Stuffing is the main reason that I look forward to Thanksgiving dinner. It makes me think of home.  My mom made amazing stuffing, mashed potatoes, and corn.

OK, I would have a little turkey too because it was Thanksgiving, but it was always all about the stuffing! I have mentioned I am a carbivore and I love love love stuffing, right?

I moved away from 'home' before my mom could teach me how to make stuffing.  So I had to do a lot of research when I wanted to make it on my own.

Honestly, it took a lot of trial and error before I perfected my stuffing making.

I can tell you that as good as my mom's stuffing was, it NEVER tasted this good {{sorry mom}}. Just looking at the photos makes my mouth water and that is when you know it has to be good!

Look at those sausage pieces, diced apple, nuts, and cranberries just about jumping off the page. It makes you want to lick your screen, doesn't it?

The real recipe magic happens as the pan is deglazed with the most glorious liquids and the browned bits are scraped up to create the most magnificent sauce that the stuffing bakes in. Oh, my word!

Chad declared it "The Best Stuffing Ever" and I immediately emailed his aunt (who now hosts Thanksgiving dinner) to tell her we are bringing this fabulous stuffing.

She is elated and I can't wait for the day to get here.  But, really when stuffing is THIS good, you shouldn't have to wait for a holiday. Let's just call this Sunday stuffing.  Maybe we should start a new trend.

Helpful Tips to make Sausage, Cranberry and Apple Stuffing :

  • For those sensitive to alcohol, you can use chicken or stock in place of the wine.
  • You can substitute dried herbs if you are unable to get fresh. Use 1 teaspoon dried herbs for each tablespoon called for. When you are adding the dried herbs, pour them into your hand and crush them in your palm before adding them to the bowl, this will release the oils and increase the potency.
  • You can scoop the stuffing into a slow cooker to keep it warm while you wait for dinner to be served. Add a little chicken stock if it starts to look dry.

What you will need to make Sausage, Cranberry and Apple Stuffing :

  • 9x13 Baking Dish - I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.
  • A large skillet with a lid – A wide skillet works best, ideally one that’s more than 12 inches in diameter.

Sausage, Cranberry and Apple Stuffing

The Best Stuffing Recipe Ever starts with sausage, cranberry and apple. Herbs and spices are added in but the real magic happens as the pan is deglazed with a the most glorious combination of liquids and those bits are scraped up creating the most magnificent sauce to bake the stuffing in. Oh my word!
prep time: 45 Mcook time: 55 Mtotal time: 100 M

Ingredients

  • 1 loaf sour dough bread, cubed (about 10 cups)
  • 1 cup sweetened dried cranberries
  • 1 medium apple, peeled, cored and chopped
  • 2 (12 oz) Jones Dairy Farm All Natural Pork Sausage Rolls
  • 1/2 cup shallots, finely diced
  • 1/2 cup pecans, chopped
  • 1/2 cup fresh parsley, chopped
  • 3 tablespoons fresh sage, finely chopped and divided
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 cup chardonnay wine
  • 4 tablespoons unsalted butter
  • 2 cups chicken stock
  • 2 eggs, lightly beaten

Instructions:

How to cook Sausage, Cranberry and Apple Stuffing

  1. Preheat oven to 350°F. Place cubed sourdough on 2 baking sheets. Bake 10-15 minutes, stirring bread occasionally until toasted, but not browned. Place toasted bread cubes into an extra-large bowl, add cranberries and apples. Set aside.
  2. Butter 9x13-inch casserole dish. Set aside.
  3. In a large skillet over medium heat, cook sausage using a spatula to break it up as it cooks.
  4. Add 1 1/2 tablespoons sage. Cook through, but do not brown. Remove sausage from skillet using a slotted spoon and add it to bowl with bread cubes. Leave 2 tablespoons of sausage drippings in the pan (drain any extra) and add shallots. Cook until translucent; add pecans, herbs and remaining sage to skillet. Cook 2 minutes stirring frequently. Pour shallot herb mixture into the bowl with bread cubes.
  5. Add wine to the skillet and scrape browned bits from the bottom of the pan as it cooks. Add butter and chicken stock. Bring to a boil for 3 minutes, remove from heat and pour over bread cubes in the bowl. Add eggs. Toss gently until combined and pour into prepared baking dishes.
  6. Cover with foil and bake 40 minutes. Remove foil and bake 15 minutes more.

