One-Pot Mexican Pasta and Sausage (VIDEO)

Ever since I made this One Pot Cheesy Pasta and Sausage, I have had a million other ideas in my head for easy one pot meals.

As you well know, I live in Arizona and even though I am Italian I have more of a taste for Mexican and Southwest flavors most days. Must be the desert heat getting to me.  LOL

I have been over the gamut of variations and different ways I could make the ultimate Mexican pasta dish. So last week while I was enjoying some homemade salsa it occurred to me.

If I combine my favorite salsa flavors and this pasta dish, we will have ourselves a dynamite dinner, and I was soooo right!

I started with cherry tomatoes, white onions, garlic, jalapenos, and cilantro. Truly my favorite salsa flavors.

It all comes together with hot sausage and spaghetti to create a one pot meal that is ready in just 20 minutes.


A side salad really makes this dinner complete. Grab a couple of STAR Vinaigrette Single Serving packs that are perfect for any salad!

This dish is truly spectacular!  You literally toss it in a pot, cook it.  Toss a few more things in and serve.

Oh, my heavens.  It is the perfect meal!!! Tomatoes, onions, garlic, jalapenos and hot sausage come together to create the perfect sauce for the pasta.

Helpful Tips to make One-Pot Mexican Pasta and Sausage:

  • Choose your favorite sausage. I prefer hot Italian sausage, but chorizo would be good too. You can substitute 1 pound any dry pasta for the spaghetti, just cook until al dente.
  • You can substitute green chiles for the jalapenos or leave out the jalapenos completely.
  • You can finish the sauce with 4 ounces of cream cheese stirred into the pasta. It will help cool down the spiciness and also add a nice creaminess to the pasta.

What you will need to make One-Pot Mexican Pasta and Sausage:

  • Dutch ovenI love this set and use it all the time. It is perfect for roasts and I especially love it for my one-pot meals.

One Pot Mexican Pasta and Sausage

A spectacular salsa inspired sauce is cooked right into the linguine pasta in this amazing One Pot Pasta recipe, ready in 20 Minutes! Your favorite salsa ingredients come together to with pasta and sausage to create a knock your socks of meal. Toss it all in a pot and let it go. It's so easy it just about cooks itself. Now that's my kind of meal.

Ingredients

  • 3 cups halved grape tomatoes, divided
  • 1 large onion, sliced
  • 1 pound smoked hot sausage links, precooked (sliced into coins)
  • 1-2 jalapenos, sliced (to taste)
  • 4 garlic cloves, sliced
  • 1 pound dry spaghetti
  • 2 tablespoons chopped cilantro, divided
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon fresh ground pepper
  • 5 cups water

Instructions

  1. Reserve (set aside) 1 cup halved tomatoes and 1 tablespoon chopped cilantro.
  2. Combine remaining ingredients in a large (12") braising pan or Dutch oven over medium-high heat.  Cover and bring to a boil.  Once water is boiling, remove the lid and cook 7-9 minutes until pasta is al dente (with a bite to it).  Toss pasta with tongs occasionally to keep the pasta from sticking.  The liquid will be mostly absorbed when the pasta is finished cooking.
  3. Add remaining tomatoes and cilantro and toss to combine.
  4. Serve and enjoy!

DONNA'S NOTES

It is so funny how things change.  Five years ago (when I was pregnant with my daughter) I told my best friend, I will never change.

I will keep my kid out all night long and still visit you every night until midnight.  I said I would never like Barney.  I said I would never have a problem losing that 'baby weight' and I said that I would never understand why people try to find shortcuts in the kitchen.

Doesn't everyone love to spend all day in the kitchen preparing a dinner that is devoured in 20 minutes?

Well, five years later...  Keeping Munchkin on a schedule is more important than visiting with friends (sorry friends), I kinda dig Barney and Dora.  Go figure.

Although Munchkin does not watch much TV anymore (that is a story for another day).  Baby weight still here.  Yes, my 'baby' is 4, don't judge.  I have a food blog.  LOL

Lastly, I am now constantly on the hunt for quicker and simpler ways to feed my family in a healthier manner.  30 minute meals are big around here.

