I have made this cake 5 times already and it has received some of the best reviews ever. The comments are truly insane. My favorite comment was "it tastes like a slice of sunshine". Yes! That is absolutely the best description I could have asked for.

It all starts with a layer of fresh whipped cream topped with a layer of lemon cloud filling and then a layer of shortbread cookies. After loading it up a second time the cake is popped in the freezer and then topped with whipped cream frosting.

One of our fabulous readers messaged me to tell me that their favorite way to stabilize whipped cream for frosting was to use dry pudding mix (instead of shortening or gelatin). I jumped on that quick and easy method and incorporated that tip into the creation of this icebox cake. I have to tell you that this cake features the best whipped cream frosting I have ever eaten!

After all the testing and sampling, I have one Lemon Cloud No-Bake Ice Box Cake left in the freezer. It's destiny is a welcome gift for our new next door neighbors. I am sure they will love it as much as we do.

Lemon Cloud No-Bake Ice Box Cake

Lemon Cloud No-Bake Ice Box Cake is a fun twist on a classic recipe. This cake is light, bright and utterly luscious. It is bursting with lemon flavor and is prepped in just 25 minutes. With layer upon layer of scrumptious flavors, this is your go to cake this summer. Perfection without ever turning the oven on.

Ingredients

  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup fresh lemon juice (2-4 lemons)
  • 2 tablespoons fresh lemon zest (optional)
  • yellow food coloring (optional)
  • 4 cups heavy cream (divided)
  • 1 cup powdered sugar (divided)
  • 1 (10 ounce) package Lorna Doone shortbread cookies
  • 1 tablespoon Jello Instant Cheesecake pudding mix (dry)

Instructions

  1. In a tall bowl (or in the bowl of a stand mixer fitted with the whisk attachment) whip 2 cups heavy cream with an electric mixer until you can start to see a trail of the mixer through the cream.  Add 1/2 cup powdered sugar. Whip until stiff peaks form.  (In other words when you turn off the blender and lift the beaters out of the cream, the cream stand up on the end of the beater).  Set aside.
  2. Meanwhile, in a medium bowl combine milk, lemon juice and zest. Add a few drops of food coloring if desired to achieve a bright lemony color. Stir until combined.  Add 1/2 of whipped cream mixture to bowl. Reserve the remaining whipped cream for the filling.  Fold whipped cream into lemon filling. Set aside.
  3. Line a 9 x 5-inch baking dish with parchment paper or plastic wrap. Layer 1/2 of whipped cream into pan. Smooth cream into an even layer on the bottom of the pan. Spoon ½ of lemon mixture into pan, smooth layer.  Top with a layer of cookies, breaking them if necessary to make them fit.
  4. Then add the remaining whipped cream, smoothing out evenly.  Add the remaining lemon mixture and top with a layer of cookies, breaking them if necessary to make them fit.  Cover with plastic wrap and freeze for 3-4 hours (or overnight).
  5. Before serving combine 2 cups heavy cream, 1/2 cup powdered sugar and 1 tablespoon pudding mix in a tall bowl (or in the bowl of a stand mixer fitted with the whisk attachment) whip with an electric mixer until stiff peaks form.  (In other words when you turn off the blender and lift the beaters out of the cream, the cream stand up on the end of the beater).
  6. Remove cake from freezer, use the loose edges of wrap to remove from the pan. Flip cake over and remove wrap. Frost cake with whipped cream frosting and decorate cake with candied lemon slices or fresh lemon zest.
  7. Serve and enjoy!

DONNA'S NOTES

  1. For a more mild lemon flavor, skip the lemon zest. If you like a lemon burst, use the lemon zest in the cake.

Now if you will excuse me, I need to take a moment to collect my thoughts (and be alone with the last piece of this divine dessert).

My family has been eating Skippy Peanut Butter as long as I can remember. We are a peanut butter household. Whether is it a simple pb&j sandwich, an apple and peanut butter snack, Extreme Peanut Butter Fudge Brownies that leave this house by the truckload or just a spoonful for the heck of it, we our Skippy. Truth be told I have a really great supply of Skippy on hand at all times.  You know, back ups in case we run out and then we have back ups for our back ups just to be sure. LOL

So, I got to work on this fabulous Peanut Butter Caramel No-Bake Ice Box Cake. What is a better flavor combination than peanut butter and chocolate? Peanut butter, caramel and chocolate. Oh my goodness.  It is insanely delish. Layer upon layer of fabulous flavors. I mean look at those scrumptious layers. Peanut butter caramel cream, fresh whipped cream and chocolate graham crackers topped with chocolate, caramel and nuts (because this girl likes some crunch).

