is just the simple side you have been looking for Chicken Rice Simple Side Dish

Do you remember those side dish pouches? I pretty much served every meal with one. Let's be honest here. I haven't always been such a fabulous cook and for a long time it was just Chad and myself. So I would grab some fettucine alfredo, butter pasta, and rice sides which were perfect with just about everything.

But then once I embraced being creative in the kitchen I started developing my own easy side dishes that are just as easy as that package was and tastes sooo much better.

After making my Chicken Rice as a simple side for the 1 millionth time, Chad asked me if I ever shared it on our website. "Of course not" I replied. "It is so easy....  that our readers will love it!" I realized as I was in the middle of answering him.

Well, that said. This is so easy and perfect as a side dish or add chicken and veggies on top to create your homemade rice bowl. Simple and delicious is the name of the game and this side dish is everything you could want it to be.

Cauliflower is one of our favorite fall vegetables. There are so many different quick ways to prepare it.

Have you ever made my Potato and Cauliflower Mash? This is a fabulous dish and it tastes and feels (texture) just like mashed potatoes.

I love knowing that I can prepare healthy vegetables in an air fryer. It's such a versatile small appliance.

Have you tried any of my other air fryer recipes? These air fryer chicken breasts (boneless) are easy to make, and a healthy way to cook chicken to juicy perfection.

Air Fryer Corn on the Cob is another way to cook vegetables in an air fryer. It's a quick, easy, and tasty side dish for any summer meal.

Air Fryer Cauliflower - Tips for Success

This recipe uses a combination of cauliflower, olive oil, and seasonings. It takes only a few minutes to make and can be topped with your favorite vegetable toppings.

You can also season with garlic powder, garlic salt, red pepper flakes, etc.

The recipe can be doubled or tripled based on the size of your air fryer. You don’t want to overcrowd the air fryer or the air can not circulate around the cauliflower.

    Fried cauliflower calories
This dish is basically just cauliflower, a spritz of olive oil and seasonings. So, there are very few calories in it.

Depending on how you prepare it, each serving will contain between 80 and 110 calories.

    Tools needed

    How to cut cauliflower florets

By using florets, you are letting the air circulate around the food more easily than if you used larger pieces.

Don't be intimidated by cutting a head of cauliflower; it’s easy to do!

    1. Remove outer leaves. The first step is to remove all of the large leaves to expose the stem.
    2. Cut large pieces from the head. Then, you will cut around the cauliflower stem using a sharp knife.
    3. Break the larger pieces of cauliflower into small florets. Then, use the knife to cut the cauliflower into smaller florets. Remember to remove the larger stem pieces.

Can you make this recipe with frozen cauliflower?
Yes, this recipe works just as well with frozen cauliflower and it will save you having to cut it into florets first.

However, don't allow the frozen vegetables to thaw first. You will have better results making air fried cauliflower with frozen vegetables.

Just place it in the fryer as you would if it wasn't frozen. The final results will be crispy and golden.

Can you cook cauliflower rice in an air fryer?
Yes, you can make air fried cauliflower rice. It's very easy to do and can be used as the base for your favorite fried rice or eaten as is.

All you need to do is to place the riced cauliflower in the air fryer and cook it for about 10 minutes at 370°F. Shake it after 5 minutes to be sure it's equally distributed.

Since riced cauliflower can be bigger or smaller depending on how you rice it, you will need to test it at this point to see if it's done. If it isn't, cook for an extra 2 to 5 minutes.

Remember to shake it and check after each 2-minute interval to check for doneness.

If you want to add other vegetables to your rice, be sure to cook them first since they will likely have a longer cooking time.

    What goes well with cauliflower?

Cauliflower is a very versatile side dish and can be served with many different main dishes.

You may want to serve it with my smoked meatloaf. It's crispy on the outside and juicy inside.

Or, this Crock Pot chuck roast is a perfect choice for Sunday dinner. It's tender, juicy, and mouthwatering.

Of course, dipping vegetables always makes them more fun to eat. So, if you are looking for sauces to dip your air fryer cauliflower into, here are a few simple ideas that you can try.

    Enjoy!

    Chicken Enchilada Casserole

If you're missing your favorite Mexican restaurants, you can easily make a few of your cravings at home. Just grab a bag of tortilla chips, your favorite toppings, and this chicken enchilada casserole.

This chicken enchilada recipe uses a red enchilada sauce. You can buy one at the store if you're pressed for time. Or, my red enchilada sauce is easy to make for this recipe.

You won't believe how simple it is to make. And, you can have it ready to serve in only 20 minutes. It makes enough for two 16 ounce cans that you'd buy at the store. So, it's easy to make extra.

has all the delicious taste you love from your favorite chicken enchilada recipe without Chicken Enchilada Casserole (5-Ingredient) + VIDEO

    Ingredients for chicken enchilada casserole

    • Red enchilada sauce
    • Corn tortillas
    • Chicken breasts
    • Fire-roasted diced green chiles
    • Mexican cheese blend

has all the delicious taste you love from your favorite chicken enchilada recipe without Chicken Enchilada Casserole (5-Ingredient) + VIDEO

How to make chicken enchilada casserole

It's very easy to make this chicken enchilada recipe. You are basically stacking the ingredients in a baking dish and baking them.

You begin with the red enchilada sauce, then layer halves of corn tortillas, cooked chicken breast strips, diced green chilis, and shredded Mexican cheese blend.

Then, you continue to make layers on top of layers until all of your ingredients are gone. Cover the baking dish with aluminum foil and bake it for a total of 30 minutes.

It's so much easier to make a chicken enchilada this way. And, it tastes so good!

