When I am brainstorming new recipes my mind often wanders off to my favorite Italian dessert. Of all the desserts out there I have to say I absolutely love love love tiramisu.

I am sure you have noticed with all of the tiramisu recipes I have shared with you. Although, I have never shared my classic tiramisu, which I promise is coming this fall.

But, it's summer and it's National Ice Cream Day. Horray!!! To celebrate this delicious occasion I pulled my love for tiramisu and ice cream together to create one glorious Italian inspired dessert: Tiramisu Ice Cream Cake! It is so easy you will be making it all year long. But, the flavor that is imparted into this cake is spectacular. It is absolutely divine!

It makes me think of my childhood and the amazing Italian desserts that we enjoyed! The adults always had espresso or coffee with dessert and that is one of my favorite things about this tiramisu.

Ladyfingers are dipped in an unusually rich, aromatic, and delicious espresso.

And it is absolutely the star ingredient in this tiramisu ice cream cake. The dipped ladyfingers are layered with rich vanilla ice cream.

The flavors kind of remind me of my favorite affogatto (espresso over ice cream). It is drizzled with a scrumptious rich chocolate espresso ganache and sprinkled with hazelnuts to really take it over the top.

This dessert is amazing and you are going to love it. We couldn't stop devouring it and you will be eating it all year long!

Tiramisu Ice Cream Cake

Tiramisu Ice Cream Cake is an unforgettable transformation of the classic Italian dessert into a simple recipe for a glorious ice cream cake unlike anything you have had before. It is rich, creamy, and absolutely special occasion worthy!
prep time: 5 Mactive time: 15 Mtotal time: 3 Hours 15 M

ingredients:

    • 6 ounces water
    • 1 teaspoon Medaglia D’Oro Espresso Instant Coffee
    • lady finger cookies (about 24-28 cookies)
    • 1 1/2 quarts good vanilla bean ice cream
    • 2 tablespoons heavy cream
    • 1 teaspoon light corn syrup
    • 1/4 cup semisweet chocolate chips
    • 2 tablespoons chopped hazelnuts or sliced almonds

      instructions:

      How to make Tiramisu Ice Cream Cake

      1. Add the ice cream to the bowls of a stand mixer and beat it until it is soft and spreadable about 3 minutes. Or you can allow your ice cream to sit at room temperature for 15-20 minutes until softened.
      2. Double line a 9"x5" baking pan with plastic wrap, leaving enough hanging out the sides to wrap over the top.
      3. Combine espresso powder and water in a microwave-safe measuring cup. Heat for 1-2 minutes until it is warmed. Reserve 1/2 tablespoon espresso to use in the ganache. Pour the remaining espresso into a shallow bowl.
      4. Scoop about 1/3 of the soft ice cream into the bottom of the pan. Use a spatula to smooth it into an even layer. Be careful the plastic wrap will move around a little.
      5. Dip the lady fingers into the espresso mixture one at a time and then quickly flip to soak both sides. Only keep it in the liquid for a second or so. Line the bottom of the baking pan with a row dipped lady fingers, about 8.
      6. Top with about 1/3 of the remaining softened ice cream, smooth into an even layer. Repeat the lady finger layer of cookies and ice cream again and then top with 1 final layer of lady fingers. Gently wiggle the top layer of cookies into the ice cream and cover with the excess plastic wrap. Place the cake in the freezer for 3 hours-overnight.
      7. Meanwhile; prepare the ganache topping by heating the cream, remaining 1/2 tablespoons espresso and corn syrup in a small microwave safe bowl or measuring cup until steaming. Be careful, as the cream may bubble over if it boils. Add the chocolate chips and whisk until the chocolate is smooth. Place in the refrigerator for 15 minutes to allow it to cool.
      8. Remove the cake from the freezer and invert it onto a serving tray. Use the excess plastic wrap to help lift it out of the pan. If it will not come out easily. Allow it to rest on the counter for a minute until it comes out easily. Remove the plastic wrap. Transfer the ganache to a quart size bag or piping bag. Drizzle the ganache over the cake making sure to leave space between the drizzle lines so the ganache will firm up. Quickly top with nuts before the ganache sets. Freeze until ganache is set or you are ready to eat. Enjoy!

      DONNA'S NOTES: If you do not run the ice cream in the stand mixer be sure to stir it up really well after it has softened or you will end up with big scoops of firmer ice cream and lots of melted ice cream which will make it harder to smooth it out.