DONNA'S NOTES

It is almost Thanksgiving and all I can think about is the stuffing. I know I shared my stuffing love affair with you a few weeks ago with our fabulous Sausage, Cranberry, and Apple Stuffing recipe. It really is my best ever all time favorite stuffing. But, honestly not everyone wants 'fancy' stuffing. I get that. So with all the requests we have been getting for crockpot recipes for Thanksgiving I recreated a family classic.

As long as I can remember (and for many years before I knew them) my mother-in-law Gigi has been making a classic midwestern/southern stuffing with sausage and bacon.  Some years it would be sausage only, but honestly my favorite was with a double helping of the pork.

Knowing y'all are begging for slow cooker recipes to simplify your life, I recreated a family favorite. Classic Slow Cooker Stuffing starts with sour dough bread, sausage, bacon and fresh herbs.  It is destined to be the star of the show. It's so good that we ate it for dinner last night.

If you are in a time crunch, try substituting out store bought plain stuffing cubes, precooked sausage links (chopped) and bacon crumbles. It cuts the prep time to about 10 minutes. With a stuffing recipe this fabulous you will be making it over and over.

Helpful Tips to make Classic Slow Cooker Stuffing:

  • Fresh herbs give the dish incredible flavor, but if you must substitute cut recipe in half and use dried herbs.  Be sure to crunch them in your hand as you add them to help release the fragrance of the herbs.
  • To leave the stuffing warming for up to 2 hours, stir occasionally and add more chicken stock over stuffing to keep moist.
  • If you prefer celery in your stuffing add 1 cup chopped celery to the skillet with the shallots. Cook until shallots are translucent. Proceed with recipe.
  • *If you are in a time crunch, try substituting out store bought plain stuffing cubes, precooked sausage links (chopped) and bacon crumbles.
  • This dish was prepared in a 5 quart oval crock pot.

    What you will need to make Classic Slow Cooker Stuffing:

    • Jelly Roll Pans (baking sheets with sides) - used for everything from cookies to roasting, a good baking pan will last for years.
    • Slow Cooker - the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!

    Classic Slow Cooker Stuffing

    Classic Slow Cooker Stuffing starts with sausage, bacon and fresh herbs. An American favorite now comes to you in a simple crockpot recipe.     prep time: 30 minscook time: 4 hour and 30 minstotal time: 4 hours and 60 mins

    Ingredients

    • 1 large loaf sour dough bread (about 1 pound 8 ounces), cubed (about 12 cups)*
    • 20 ounces Applewood smoked bacon*
    • 1 (16 ounce) natural pork sausage roll*
    • 1 shallot, finely diced
    • 1/2 cup chopped fresh parsley
    • 3 tablespoons finely chopped fresh sage, divided
    • 1 tablespoon finely chopped fresh rosemary
    • 1 teaspoon fresh thyme (1 sprig)
    • 4 tablespoons unsalted butter, divided
    • 2 1/2 - 4 cups chicken stock
    • 2 eggs, beaten

    Instructions

    1. Preheat oven to 350°F.  Place cubed sourdough on 2 baking sheets.  Once preheated bake for 10-15 minutes, stirring bread occasionally until toasted, but not browned.  Place toasted bread cubes into an extra large bowl.  Set aside.
    2. Preheat oven to 400°F. Prepare a baking sheet with aluminum foil, lay bacon on sheet in one layer. It can be touching, but don't let it overlap.Bake 20-25 minutes until bacon is crisp. Dry on paper towel. Once cooled. Chop and pour on top of bread.
    3. While bacon is cooking prepare ingredients.  Dice shallot and chop herbs.  Set aside. Butter slow cooker with 2 tablespoons butter.  Set aside.
    4. Meanwhile; in a large skillet over medium heat, combine sausage and 1 1/2 tablespoons sage.  Cook sausage using a spatula to break it up as it cooks.  Cook through, but do not brown add shallots to pan.  Cook until shallots are translucent. Add 2 tablespoons butter and 2 1/2 cups chicken stock. Bring to a boil. Pour mixture over bread cubes.  Add herbs into bowl. Add beaten eggs.  Toss gently until combined with a wooden spoon. If stuffing is not moist add more broth 1/2 cup at a time until stuffing mixture is moist, but not soaked. Pour into crockpot. Press down on mixture gently and cover.
    5. Cook on low for 4 hours. Add more chicken stock as necessary. Serve and enjoy!

