original it is crisp flaky pie crust oozing with thick spiced apple pie filling and tender chunks of tart and sweet apples.  Purely heaven.  We devoured these and I am sure you will too.

McDonald’s Copycat Fried Apple Pies

Visions of McDonald's RETRO Fried Apple Pies have been dancing in my head. Remember those from the 80's? Crisp flaky, heavenly pie crust oozing with thick apple pie filling and tender chunks of spiced apple.

Ingredients

  • 2 cups 1/2” diced apples, (peeled, cored and diced) approx 2-3 medium apples (I used 1 gala and 1 granny smith apple)
  • 1/2 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon cinnamon
  • pinch nutmeg
  • 1/2 cup water
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon pure vanilla extract
  • neutral oil (vegetable, canola or coconut oil)
  • 2 sheets Puff Pastry

Instructions

  1. Remove puff pastry from freezer, unwrap pastry and place on a floured work surface to thaw.
  2. Meanwhile; in a large saucepan over medium heat combine apples, lemon juice, sugars, cinnamon and nutmeg.  Mix well.  Stir occasionally until mixture begins to bubble.
  3. Meanwhile combine water and flour in a mason jar or container.  Shake to combine.  Add to pot.  Continue boiling, stirring constantly until apples are softened, approximately 5 minutes.  Remove from heat, stir in vanilla.  Set aside to cool.
  4. In a heavy-bottomed pan with deep sides, heat about 1” oil to 350 degrees.
  5. Meanwhile, using a sharp knife cut each pasty sheet into 3 equal long pieces.  Lay pasty sheet strips out horizontally on floured work surface.  Place 1/4 cup apple pie filling on the left half of each dough strip.  Moisten your clean fingers and wet the edge of the pastry.  Gently pick up the right side of the dough and fold dough on top of the left side, encasing the filling (if any filling seeps out push it back in).
  6. Gently press along the edge with the tines of a fork.  Once all pies are assembled fry them 2 at a time.  Cook for 3-4 minutes total, carefully flipping them over halfway through.  Remove pies from oil when they are a nice golden brown.  Place pies on a stack of paper towels.  Sprinkle them with sugar and cinnamon.  Repeat until all pies are cooked.
  7. Serve and enjoy!

We are so excited to be partnering with Summer Berry Cheesecake Salad and Strawberry Banana Cheesecake Salad I thought of International Delight.

RECIPE AT THE BOTTOM

In case you missed them, this summer I created two cheesecake salad recipes that were so popular that Summer Berry Cheesecake Salad quickly beat out our beloved Hearty Beef Soup for the #1 most popular recipe on the website.

I mean we have over 1,000 recipes so this was quite a feat. Needless to say, I have been receiving emails from our devoted cheesecake loving readers asking me to create more of these dessert sensations.

Of course it being fall, caramel apples are everywhere and I knew I had to twist those 2 flavors into a scrumptious cheesecake salad that will leave you speachless. I mean seriously, this ain't Grandma's fruit salad, that's for sure.

It all starts with a divinely light and fluffy cheesecake filling, with tart Granny Smith and sweet Gala apples folded in. I could have stopped there and been perfectly content, but I wanted to take this recipe over the top!

So, I drizzled it with caramel sauce and topped it with nutty caramel candy bar bites to create the ultimate fall cheesecake fruit salad. Move over Grandma's fruit salad, the new king of the holiday table is here.

    Snickers Caramel Apple Cheesecake Salad

Snickers Caramel Apple Cheesecake Salad is a simple recipe that comes together with just 5 ingredients. Tart and sweet crisp apples are folded into the most rich and luxurious cheesecake filling and topped with caramel and Snickers to create an amazing fruit salad that will blow your mind! Your family will go nuts over it.

    Ingredients

    • 2 (8-ounce) packages cream cheese
    • 1 cup International Delight French Vanilla Creamer
    • 4 medium apples, cut into bite-size pieces (I used Granny Smith and Gala)
    • 20 bite-size Snickers candy bars, cut into bite-size pieces (or 3 king size)
    • 1/4 cup caramel sauce

    Instructions

    1. In a medium tall bowl, using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up.
    2. With the mixer running slowly add creamer to the cream cheese. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese.
    3. Continue until all of the creamer has been added to the cream cheese. Whip until smooth, light and fluffy, about 2 minutes.
    4. Cut apples into bite-size pieces and add them to the cheesecake mixture. Gently fold the apples in as you add them to help prevent browning.
    5. Transfer apple cheesecake salad to a serving bowl. Sprinkle salad with bite-size candy bar pieces and drizzle with caramel sauce.
    6. Chill until ready to serve or serve immediately.
    7. Enjoy!