Even Christmas dinner, which used to be an all-day affair is now prepared in 30 minutes or in a crockpot.  So, never say never.

In my quest for quick and easy dinners, one-pot meals have been spectacular for me.  Only one pot to wash, yahoo!  So last year I saw this one-pot pasta recipe all over the web.  "One-pot" piqued my curiosity as I have a collection of one-pot meals.

This one is amazing!  You literally toss it in a pot, cook it.  Toss a few more things in and serve.  Oh, my heavens.  It is the perfect meal. Tomatoes, basil, ooey-gooey cheese, and sausage come together to create the perfect sauce for the pasta.

It is so flavorful that Chad and I ate two bowls each.  Even Munchkin loved it, and I am sure you will too.

Helpful Tips to make One-Pot Cheesy Pasta and Sausage:

  • Choose your favorite sausage. I prefer Italian sausage, but you can use your favorite.
  • You can use reduced-sodium chicken broth in place of the water for even more flavor.
  • You can substitute 1 pound any dry pasta for the spaghetti, just cook until al dente.
  • To quickly cut the tomatoes: Grab 2 same size lids. You can use plasticware or lids from your fridge. The lid does not have to be round.  You can use any size lid as long as it has a lip around the edge. You can even use small appetizer plates from your kitchen. Place lid with the lip facing up, so you have an edge that will hold your food. Fill lid with cherry tomatoes. Place the 2nd lid on top of the tomatoes with the lip facing down. Firmly press down on the top lid, but do not squish your tomatoes. The two lips will hold the tomatoes in place, so they do not roll off the lid. Slide your serrated knife between the lids and carefully slice through them. Watch your fingers. And voila you have a plate full of sliced tomatoes in a blink!

What you will need to make One-Pot Cheesy Pasta and Sausage:

  • 4 Quart Braising Pan - this is my favorite for my one-pot wonders. The spaghetti fits inside so you can put the lid on.
  • Tongs - I love this set of 3. I use every pair of them. They are so handy and grip amazingly well!

One Pot Cheesy Pasta and Sausage

prep time: 5 MINScook time: 15 MINStotal time: 20 mins

Ingredients

  • 3 cups halved grape tomatoes, divided
  • 1 large onion, sliced
  • 1 pound smoked Italian sausage links, precooked (sliced into coins)
  • 20-30 basil leaves, divided
  • 4 garlic cloves, sliced
  • 1 pound dry linguine
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon fresh ground pepper
  • 4 1/2 cups water
  • 1 cup shredded Parmesan cheese

Instructions

  1. Reserve (set aside) 1 cup halved tomatoes, 10 basil leaves, and cheese.
  2. Combine remaining ingredients in a large (12") braising pan or Dutch oven over medium-high heat.  Cover and bring to a boil.  Once water is boiling, remove the cover and cook 7-9 minutes until pasta is al dente (with a bite to it).  Toss pasta with tongs occasionally to keep the pasta from sticking.  The liquid will be mostly absorbed when pasta is finished cooking.
  3. Add cheese and toss to combine.  Cheese may clump but will melt into the sauce after a few minutes.  Toss in remaining tomatoes and basil before serving.
DONNA'S NOTES:
  1. Choose your favorite sausage. I prefer Italian sausage, but you can use your favorite. You can substitute 1 pound any dry pasta for the spaghetti, just cook until al dente.

Helpful Tips to make One-Pot Jambalaya Pasta:

  • You can prep the ingredients in advance.
  • Adapt the recipe to fit your taste by adding more cajun seasoning if you like even spicier cajun flavor. Add an additional 2 ounces of cream cheese if you like it creamier. Or omit the cheese and sauce all together to make it dairy-free. You can even substitute some tomato sauce for the cheese to add additional flavor.
  • You can omit the shrimp if desired. Simply leave it out of the recipe.
  • This pasta tastes great (if not better) as leftovers so save some for later and reheat just prior to serving.

