Strawberry season is upon us and as I find myself making batch after batch of jams and sauces I knew I had to share this recipe with you. My favorite memory with this syrup goes back a few years...
At a blogger brunch we hosted a few years back we set up a fantastic pancake bar. There were tons of topping options and several recipe suggestions. One of the most popular recipes was the Very Berry Strawberry Shortcake Pancakes. Everyone loved all of the combinations, but my then 3 year old (now 5) went absolutely crazy over this strawberry syrup.
We made her a stack of strawberry shortcake pancakes with this scrumptious syrup drizzled over them. A simplified version of the very decadent pancakes previously mentioned. You may have caught that photo on Instagram
It was so good the family called for an encore, resulting in an awesome pancake Sunday the very next day and pretty much every Sunday for the next 2 months.
Well, as we all loved this homemade strawberry syrup so much, we found ourselves using on everything and creating recipes with it like this Strawberry Shortcake Tiramisu. Although I must say eating it off a spoon is perfectly delicious.

Helpful Tips to make 3 Ingredient Homemade Strawberry Syrup:
- I love big chunks of strawberry in my syrup, but you can dice the strawberries to get smaller chunks or even run them through a blender before cooking them for a pretty smooth sauce.
- You can use frozen strawberries, just thaw them first.
- The longer you cook the sauce the thicker it will be.
- The syrup will keep for weeks in the refrigerator.

3 Ingredient Homemade Strawberry Syrup is a luscious fresh strawberry sauce ready in just 15 minutes! This is the perfect simple recipe to get your taste buds talking this summer.

Ingredients
- 1/2 pound ripe strawberries, washed and hulled
- 1/2 cup sugar
- 1 tablespoon vanilla bean paste (or vanilla extract)
Instructions
- In a medium saucepan combine strawberries and sugar. Smash strawberries and turn heat to medium. Bring to a boil, reduce to simmer for 10 minutes without a cover.
- Remove from heat, add vanilla and stir. Enjoy warm on pancakes. Allow to cool to room temperature before using for ice cream and cocktails.
- Enjoy!
