Cinnabon Cinnamon Rolls Copycat Recipe (VIDEO)

Cinnabon Cinnamon Roll Copycat Recipe will make you take a second thought, can it really be that good? A sweetened roll with a thick cinnamon-sugar filling and a cream cheese frosting that you are likely to remember long after the cinnamon roll is gone!

After much back and forth with the family, we have finally decided on Christmas breakfast and this is it! So, we made a video to share it with you.

I make these the afternoon before Christmas and pop them in the fridge and bake them fresh the next morning. They are our absolute favorite.

Although there is probably a Cinnabon in every mall and airport across the country, I wasn't introduced to them until I moved to Arizona.  I guess I always thought, "so what...  It's a cinnamon roll".

Boy, was I wrong.  Shortly after I moved to Arizona my (then) friend Chad and I went to the mall to pick up a few things.  When we walked by the food court he about melted.

He asked if I want to get a Cinnabon and I said, "Sure... I guess".  He looked at me like I had two heads and said "you guess?"  I explained that I had never had one before.

That was the last time I would ever reply, "sure...  I guess" when I was offered a Cinnabon Cinnamon Roll.  That's for certain.  Eating a cinnamon roll nearly the size of your head is a whole new experience.

A soft, sweet roll with thick brown sugar cinnamon filling and the most scrumptious cream cheese frosting you have ever eaten.

It wasn't long after that day at the mall when Chad and I fell in love.  Was it the cinnamon roll?  Who knows, but it sure didn't hurt!

20 years later I still remember that first decadent Cinnabon cinnamon roll and the complete and utter feeling of satisfying indulgence; eye's rolling to the back of your head with a chorus of mmmms and aaaahhhhhhs!

Finally, all these years later I am so excited to have recreated that Cinnabon cinnamon roll in my own home.  A fabulously soft, sweetened bread with made with egg and buttermilk is the base for Cinnabons classic treat, and its also the base for ours.

We filled ours with butter, cinnamon, brown sugar, and a little corn starch to thicken up the filling (so it doesn't all ooze out, a great tip from a recipe message board).

The frosting is, of course, the star of the show; a vanilla cream cheese frosting with a hint of lemon to really make it stand out.  It's enough to make your thoughts linger long after you have devoured your first cinnamon roll.

I am sure we will still get our Cinnabon cinnamon roll at the airport when we travel, as it is tradition.  But I am so excited to be able to enjoy these anytime, without ever having to leave my house.

Cinnabon Cinnamon Rolls Copycat

Cinnabon Cinnamon Roll Copycat Recipe will make you take a second thought, can it really be that good? A sweetened roll with a thick cinnamon-sugar filling and a cream cheese frosting that you are likely to remember long after the cinnamon roll is gone!

Ingredients

Rolls
  • 2 1/4 teaspoons active dry yeast
  • 1 cup water warm (110-120°F)
  • 1/2 cup granulated sugar
  • 1/4 cup buttermilk
  • 2 large eggs
  • 7 tablespoons unsalted butter, divided
  • 5 1/2 - 6 cups all-purpose flour
  • 2 teaspoons kosher salt
Filling
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 1/2 cups light brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 1 tablespoon cornstarch
Frosting
  • 4 ounces cream cheese, softened
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 1 cups powdered sugar
  • 1/2 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt

Instructions

  1. Pour water and sugar into the bowl of a stand mixer fitted with a dough hook (see cooks note if you do not have a stand mixer), sprinkle yeast over top, and stir.  Allow yeast to bloom for 5-10 minutes.  Once it is nice and foamy, it is ready. *It should look like the 'head' of a beer poured too quickly and smell yeasty.
  2. In the meantime:  melt 6 tablespoons of butter in a microwave-safe bowl.
  3. Once the yeast mixture is aromatic and looks like the head of a beer, add buttermilk, eggs, and butter to the bowl of the stand mixer.  Mix on low and add 4 cups of flour, one cup at a time.  Add salt. Once the flour is mixed in, add remaining flour slowly until dough becomes a ball.  Mine takes 5 ½ cups total.  Knead dough on medium-high for 5 minutes.  Add more flour a tablespoon at a time as needed, if bread is too sticky to come together.  The dough should be tacky when you pull it out of the mixer, not sticky.
  4. Lightly dust countertop with flour.  Turn dough out onto the countertop.  Knead a few turns, shape dough into a ball.
  5. Add 1 tablespoon butter to bowl and heat in microwave until melted.  Place dough into bowl upside down, flip the dough over and cover loosely with plastic wrap and drape bowl with a towel.  Set bowl in a warm place in your kitchen.  Allow dough to rise for 60-90 minutes until nearly doubled in size.
  6. Meanwhile combine light brown sugar, cinnamon, and corn starch in a medium bowl.  Stir with a fork until well combined.  Set aside.
  7. Turn dough out onto a lightly floured surface.  Knead the dough a few turns, then using a rolling pin, roll out into an 18” tall x 24” wide rectangle.  Spread softened butter around dough leaving the bottom 1” border uncoated.
  8. Sprinkle the buttered dough with brown sugar mixture, leaving the bottom 1” uncoated.  Use your rolling pin to gently press sugar mixture into the dough (so it doesn't fall out as you roll it).
  9. Starting at the top, tightly roll dough toward you, using the last 1” to seal roll.  Cut dough roll in half and then cut those halves in half, giving you 4 pieces.  Cut each of those pieces into 1/3rd.   You will have 12 pieces.
  10. Grease (2) 9”x13” baking dishes.  Place rolls in pans evenly spaced out, 2 rows of 3 rolls in each.  Make sure to put the end pieces upside down.  Loosely cover with plastic wrap and drape a towel over pans.  Set pans in a warm place and allow rolls to rise another 60-90 minutes until rolls have doubled in size.
  11. Preheat oven 350°F.
  12. Bake for approximately 20 minutes until golden brown and cooked through.  Halfway through baking time rotate the pans.
  13. In the meantime prepare frosting; add cream cheese and butter in a large mixing bowl.  Beat with an electric mixer (or stand mixer) until light and fluffy.  Add remaining ingredients.  Beat until mixture is light and fluffy, about 3-5 minutes.  Set aside.
  14. Remove rolls from oven.  Spread ¼ of frosting over each pan of rolls.  Allow to cool slightly and repeat.  Serve and enjoy!
DONNA'S NOTES
  1. You can mix the dough by hand if you do not have a stand mixer.  Add water, yeast, and sugar to a large bowl.  Once the yeast blooms stir in the buttermilk, eggs, and butter. Mix with a spoon and add the salt and flour. Stir until you can no longer stir with a spoon. .  Turn dough out onto the floured countertop and knead for 3-5 minutes until the dough is no longer sticky.  Proceed with remaining instructions.
  2. OVERNIGHT PREPARATION: Prepare cinnamon rolls, once you put them into the baking pans place them in the refrigerator. They will slowly rise overnight. Remove them from the refrigerator in the morning and bake. They may need a few extra minutes to get the chill off in the oven so be sure they are cooked through before you pull them out. Copycat Cinnabon Cinnamon Stix are the perfect brunch item Copycat Cinnabon Cinnamon Stix

We are heading to Florida for a blogger conference before long.  Do you know what I am looking forward to while sitting in the terminal for 2 hours waiting for my flight?  Cinnabon and Starbucks.  I am pretty lucky and usually end up at a terminal with my 2 favorite airport treats.

I also enjoy Cinnabon when I go to the mall, I mean how can you miss it?  Head in the front door and you get hit in the face by the Makara cinnamon and sugar wafting down the mall.  Oh, how I love Cinnabon.

It seems unfair to have to wait to go to the mall or leave on a trip to enjoy Cinnabon's delicacies. So, we don't wait anymore. I am pretty proud to have conquered the Copycat Cinnabon Cinnamon Roll recipe.  My family goes nuts over them.  But, when you are in a dipping mood, Cinnabon Cinnamon Stix really call your name.

With that in mind I started working on the Stix.  The Cinnabon Cinnamon Stix are made from a Danish pastry dough, brushed with vanilla and butter and then coated in cinnamon and sugar and served with Cinnabon's rich cream cheese frosting.  Not a detail was missed here.