    DONNA'S NOTES

    1. Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way. Trust me on this one.

    Caramel Apple Poke Cake

Caramel Apple Poke Cake is the perfect dessert to celebrate fall with! For people who aren't pumpkin fans, this easy box mix recipe is bursting with apple chunks, caramel pudding, and fluffy whipped brown sugar cream cream cheese. It's festively topped off with apples, toffee bits, and as much caramel as you can handle!

is the perfect dessert to celebrate fall with Caramel Apple Poke Cake
Never let anyone tell you box mixes are cheating, especially when they create treats as yummy as this Caramel Apple Poke Cake!

I love a good box mix recipe every now and again. As much as I enjoy a fresh and fluffy homemade cake, there's definitely something to be said about how good a box mix is for the price and convenience.

is the perfect dessert to celebrate fall with Caramel Apple Poke Cake

As it turns out, box mixes are absolutely perfect for quick and easy recipes like this poke cake.

Not only do you save time by not having to measure out ingredients, the texture of the finished cake is just right to house the slightly more time-consuming but equally satisfying homemade caramel pudding!

is the perfect dessert to celebrate fall with Caramel Apple Poke Cake

Can you believe boxed caramel pudding isn't a thing? The closest I can find is butterscotch and it's still somehow not the same.

I promise, making the extra effort to create homemade pudding is completely worth it - you'll know with your first bite of this delicious dessert!

is the perfect dessert to celebrate fall with Caramel Apple Poke Cake

Helpful Tips to make Caramel Apple Poke Cake:

    • If you're not a cake mix person, feel free to use a scratch recipe (like this shortcake or this caramel apple one) as a base. Be sure not to pick a cake that's overly dense, otherwise the texture of the finished product will be off.
    • Use room temperature ingredients. To ensure even mixing, pull the butter, eggs, and buttermilk from the refrigerator ahead of time. This also helps keep the cake moist and delicious.
    • If you really enjoy apples, double the amount of chopped apples in the cake.
    • If you're short on time or nervous about making homemade pudding, a box of boxed butterscotch pudding will do here in a pinch.

What you will need to make Caramel Apple Poke Cake:

    • A 13x9 Cake Pan - You need a single layer of cake to hold the pudding without it leaking, and this cake pan is the perfect size! It's also great for creating larger cakes for parties and events.
    • A Sturdy Wooden Spoon - Preferably one with a rounded handle. It creates properly sized holes for grabbing all that pudding!
    • Metal Cake Spatula - These are one of my favorite cake tools and you'll use them a lot! They spread frosting like a dream, and can also smooth it or create lovely textures.
    • KitchenAid Mixer - I use this mixer almost as much as I use my oven! Whether you grab the Artisan or Professional series, this workhorse will be a wonderful addition to your kitchen. Use it to mix the batter as well as the whipped frosting.

    Enjoy!

    Ingredients

    APPLE CAKE
    • 1 box vanilla cake mix
    • 1 cup buttermilk, room temperature
    • 1/3 cup unsalted butter, room temperature
    • 2 large eggs, room temperature
    • 1 teaspoon vanilla extract
    • 1 1/2 cups apples, peeled, cored, and chopped
    CARAMEL PUDDING
    • 1/3 cup brown sugar, packed
    • 1/3 cup water
    • 3 egg yolks, room temperature
    • 1 1/2 cups milk, room temperature, divided
    • 2 tablespoons cornstarch
    • 2 tablespoons unsalted butter, room temperature
    • 1 teaspoon vanilla extract
    WHIPPED BROWN SUGAR CREAM CHEESE
    • 1 1/2 cups heavy cream
    • 4 ounces cream cheese
    • 1/4 cup granulated sugar
    • 2 tablespoons brown sugar
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon salt

