Cheesy Mozzarella Stuffed Meatballs

You would think that Parmesan, Romano and mozzarella cheeses would be enough to put these fabulous meatballs over the top, but no... I added in fresh rosemary to give them a punch of flavor.

The meatball is delicious on its own, but when you break into it a river of ooey gooey mozzarella cheese runs all over the plate. One bite and you will be singing a chorus of 'ummmms' as you devour these one after the other.

The meatballs feature 3 different cheeses and are so delicious I recommend you make the whole recipe.  Yes, it makes 32 meatballs.  They freeze and refrigerate extraordinarily well, so I always make 2 pounds and freeze half.  These amazing meatballs are sure to become a family favorite for you too!

What you will need to make Cheesy Mozzarella Stuffed Meatballs:


  • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
  • Mesh Strainer – Normally you don’t need to drain the grease when cooking with lean ground beef, but if you do, a mesh strainer will help ensure you don’t lose any of the cooked meat.
  • Heat resistant spoon or spatula – Ideal for cooking, stirring, and serving.

Yield: makes 32 meatballs

Cheesy Mozzarella Stuffed Meatballs

Triple Cheesy Mozzarella Stuffed Meatballs feature 3 fabulous cheeses and are so delicious they will knock your socks off. I make a double batch of this simple recipe and freeze half.

Ingredients

  • 2 pounds 93% lean beef
  • 1 cup Italian seasoned breadcrumbs
  • 1/2 cup Parmesan cheese, fresh grated
  • 1/2 cup Pecorino Romano cheese, fresh grated
  • 1/2 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1 tablespoon Italian seasoning
  • 1 tablespoon fresh rosemary, chopped finely
  • 1/2 cup 2% milk
  • 1/4 cup Oven Roasted Tomato Sauce or your choice of a tomato sauce
  • 2 large eggs, lightly beaten
  • 8 ounce block mozzarella cheese, cut into 32 - 1/2" squares (cut into 4 longways and 8 across)

Instructions

  1. Preheat oven to 400°.  Line 2 baking sheets with parchment paper and set aside.
  2. Place all ingredients in a large bowl, except the mozzarella cheese.  With clean hands, mix ingredients without overworking your meatballs.  Working them too much can cause tough meatballs.
  3. Using a 4 tablespoon scoop, scoop out meat and place on a baking sheet or plate.  After all meatballs have been scooped onto tray, with damp hands roll them into balls.  Place balls back on tray or plate.  One at a time place meatball in the palm of your cupped hand.  Press mozzarella cube into meatball and roll back into a ball.
  4. Place meatballs on baking sheets, not touching.  Bake for 35 minutes, rotating trays half way through cook time.
  5. Remove from oven and place meatballs into your sauce and allow to simmer for 30 minutes.  Some of your mozzarella cheese may have tried to make a run for it.  Just scoop up the meatballs and cook it in the sauce.
  6. Serve and enjoy!

Both the meatballs and the marinara in this Cheesy Italian Meatball Ring are slightly adapted from Cookbook: The Simple Kitchen Cookbook because it is the best!  If you haven’t gifted yourself a copy of this book, DO IT NOW!  Donna would be embarrassed if she knew I was promoting their book like this, but I am just passionate about this book because it will make your life that much better – and more delicious!

Helpful tips to make Cheesy Meatball Pull-Apart Bread:

  • Make sure to generously grease your 12-cup bundt pan with 2 tablespoons softened butter so the dough doesn’t stick.  We use softened butter instead of melted butter so the butter will actually stick to the sides of the pan and not run all over.
  • You can use more or less red pepper flakes in the Marinara Arrabbiata.  I would say ½ teaspoon is on the medium spicy side and most people would be comfortable with it but if you don’t like spice at all then reduce to ¼ teaspoon red pepper flakes. 
  • The Marinara Arrabbiata uses diced fire roasted tomatoes which you can leave whole or I like to mash mine up once the sauce has simmered after 5 minutes or so. 
  • After you have layered your biscuit dough with cheese and meatballs, the easiest way to transfer them into the bundt pan is to stack 3 biscuits (with their cheese and meatballs) together to form a tower and then turn the tower on its side and lay in the bundt pan.  The biscuits and meatballs will take every inch of the pan so you will have to squeeze them together.
  • You can prep much of this recipe ahead of time if you wish.  The Marinara sauce can be made completely beforehand and then re-warmed.  The meatballs can be baked and stored in the refrigerator.  The cheese can also be grated.  Then all that’s left is to warm your sauce and meatballs, assemble then bake when you’re ready to eat!!!

