Nana's famous Southern Style Potato Salad recipe is so good it is bound to become a tradition in your house too. It's a rich and creamy summer salad that tastes like home to me. And trust me, care was taken to really bring this classic over the top.

Every family gathering I can remember (at least since I was about 10) there was always my mom's potato salad and macaroni salad.  I moved away more than 19 years ago and every time I went back home it was one of the things I asked her to make.

Funny thing is, as the story usually goes...  The recipe was slightly adapted from her best friend of 30 years, Susie Q (Munchkin calls her Zoo. LOL)! We spent just about as much time at Susie Q's house as we did our own growing up and she is like a second mom to me.  That makes the recipe even more special.  So after all these years how did I finally mange to get my hands on one of my favorite recipes?

A few years ago my mom and dad came out to Arizona to visit.  It was probably our best vacation together. We hung out and spent a lot of quality time together. We grilled on my new barbecue grill and my mom and I stayed up all night making strawberry jam and really enjoyed talking, laughing our heads off and bonding. Then we headed off to Sedona for a few days.

It was during that visit that my mom wrote down her potato salad and macaroni salad recipes for me.  Need I tell you, I cherish those hand written recipes, especially now that she has passed.  My mom was diagnosed with cancer shortly after that visit.  The next year went really fast.  It is probably one of the most impactful years of my life.

The things I learned from my mom (Nana to her grandkids) the last year of her life will stick with me forever. She truly lived as an example and I miss her every day. You see that big beautiful smile???  It was a permanent one that graced her face and I tell you it lit up the room.  Those squishy eyes that have been overtaken by that huge smile...  Thankfully, she passed that fantastic feature on to me and Munchkin. Every time my daughter laughs or I look in the mirror, I see her.

She loved our website and was thrilled that I would someday share her recipes with you. Of course her recipes are family meals I grew up on like her Beef Stew and this fabulous potato salad.

My mom wanted us to write a cookbook and I am sure she is cheering with the angels in heaven over the upcoming release of The Simple Kitchen. I even tell the story of how it all came to be and I am sure it is no surprise that it was all because of one 'everyday phone call and one recipe that shared with me'. The rest is history. You can read the story in the book, I won't spoil it.

Naturally the recipes in our book are inspired by our lives and include Mexican, Italian, Southern and Midwestern inspired recipes and you are going to love them all!

So back to the recipe at hand...  This Southern Style Potato Salad tastes like home to me.  It is true comfort food.  Rich and creamy with eggs and bits of onion throughout it is my favorite potato salad and I am sure it will be yours too.  Cooked with the skins on (and peeled once cooled), it creates a perfectly cooked potato that holds its form much better.  It is really good served right away, but down right addictive if first chilled overnight.

Southern Style Potato Salad

Nana's famous Southern Style Potato Salad recipe is so good it is bound to become a tradition in your house too. It's a rich and creamy summer salad that tastes like home to me. And trust me, care was taken to really bring this classic over the top.

Ingredients

  • 5 pounds Russet potatoes, unpeeled and washed
  • 1 (30 ounce) jar Hellman’s/Best Foods mayonnaise
  • 1/2 (30 ounce) jar Miracle Whip salad dressing spread
  • 3 large eggs, hard boiled and diced
  • 1/2 large yellow onion, diced
  • 2 teaspoons kosher salt
  • 2 teaspoons fresh ground black pepper
  • Optional: replace 1 teaspoon kosher salt with 1 teaspoon celery salt
  • Paprika, garnish

Instructions

  1. Place potatoes in a large pot covered with water.  Cover and bring to a boil.  Remove cover and continue boiling for 20-25 minutes, until potatoes are cooked through.  Pierce with a fork to check doneness. Drain and cool potatoes.
  2. In the empty pot add mayonnaise, Miracle Whip, eggs, onion, salt and pepper.  Mix until combined. Smash the eggs while mixing.  If you like the egg chunks you can just stir.
  3. Using the back of a butter knife peel skins from potatoes and cut potatoes into bite size chunks and add to mayonnaise mixture as you cut them.
  4. Mix to combine.  Sprinkle with paprika.  Chill until ready to serve.
  5. Serve and enjoy!

I shared stories of my mom with you when we shared her Southern Style Potato Salad recipe which is so precious to me.

Now, I am sharing another of her famous recipes.  Her southern-style macaroni salad was on our table at every summer gathering, right next to that potato salad.

I remember she had this huge milking pail from my great grandma's childhood farm that she used to serve it in.  I love that old pot.

A few weeks before my mom passed away she gave it to her best friend of 30 years, Susie Q.  I was sad to see it go, but Susie Q is like a mom to me and I know she will cherish it.

Not to mention she promised to leave it to me in her will.  Love you Susie Q and thank you for sharing these stellar recipes with my family so many years ago.