Let's just say we went NUTS over this recipe.  It is absolutely amazing!  Let me tell you that they are soooo good that I actually gave a batch of these as a birthday gift. Ok, maybe a little less than a batch, see...  I couldn't keep my hand off of them.

If you are pressed for time, check out the shortcut method and if you don't have a stand mixer, I have included a method for mixing by hand.  No matter how you make them, you are going to love 'em!

Copycat Cinnabon Stix

Copycat Cinnabon Cinnamon Stix are the perfect brunch item. Utterly cinnamon-sugar coated heaven! Served with homemade Cinnabon's rich cream cheese frosting. It doesn't get much better than that!

Ingredients

  • 8 ounces (1 cup) warm milk (110° to 120°)
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 large egg
  • 1 1/2 teaspoons kosher salt
  • 3 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, frozen
Toppings
  • 1 stick (1/2 cup) unsalted butter, melted
  • 1 tablespoons vanilla bean paste (or vanilla extract)
  • 1/2 cup granulated sugar
  • 1 tablespoon good cinnamon
  • Pinch kosher salt
Dipping Sauce
  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cups powdered sugar
  • 1/2 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt

Instructions

  1. In the bowl of a stand mixer* fitted with a dough hook add sugar and milk.  Sprinkle yeast over top and swirl with spoon or fingers to combine.  Allow mixture to sit for about 5-10 minutes while the yeast blooms and becomes aromatic.
  2. While the yeast blooms; place a cheese grater on a cool plate (run it under cold water and dry it if it is warm) and shred butter on the side with the largest holes.  Place shredded butter into refrigerator until needed.
  3. With the stand mixer on low add egg, salt and 2 cups of flour.  Once flour is mostly absorbed add 1 cup flour. Turn mixer to medium and knead for 2-3 minutes.
  4. With stand mixer on medium begin adding the butter, a handful at a time as the mixer kneads it in.  (be quick as you do not want the butter to melt, chunks of butter help with the flakey dough).  Once you are done adding butter, remove dough hook and allow dough to rest.  It will be a sticky heap of dough at this point.
  5. Prepare a clean countertop with plenty of flour to prevent your dough from sticking. (Don’t worry, it will all get worked in).  Place dough onto floured countertop and sprinkle flour over top.  Flip dough and quickly form into a floured ball of dough.  Try to touch the dough as little as possible to keep the butter from melting.  Wrap dough in plastic wrap and place in the freezer for 1 hour (or refrigerator for 4 hours to overnight).
  6. Place bread on a clean floured countertop and smack down a bit with your rolling pin.  Roll dough out to a 3:1 rectangle.  The length should be about 3 times the height.  Throughout the preparation process, if the butter peeks through, lightly dust the spot and continue.
  7. Fold dough into 1/3’s like a letter.  Fold left side over, then right side.  You should have 3 layers of dough.  We are creating the flaky layers of the pastry by repeating this step.
  8. Dust the top of dough with flour and flip over.
  9. Roll dough out into a 3:1 rectangle again.  Fold dough into 1/3’s like a letter.  Fold left side over, then right side.  You should have 3 layers of dough again.  Repeat again so you have done this 3 times total (note if you used the ‘by hand’ method in the cook’s notes, this will only be done 1 time after it comes out of the freezer).
  10. Preheat oven to 400°F.  Prepare 2 baking sheets with parchment paper.
  11. Allow the dough to rest in the refrigerator while you prepare the topping ingredients.
  12. In a small bowl combine cooled melted butter and vanilla.  Whisk to combine well.  Set aside.  In another small bowl, combine cinnamon, sugar and salt. Set aside.
  13. Remove dough from fridge and place on a lightly dusted countertop.  Roll out to a 10”x12” rectangle.  Lightly dust with flour and flip dough.
  14. Brush 1/2 of butter mixture over the top of the dough, sprinkle 1/2 of the cinnamon sugar over the top of the dough. Spread cinnamon sugar over the tops using finger tips.  Flip dough and brush the second side with remaining butter mixture and sprinkle the remaining cinnamon sugar over top.  Using a pastry cutter, bench scraper or butter knife cut dough into strips.
  15. Cut dough in half long ways to make two 5”x12” pieces, then cut each piece into twelve 1”x5” strips.
  16. Place strips onto a baking sheet giving them 3 twists as you place them on the sheet.  Chill in the refrigerator for 30 minutes for best results, but if you can’t wait…  Pop them in the oven.
  17. Bake for 15-20 minutes until the dough is flaky and golden brown.
  18. In the meantime prepare frosting; add cream cheese and butter in a large mixing bowl.  Beat with an electric mixer until light and fluffy.  Add sugar, lemon juice, vanilla and salt.  Beat until mixture is light and fluffy, about 5 minutes.  Set aside.
  19. Serve and enjoy!