What you will need to make One-Pot Jambalaya Pasta:

One Pot Jambalaya Pasta

One Pot Jambalaya Pasta cooks in one pot and is packed with flavor! It is made with all of your favorite jambalaya ingredients including chicken, shrimp, Andouille sausage and cajun seasoning.
prep time: 5 minscook time: 35 minstotal time: 40 mins

Ingredients

  • 1/2 pound chicken breast, cut into 1 inch pieces
  • 2 to 3 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1/2 cup diced yellow onion
  • 1 tablespoon minced garlic
  • 6 ounces Andouille sausage
  • 2 1/2 cups uncooked penne pasta
  • 1 cup chicken broth
  • 1 small red bell pepper, seeds removed and sliced into thin strips
  • 1 small green bell pepper, seeds removed and sliced into thin strips
  • 1 large tomato, chopped
  • 1/2 pound shrimp, peeled and deveined
  • 2 ounces cream cheese
  • 1/2 cup shredded cheddar cheese
  • Sliced chives, for garnish

Instructions

  1. Season chicken with one tablespoon Cajun seasoning; set aside.
  2. In a 12” pan or skillet, heat olive oil over medium heat. Add onions and stir until soft, about 3 minutes. Add chicken to the pan and cook until brown on both sides. Stir in garlic and sausage and cook one additional minute. Add uncooked pasta, chicken broth, sliced peppers, tomatoes, and remaining Cajun seasoning. Stir then bring to a boil.
  3. Reduce heat to low, cover and simmer for 15 minutes. Stir, add shrimp to the pan, recover and simmer an additional 7 minutes. Uncover and cook until most of the liquid is absorbed, about 5 additional minutes. 
  4. Remove from the heat, stir in the cream cheese and cheddar cheese. Stir until cheese is melted.
  5. Garnish with chives and serve immediately.

Succulent sun-dried tomatoes, briny kalamata olives, herbed chicken and tender baby spinach all come together in a rich and creamy cheese sauce. It’s most definitely my favorite one-pot wonder and it’s ready in just 30 minutes.

Let’s just say it’s so good I broke out into my happy dance! My family knows that if they see me dancing with my food in the kitchen . . . dinner’s going to be incredible!

One of my favorite kinds of recipes to cook is one-pot meals. I am sure you have noticed my infatuation with one-pot recipes over the years.

So naturally when we were deciding what was most important to be in our first cookbook, we knew One-Pot Wonders needed it's own chapter!!!

🔥 "One-Pot Wonders" are rock star recipe with very little clean up and an ease of preparation. All 10 recipes in this chapter are tagged with their total cook time and they are all ready in 30 minutes or less.

At least half of these recipe simply require you to add the ingredients to the pot and turn on the stove. I can't wait for you to dive into this chapter.


I mean how much easier could it get???  You simply toss all of the ingredients into your Dutch oven and toss with tongs a few times as it cooks. Then voila, dinner is ready!

This recipe is crazy good, so good in fact that we I shared it with our friends that own a Greek restaurant they asked for the recipe!!!

One-Pot Cheesy Greek Pasta with Chicken

Ingredients

  • 1 cup sun-dried tomatoes packed in oil and Italian herbs, drained
  • 1 large yellow onion, sliced
  • 1 lb boneless, skinless chicken breasts, cut into 1/2" pieces
  • 6 cloves garlic, sliced
  • 1 cup kalamata olives, pitted and halved
  • 1 lb linguine pasta, uncooked
  • 2 teaspoons dried oregano
  • 1 teaspoons freshly ground pepper
  • 1 teaspoons kosher salt
  • 8 cups baby spinach leaves, divided
  • 4 cups chicken stock
  • 1 cup Chardonnay
  • 8 ounces feta cheese, crumbled

Instructions

  1. Combine the tomatoes, onion, chicken, garlic, olives, linguine, oregano, pepper and salt with 4 cups of the spinach in a 12-inch braising pan or Dutch oven over medium-high heat. Pour the chicken stock and the wine over the top.
  2. Cover and bring to a boil. Cook for 7 to 9 minutes, until the pasta is al dente (has a bite to it). Toss the pasta with tongs occasionally to keep it from sticking to the bottom of the pot. You will still have some liquid in the pan when the pasta is done cooking; this is going to make the base for our delicious cheese sauce.
  3. Turn off the heat and add the cheese to the pasta. Toss the pasta with tongs until the cheese melts into the pasta. Toss in the remaining 4 cups (120 g) of spinach.