Southern Style Macaroni Salad

Southern Style Macaroni Salad is the best ever pasta salad of all time. It is creamy with the perfect crunch and a little tang. It is exactly what I think of whenever summer sides come to mind. This recipe is so easy you can whip it up in less than 30 minutes.
prep time: 15 minscook time: 15 minstotal time: 30 mins

Ingredients

  • 2 pounds dried elbow pasta
  • 3 large hard boiled eggs
  • 3 celery stalks, diced
  • ½ medium onion, diced
  • 1 (6.4 ounce) pouch chunk light tuna, in water
  • 1 (30 ounce) jar Hellman’s/Best Foods mayonnaise
  • ½ (30 ounce) jar Miracle Whip salad dressing spread
  • 2 teaspoons kosher salt
  • 2 teaspoons fresh ground black pepper
  • Optional: paprika

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta (al dente) according to directions on the package.  Pour into a strainer to drain water and set aside (in strainer).
  2. Meanwhile: Dice onion and celery.  Chop hard-boiled eggs.  Add ½ of mayonnaise and ½ of Miracle Whip to the pasta pot.  Add tuna, onion, celery, and eggs.  Stir to combine.  Add drained pasta and stir until well combined.  Add remaining mayonnaise and Miracle Whip.  Add salt and pepper to taste.  Stir to combine.
  3. Sprinkle with paprika (if desired).  Chill until ready to serve.
  4. Serve and enjoy!

DONNA'S NOTE

  1. Best if chilled overnight.
  2. If you don't like tuna, you can leave it out. Watch the mayo and Miracle Whip, you may want to reduce it.

We are so excited to announce that we have partnered with our friends at Bob Evans Grocery to bring you some amazing recipes this year. Our summer creation is this Ranch Mashed Potato Salad.

It uses mashed potatoes as the base of the salad. And, you can serve it either warm or cold.

Now that summer is here, I've been getting my potato salad recipes read for our next cookout.

Have you tried my German Potato Salad recipe?  Or, this Southern Style Potato Salad is a rich and creamy summer salad we always enjoy.

When it comes to summer cooking, I prefer to keep it quick and easy. The last place I want to be on a gorgeous summer day is in the kitchen.

And, this Ranch Mashed Potato Salad starts with two 24-ounce packages of Bob Evans garlic mashed potatoes to save time in preparation.

That means you don't have to peel or chop the potatoes which takes a good thirty minutes off the preparation time of this mashed potato salad.

Of course, you know I love Bob Evans products.

Should I serve Mashed Potato Salad hot or cold?

This Ranch Mashed Potato Salad can be served either warm or cold.

That means it's a delicious side dish all year round whether it's cold for a summer barbecue or warm as a side dish with your favorite roast.

When the weather is hot, you can serve it with hot dogs and burgers. Grill some corn or make some coleslaw and you'll have a perfect summer meal.

When it's cold outside, you can pair it with baked pork chops and fresh steamed asparagus.

Here are a few summer grilling recipes that would go perfectly with this Ranch Mashed Potato Salad:

What do I need to make Ranch Mashed Potato Salad?

You will need these ingredients to make this delicious Ranch Potato Salad. Scroll to the end for the complete recipe with all of the ingredients and directions.

  • Bob Evans garlic mashed potatoes 
  • Sour cream 
  • Mayonnaise 
  • Ranch seasoning and salad dressing mix 
  • Shredded mild cheddar cheese 
  • Cooked bacon, crumbled 
  • Celery rib, fine diced 
  • Scallions, sliced 

Flavor variations

You can use Bob Evans Original Mashed Potatoes in place of the garlic mashed potatoes if you prefer.

For a slightly different taste, you can also vary the type of shredded cheese you use.

Why not try Colby or Monterey Jack instead. Or, add in crumbled feta if you want something different.

And, in place of the cooked bacon, you can add finely diced chopped ham or crumbled sausage for a different taste.

Some people like to add chopped pickles, green pepper, and chopped egg to their mashed potato salad. So experiment until you find the variation you like the best.

These creamy mashed potatoes can be served in so many different ways. You will never get tired of making it.

How can I store leftover Ranch mashed potato salad?

If you have leftovers of this mashed potato salad, they can be stored in the refrigerator for three to five days. Just be sure that they are tightly covered.

When you're ready to serve them again, just heat them up for a few minutes in the microwave.

Or, if you prefer, you can make mashed potato patties with your leftovers.

Simply form the leftovers into patties, dip them in egg and breadcrumbs, and fry them lightly on each side until crispy and brown.

Add a bit of sour cream to the top of each one and you won't believe how good these are.

If you want to store leftover mashed potato salad for longer than a few days, you can freeze it.

It will stay good in the freezer for ten to twelve months. Just be sure that you cover them tightly.

When you want to serve them, thaw them in the refrigerator.

Then, reheat them in the microwave on half power until they are warm. Stir them before serving. And, add a little bit of shredded cheese to the top and serve.