This simple recipe is no-bake and only takes a handful of ingredients. Chill it for a few hours or overnight. We like to store it in the freezer and it is the perfect make ahead dessert. Scrumptious and wholly impressive.

Peanut Butter Caramel No-Bake Ice Box Cake

This no-bake cake starts with a flavor explosion of peanut butter, caramel and chocolate. What could possibly be better? How about a simple recipe with mind blowing results? This fabulous cake is stacked with layer upon layer of creamy peanut butter filling, cream and chocolate cookies. After a trip to the fridge the layers become this incredibly moist and creamy cake... all without ever turning the oven on.

Ingredients

  • 2 cups heavy whipping cream
  • 1 3/4 cups powdered sugar, divided
  • 1 teaspoon pure vanilla extract
  • 8 ounces cream cheese, softened
  • 1 (15 ounce) jar creamy peanut butter
  • 10-15 chocolate graham crackers
  • 4 ounces chocolate shell ice cream topping (check out our homemade version here)
  • 2 tablespoons caramel topping
  • 1/4 cup honey roasted peanuts, chopped

Instructions

  1. In a tall bowl whip heavy cream with an electric mixer until you can start to see a defined trail through the cream. Add vanilla and slowly add 3/4 cup powdered sugar. Whip until stiff peaks form. (In other words when you turn off the blender and lift the beaters out of the cream, the cream stand up on the end of the beater). Place in the refrigerator while you prepare the remaining ingredients.
  2. To prepare the filling: Combine cream cheese, peanut butter and 1 cup powdered sugar in a large mixing bowl. Beat with an electric mixer until light and fluffy (about 3 minutes). Fold in 1/2 of the whipped cream until it is completely incorporated. Set aside.
  3. Line a 9 x 5-inch baking dish with parchment paper or plastic wrap. Layer 1/3 of the peanut butter cream on the bottom of the pan. Smooth into an even layer.  Add 1/3 of whipped cream on top of the peanut butter cream and use spatula to smooth into an even layer. Top with a layer of graham crackers, breaking them if necessary to make them fit.
  4. Repeat the layers 2 more times, ending with graham crackers. They will slightly peek over your baking dish.
  5. Cover and refrigerate 3-4 hours or freeze for 1-2 hours.
  6. Remove cake from refrigerator or freezer, invert pan onto a plate. Pour chocolate shell topping onto cake (starting at one end and working to the other).  While you are pouring, use an offset spatula to smooth and help the chocolate drip down the sides. Keep in mind the chocolate will harden so you must work fast.
  7. Drizzle the chocolate top with caramel and sprinkle with chopped peanuts.
  8. Refrigerate until ready to serve or serve immediately.
  9. Enjoy!

Helpful Tips to Make Lucky Charms No-Bake Icebox Pie:

  • The green crust is especially fun for St. Patrick's Day, but the rest of the year you can leave out the marshmallows and use 4 cups of cereal without the marshmallows for a more beige color crust.
  • The longer the pie sits in the freezer, the softer the marshmallows will become.

What you will need to make Lucky Charms No-Bake Icebox Pie:

  • Electric Hand Mixer - I have had this one in my kitchen forever (it seems like) at least 8 years.
  • 9" Pie Plate  - Can you ever have too many pie plates? I love these for plates for a breading station too. Egg in one, breading in another. So perfect!
  • Cereal marshmallows -If you don't feel like sorting the cereal grab a bag of marshmallows!

Lucky Charms No-Bake Ice Box Pie

Lucky Charms No-Bake Ice Box Pie is Magically Delicious! This fairytale pie all starts with a Lucky Charms pie crust topped with an enchanted confetti cloud pie filling. This simple recipe is unlike anything you have ever had before. The real magic happens in the freezer.
prep time: 8 hour and 30 MINScook time: total time: 8 hours and 30 mins

Ingredients

  • 4 cups Lucky Charms Cereal (marshmallow and cereal mixture)
  • 8 tablespoons unsalted butter, melted
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 8 ounces cream cheese, softened
  • 1 1/2 cups marshmallow fluff
  • 2 1/2 cups Lucky Charms marshmallows, divided

