We are a big pumpkin loving family. Except for the fact that we aren’t the biggest fans of pumpkin pie, well maybe not 'we' so much as 'me'. So when I can make a different type of treat that has pumpkin it will always satisfy that inner craving!

One thing that we like to make every year for an alternative to the traditional pumpkin pie is this Classic Pumpkin Cake Roll. It has all the flavors of a pie, but rolled up tightly around a delicious cream cheese filling, I mean who can beat that! I’m a huge frosting gal, so when I can get frosting in each and every bite, I’m in!

Now I know that a lot of people are really nervous about cake rolls, and you REALLY shouldn’t be. In all honesty, they are actually pretty simple, if you can take on a layer cake you can take on this delicious thing.


One bowl is all you need to make this tasty cake. Mix everything together and you pour it all into a parchment lined jelly roll pan. Now I always highly recommend someone having a jelly roll pan in your kitchen! It’s not just good for these cake rolls!

There are so many different uses that you can use your jelly roll pan for...bars, sheet cakes, you name it! It is a multi-purpose pan despite the name jelly roll. But, my all-time favorite use for it has and always will be making yummy cake rolls!

This delicious cream cheese filling is super simple and easy to whip up. The hardest part of this whole dessert is the time that you will wait for it to cool to fill, and to cool to set up. It’s so hard to not want to dig into this right away and just devour the whole darn thing.

So if you want to go a little untraditional yet still classic this holiday season then this Classic Pumpkin Cake Roll is just what you need. It gives you a cake option but still keeping the amazing and ever delicious pumpkin flavor!

HELPFUL TIPS TO MAKE THIS PUMPKIN ROLL:

  • Spray the pan with non-stick spray before adding parchment paper to keep it from sliding around. 
  • Make sure the cake is hot when you roll it up, or it may crack.
  • Use unflavored dental floss to cut perfect slices into the cake roll.

Pumpkin Roll
SERVES 12  |  PREP TIME 25 Min  |  COOK TIME 15 Min

3 large eggs
1 cup granulated sugar
3/4 cup all-purpose flour
2/3 cup pumpkin puree (not pumpkin pie filling)
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Powdered sugar for dusting

Filling:
8 ounces cream cheese, softened
2 tablespoons butter, softened
1 cup powdered sugar
1 teaspoon pure vanilla extract

Preheat oven to 375°F.

Line a 15”x10” jelly roll pan with parchment paper, set aside.

In a medium bowl whisk together your eggs, sugar, flour, pumpkin, baking soda, cinnamon, nutmeg, and ginger until no lumps remain.

Pour the batter into your prepared baking pan and spread it out to the sides.

Bake for about 10-15 minutes or until the top springs back when touched, remove from oven.
Liberally sprinkle the hot cake with powdered sugar. Place a tea towel that is slightly larger than your cake over top. Top with a cooling rack or larger baking sheet on top of that. Hold the stack together firmly and flip the cake over onto the cooling rack. Remove the parchment paper.

While the cake is still hot, fold the towel over the short edge of the cake. Slowly roll up your cake (with the tea towel inside) and leave it rolled until it is completely cooled about 1-1 1/2 hours.

Meanwhile to make your filling beat your cream cheese in a medium bowl until it is light and fluffy.
Add your butter, powdered sugar and vanilla and continue to beat until smooth, set aside.

Carefully unroll your cooled cake roll, remove the towel and spread your filling all over the surface of the cake. Then roll the cake back up tightly. Wrap the cake in plastic wrap and refrigerate until chilled, about 1 hour.

Once chilled, dust with powdered sugar, slice and serve.

How do I love fall?  Let me count the ways:  pumpkin, apple, caramel, cinnamon, cool weather, windows open, pumpkin.  Well fall has officially arrived in Phoenix!  Woot woot!  The weather is changing, it is cool enough to smell the trees and flowers.  A walk in the evening is beautiful and if you live close enough to my house you can catch a whiff of pumpkin wafting out my window.