      To easily cut the frozen cake, run a chefs knife under hot water and wipe it dry with a towel. Use the warm knife to easily slice through the cake.

      It just happens to be dairy-free and you control the sweetness. No matter the weather we are always looking for delicious ice cream.

      If you're looking for a few new dairy-free ice cream recipes, you might want to try my 3-ingredient chocolate peanut butter ice cream, this chocolate banana ice cream, and my pecan banana ice cream.

      They require only a few simple ingredients and each one is completely dairy-free.

      Soft serve strawberry banana ice cream

      If you want soft serve ice cream, you can eat it right out of the blender. It will be soft and creamy at that point.

      However, if you want ice cream that is more frozen, you can place it back in the freezer after processing the ingredients.

      There are no preservatives in your ice cream, so it will freeze solid.

      Simply remove from the freezer 10 minutes before serving to allow it to soften slightly. It freezes and keeps beautifully!

      You can transfer to a freezer-safe container and allow the ice cream to firm up in the freezer for 2 to 3 hours.

      Do you need an ice cream maker?
      No, you don't need an ice cream maker to make this frozen banana ice cream. This is a simple recipe that you make with your blender or a food processor.

      You simply slice up the frozen fruit and add it to a high power blender or a food processor until it becomes creamy and smooth. Then, you freeze the ice cream until it's solid.

      If you do not have a high powered blender you may want to cut your bananas into slices and freeze them.

      Tips for making strawberry banana ice cream
      This is a very simple recipe and it has always come out absolutely delicious every time I make it. But, here are a few tips you can follow to ensure your ice cream has the best possible flavor.

      Always start with ripe bananas when you make this. If your bananas aren't ripe, the ice cream won't be sweet enough.

      If you notice you have bananas that are ripening too fast for you to enjoy them, just peel them and put them in the freezer to use in the future.

      That way when you start craving strawberry banana ice cream, you will have bananas that are already frozen.

      Frozen banana ice cream is a wonderful way to use up fruit that is too ripe to eat as is.

      If your berries are starting to look old, just put them in a freezer bag in the freezer to use in your next ice cream recipe. No one will be able to tell when the ice cream is finished.

      What you will need to make this recipe

      • Blender - You can use any blender, but I absolutely love this one! I use it for ice cream, smoothies, soups, my tomato sauce, and naturally this recipe.

      Healthy banana ice cream
      Unlike traditional ice cream that contains a lot of sugar and heavy cream, this ice cream is a healthy frozen treat. The sugar in this recipe is completely optional.

      You can leave it out entirely if you prefer. Or, you can use your favorite sweetener whether that's stevia or honey instead.

      It's a much better choice for anyone that is watching their calories or is lactose intolerant. Just keep in mind that bananas are high in sugar on their own.

      Strawberry Banana Ice Cream

      Strawberry Banana Ice Cream with 2 ingredients and only 5 minutes!

      Ingredients

                  • 4 large bananas, frozen
                  • 4 cups strawberries, frozen
                  • 2 tablespoons sugar, optional

                              Instructions

                                    1. Place strawberries in a bowl or measuring cup. If your strawberries are not very sweet, sprinkle with sugar and toss to combine.  Place the bowl in the microwave at 30-second intervals until the strawberries soften slightly and the sugar dissolves in the juice (if used).
                                    2. Add bananas and strawberry mixture to the blender and blend until they reach the perfect consistency.
                                    3. When your ice cream stops moving in the blender, you will want to stop and scrape down the pitcher of the blender and stir a few times, about 2-3 minutes of total blending time.
                                    4. Your frozen fruit may separate into tiny frozen chunks before it becomes a fabulous creamy consistency, so be patient.
                                    5. Serve and enjoy! You can also transfer to a freezer-safe container and allow ice cream to firm up in the freezer for 2 to 3 hours.

                                      Strawberry Shortcake Tiramisu is the ultimate dessert!  Every holiday I deliver outstanding treats to friends and family.  Last year on my father-in-laws ("Pop Pop")'s birthday, I delivered a flop dessert.  Have you ever tried to deliver a cream pie across town when it's 110 degrees out?  Let's just say
                                      it was a humbling experience when he opened the door to a dripping cream topping.  All I could do was bust out laughing.

