Things just seem to get busier and busier no matter how hard I try and busy leads to not having 30 minutes to cook dinner or time to shop for ingredients. That lands us in a drive thru. I didn't realize how much we were having fast food until we looked over our statements. It was like every other day for 2 weeks.

That is when I decided I had to take more time to pull together some make ahead items. So that way, on those insanely busy days I could still manage dinner and feel good about it.  I have made this make ahead crockpot shredded chicken recipe 3 times in the last month and I have to tell you it has come in handy so many times, I can't even count.


This Saturday we spent all afternoon and evening at the park. Munchkin and her friends were riding mini ATV's, Chad was flying his drone and playing frisbee with the guys and I was taking in some mommy time and holding down the fort while I got in some great conversation with friends.

Before we knew it, we couldn't see 5 feet in front of us and it was almost 8 o'clock.  So, we headed home and unloaded the crew. I had a hungry group on my hands and nothing planned for dinner. I reached in the fridge and pulled out a container of shredded chicken and whipped up some of the best sandwiches we have ever had.

  • Portion in 12 ounce packages (which is about 1 pound pre-cooked weight) to use in quick recipes.
  • Add whatever spices you like. A teaspoon of crushed red pepper flakes is fabulous. A tablespoon dried parsley adds great flavor.

    • Slow Cooker - the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!

    Crockpot Shredded Chicken

    Crockpot shredded chicken is the perfect make ahead recipe. It will give you tons of possibilities and its prepared in the slow cooked with very little work. This recipe makes quick dinners so amazingly easy.
    prep time: 15 minscook time: 6 hourtotal time: 6 hours and 15 mins

    Ingredients

    • 5 pound boneless skinless chicken breasts
    • 2 cups chicken stock
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon fresh cracked black pepper
    • 1/2 teaspoon kosher salt (to taste)

    Instructions

    1. Add chicken to crockpot and top with remaining ingredients. Stir and cover. Cook 6-7 hours on low or 3 hours on high. After 5 - 6 hours (or about 2 1/2 hours on high) use 2 forks to pull chicken apart and submerge into cooking liquid. If chicken does not pull apart easily it is not ready to pull apart. If this happens. Allow 30 minutes to cook and try again.
    2. Taste and add an additional 1/2 teaspoon salt IF NECESSARY (it will depend on how salty your chicken stock is). Allow to cook 1 more hour on low (1/2 hour more on high).
    3. Serve and enjoy or portion out for future use.

    Crockpot White Chicken Chili

    Sometimes it’s nice to mix things up and serve a white chili instead of a traditional tomato based one.  There’s something special about the way all the flavors meld together into a yummy comforting dinner that’s sooo easy.

    It’s Erin from Suburban Simplicity back this month with a family-favorite for you! We love this Crockpot White Chicken Chili because it’s so easy and also delicious the next day for lunch!

    This recipe couldn’t be more simple.  I just got a new crockpot because my previous one was worn out from so much use!  This was the first recipe I couldn’t wait to make in the new one. The next will be my kid’s favorite - Crockpot Pizza Casserole. For the chili, you simply place all the ingredients, except the beans, corn, and cream cheese (if you’re using) into your slow cooker and let it simmer for 6 hours on low, or 4 hours on high.

    About a half hour before it’s done, you can then add the corn, cream cheese (if using) and beans. Once it’s finished cooking, you take out the tender chicken, shred it and place it back into the crockpot to serve.

    It’s time to ladle it into some bowl and top with any of the suggested yummy toppings including cheese, jalapeños, and chips!

    Helpful Tips to make Crockpot White Chicken Chili:

    • You can use either chicken breasts or chicken thighs in this recipe, or a combination of both.
    • This is a flavorful but mild chili, so If you prefer it spicier, feel free to add some jalapeños while the recipe is cooking in addition to adding them as a garnish. 
    • Depending on your preference, you can either leave the chicken in larger chunks or shred it once it’s done cooking.
    • The cream cheese is optional. If you want a creamier chili, add it to the crockpot 30 minutes before it’s done cooking.
    • For thicker chili, blend the liquid with an immersion blender before you put back in your shredded or chunked chicken.