Instructions

  1. Add 4 cups Lucky Charms cereal to the bowl of a food processor. Pulse until the mixture is fine crumbs. Slowly pour melted butter in through the feed tube. Pulse until combined and crumbs are completely moistened.
  2. Pour the crumbs into a 9” pie plate and press mixture onto the bottom and around the sides to form a pie crust. Place in the freezer while you prepare the filling.
  3. Whip heavy cream and powdered sugar with an electric mixer, in a tall bowl. Whip until stiff peaks form. (In other words, when you turn off the mixer and lift the beaters out of the cream, the cream stand up on the end of the beater). Place the whipped cream in the refrigerator while you prepare the remaining ingredients.
  4. Combine the cream cheese and marshmallow fluff in a large mixing bowl. Beat with an electric mixer until light and fluffy, about 3 minutes. Fold in 1/2 of the whipped cream and 1/2 cup Lucky Charms marshmallows until completely incorporated. Pour into the chilled pie crust.
  5. Smooth the filling into an even layer with a spatula. Pour the remaining whipped cream over top or you can pipe it into a decorative look. Sprinkle the 2 cups of remaining marshmallows around the edge of the pie. Freeze for 8 hours or overnight. Transfer to the refrigerator or allow to set at room temperature for 30 minutes before serving.

What is a strawberry icebox cake?

If you combine fresh summer strawberries with a light and fluffy vanilla whipped cream frosting and layer it with graham crackers, you have a no-bake strawberry shortcake cake.

It's one of our favorite no-bake summer icebox cakes. And, it's always a hit at barbecues and potlucks.

It takes only a few simple ingredients to create this no-bake dessert recipe but it looks like you spent hours putting it together.

The finished icebox cake goes in the freezer for 3 to 4 hours. That makes the graham crackers softer so the whole thing actually tastes like there are layers of cake between the strawberries and fluffy cream filling.

Tips for making Strawberry Icebox Cake

Homemade whipped cream really makes this icebox cake taste amazing. But, if you are pressed for time, you can use a frozen whipped topping instead.

The taste will be very similar and you'll be able to save a few minutes on a busy day.

If you do decide to make your own homemade whipped cream topping, adding 1-2 tablespoons of dry pudding mix to whipped cream helps to stabilize it.

Icebox cake variations

There are so many different types of icebox cakes you can make.

This strawberry icebox cake is one of my favorites. but, if you don't have strawberries, you can easily use another type of berry like raspberries, blackberries, or blueberries.

Or, if you prefer, you can use sliced peaches instead of berries. If you want a chocolate strawberry icebox cake, you can use a chocolate pudding mix.

Or, why not try layers of bananas if you decide to use chocolate.

Traditionally, a strawberry icebox cake is made with graham crackers.

But, you could also make it with Nilla wafers for a slightly different taste. Or, if you want a strawberry icebox cake with ladyfingers, you can substitute those as well.

If you want to up the presentation of your strawberry icebox cake just a little bit, why not drizzle a chocolate ganache over the top? Chocolate and strawberries just go so well together.

Can I make this sugar free?

So many people are watching their sugar intake and thankfully, you can reduce the sugar content in this strawberry icebox cake very easily.

And, you can also choose low-fat whipped topping to cut the fat content if you're concerned about that.

Instead of traditional instant pudding, choose a sugar-free version.

And, look for a confectioner's sugar substitute that is made with stevia. Reference the package for the substitution ratio. But, the end result should be quite good.

Do I need to invert this cake?

While I love the way it looks when you invert it, you don't have to.

If you prefer, you can simply layer the ingredients in a 9x5 pan and serve it that way. If you have a glass 9x5 pan, the presentation is gorgeous when you can see the layers through the glass.

If you have a steady hand, you can create this icebox cake on a cake platter.

Simply make the layers and alternate with graham crackers, piped in layers of the whipped filling, and layers of sliced strawberries. It's a beautiful dessert that really looks like it took hours to prepare.

Strawberry Icebox Cake with layer upon layer of cookies, cream, and luscious strawberries make up this insanely simple and delicious no-bake strawberry cake.