What you will need to make Cheesy Meatball Pull-Apart Bread:

  • 12 cup Bundt Panyou need a 12 cup and not a 10 cup bundt pan for this recipe so that everything fits!  Your bundt pan will ensure everything cooks evenly. 
  • Garlic Press - one of my moist used kitchen tools! I received mine as a gift years ago and I can't imagine why I never had one. It minces garlic with one squeeze, with the peel still on!
  • Cheese Grater - this kitchen tool gets more love than almost any other tool in my kitchen because I am a huge proponent of FRESHLY grated cheese as opposed to bagged shredded cheeses.  Using freshly grated cheeses saves money, tastes better, and MELTS better.

Cheesy Meatball Pull-Apart Bread

Irresistible, Buttery, Cheesy Meatball Pull-Apart Bread is the perfect recipe for Game Day or any party!
prep time: 20 MINScook time: 35 MINStotal time: 55 mins

Ingredients

  • 1 recipe Italian Herb Baked Meatballs
  • 1 recipe Best Ever 5-Minute Marinara
  • 6 tablespoons butter (divided)
  • 2 (16.3-ounce) packages refrigerated biscuits (I use Pillsbury Grand 8 biscuits each)
  • 8-ounces shredded mozzarella cheese, (about 2 cups) divided
  • 1 tablespoon freshly chopped parsley (or 1 teaspoon dried)
  • 3 garlic cloves, minced

Instructions

  1. Preheat oven to 350° F.
  2. Toss meatballs and marinara sauce together in a medium-size bowl. Set aside.
  3. Grease a 12-cup bundt pan with 2 tablespoons softened butter. Set aside.
  4. Lay biscuits out separately on a flat surface. Create an indent in each biscuit with the back of a tablespoon to cradle the meatball.
  5. Top each biscuit with a heaping tablespoon of mozzarella cheese followed by 1 saucy meatball.
  6. Stack 3 - 4 filled biscuits together, turn on their side and place in greased bundt pan.
  7. Repeat with the remaining biscuits, arranging biscuit stacks in pan
    to create a ring – it will be tight.
  8. Whisk together the remaining 4 tablespoons butter (melted), parsley and garlic, in a small bowl.
  9. Evenly drizzle the garlic butter all over the meatball ring.
  10. Bake pull-apart ring for 30 minutes.
  11. Let cool 5 minutes then flip over onto a baking sheet.
  12. Sprinkle with the remaining cheese (about 1 cup) and bake for an additional 5 minutes or until a toothpick comes out clean and cheese is melted.
  13. Serve with remaining Marinara.

Helpful Tips to make Taco Cheese Stuffed Meatballs:

  • Do not overmix the meat or you can end up with tough meatballs.
  • Use a cookie dough or ice cream scoop to get uniform meatballs.
  • Be sure to fully seal the cheese within the meatballs or all of the cheese will ooze out while broiling.
  • To make extra meatballs to keep in the freezer, double or triple this recipe. Transfer extra meatballs to a rimmed baking sheet and freeze completely. Then transfer frozen meatballs to a ziploc bag or container.
  • This recipe makes a mild flavored taco meatball. If you prefer extra taco flavor, double the amount of taco seasoning.

  • Large mixing bowlYou will need a bowl large enough for the ingredients and your hands.
  • Sharp knifeThis recipe requires the cheese to be cut into cubes. A good, sharp knife is always handy to have in the kitchen.

Taco Cheese Stuffed Meatballs

Taco Cheese Stuffed Meatballs are a fun twist for Taco Tuesdays! This easy meatball recipe is taken to the next level with taco seasoning and colby jack cheese.

Ingredients

  • 2 pounds lean ground beef
  • 1/2 cup bread crumbs
  • 2 large eggs
  • 1/4 cup whole milk
  • 1 package taco seasoning (or 2 Tablespoons Homemade Seasoning)
  • 6 ounces Colby Jack cheese - cut into cubes

Instructions

  1. Mix beef, bread crumbs, eggs, milk and taco seasoning until just combined. Do not over mix.
  2. Scoop out 4 tablespoons of beef mixture, flatten then place cheese cube into the center. Bring the edges together to form a ball. Ensure that the meatball is completely sealed.
  3. Transfer meatballs to a greased rimmed baking sheet.
  4. Freeze meatballs on baking sheet for 10-15 minutes to firm up.
  5. Raise oven rack to top and preheat broiler on high.
  6. Broil meatballs on high for 10-12 minutes or until cooked through. Some cheese may escape while broiling.

Did you know that I bought my first crockpot when I moved out on my own? I purchased my first one so I could make prepare dried beans.

Well that was 8 slow cookers ago. Now I have them in every size from a warmer to a 6 quart.

Helpful Tips to make Crockpot Italian Meatballs and Marinara :

  • Mix until just combined. Overmixing will create a tough meatball and that isn't good for anyone.
  • Use a scoop to make uniform-size meatballs; this way you handle them less and they will cook evenly.
  • If you lightly coat your hands with olive oil before rolling the meatballs, they will form better and crack less.
  • Make a few batches of meatballs ahead and freeze them for easy dinners. To freeze, allow meatballs to come to room temperature and place in a freezer bag. I like to flash freeze them on a cookie sheet and then transfer the frozen meatballs to a freezer bag. It makes it easier to grab as many meatballs as I need.

