Raspberry Lemonade Pound Cake

Quite possibly my favorite cake of all time.  We brought this dessert to a family get together recently It is bursting with lemon and raspberries!  It all starts with the zest of 4 lemons.  To get every flavorful drop from the lemon I 'peeled' them and then mixed the peel with sugar to release every scrumptious drop of lemon oil.  Then the juice of those lemons are mixed in.

The result is the most moist and tender pound cake you have ever eaten, bursting with lemon flavor.  Ribbons of lemon zest run throughout the cake and fresh raspberries bits fill every bite.

This cake was inspired by the Cherry Limeade Cake that we posted last week.  An awesome combination of flavors.

Our dinner party would not have been the same without this incredible contribution and I kid you not, when I say that after hopes and plans for a second piece of this cake, I nearly shed a tear when I was handed the empty plate to take home.

Raspberry Lemonade Pound Cake

Bursting with the full flavor of 5 lemons, this Raspberry Lemonade Pound Cake is sure to be on your menu again and again! The recipe is easy to follow and one to keep in your family recipe file.
prep time: 30 minscook time: 1 hour and 15 minstotal time: 1 hours and 45 mins

Ingredients

  • 3 cups granulated sugar
  • 1 1/2 cups (3 sticks) unsalted butter, room temperature
  • 1/4 cup fresh grated lemon zest (about 3-4 large lemons)
  • 5 large eggs, room temperature
  • 3/4 cup fresh lemon juice (about 3-4 large lemons)
  • 3 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 2 teaspoons baking powder
  • 12 ounces fresh raspberries, washed and drained
GLAZE
  • 2 cups powdered sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh grated lemon zest
  • 12 ounces fresh raspberries, washed and drained

Instructions

  1. Preheat oven to 325°F.  Butter and flour a 12-cup Bundt pan.
  2. In a large bowl, use an electric mixer to combine lemon zest and sugar.  The sugar will become yellow and the mixture will smell aromatic when it is ready.  Add butter, mix until mixed.  Add eggs beat until well combined.  Sprinkle salt and baking powder into batter and beat until combined.  Add flour 1 cup at a time, alternating with 1/2 of lemon juice.  Add ½ of the raspberries (about 6 ounces), stir to combine. 
  3. Pour batter into prepared Bundt pan.   Sprinkle the reserved raspberries over top and gently press into the batter with a spatula (this will help keep the raspberries from all ending up on the top).  Tap pan on the counter several times to release air bubbles.  Bake 1 hour 15 minutes or until a thin sharp knife comes out of the center clean.  Place on a wire rack to cool for 20 minutes.  Place a plate over the pan and flip cake onto plate to continue cooling completely.  You may have to tap pan a few times with a knife to release from pan.
  4. While cake is cooling prepare the glaze.  Combine sugar, lemon juice and zest.  Beat with an electric mixer until well combined.  Glaze should be the consistency of corn syrup, add more powdered sugar (a tablespoon at a time) if necessary to thicken glaze.  I added about 10 raspberries to the icing to make it pink, reserved the rest for garnish.
  5. Drizzle the glaze over the cooled cake.  Garnish with reserved raspberries.
  6. Serve and enjoy!

You may have noticed I have a bit of a thing for summer berries. I wait all year for the season to get here and when it finally does. I go crazy with berries. They go with every breakfast, snack and dessert.  I am thinking about incorporating them into dinner too.

Truth be told my I do have favorites. Strawberries, blueberries and then raspberries. Blackberries are kind of the weird cousin that only gets to tag along once in a while.

I like them, but the can have a more 'earthy' flavor than I prefer. The earthiness can really overwhelm the other flavors so I leave them out more times than not.

Last year I made my first fruit salsa. Pineapple Salsa and it was insanely delicious. I couldn't get enough. Then I created Strawberry Habanero Everything Spread. Oh my gosh. I can not tell you how amazing the sweet dips were when dipped with salty tortilla chips.

So this year I decided to try something new. A completely sweet fruit salsa served on tortilla chips.


It all starts with a triple berry mixture that is dressed in a dazzling raspberry sauce. It is sweet and tangy and addictively tasty. We couldn't stop eating it. We dipped it with chips. Then once it sat in the refrigerator for about an hour it because this perfect everything salsa. Perfect for dipping or on top of oatmeal or ice cream.  {{swoon}} I know you are going to love it too.

