Summer is finally here!  We are so excited to be enjoying time together and having some fun in the sun together.  We have been vacation planning and party planning and have come up with some super fun and delicious treats.

Fully Loaded Cheesy Baked Potato Soup

Ultimate Baked Potato Soup is now fully loaded and ready in just 20 minutes! All the flavors of your favorite loaded baked potato come together in your new favorite soup recipe. Chunks of baked potato in a rich cheese soup are garnished with cheddar cheese, bacon crumbles and chives.

Ingredients

  • 4 Tbsp unsalted butter
  • 4 Tbsp all-purpose flour
  • 6 cups chicken broth
  • 1 cup sour cream
  • 4 oz cream cheese
  • 3 lb baked potatoes, precooked
  • 8 oz shredded sharp white cheddar cheese
  • 1 tsp kosher salt
  • 2 tsp black pepper
  • 6 slices thick cut bacon, precooked and crumbled
  • 3 oz shredded mild cheddar cheese
  • chopped chives

Instructions

  1. Warm a large stock pot over medium high heat. Add butter to pot. Once butter starts to melt, whisk in flour.
  2. Whisk together and slowly pour in chicken stock. Continue whisking and add sour cream and cream cheese. Whisk until mixture comes together.
  3. Slice potatoes in half and scoop out the insides of the potato, add to pot.
  4. Smash potatoes into chunks using a potato masher or wooden spoon, until desired consistency is reached. I like my soup kind of chunky. Add sharp cheddar cheese, salt and pepper. Stir until cheese is melted.
  5. Serve and enjoy!

Having a simple kitchen is a lot easier than you would think.  I keep my pantry stocked with staples and things I may need in a pinch.  But, even being well prepared there are those days when kitchen shortcuts are a meal saver.

After a long day at work, the last thing I want to do is spend a long time in the kitchen preparing a meal.  I save time where I can and I am so excited to share one of my favorite time saving kitchen tips with you.

I can’t tell you how much garlic I use, it’s a lot.  I buy it at my wholesale club so I always have it on hand.  I chop it, slice it, dice it, turn it into a paste,  and roast it.  But after a long day, when I need whole garlic cloves I have no patience to peel it.

With my kitchen shortcut I am on my way in just 7 seconds and in my kitchen that is a dinner saver!

The Extreme Reese's Peanut Butter No-Bake Pie

Extreme Reese's Peanut Butter No-Bake Pie has an extraordinary pie crust recipe with a special ingredient that will blow your mind, a light and fluffy peanut butter filling and a fully loaded mix of toppings to really make this pie sing it is topped with homemade whipped cream and a generous amount of peanut butter cups, peanuts and chocolate. This no-bake pie goes from prep to plate in 30 minutes; this is one for the permanent recipe file!

Ingredients

  • 24 whole chocolate sandwich cookies
  • 40 mini Reese’s Peanut Butter Cups, (wrappers removed, divided)
  • 1/4 cup unsalted butter, melted
  • 1 (8-oz) package cream cheese, softened
  • 1 3/4 cups powdered sugar, divided
  • 1 (16.3-oz) jar chunky peanut butter, (approximately 1¾ cups)
  • 2 cups heavy cream
  • 1 tsp pure vanilla extract
  • 1/4 cup dry roasted peanuts, chopped
  • 2 oz milk chocolate, broken into pieces

Instructions

  1. In a tall bowl whip heavy cream with an electric mixer until you can start to see a defined trail through the cream. Add vanilla and slowly add 3/4 cup powdered sugar. Whip until stiff peaks form. (In other words when you turn off the blender and lift the beaters out of the cream, the cream stand up on the end of the beater). Place in the refrigerator while you prepare the remaining ingredients.
  2. In a food processor combine cookies and 20 peanut butter cups. Pulse until your mixture is crumbs. Slowly pour butter in through the feed tube. Pulse until combined and crumbs are moistened.
  3. Pour crumbs into a 9” pie plate and press mixture on the bottom and around the sides to form pie crust. Place in the freezer while you prepare the filling.
  4. To prepare the filling: Combine cream cheese and 1 cup powdered sugar in a large mixing bowl. Beat with an electric mixer until light and fluffy (about 3 minutes). Add peanut butter. Beat until well combined. Fold in ½ of the whipped cream until it is completely incorporated. Pour into chilled pie crust. Smooth with a spatula. Pour remaining whipped cream over top. Place in the refrigerator while you prepare toppings.
  5. Place the milk chocolate in a microwave safe mixing bowl. Heat for 30 seconds at a time, stirring each time, until chocolate is melted. Set aside.
  6. Quarter the remaining 20 mini peanut butter cups.
  7. Sprinkle peanut butter cups over pie. Sprinkle chopped peanuts over pie. Use a spoon to drizzle chocolate over pie (or transfer chocolate to a plastic sandwich bag and cut a very small hole in the corner, then drizzle over pie).
  8. Refrigerate until ready to serve or serve immediately. Enjoy!