DONNA'S NOTES

  1. SHORTCUT METHOD:  If the wish to shortcut these for a quick treat, you can substitute puff pastry found in your grocer’s freezer.  Simply dust your counter top with flour, place puff pastry on top. Continue with recipe.
BY HAND METHOD
  1. If you do not have a stand mixer you can:  Add sugar and milk to a large bowl.  Sprinkle yeast over top and swirl with spoon or fingers to combine.  Allow to sit for about 5-10 minutes while the yeast bloom and become aromatic.
  2. While the yeast blooms; place a cheese grater on a plate and shred butter with the largest holes.  Place shredded butter into refrigerator until needed.
  3. Add whisked egg and salt to yeast mixture. Mix with a wooden spoon.  Add flour 1 cup at a time until you are no longer able to mix with a spoon. Total of 3 cups will need to be added.
  4. Roll dough out to a 3:1 rectangle.  The length should be about 3 times the height.  Sprinkle the shredded butter over dough, gently press butter into dough and fold dough into 1/3’s like a letter.  Fold left side over, then right side.  You should have 3 layers of dough.

I mean look at that crisp coating. Who could resist that?

My favorite fried pickles are found at that famous beach-themed, orange-short-wearing sports bar–Hooters! The bar actually originated in my home state of Florida so it makes perfect sense that they would create a fabulous recipe fit for a southern gal.

A southern favorite; fried pickles are crisp and tangy.  The consummate southern starter, the fried pickle begins as a slice is dipped in a seasoned buttermilk mixture, dredged in a tasty coating and deep fried in oil until perfectly golden brown.  They are traditionally served with a horseradish or spicy ranch sauce, but I say why mess with a good thing?  I eat mine as they are.

Have you ever tried fried pickles? Well they come as a surprise.  Chad was completely shocked at the delicious flavor.  He was so thrilled that he made another batch himself and then we devoured them.

Aside from being unbelievably tasty, these are a cinch to make.  Truth be told, my culinary-challenged husband actually prepared the ones in the photo above.  Yep.  They are that simple. Though in his defense he does make a mean French toast.

This 30-minute recipe is sure to please.  They are good for lunch, good for dinner, perfect for breakfast… Good to make just because pickles are on sale.  And always good to make just because the day of the week ends in Y….

  • 1 (16-oz) jar dill pickle slices
  • 1 cup buttermilk
  • 1 large egg
  • 4 dashes hot sauce
  • 1 cup all-purpose flour

Instructions

  1. Preheat about 2-inches of oil in a large (8 quart) pot to 350°F. Prepare a tray with double paper towel stack. Set aside.
  2. In a medium bowl combine buttermilk, egg, and hot sauce. Beat with a fork to combine. Drain pickle juice from pickle jar, add pickles to buttermilk mixture. Stir to combine.
  3. In a separate bowl whisk together flour, paprika, garlic powder and cayenne pepper.
  4. Add about a handful of pickles to flour mixture. Swirl pickles around and make sure they are well coated. Shake off excess flour and drop pickles in hot oil one at a time. Only put 7-8 pickles at a time so the temperature does not drop too much.
  5. Fry pickles for 3-5 minutes until they are golden brown. Remove from oil with a slotted spoon and drain on a tray lined with paper towels.
  6. Serve and enjoy!