Summer Berry Fruit Salsa

Summer Berry Fruit Salad is a simple recipe with a glorious dressing. The berries are left to macerate in the dressing and the result is a sweet and tangy perfectly scoopable summer sensation! This fruit salad is great to take to potlucks and picnics. Just be sure to bring the recipe because everyone will be asking for it.

Ingredients

  • 1 pound fresh strawberries, diced 
  • 5 ounces fresh raspberries 
  • 9 ounces fresh blueberries 
  • 1/4 cup seedless raspberry jam 
  • 2 tablespoons granulated sugar
  • 2 tablespoons fresh lemon juice 

Instructions

  1. Combine jam, sugar and lemon juice in a small measuring cup. Whisk to combine ingredients. Set aside. 
  2. Combine fruit in a large bowl. Pour dressing over fruit. Stir until fruit is completely coated. 
  3. Serve immediately or place in the refrigerator for 1 hour-overnight to allow the flavors to meld.

DONNA'S NOTES

  1. The longer the fruit sits the more juice it will make. If you want a dry and crisp salsa I recommend serving it immediately. If you prefer your fruit soft and macerated allow it to sit in the refrigerator. I enjoyed it both ways.
  2. I served with sweet potato tortilla chips and also corn tortilla chips. The saltier corn chip was a nice contrast to the sweet salsa.

Sitting in the back yard on a hot summers day, sipping away on a sweet Summer Berry Sangria while you enjoy the company of your loved ones.

I can hardly think of a better summer moment.  Chad and I really enjoy gatherings with our family and friends: the kids running around in the back yard while I (wo)man the grill.

I prepare an array of burgers, sides, icy treats and cold summer drinks.  A feast fit for our crew as we come together to celebrate and make memories.

Nothing could be sweeter than your favorite flavors coming together to create your new favorite summer cocktail.

I know some people love summer fun drinks, but want to avoid the alcohol. I tell you...  Whip this recipe up with white grape juice and 7-Up. You will thank me.


You can use nearly any kind of fruit to garnish a Summer Berry Sangria. While some recipes call for the addition of rum, brandy, vodka or limoncello, we created a simple sangria.

Halve the sugar to 1/4 cup if you prefer your drinks lightly sweet.

A pitcher full of your new favorite sangria couldn't be more perfect.  It is packed full of macerated summer berries and lemons, a sparkling moscato wine makes the perfect sangria.

But, you better have a double batch ready.  This is so good it will disappear in a blink!
You can create tons of variations with this simple recipe.

So, I decided I wanted to create a red wine sangria next and I totally got myself sidetracked. We wanted to create the perfect Sangria with Merlot.

It is truly spectacular and we created several sangria recipes, many frozen treats and then...  The magic happened. We created the most magnificent ice cream we have ever tasted.


It all starts with a thick, rich Merlot ice cream created with a custard base.  As if that isn't perfect enough; and believe me it is rich, creamy and flavorful.

We marinated strawberries, raspberries and blueberries in entwine Merlot and then cooked it the most heavenly jam I have ever tasted.

The Merlot berry jam is swirled through out this adults only ice cream.

It is a divine treat.  The bright berry sweetness bursts in your mouth, followed by the fruity Merlot wine flavor.  Rich and creamy, decadent and summery all in one perfect bite.

Helpful Tips to make Summer Berry Sangria :

  • For a non-alcoholic version, substitute 1/4 cup sugar and moscato with a 2 bottles of sparkling grape juice or half white grape juice half 7-Up. 
  • Use wine you enjoy drinking or something inexpensive rather than something you would not enjoy.
  • If you prefer your cocktails less sweet halve the sugar to 1/4 cup.
  • You can switch things up by changing out the fruit to peaches, mango, berries, apples or any combination you prefer.
  • Make this alcohol free with white grape juice and 7-Up.

What you will need to make Summer Berry Sangria:

  • Large Pitcher- We have a few high quality long-lasting well made drink ware and serve ware. Like this 80-ounce pitcher; which is great for everyday use.
  • Fun wine glasses - I love stemless wine glasses and these are our favorites.