I can not get enough pumpkin and this cake is just one of the many creations that will be coming out of our Simple Kitchen this fall.  This magical cake is moistand delicious.  Its loaded with delicious fall spices and layered with the most scrumptious cheesecake frosting to ever cross your lips.

It is the first week of November and all I can think of is fall.  As the temperatures in Phoenix finally dip below 90, I am truly craving pumpkin, apples and warm woodsy spices I had a desire, no actually I had a need to enjoy a fall dessert.  I swear the pumpkin was calling to me from the nearly bare shelves at the grocery store.

I give you 4 incredible layers of warm autumn flavors that come together to bring you a taste of fall.  Layer upon layer of warm, spiced flavors that tickle your tongue and sooth your soul.  My 6-year-old and I went crazy on this dessert, although we cut the serving size down quite a bit.  It is so amazing I had to save some for later.  I have a dish in the fridge for breakfast.  Oops.  I meant later.

Pumpkin, caramels, graham crackers, cream cheese, heavy cream, brown sugar, butter and fall spices are in these autumn delights.   Munchkin and I each devoured our parfaits and I know you are going to love them too.

Caramel Spiced Pumpkin Trifle
SERVES 4 | ACTIVE TIME 20 Min | TOTAL TIME 20 Min


 
Caramel Sauce
1 (11-oz) bag caramels, unwrapped
1/2 cup heavy cream

Pumpkin Mousse
4 ounces cream cheese, softened
1 (15-oz) can pure pumpkin, (not pie filling)
1 cup heavy cream
1/4 cup light brown sugar, packed
2 teaspoons ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg

Brown Sugar Whipped Cream
2 cups heavy cream
1/4 cup light brown sugar, packed

Cookie Layer
4 graham cracker sheets
4 tablespoons unsalted butter, melted
2 teaspoons ground cinnamon
2 tablespoons light brown sugar

Prepare caramel sauce: Place unwrapped caramels and cream in a microwave-safe bowl and heat until melted. Stop microwave and stir every 30 seconds. Once you have a smooth mixture, set aside to cool.

Prepare Mousse: Combine ingredients in a medium bowl. Beat with an electric mixer on medium until light and fluffy, about 3 minutes. Place in refrigerator while you prepare the remaining ingredients.

Prepare Whipped Cream: In a tall bowl whip cream with an electric mixer until soft peaks form. Add brown sugar and whip until stiff peaks form (when you lift mixer out of the bowl, cream stands up on the end of the beater). Place in refrigerator while you prepare the next layer.

Prepare Cookie Layer: In a small bowl combine ingredients, smash graham crackers with a fork. Continue mashing until you have one cohesive mixture.

Assemble: Add a heaping tablespoon of cookie mixture to trifle dish. Add a heaping tablespoon of mousse. Add a heaping tablespoon of whipped cream. Pour 2 tablespoons of caramel sauce into dish. Repeat layers. Drizzle final caramel layer on top of trifle for a spectacular presentation.

Chill until ready to serve.

  • This recipe will fill and frost a 2 layer, 9 inch cake or 24 cupcakes (12 with a stacked swirl).
  • It is tempting to use a pre-blended pumpkin pie spice. I would avoid that in this recipe, as the allspice would not work very well with the espresso.

  • Small Bowl I like a variety of mixing bowls and prep bowls and this set has them all.

Pumpkin Spice Latte Buttercream

Pumpkin Spice Latte Buttercream Frosting is a simple recipe for a rich and creamy icing with notes of espresso, pumpkin and the perfect spice mix this one is sure to be a favorite... on everything, including a spoon.