    Crockpot White Chicken Chili

    Crockpot White Chicken Chili is an easy dinner recipe idea for busy weeknights. Tender chicken slow cooked with zesty spices and white beans - topped with cheese, chips, cilantro and sour cream. Yum!

    Ingredients

    • 1 1/2 to 2 pounds boneless, skinless chicken breasts, thighs, or a mix
    • 1 large yellow onion, diced
    • 2 (4-ounce) cans diced green chili peppers, drained
    • 3 cloves garlic, minced
    • 2 teaspoons ground cumin
    • 1 1/2 to 2 teaspoons kosher salt
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon dried oregano
    • 1 bay leaf
    • 4 cups low-sodium chicken broth
    • 2 (15-ounce) cans cannellini or white kidney beans, drained and rinsed
    • 4 oz cream cheese, optional
    • 1 cup frozen corn kernels, optional

    Instructions

    1. Combine the chicken, onions, green chili peppers, garlic, cumin, 1 1/2 teaspoons of salt, coriander, oregano, and bay leaf in a 6-quart or larger crockpot. Stir all ingredients together and pour chicken broth over top.
    2. Cover and cook on the high for 4 hours on the low for 6 hours. About 30 minutes before it’s done cooking, add the beans, corn and cream cheese (if using). Taste and add the other 1/2 teaspoon of salt or other seasonings if necessary. Cover and cook for the remaining time.
    3. Transfer the chicken to a large plate or cutting board and shred it into bite-sized pieces with 2 forks. Place chicken back into the chili and remove the bay leaf. (For a creamier chili, see Helpful Tips above.)
    4. To serve: shredded Monterey jack cheese, lime wedges, cilantro, sour cream, hot sauce or avocado

    Serve them with warm flour tortillas and Mexican rice and you may never go out to dinner again. This is surely destined to be our next game day dinner.

    I absolutely love fajitas and Chad and I order them every time we go to a Mexican restaurant and I still can't get enough. I have made them at home, but I was looking for a simple recipe that is no-fuss after a long day of work and I finally have it for you.  

    I am always looking for quick and easy dinner ideas and I saw a video one day from Buzzfeed that showed taking the chicken out of the slow cooker after 3 hours on high to get chicken strips where as chicken at 8 hours on low will give you shredded chicken.

    So I decided to give it a go.  I am usually too impatient to wait for cooking all day so I usually cook on high so this was absolutely perfect for my chicken fajitas dish I had been thinking about.

    I started with the standard chicken fajita fixin's.  I started with my favorite salsa flavors (tomatoes, white onions, jalapeno, garlic and lime juice) and add the bell peppers. The chicken is seasoned with my homemade taco seasoning and that brings in the rest of the flavor party! This dish is very versatile, so feel free to use your favorites.

    Needless to say these are my go to Chicken Fajitas. The chicken is moist and tender. This dish is bursting with flavor. I truly ate these fajitas for lunch every day for a week. They are so good I couldn't help myself. Enjoy.

    Helpful Tips to make Crockpot Chicken Fajitas:

    • The longer it cooks the more tender it will become. If you remove it sooner, you will be able to slice it. About 3 hours on high or 6 hours on low. Longer time will yield pulled chicken, which is equally delicious. If that is what you desire, remove chicken from slow cooker after long cook time and shred with 2 forks. 
    • Why New Mexico Chile Powder? It has a deep dark reddish brown color and features an earthy, sweet flavor and subtle, spicy heat. It is mildly hot and absolutely perfect in this. It creates a truly authentic flavor! New Mexico Chili Powder can be found in the international aisle in the bulk bags or on Amazon. if you are afraid the heat will be too much you can use half New Mexico Chili Powder and 1/2 regular chili powder.