Ingredients

  • 1 pound strawberries, hulled and quartered
  • 1 (6 ounce) package raspberries
  • 1 (6 ounce) package blueberries
  • 1 (6 ounce) package blackberries
  • 1/2 cup granulated sugar
  • 2 bottles your favorite Moscato wine
  • 1/2 lemon, sliced

Instructions

  1. Place berries in large pitcher and sprinkle with sugar.  Stir to combine.  Allow to berries to soften and release their juices for about 30 minutes.
  2. Pour wine into pitcher, add lemon slices.  Stir and refrigerate overnight.
  3. Serve and enjoy!

If you are looking for a tasty way to beat the summer heat, the Raspberry Lemonade Yogurt Ice Pop is just the perfect treat.  Chad and I have a deep love and appreciation for all things lemon.

Whether its sweet treats, savory eats, household remedies or beauty treatments we are always happy to use lemon.  We always have a fruit basket full of lemons and a good portion of the year we are fortunate enough to have a tree full of lemons.

As I was preparing these fabulously flavorful frozen treats, all I could think about was biting into one.  Savoring the layers of tart lemon juice and lemon zest and contrasting sweet raspberries perfectly combined with smooth and creamy protein packed yogurt.

I very carefully constructed each popsicle.  Took my time, I mean look at those raspberries, all with the end game in mind.  These were mine!  Chad doesn't care for popsicles that much and Munchkins palette isn't quite developed enough to really enjoy lemon yet.  This creation was all for me. 

That was until Chad came back from the photo shoot, I don't know what came over him.  Shortly after the photo shoot was over I didn't have any more ice pops.  I had 10, now I have 1.  He had commandeered the entire tray, except the one in my mouth.  So nice of him to save me one.

All kidding aside, Chad loved these ice pops so much that he declared these "his popsicles".  We have a freezer full of ice pops for the munchkin and I.  But these ones, these are for Chad.  So, being the ever resourceful woman that I am...  I made another batch.  Thankfully raspberries are on sale so I can really stock up on these ice pops.  Low calorie, healthy treat.  The perfect dessert for us to eat!

You might want to hide these though.  Seriously, behind the vegetables or something.

Raspberry Lemonade Yogurt Ice Pops

Raspberry Lemonade Yogurt Ice Pops are the perfect summer treat! They are refreshing and packed with vitamin c, antioxidants and power boosting protein. Just 5 ingredients and a few minutes to pop these in the freezer.

Ingredients

  • 1/4 cup granulated sugar
  • 1 tablespoons lemon zest (zest of one lemon)
  • 1/2 cup fresh lemon juice (about 2 lemons juiced)
  • 1 1/2 cups plain yogurt
  • 6 ounces fresh raspberries, cleaned (large ones cut in half)

Instructions

  1. Evenly distribute raspberries between ice pop molds.  Set aside.
  2. In a medium bowl, combine lemon zest and sugar.  Smash lemon zest with a fork until all sugar is coated in lemon.  Add lemon juice and yogurt.  Stir until well combined.
  3. Pour into molds.  Cover with aluminum foil and add sticks.  Freeze for 4-24 hours.
  4. Enjoy!

As I am sure you remember I love my coffee and always have creamer on hand, so it is super convenient to use in my recipes.

Helpful Tips to make Summer Berry Cheesecake Salad:

  • Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way. Trust me on this one.
  • To make this ahead: prepare the cheesecake mixture and refrigerate in a bowl. Mix all of the fruit in a large bowl and refrigerate. Before serving, drain any excess liquid from the fruit and then fold the cheesecake filling into the fruit. Serve and enjoy!
  • If you have to substitute for the creamer: cream, powdered sugar and vanilla would be the best swap. 1/2 cup heavy cream, 2 tablespoons powdered sugar and 1 teaspoon vanilla extract.

  • Electric Hand Mixer - I have had this one in my kitchen for ever (it seems like) at least 8 years.

  1. Prepare berries and lay them on paper towels to dry while you prepare the cheesecake mixture.
  2. In a medium tall bowl, using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up. 
  3. With mixer running slowly add creamer to the cream cheese. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese. Continue until all of the creamer has been added to the cream cheese. Whip until smooth.
  4. Combine berries in a large bowl. Gently fold in cheesecake mixture until completely combined.
  5. Chill until ready to serve or serve immediately.
  6. Enjoy!

DONNA'S NOTES

  1. Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way. Trust me on this one.
  2. If you have to substitute cream for the creamer, powdered sugar and vanilla would be the best swap. 1/2 cup heavy cream, 2 tablespoons powdered sugar and 1 teaspoon vanilla extract.