If you're wondering what size pan to use, you can use a 5x7 baking pan or an 8x8 baking pan for this recipe.

Using a 9x13 would work if you are going to double the recipe. This is an easy recipe for entertaining or a Cinco de Mayo party so making extra is always good.

Optional toppings include fresh pico de gallo, sliced scallions, sliced olives, diced avocado, diced red onion, and sour cream.

has all the delicious taste you love from your favorite chicken enchilada recipe without Chicken Enchilada Casserole (5-Ingredient) + VIDEO

    Chicken enchilada casserole variations

There are so many different ways that you can make this recipe. I never get tired of it. You can substitute other types of meat for the chicken if you like.

Why not try pork, beef, or your favorite seafood. Or, you can always use tofu if you prefer to make this meatless.

And, you can always vegetables if you want to.

Why not try sliced green bell peppers, mushrooms, onions, or even fresh spinach? This recipe is an easy way to hide extra vegetables if you have a picky eater.

For a sour cream chicken enchilada casserole, mix sour cream with the red enchilada sauce. This results in a more creamy chicken enchilada casserole.

While I love adding cheese to this recipe, there's no reason that you can't leave it out if you're lactose intolerant. Or, you can substitute cheddar for the traditional Mexican blend.

To make a more cheesy chicken enchilada casserole, double the amount of cheese you use.

To make this recipe gluten-free, look for gluten-free corn tortillas as the base.

The rest of the ingredients should already be gluten-free.

    How can I store leftovers?

If you have leftovers of this chicken enchilada casserole, you can cover them and store them in the refrigerator for up to three days.

When it's time to reheat them, place the baking dish in a cold oven and set the oven to 350F. Reheat it until the leftovers are warm. How long this takes will depend on how many enchiladas you have.

What should I serve with this chicken enchilada casserole?
If you add vegetables to your chicken enchilada recipe, this will be a complete meal on its own. But, if you want to serve a side dish, why not try adding a few of these recipes, sliced fresh vegetables, or a garden salad:

is loaded with your favorite summer flavors and ready in just Pineapple Chicken Skillet with Broccoli

This skillet is so insanely good we can't stop eating it.  I have made it so many times that I don't need the recipe.  So, one night I was talking to my Mom while I was preparing it and she asked me how I come up with all these recipes.
I told her everything inspires me!  Just a conversation about old family photos was all the inspiration that this Pineapple Chicken Skillet with Broccoli took.

After reminiscing over old family travel pictures of my husband’s grandparents, we started talking about the places we would like to visit to make our own family travel memories.  Where would you like to travel?  Hawaii is at the top of our list.  Can you believe I have never been to Hawaii?  Seriously.  When Hawaii came into the conversation, I started having a craving for Hawaiian-inspired flavors.

The next day I started thinking of ways to incorporate flavors that I associate with Hawaii into a fabulous chicken skillet.  The mixture of pineapple chunks and juice with soy sauce, honey, ginger, and garlic makes my taste buds sing.  Perhaps a nod to my love of Asian flavor as well, this Pineapple Chicken Skillet with Broccoli certainly satisfies that desire for island flavors.  I like to serve this over Simple Chicken Rice, but honestly, I love to eat it alone most often.

This scrumptious Pineapple Chicken Skillet with Broccoli goes from prep to plate in merely 30 minutes.  Perfect for the ‘on-the-go’ family.  It is certain to make your monthly meal plan over and over again.

Helpful Tips to make Pineapple Chicken Skillet with Broccoli:

What you will need to make Pineapple Chicken Skillet with Broccoli:

      • A large skillet  – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
      • Mixing Bowl - I like a variety of mixing bowls and prep bowls and this set has them all.

      Pineapple Chicken Skillet with Broccoli

Pineapple Chicken Skillet with Broccoli is loaded with your favorite summer flavors and ready in just 30 minutes! The mixture of pineapple chunks and juice with Hawaiian flavors will make your taste buds sing.

      Ingredients

      • 1 pound boneless skinless chicken breasts
      • 1 tablespoon extra virgin olive oil
      • 1 (20-oz) can pineapple chunks in pineapple juice
      • 2 tablespoons low sodium soy sauce
      • 2 tablespoons honey
      • 2 teaspoons fresh ginger, minced
      • 2 teaspoons fresh garlic, minced
      • 1 (14-oz) bag frozen broccoli florets
      • 1 bell pepper, I used 1/2 red, 1/2 orange
      • 1/4 teaspoon kosher salt
      • 1/2 teaspoon fresh ground black pepper
      • 1 teaspoon corn starch
      • scallions and sesame seeds to garnish, optional

      Instructions

      1. Warm a large skillet over medium-high heat. Meanwhile, cut the chicken into thin strips. Add oil to skillet and then chicken. Sprinkle with salt and pepper. Cook until browned, then flip chicken and cook chicken until done, approximately 5 minutes total.
      2. In the meantime, combine pineapple chunks and juice, soy sauce, honey, ginger, and garlic in a medium bowl. Whisk to combine. Set aside until chicken is cooked. Slice peppers into strips.
      3. Once the chicken is cooked, add the pineapple mixture to the pan and turn it to high heat. Allow mixture to boil for about 5 minutes. Add broccoli and peppers, stir to combine. Cook until crisp-tender and using a slotted spoon transfer the chicken, vegetables and pineapple to a serving bowl.
      4. Combine cornstarch and 1 tablespoon water in a small bowl, pour into skillet. Whisk to combine and cook until the cornstarch thickens to a syrup-like consistency. Before serving pour the sauce over chicken and vegetables. Optional garnish: sprinkle chopped scallions and sesame seeds over top. Serve and enjoy!