    Instructions

    APPLE CAKE
    1. Preheat oven to 350 degrees F. Spray a 13x9 cake pan with non-stick cooking spray. Set aside.
    2. Heat a small saucepan over medium heat. Melt butter, then allow it to simmer until it begins to brown and smell nutty. Remove from heat and cool.
    3. Place cake mix in a large bowl with buttermilk, eggs, vanilla, and cooled brown butter. Mix until just combined. Gently fold in chopped apples.
    4. Transfer batter to the prepared cake pan. Bake for 28-32 minutes, until a toothpick inserted in the center comes out clean.
    5. Remove from oven when done and allow to cool 10 minutes, then use the handle of a wooden spoon to poke many holes all over the cake.
    CARAMEL PUDDING
    1. While the cake is baking, make the pudding. Combine the brown sugar and water in a saucepan saucepan over medium-high heat. Cook until it reaches 215 degrees F and creates a caramel, then remove from heat and set aside.
    2. In a separate medium saucepan set over medium heat, whisk together milk and cornstarch until there are no lumps.
    3. Whisk egg yolks in a large heatproof glass bowl.
    4. When milk mixture is warm but barely simmering, whisk it into the egg yolks, about 1/4 cup at a time, until it's all combined. Return the mixture to the saucepan and stir in the reserved caramel sauce.
    5. Return the pan to the stovetop. Cook the mixture for about 5 minutes until it thickens, then stir in the butter, vanilla and salt. Remove from heat and allow to cool 20-30 minutes.
    6. Pour cooled pudding into the holes of the cake, allowing it to sink in before adding another addition. (You may have more pudding than you need.)
    7. When pudding has been added, cover pan with plastic wrap and chill 2 hours.
    WHIPPED BROWN SUGAR CREAM CHEESE
    1. In a large cold bowl, whip heavy cream to stiff peaks.
    2. In a separate bowl, beat cream cheese, sugars, vanilla, and salt until well-combined and fluffy, 3-4 minutes. Fold whipped cream into cream cheese mixture.
    3. Spread frosting on top of cooled cake. Garnish with additional chopped apples, toffee bits, and caramel sauce.

They are the perfect fall treat or holiday dessert.  We love these and are going to be sharing them with our family this year.

After enjoying this fun twist on the classic apple pie, you may never go back! A tender, buttery sweet bread is stuffed with juicy tart apples in a creamy caramel sauce and baked to perfection.

When you bite into one of these heavenly dessert bombs, a river of sweet caramel runs over them, making this a perfectly satisfying, sweet portable treat.

Before Munchkin was born (actually, the year I was pregnant with her), Chad’s mom taught us how to prepare a special family recipe that we have now been making together for years.

Munchkin even gets in on the action and helps.

That recipe starts with stuffing bread dough, and it inspired the invention of all of the scrumptious bomb recipes that we have made.

These explode with flavor and are loaded with ooey-gooey deliciousness.

This bread is super simple, great for a party, and can be prepped ahead of time if you're in a pinch when party planning. It's a great touch on a holiday table as an alternative to traditional rolls.

    Crazy Caramel Apple Pie Bombs

Crazy Caramel Apple Pie Bombs are the pull apart bread of your dreams. This fabulous recipe is packed with caramel and apples and baked to perfection. Pull one open and a river of sweet caramel runs over the apple pie bombs.
prep time: 15 minscook time: 30 minstotal time: 45 mins

    Ingredients

    • 4 tablespoons melted unsalted butter, divided
    • 2 medium apples, peeled cored and diced (I used gala)
    • 6 tablespoons light brown sugar, packed
    • 1 tablespoon ground cinnamon
    • 30 caramels, unwrapped and divided (I use Kraft)
    • All-purpose flour, (for dusting)
    • 12 frozen white dinner roll dough balls, (I used Rhodes)
    • 2 tablespoons heavy cream

    Instructions

    1. Preheat the oven to 350°F.
    2. Butter an 8 x 8-inch baking pan with 2 tablespoons of the butter and set aside.
    3. Combine the apples, 2 tablespoons of the brown sugar and the cinnamon in a medium bowl and toss to coat. Set aside. Unwrap the caramels and cut 18 of them into quarters. Set aside. Lightly flour your counter top.
    4. Flatten each dough ball into a circle about 3 inches across. You can use a rolling pin or you can pull the dough around the edges like you are making a mini pizza. Add 1 tablespoon of the apple mixture and 6 of the cut caramel pieces.
    5. Carefully pull each side over the center to create a “package,” and then roll the dough into a ball. Be careful to make sure you cannot see through the dough. If you have any tears or can’t seal the dough, tap your fingertips in flour, pinch any tears and roll again.
    6. Place the dough ball in the prepared dish, seam side down. Repeat until all of the apple pie bombs are in the dish. Brush the apple pie bombs with the remaining 2 tablespoons of melted butter and sprinkle with the remaining 4 tablespoons of brown sugar. Bake the bombs for 30 to 35 minutes, until the tops are golden brown and they are no longer doughy.
    7. Meanwhile, place the remaining 12 caramels and the heavy cream in a microwave safe bowl and microwave until melted, 30 seconds at a time, stirring after each interval. Once you have a smooth mixture, set aside to cool.
    8. Remove the apple pie bombs from the oven and drizzle with the caramel sauce.
    9. Serve and enjoy!
