We have been enjoying simple "ice cream" recipes for years, but everyone loves a little chocolate now and then and we always come back to this one. I have mentioned how challenging my 5 year old has become at meal time.  Munchkin has become picky about everything so, I have been pretty creative with her meals.  Over the last few years we have noticed that our normally well behaved child will change her behavior immediately after eating processed sugar and apparently even the natural sugar in a small bowl of fresh fruit could launch her to the moon.

Between Munchkins sensitivity to sugar and us trying to eat healthy...  Naturally sweetened treats are king!  This "ice cream" is currently Munchkin's favorite treat!  She asks for it at every meal.  Truth is, its so healthy she could eat it for breakfast.  Not that it would happen, but she could eat it for breakfast.  LOL

    2 Ingredient Chocolate Banana "Ice Cream"

    This chocolate frozen treat is a long time family favorite. It is rich and creamy, perfectly chocolaty with only 2 ingredients. We have been enjoying simple "ice cream" recipes for years, but everyone loves a little chocolate now and then and we always come back to this one. I have to tell you we have enjoyed this Simple 2 Ingredient Chocolate Banana "Ice Cream"countless times over the last few years and you are going to love it!!!

    Ingredients

    • 6 ripe bananas (3 fresh and 3 frozen)
    • 3 tablespoons cacao powder (or cocoa powder)

    Instructions

    1. Place bananas in a blender. Blend until mixture starts to get creamy, scraping down sides as necessary. Add cacao powder and pulse until completely combined.
    2. Transfer to a resealable container and place in freezer for 3-4 hours.
    3. Scoop and serve or scoop and place scoops into a container for later use. If you decide to leave it in the freezer, just allow it to sit at room temperature for 10 minutes or so, to soften before serving.
    4. Enjoy!
    DONNA'S NOTES
    1. If you do not have a high powdered blender you may want to cut your bananas into slices and freeze them. 
    2. There are no preservatives in your ice cream, so it will freeze solid.  Simply remove from the freezer 10 minutes before serving to allow to soften slightly.  If freezes and keeps beautifully!
    3. You can transfer to a freezer-safe container and allow ice cream to firm up in the freezer for 2 to 3 hours.

    One of the best things about this chocolate peanut butter ice cream is that it requires only 3 simple ingredients.

    But, I know that it's hard to resist a bowl of chunky peanut butter ice cream loaded with your favorite candies.

    So, you can certainly add chunks of chocolate-covered peanut butter, chopped nuts, and chocolate chips if you prefer.

    Or, for a more adult version, you can add some instant espresso to the ingredients for a coffee taste. There are lots of different chocolate peanut butter ice cream brands you can buy at the store.

    But, this homemade ice cream recipe will soon become your favorite. It's rich and creamy and because it doesn't have added sugar or dairy, it's much lower in fat and calories.

    What do I need to make chocolate peanut butter ice cream?

    All you need to make this creamy homemade ice cream is a high powered blender or a food processor. You don't need an ice cream maker.

    And, you don't need to cook it on the stove. It really doesn't get much easier than that. All you need is:
    • Blender - You can use any blender, but I absolutely love this one! I use it for ice cream, smoothies, soups, my tomato sauce, and naturally this ice cream.

    Is this ice cream allergy-friendly?

    Yes, because this chocolate peanut butter ice cream uses only 3 simple ingredients, it's allergy-friendly. It does not contain dairy, eggs, soy, or gluten.

    You can substitute other nut butter for people with peanut allergies.

    Just be careful what types of extras you add if you're concerned about allergies. One of the best add-ins, if you're concerned about food intolerances, is 70% dark chocolate.

    How should I serve chocolate peanut butter ice cream?

    I usually just enjoy this ice cream as is in a bowl. But, if you want a few more ideas, you can use my No Fail Caramel Sauce or my Crockpot Caramel Sauce.

    Or, why not try adding a scoop of this ice cream to my Wendy's Frosty recipe. Or, try a scoop in between two of my homemade chocolate chip cookies.

    • If you do not have a high powered blender, you may use 2 frozen and one fresh banana to encourage easier blending.
    • There are no preservatives in your ice cream, so it will freeze solid. Simply remove from the freezer 10 minutes before serving to allow it to soften slightly. If it freezes and keeps beautifully!
    • You can transfer to a freezer-safe container and allow the ice cream to firm up in the freezer for 2 to 3 hours.
    • If you don't have any semi-sweet chocolate chips, you can substitute 1/3 cup of cocoa powder.

    How can I store homemade ice cream?

    You will want to store this in the coldest part of your refrigerator. Never store ice cream in the freezer door.

    If you find the ice cream is getting soft while you're eating it, just put it back in the freezer for a few more minutes.

    Homemade ice cream will stay good in the freezer for about two weeks. But, I think it's best when you eat it as soon as you make it.

                    If you notice you have bananas that are ripening too fast for you to enjoy them, just peel them and put them in the freezer to use in the future.

                    Strawberry Banana Ice Cream

                    Strawberry Banana Ice Cream with 2 ingredients and only 5 minutes!

                    Ingredients

                                • 4 large bananas, frozen
                                • 4 cups strawberries, frozen
                                • 2 tablespoons sugar, optional

                                            Instructions

                                                  1. Place strawberries in a bowl or measuring cup. If your strawberries are not very sweet, sprinkle with sugar and toss to combine.  Place the bowl in the microwave at 30-second intervals until the strawberries soften slightly and the sugar dissolves in the juice (if used).
                                                  2. Add bananas and strawberry mixture to the blender and blend until they reach the perfect consistency.
                                                  3. When your ice cream stops moving in the blender, you will want to stop and scrape down the pitcher of the blender and stir a few times, about 2-3 minutes of total blending time.
                                                  4. Your frozen fruit may separate into tiny frozen chunks before it becomes a fabulous creamy consistency, so be patient.
                                                  5. Serve and enjoy! You can also transfer to a freezer-safe container and allow ice cream to firm up in the freezer for 2 to 3 hours.

                                                    So, why does this kitchen hack work so well? Normally, when you puree frozen fruit, it just turns into little flakes of frozen fruit.

                                                    But, bananas are very high in pectin. And, it's this pectin that helps keep the ice cream creamy and soft.

                                                    Why is it called nice cream?

                                                    Banana Nice Cream is a delicious and healthy frozen dessert. The treat is dairy free and sugar free because the only ingredient in it is frozen bananas!

                                                    Because it mimics real ice cream but is a healthier dessert, it is called Nice Cream.

                                                    How long do you have to freeze bananas for nice cream?

                                                    To make this frozen dessert recipe, you will need to freeze the bananas for three to four hours.

                                                    Don't freeze them on the door because they won't freeze evenly. Instead, place the container toward the back of the freezer.

                                                    Can you puree the bananas then freeze?

                                                    You will need to start with six frozen bananas. It's important that you freeze them first and then puree.

                                                    If you try to puree them first, the consistency will be off and it won't come out properly.

                                                    Can nice cream be made without a blender?

                                                    Banana Nice Cream can be made in a blender or food processor. I prefer the blender for ease of clean up.

                                                    I have also seen it made with a potato masher, but that is a whole lot of work. I would prefer to eat the frozen banana dipped in chocolate, rather than hand mashing frozen bananas.

                                                    Is it OK to freeze bananas in their skin?

                                                    You can freeze them in their skin but it will make removing the skin much more difficult when you make this recipe.

                                                    Instead, remove the peels and place the bananas in a freezer bag to freeze.

                                                    That way, when you're ready to make this recipe all you need to do is to take the bag out of the freezer.