    Crockpot Chicken Fajitas

    Lazy Day Crockpot Chicken Fajitas are perfect for a fabulous no-fuss dinner! This simple recipe comes together in a flash. You simply layer the ingredients and go. It just about cooks itself. This dish is absolutely bursting with flavor and sure to be a go to in your house too!

    Ingredients

    • 3 bell peppers, sliced (I used red, orange and yellow) 
    • 1 medium white onion, sliced 
    • 2 seeded and deveined jalapenos, diced
    • 1 pint grape tomatoes, halved 
    • 2 1/2 - 3 pounds boneless skinless chicken breasts, cut in half (longways)
    • 3 tablespoons homemade taco seasoning 
    • 4 garlic cloves, minced 
    • 1 lime
    Homemade Taco Seasoning
    • 1 tablespoon New Mexico chili powder 
    • 1/2 teaspoon garlic powder 
    • 1/2 teaspoon onion powder 
    • 1/4 teaspoon red pepper flakes 
    • 1/4 teaspoon dried oregano 
    • 1/2 teaspoon paprika 
    • 2 teaspoon cumin 
    • 1 teaspoon kosher salt 
    • 1 teaspoon black pepper

    Instructions

    1. Add half of the peppers, onions, jalapenos and tomatoes to the bottom of a 5 quart slow cooker.
    2. Layer chicken on top of vegetables. Sprinkle 1/2 of taco seasoning over chicken breasts and flip them over. Season the other side with the remaining 1/2 of seasoning.
    3. Add garlic and remaining jalepenos on top of chicken. Then add remaining vegetables. Squeeze lime juice over top. Cover and cook on high 3-4 hours or low for 6-8 hours. 
    4. Remove chicken from slow cooker and slice into strips. Return to slow cooker and mix with tongs. Allow to simmer in juices for 10 minutes.
    5. You can drain extra liquid from slow cooker or transfer liquid to a saucepan and cook until reduce and use as a sauce on your fajitas. 
    6. Serve and enjoy!

    Crockpot Make Ahead Ground Beef

    So you are wondering "How to cook ground beef in a crockpot"? Here's my little short cut for time saving weekday cooking and also several time saving weeknight dinner ideas too! A few weeks ago I posted my Lazy Day Chili recipe and suggested that you use pre-cooked ground beef to cut the preparation time. I received a lot of emails asking how I prepare mine.

    It is not uncommon to see 3 or 4 crockpots going at the same time at my house. Time just seems to get away from us and after having to stop for fast food one too many times I decided to take matters into my own hands.

    I love to make shredded chicken to have it on hand for quick burritos, salads, bbq chicken sandwiches and other easy lunch and dinners.

    Then, I also started making ground beef  ahead so I have plenty of options on a busy night. Like on nights we don't get home from TaeKwonDo until 7:00pm and we didn't get to eat before we left. I grab a package of precooked ground beef out of the freezer and toss it in a pot with spaghetti sauce and boil some pasta. Viola! Dinner in 10 minutes.

    Some of my favorites made with 1 pound precooked ground beef:

    Quick and Easy Sloppy Joes - add 1/2 cup ketchup, 1/4 cup brown sugar, onion and garlic powder and precooked ground beef. Simmer for 10 minutes. Season with salt and pepper.

    Meat Sauce Marinara - combine spaghetti sauce and precooked ground beef in a medium saucepan over medium heat. Prepare pasta. Serve and enjoy!

    Flautas - combine ground beef, 4 ounces cream cheese, 4 ounces salsa, 4 ounces shredded Colby Jack cheese.  Lay out 4 (6 inch flour) tortillas at a time and add 1-2 tablespoons of mixture to the lower 1/3 of the tortilla. Roll the taquito tightly without tearing the tortilla.  Place taquitos seam side down on the baking sheet.  Repeat until the baking sheet is full, being careful not to allow the taquitos to touch.  Spray taquitos with cooking spray and sprinkle with salt.  Bake 15-20 minutes until the tortillas are crisp or the ends begin to brown.