                                      Luckily Pop Pop has a great sense of humor.  Thanks to this AH-mazing summery tiramisu I am completely redeemed!  I delivered this one for Father's Day (in a cooler) and it was a hit.

                                      Using the basic idea of an Italian dessert, the tiramisu, I layered orange dipped lady fingers, with  fresh homemade cream filling and juicy sweetened strawberries to create the most mouthwatering strawberry dessert I have ever tasted. Then I toppd it with a scrumptious strawberry syrup and then I devoured it.

                                      This dessert completely disappeared in a blink and trust me there will be many more made very soon.  Any dessert you can make without heating up the house may be coming out of my kitchen this summer.

                                      Strawberry Shortcake Tiramisu

                                      Strawberry Shortcake Tiramisu is a bold and no-bake flavorful summery treat: two favorite desserts transformed into one perfect trifle! Are you still looking for the perfect Easter dessert? This is it!

                                      Ingredients

                                      • 4 egg yolks
                                      • 1/4 cup granulated sugar, plus 1 tablespoon (divided)
                                      • 8 ounces cream cheese, softened
                                      • 1 cup heavy whipping cream
                                      • pinch salt
                                      • 18 lady fingers
                                      • 2 cups strawberries
                                      • 1/4 cup orange juice
                                      • prepared whipped cream
                                      • strawberry syrup (this homemade recipe or your favorite store bought)

                                      Instructions

                                      1. Slice strawberries and sprinkle with 1 tablespoon sugar.  Stir to combine and set aside.
                                      2. In the bowl of a stand mixer fitted with a whisk attachment, combine egg yolks and sugar.  Mix on medium until sugar and egg mixture is light and fluffy, about 3-5 minutes.  Add salt, whipping cream and cream cheese.  Whip until mixture is thick and fluffy, about 3 minutes.
                                      3. Meanwhile, pour orange juice into a wide bowl.
                                      4. Once cream is done, layer your dessert in a trifle dish.  Dip ladyfingers, one at a time into orange juice and crumble into the bottom of the trifle dish.  Each dish will get 1 ½ lady fingers on the first layer.  Add a heaping 1/4 of cream to each trifle dish.  Divide ½ of strawberries amongst trifle dishes.  Repeat.
                                      5. Top with a dollop of whipped cream and a drizzle of strawberry syrup.  Serve and enjoy.

                                      Strawberry season is upon us and as I find myself making batch after batch of jams and sauces I knew I had to share this recipe with you. My favorite memory with this syrup goes back a few years...

                                      At a blogger brunch we hosted a few years back we set up a fantastic pancake bar. There were tons of topping options and several recipe suggestions. One of the most popular recipes was the Very Berry Strawberry Shortcake Pancakes. Everyone loved all of the combinations, but my then 3 year old (now 5) went absolutely crazy over this strawberry syrup.

                                      We made her a stack of strawberry shortcake pancakes with this scrumptious syrup drizzled over them. A simplified version of the very decadent pancakes previously mentioned.  You may have caught that photo on Instagram

                                      It was so good the family called for an encore, resulting in an awesome pancake Sunday the very next day and pretty much every Sunday for the next 2 months.

                                      Helpful Tips to make 3 Ingredient Homemade Strawberry Syrup:

                                      • I love big chunks of strawberry in my syrup, but you can dice the strawberries to get smaller chunks or even run them through a blender before cooking them for a pretty smooth sauce.
                                      • You can use frozen strawberries, just thaw them first.
                                      • The longer you cook the sauce the thicker it will be.
                                      • The syrup will keep for weeks in the refrigerator.

                                      3 Ingredient Homemade Strawberry Syrup

                                      3 Ingredient Homemade Strawberry Syrup is a luscious fresh strawberry sauce ready in just 15 minutes! This is the perfect simple recipe to get your taste buds talking this summer.
                                      prep time: 5 minscook time: 10 minstotal time: 15 mins

                                      Ingredients

                                      • 1/2 pound ripe strawberries, washed and hulled
                                      • 1/2 cup sugar
                                      • 1 tablespoon vanilla bean paste (or vanilla extract)

                                      Instructions

                                      1. In a medium saucepan combine strawberries and sugar.  Smash strawberries and turn heat to medium.  Bring to a boil, reduce to simmer for 10 minutes without a cover.
                                      2. Remove from heat, add vanilla and stir.  Enjoy warm on pancakes.  Allow to cool to room temperature before using for ice cream and cocktails.