DONNA'S NOTES

  1. Grab two lids of the same size. You can use plasticware or lids from your fridge. Place one lid with the lip facing up, so you have an edge that will hold your food. Fill the lid with pitted kalamata olives. Place the second lid on top of the olives with the lip facing down. Firmly press down on the top lid. The two lips will hold the olives in place, so they do not roll off the lid. Slide your serrated knife between the lids and carefully slice through them. Watch your fingers. Now you have halved olives in the blink of an eye!

Helpful Tips to make One-Pot Cheesy Italian Pasta and Chicken:

  • Dried Italian Seasoning is a fabulous convenience ingredient. If you do not keep it on hand, combine 1 teaspoon dried basil, 1 teaspoon rosemary, 1/2 teaspoon oregano and 1/2 teaspoon dried thyme.
  • This dish is just spicy enough to make your tongue tingle. For a very mild sauce, reduce the red pepper flakes to 1/2 teaspoon.
  • I know some people are sensitive to alcohol. The wine adds a fabulous rich buttery flavor and a bright citrusiness to the pasta. If you can use the chardonnay, I highly recommend it. However, you can substitute with chicken stock, white grape juice, or lemon water (1/2 cup fresh lemon juice and 1/2 cup water).

What you will need to make One-Pot Cheesy Italian Pasta and Chicken:

  • 4 Quart Braising Pan - this is my favorite for my one pot wonders. The spaghetti fits inside so you can put the lid on.
  • Tongs - I love this set of 3. I use every pair of them. They are so handy and grip amazingly well!

One-Pot Cheesy Italian Pasta and Chicken

One-Pot Cheese Italian Pasta and Chicken is a rich and savory dish bursting with your favorite flavors! This simple recipe features a creamy sun-dried tomato sauce that is cooked right into the pasta in this amazing one-pot dish. Toss it all in a pot and let it cook. It's so easy that it just about cooks itself. Now that's my kind of meal!!!

Ingredients

  • 8 ounces baby spinach leaves, divided
  • 1 cup sun-dried tomatoes packed in oil and Italian herbs, drained (about 7 ounces)
  • 1 large yellow onion, sliced
  • 1 pound uncooked boneless, skinless chicken breasts (cut into 1/2" bite size pieces)
  • 6 garlic cloves, sliced
  • 1 pound dry linguine
  • 2 teaspoons dried Italian seasoning
  • 2 teaspoons kosher salt
  • 1 teaspoon fresh ground pepper
  • 1 teaspoon crushed red pepper flakes
  • 4 cups (32 ounces) reduced sodium chicken stock
  • 1 cup (8 ounces) chardonnay wine
  • 4 ounces fresh Parmesan cheese, shredded

Instructions

  1. Combine 1/2 of the spinach with the tomatoes, onion, chicken, garlic, linguine, Italian seasoning, salt, pepper and crushed red pepper in a 5-quart Dutch oven over medium-high heat. Pour chicken stock and wine over top. Cover and bring to a boil.
  2. Cook 7-9 minutes until pasta is al dente (with a bite to it). Toss pasta with tongs occasionally to keep the pasta from sticking to the bottom of the pot. You will still have some liquid in the pan when the pasta is done cooking. This is going to make the base for our delicious cheese sauce.
  3. Turn off the heat and add the cheese to the pasta. Toss pasta with tongs until the cheese melts into the pasta. Toss in remaining spinach.
  4. Serve and enjoy!