    Growing up in Florida I was exposed to a lot of southern food. Of course my Italian family was from New York originally so we had a lot of what I call Brooklyn Italian dishes in my house. My mom made the best sauces, meatballs and all sorts of American-Italian dishes that we all loved and looked forward to.

    Being a busy family of 7, our weeknight dinners were the original semi-homemade style that were doctored up to be better than anything you can imagine. But, when it came to the holidays everything was from scratch. That included my favorite part of Thanksgiving dinner: stuffing. My mom always started with fresh sliced bread. Her trick was to toast it in the toaster to make it nice and dry.

    That is still my way today, I start with a loaf of bakery bread and cut it up and toast it in the oven. Sourdough is my favorite, but there are so many amazing breads available. Mom never added meat to her stuffing, but I am a huge fan of sausage and bacon. It gives it more dimension and flavor, not to mention I feel better about having a bowl of stuffing for dinner because it has protein and veggies in it.

    The overwhelming response was Cornbread Stuffing and Traditional Herb and Sausage Stuffing. Well, let's say you asked and we answered. We are starting with our traditional stuffing kicked up a notch

    It all starts with Jones Dairy Farm amazing all natural pork sausage roll cooked with fresh sage. I love the flavor that fresh herbs bring to this stuffing. The sausage is incredible in this stuffing, but I really couldn't help myself, I had to add some Dry Aged Cherrywood Smoked Bacon and fresh veggies which gave it a fabulous flavor.

    You know, I really loved the stuffing we shared with you last year. I mean I ate it for a week, it was so good!

    • You can substitute 3 tablespoons chicken base and 3 cups water for the chicken stock.
    • For an extra flavor boost, drizzle drippings from the turkey roasting pan over the top of the stuffing before baking.

    What you will need to make Grandma's Traditional Sausage Herb Stuffing:

    • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.

    Grandma's Traditional Sausage Herb Stuffing

    Grandma's Traditional Sausage Herb Stuffing is loaded with with an amazing blend of herbs with sausage, bacon and veggies. It really takes me back to that good ole' down home cookin' that I remember from my childhood. This is THE recipe that you want on your table this Thanksgiving.

    Ingredients

    • 1 (16 oz) package Jones Dairy Farm Dry Aged Bacon
    • 1 loaf sourdough bread, cubed (about 10 cups)
    • 1 (12 oz) Jones Dairy Farm All Natural Pork Sausage Roll

    • 1 medium yellow onion, diced
    • 1 red bell pepper, cut into 1/2-inch pieces
    • 6 garlic cloves, minced
    • 1/4 cup chopped fresh parsley
    • 3 tablespoons finely chopped fresh sage, divided
    • 1 tablespoon finely chopped fresh rosemary
    • 2 teaspoons chopped fresh thyme
    • 3 cups chicken stock
    • 2 eggs, lightly beaten

    Instructions

    How to cook Grandma's Traditional Sausage Herb Stuffing

Cook until onions are translucent; add remaining herbs, including remaining sage, to skillet. Cook 2 minutes stirring frequently. Add onion herb mixture to the bowl with bread cubes.
    6. Add chicken stock and remaining butter to skillet and scrape browned bits from bottom of pan as it cooks. Bring to a bubble (once you see the first bubbles), remove from heat and pour over bread cubes. Add eggs. Toss gently until combined and pour into prepared baking dish.
    7. Cover with foil and bake 40 minutes. Remove foil and bake 15 minutes more.

    Thanksgiving is one of my absolute favorite holidays! Planning the menu with recipes everyone will love is so much fun. This year we are having many of our favorite Thanksgiving Sweet Potato Casserole, Best Ever Mashed Potatoes, Slow Cooker Creamed Corn and incredible Thanksgiving desserts.     I love all the fun little details. I print out all of my recipes and write on them what time I have to start prepping them (taking them out of the fridge, making the dough, etc.) what time to start making each recipe and then plan to have slow cookers to transfer most of the food into to keep it warm.

    I make my mashed potatoes the day before and warm them in a slow cooker (3 hours before we eat). I make the sweet potato casserole base and warm it in the oven and add the topping the day of Thanksgiving.

    The gravy can be made the day before. And I prep all of my stuffing ingredients the day before (cook the sausage and the bacon, toast the bread). That way preparing the food on Thanksgiving day is so much less stressful, and you can focus on the important things.