Ingredients

  • 1 pound fresh strawberries, cut into bite size pieces
  • 1/4 cup granulated sugar
  • 2 cups heavy cream
  • 1 tablespoon vanilla extract
  • 2 cups powdered sugar
  • 8-10 graham crackers
  • 2 tablespoons vanilla pudding mix, unprepared

Instructions

  1. Reserve a handful of strawberries for garnishing the top of the cake.  Place the remaining strawberries in a large bowl.  Sprinkle granulated sugar over top.  Stir to combine and allow to sit.
  2. In a tall bowl whip the heavy cream with an electric mixer until you can start to see a trail of the mixer through the cream. Add the vanilla and 1/4 cup powdered sugar. Whip until stiff peaks form.  (In other words, when you turn off the blender and lift the beaters out of the cream, the cream stand up on the end of the beater).  Set aside.
  3. Line a 9 x 5-inch pan with plastic wrap use enough to have excess that you can wrap over the top.   Layer 1/3 of the whipped cream into the pan.  Spoon ½ of the strawberries on top of the whipped cream, evenly.  Top with a layer of graham crackers, breaking them if necessary to make
  4. Then add another 1/3 of the whipped cream, smoothing it out evenly with a spatula.  Add the remaining strawberries evenly over the whipped cream.  Top with a layer of graham crackers, breaking them if necessary to make them fit.  Pull the excess plastic wrap over the top to cover. Freeze for 3-4 hours.
  5. Meanwhile, add the remaining 1 3/4 cups powdered sugar, pudding mix to the remaining whipped cream.  Whip until it comes together. Refrigerate until ready to use.
  6. Remove the cake from freezer, unwrap the top of the cake and invert pan onto a plate. Remove the plastic wrap and frost with the whipped cream icing and sprinkle remaining strawberries on top.  Freeze until ready to serve.  Run your knife under hot water to warm the knife.  Dry if necessary, cut cake.  The knife should slide through the cake more easily.  Repeat as necessary.
  7. Serve and enjoy!
DONNA'S NOTES
  1. Homemade whipped cream really makes this icebox cake taste amazing. But, if you are pressed for time, you can use a frozen whipped topping instead. The taste will be very similar and you'll be able to save a few minutes on a busy day. If you do decide to make your own homemade whipped cream topping, adding 1-2 tablespoons of dry pudding mix to whipped cream helps to stabilize it.

I am a lemon fanatic.  I really should own a citrus company.  Looking to make a fabulous summer treat for your get together?  This Lemon Burst Pound Cake is exactly what you need.  It is loaded with lemon flavor and a little something extra to give it a punch.

I can’t get enough lemon. Lemon is light and refreshing. I do have quite a lemon “thing.” If you’ve seen our Lemon Love Pinterest board with over 800 pins, you may have gotten a clue about my obsession. While everyone else clamors for chocolate, I would be more than happy with a lemon treat or a refreshing lemonade.

This Lemon Burst Pound Cake is loaded with lemon flavor from lemon juice and lemon zest. Almond extract really gives it a boost for brightness and a fabulous flavor complement. It was so good that it disappeared before I could hide some for later. Oh well—guess I’ll have to make more!

    Best Ever Lemon Burst Pound Cake

    Ingredients

    • 9 tablespoons unsalted butter, room temperature (divided)
    • 4 tablespoons powdered sugar, divided
    • 2 large lemons, zested and juiced (about 2 tablespoons zest and 1/2 cup juice)
    • 1/2 cup whole milk
    • 1 1/2 cups all-purpose flour
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon kosher salt
    • 1 1/2 cups granulated sugar
    • 3 large eggs, room temperature
    • 1 teaspoon pure almond extract

    Instructions

    1. Preheat oven to 325°F.
    2. Prepare a 9”x5” loaf pan by brushing with 1 tablespoon butter and then sprinkle with 2 tablespoons powdered sugar and shake the pan back and forth to coat. Shake excess into sink. Set aside.
    3. Combine lemon and milk in a small bowl. I like to use a 1 cup measuring cup; pour in lemon juice and then add milk. Set aside.
    4. Combine flour, baking soda and salt in a medium bowl and whisk to combine. Set aside.
    5. In a medium bowl, combine lemon zest and sugar. Mix with an electric mixer on low until all of the sugar is coated in the oils from the lemon zest. Add the butter and beat until light and fluffy, about 3 minutes. Add eggs and almond extract. Beat with mixer until well mixed. Add milk mixture and beat until you have a smooth mixture.
    6. With the electric mixer on low, add flour and mix until combined. Do not overmix.
    7. Pour the batter into the prepared pan and bake for 50-60 minutes until a toothpick comes out clean. Allow to cool in baking pan for 10 minutes, then turn out to a cooling rack and allow to cool completely (or serve immediately).
    8. Sprinkle with the remaining 2 tablespoons of powdered sugar.
    9. Serve and enjoy!