Ranch Mashed Potato Salad

Easy potato salad quest? This Ranch Mashed Potato Salad is the perfect recipe for you. My mashed potato salad recipe is a delicious variation of the traditional potato salad with a huge time-saving shortcut!
Prep time: 10 Min Active time: 5Min Total time: 15Min

Ingredients

  • 2 (24ounce) Bob Evans garlic mashed potatoes (about 5 cups)
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 (1 ounce) packet ranch seasoning and salad dressing mix
  • 2 cups shredded mild cheddar cheese
  • 1 1/2 cups cooked bacon, crumbled
  • 1 celery rib, fine diced
  • 2 scallions, sliced

Instructions

  1. Prepare mashed potatoes, according to package directions. Allow to cool.
  2. Combine mashed potatoes, sour cream, mayonnaise, and ranch dressing mix in a large bowl. Stir until well combined.
  3. Add cheese, bacon, celery, and scallions.
  4. Stir until combined. Cover and refrigerate until ready to serve. 
  5. Potato salad is best after the flavors have had a chance to meld (at least 2 hours of chilling).

      This are my favorite bean recipe, and it literally takes about 10 minutes to get them in the oven they are so easy.  I didn't think too much about sharing this easy recipe with you until the last time we ate them.  Chad kept on raving about them and eating more and more and more.  I shouldn't admit I enjoyed these beans in a bowl mixed with our Southern Style Potato Salad, as topping on a burger and in a bowl cold out of the fridge for breakfast.  {{{hides head}}}  Yes.  I did.

      Best Ever Boston Baked Beans

      Boston Baked Beans is a family favorite, with a recipe so easy it comes together in less than 10 minutes. The classic combination of molasses and maple syrup brings this recipe to an entirely new level. Ingredients are all tossed in a baking dish, mixed and baked. It's that easy!
      prep time: 10 minscook time: 1 hourtotal time: 1 hours and 10 mins

      Ingredients

      • 2 (16 ounce) cans pinto beans, drained and rinsed
      • 2 (16 ounce) cans Cantellini beans (or Northern), drained and rinsed
      • 1 (16 ounce) can red kidney beans, drained and rinsed
      • 1 pound thick cut bacon, uncooked (divided)
      • 1/2 medium onion, diced
      • 3/4 cup ketchup
      • 1/4 cup molasses
      • 1/2 cup maple syrup
      • 2 tablespoons Dijon mustard
      • 1 teaspoon black pepper

      Instructions

      1. Preheat oven to 350°F.
      2. Pour rinsed and drained beans into a 9x13 baking dish.  Set aside.
      3. Reserve enough bacon to cover the top of your baking dish (I used 5 slices).  Using kitchen shears, cut the remaining bacon into bite size pieces and place into casserole dish.  Dice onion and add to casserole dish.  Set aside.
      4. In a 4 cup bowl; combine ketchup, molasses, maple syrup, mustard and pepper.  Whisk to combine.  Pour sauce over bean mixture and gently stir to combine.  Cut reserved bacon into bite sized pieces and place on top of bean mixture.
      5. Bake beans in a preheated oven for 60 minutes, or until sauce is thickened and bacon is cooked through.
      6. Serve and enjoy!

      Helpful Tips to make German Potato Salad:

      • Cook the bacon over medium heat. You want to render the fat so you need to cook it slowly. Once the bacon is nice and crisp, spoon it out with a slotted spoon onto a paper towel lined plate. You want to leave all the grease in the pan for cooking the onions.
      • Dice your potatoes before cooking. Trying to cut scorching hot cooked potatoes is not very fun.
      • Pour the dressing over the potatoes while they are still warm. Warm potatoes are able to absorb the dressing so that they take on all the flavors. When the potatoes are cold they somewhat repel the dressing.
      • For a more beautiful presentation, reserve a couple tablespoons cooked bacon, and tablespoon of onion and parsley each to sprinkle on top after mixing everything together.
      • If transporting this to a party, I suggest mixing the bacon in right before serving so that it doesn't lose all its crispiness. That is half of what makes bacon so delicious, am I right?

      German Potato Salad

      German Potato Salad is a must have barbecue side dish that comes together quickly and can be eaten hot or cold. This bacon loaded salad has NO mayonnaise but instead is tossed in a vinegar oil dressing.
      prep time: 10 minscook time: 15 minstotal time: 25 mins

      Ingredients

      • 2 pounds red potatoes diced
      • 1/2 pound bacon diced
      • 1 red onion chopped
      • 1/2 cup apple cider vinegar
      • 1 tablespoon dijon mustard
      • 2 tablespoons olive oil
      • salt & pepper
      • 6 green onions sliced
      • 1/4 cup flat leaf parsley chopped

      Instructions

      1. Place potatoes in a medium size pot and cover with cold water and bring to a boil. Cook for about 10 minutes until tender. Drain and place in a large bowl.
      2. Meanwhile, cook the bacon in a fry pan until crispy. Remove with a slotted spoon onto a paper towel lined plate. Add the onions to the bacon grease and cook for 3 minutes. Add the vinegar and mustard and cook for another 2 minutes. Remove from heat, mix in the oil, and pour over the warm potatoes. 
      3. Season with salt and pepper. Add the green onions, parsley, and cooked bacon. Toss it all together and serve. This dish can be serve hot, room temperature, or cold.