Ingredients

  • 1 teaspoon espresso coffee powder
  • 1 tablespoon International Delight French Vanilla Liquid Creamer
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1/4 cup pumpkin puree
  • 3 cups powdered sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground clove
  • 1/4 teaspoon salt

Instructions

  1. In a small bowl, combine espresso powder and creamer. Stir until the espresso powder dissolves. Set aside.
  2. In a standing mixer fitted with a whisk, cream the butter for 3 minutes. Scrape down the sides of the bowl if necessary. Add pumpkin puree. Mix until combined. Turn the mixer to low and add powdered sugar one cup at a time. Mix until well blended and then increase speed to medium and beat for another 3 minutes.
  3. Add cinnamon, pumpkin pie spice, salt and espresso mixture and continue to beat on medium speed for 1 minute more, adding more creamer as needed until desired consistency is reached.
  4. Enjoy on your favorite dessert, or with a spoon! We especially love it on our Pumpkin Spice Cake and Easy Chocolate Cake.

Make sure that you don't overfill the pie with filling. I know you'll want to use every last drop of that delicious pumpkin pie filling, but if you fill it too high you risk the filling spilling as you carry the pan to the oven or overflowing around the crust. Depending on how deep your pan is, you might not need to use all of the filling - it spreads a teeny bit as it's baked.

Pumpkin Slab Pie

Pumpkin Slab Pie is the perfect fall dessert for a crowd! Creamy pumpkin pie on top of a buttery homemade crust, top it with whipped cream or serve a la mode!

Ingredients

For the Pie Crust
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 1/2 cups + 2 TBS (3 sticks + 2 TBS) cold butter, cubed
  • 3/4 cup ice water
For the Pumpkin Pie Filling
  • 1 29 oz can (or 2-15 oz cans) pumpkin puree (not pumpkin pie filling)
  • 2 cups evaporated milk
  • 1 1/2 cups brown sugar
  • 1/2 cup sugar
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1 tsp salt
  • 4 eggs
For the Egg Wash
  • 1 egg
  • 1 TBS water or milk

Instructions

How to cook Pumpkin Slab Pie

To Make the Pumpkin Pie Crust
  1. Mix the flour, salt and sugar in a large bowl. Add in the butter pieces. Using a pastry cutter (or two forks - though its much harder), cut the butter into the mixture until it resembles coarse crumbs, with some pea sized pieces.
  2. Drizzle the cold water in about 1 tablespoon at a time and stir with a rubber spatula. Continue kneading the dough together with your holds until the flour and butter are fully incorporated together into a nice dough. It shouldn't be too sticky.
  3. Separate about 1/4 of the dough (this will be for the top decorative leaves if you want them. Flatten each section into 1 inch thick discs. Wrap in plastic wrap and place in the fridge for about 2 hours.
To Make the Pumpkin Pie Filling
  1. In a large bowl combine your pumpkin puree, evaporated milk, brown sugar, sugar, cinnamon, nutmeg, ginger, cloves, salt and eggs. Stir until mixed. Cover the bowl and place in the fridge till needed.
To Make the Pumpkin Slab Pie
  1. Remove the larger piece of pie crust from the fridge. Roll that out evenly into an approximately 18x13 rectangle. Place the pie crust into a greased 10x15 jelly roll pan (it should be about 1inch thick so you can fit more of the filling) Smooth the crust so it fits into the corners and crimp the edges with your fingers.
  2. Pour the pumpkin pie filling into the crust. Carefully place the pie in the oven to bake, make sure not to spill any of the filling. Bake for 35-45 minutes until the middle is barely jiggly.
  3. Remove from oven and allow to cool on a wire rack completely.
  4. Roll out the second disc of pie crust to be about 1/8 inch thick. Using leaf or pumpkin shaped cookie cuters, cut into the shapes. Cut veins with a sharp knife if desired. Brush each with egg wash (beat egg and water together in a small bowl). Place on a baking sheet and bake for about 10 minutes or until lightly browned. Remove and place on pie when serving.
  5. Serve pie with fresh whipped cream.
  6. Cover any leftovers and store in the fridge for 5-6 days.