  • Slow Cooker-
  • 1 1/2 tablespoon scoopperfect for meatballs, cookies, ice cream for portioning out leftovers! I have had this set for years and use them all the time.

Crockpot Italian Meatballs and Marinara

Tender cheesy meatballs are slow cooked in a flavorful sauce made with ingredients from your pantry. There is a time and a place for fresh tomatoes and herbs and this simple recipe isn't it. Whip it up and toss it in the crockpot to cook, the meatballs cook right in the sauce! How much easier could it be? This meal just about cooks itself.
prep time: 25 minscook time: 4 hourtotal time: 4 hours and 25 mins

Ingredients

Marinara
  • 2 (14.5 ounce) cans fire roasted diced tomatoes with garlic
  • 1 (15 ounce) can tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons dried Italian seasoning
  • 1 tablespoon sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon red pepper flakes (optional)
  • meatballs, uncooked (recipe to follow)
  • 2 dried bay leaves
Meatballs
  • 1 pound lean ground beef (I used 88%)
  • 1/2 cup Italian breadcrumbs
  • 1/2 cup marinara
  • 1/4 cup fresh grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked black pepper
  • 1 large egg, lightly beaten

Instructions

Marinara
  1. Combine all ingredients in a blender in the order they are listed, except meatballs and bay leaves.  Process until your sauce is the consistency you prefer. Cover bottom of crockpot with sauce crockpot. Reserve remaining sauce to pour on top of meatballs.
  2. Gently place 1 layer of meatballs in crockpot. Pour sauce over top, until covered. Continue adding meatballs until they are all in the slow cooker.  You may have to layer them, just be sure the bottom layer is thoroughly coated in sauce before you add the next layer. Pour remaining sauce over top. Add bay leaves. Cover and cook on high for 3-4 hours, or low for 6-8 hours.
Meatballs
  1. In a large mixing bowl, combine all ingredients. Mix well, do not over mix or you will have tough meatballs.
  2. Using a 1 tablespoon scoop, portion out meat and place on a plate.  After all meatballs have been scooped onto plate, roll into balls.

DONNA'S NOTES

  1. If you lightly oil your hands the meatballs will form better and crack less.
  2. You can prepare meatballs the night before and refrigerate to cut down on prep time.

...are the perfect party appetizer, they are cheesy, they are tasty and they are very easy to make. I like to serve mine in marinara sauce, topped with a sprinkle of parmesan, fresh parsley, and fresh basil. You can make them for dinner and serve them over spaghetti with extra cheese on top because more cheese is always a good decision.

Helpful Tips to make Mozzarella Stuffed Meatballs:

  • You can add less or more garlic powder, depending on your own preference. You can also add some fresh garlic for extra flavor.
  • I like adding Italian seasoning, but if you don’t have any on hand, you can use a mix of dried basil and oregano.
  • You can use store-bought marinara sauce or homemade.
  • You may have to add a little more water, make sure you get the perfect smooth consistency.
  • Make sure the meatballs are well-sealed after adding the cheese, otherwise it will ooze out.

Mozzarella Stuffed Meatballs

Mozzarella Stuffed Meatballs are cheesy and delicious, perfect as an appetizer or served over a pile of spaghetti.

Ingredients

  • 2 pounds ground beef (85-90% lean)
  • 1/3 cup plain breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 large egg
  • 3-5 tablespoons water
  • 8 ounces mozzarella cheese, cut into 1/2 inch cubes
  • 3 cups store-bought marinara sauce, warmed
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoon grated parmesan cheese
  • cooking spray
  • Fresh basil

Instructions

  1. Preheat the broiler.
  2. Line a baking pan with foil and spray the foil with cooking spray.
  3. In a large bowl mix: beef, salt, pepper, garlic powder, onion powder, Italian seasoning, egg, breadcrumbs and water. Mix until well combined and smooth, you may need to add a few more tablespoons of water, one at a time.
  4. Take 2 tablespoons of the meat mixture and roll it into a ball, flatten it a bit and add a cube of cheese, cover with the meat and roll into a ball,, making sure that the meat completely covers the cheese and is well sealed.
  5. Place the meatballs on the baking sheet pan and spray with cooking spray.
  6. Broil for 10 minutes or until meatballs are just done. Make sure you don’t overcook, as the cheese may start to ooze.
  7. Warm up some homemade or store-bought marinara sauce and add it to a serving bowl.
  8. Add the meatballs to the serving bowl, sprinkle with cheese, parsley and basil.
  9. Serve immediately.