      Crockpot Make Ahead Ground Beef

      So you are wondering "How to cook ground beef in a crockpot"? A few weeks ago I posted my Lazy Day Chili recipe and suggested that you use pre-cooked ground beef to cut the preparation time.       • 2 pounds lean ground beef (I use 93% lean)
      • 1 teaspoon garlic powder
      • 1 teaspoon onion powder
      • 1 teaspoon kosher salt

      Instructions

      1. Combine ingredients in a crock pot. Stir and combine. Cook on high 2-3 hours or low 4-6 hours, stirring occasionally. Drain if necessary.
      2. Divide into portions, place in freezer safe resealable zip top bags. Freeze for several months.

      What kind of potatoes are best for potato soup?

      When making potato soup, you really want a low starch potato (often referred to as 'waxy') that will not absorb the broth like a starchy potato will.

      Red potatoes are perfect to use for crockpot potato soup.

      Waxy potatoes are creamy and high-moisture, with low starch.

      They hold their shape well when cooked and have a thinner skin.

      As a result, they are perfect for skin on potato soup, potato salad, casseroles and gratin.

      In comparison, starchy potatoes are fluffy and low in moisture, but high in starch. They are very absorbent and will suck up all the flavor you add to them.

      However, starchy potatoes do not hold their shape well.

      How long does Potato Soup last in the fridge?

      Properly wrapped in an airtight plastic container potatoes soup will stay fresh in the fridge for about 3 days.

      Recipe tips for crockpot potato soup:


      • I prefer to use Yukon gold potatoes for this recipe. They have the perfect flavor and buttery texture to make the soup irresistibly creamy.


      • You can either cook the bacon prior to starting the soup, by frying it or roasting it in the oven, whatever method you prefer. Also, you can use pre-cooked bacon to save time and cut down on the effort.


      • You can use evaporated canned milk, or for even a richer texture, you can use half and half or heavy cream.

      • 3 cups chicken broth
      • 2 pounds Yukon gold potatoes, peeled and diced
      • 1 medium yellow onion, diced
      • 6 garlic cloves, minced
      • 1 tablespoon dried parsley
      • 4 tablespoons unsalted butter
      • 1/3 cup all-purpose flour
      • 1 (12-ounce) can evaporated milk or half-and-half or heavy cream
      • 2 cups shredded sharp cheddar cheese
      • 1/2 cup sour cream
      • Salt and pepper to taste
      • optional toppings: chives, extra shredded cheddar cheese and bacon
      Instructions
      1. Add diced potatoes, diced onion, minced garlic, bacon, parsley and chicken broth to the slow cooker. Season with salt and pepper. Stir and cook for 6-8 hours on low or on high for 3-4 hours, until the potatoes are fork tender.
      2. Once the soup has cooked, add butter to a medium saucepan over medium heat and melt. Whisk in the flour until completely combined and gradually add in the evaporated milk or heavy cream, depends which one you are using. Whisk the flour mixture until smooth. With the heat on the lowest stove setting, let the mixture cook until it starts to simmer and is getting thicker, stir occasionally.
      3. Immediately add the milk-flour mixture to the slow cooker and stir to combine.
      4. Using a potato masher, mash about 3/4 of the potatoes.
      5. Stir in the shredded cheddar cheese and sour cream. Stir well, until fully combined and creamy. Taste for seasoning, add salt and pepper to taste. Continue cooking the soup on low for 30 minutes or on high for 15 minutes.
      COOK'S NOTES
      1. If the soup is too thick, add more chicken broth.
      2. Serve warm, garnished with bacon, cheese and sour cream.
      3. The soup can be refrigerated for up to 3 days.
