With a picky eating family, mac and cheese is a staple in my house.  Munchkin's favorite dish is Cheese Lover's Mac and Cheese with Broccoli and Chad could eat Jack Daniel's Smoky Bacon Mac and Cheese until the cows come home.  But, I have been craving something different.  I have been on a jalapeno popper flavor kick lately.  I can't get enough and one night, our mac and cheese dinner was destined to be something even more spectacular.

As I set out to make our old favorite skillet mac and cheese, something happened.  I opened the cheese drawer and found a pound of bacon.  I knew that of course we had jalapenos in the veggie drawer (a staple in every southwest  home) and my head started spinning with the possibilities.  I took my beloved jalapeno poppers flavors and used the components in our mac and cheese dinner and turned out our NEW favorite mac and cheese.

Our glorious cheese sauce is built on bacon drippings and sauteed jalapenos.  3 different cheeses are added to create the most delicious mac and cheese to ever cross your lips.  A full pound of bacon is mixed into the creamy mac and cheese for the perfect bite.

It's ready in just 30 minutes and will totally knock your socks off!

PRINT RECIPE

Jalapeno Popper Bacon Mac and Cheese
SERVES 6 - 8  |  ACTIVE TIME 30 Min  |  TOTAL TIME 30 Minutes

16 ounces dry cellentani (corkscrew) pasta
16 ounces thick cut bacon, uncooked
2 tablespoons unsalted butter
4-6 large jalapeno peppers, seeds and veins removed (diced)
¼ cup all-purpose flour
1 teaspoon kosher salt + more for pasta water
1 teaspoon cayenne pepper
3 cups milk
8 ounces Wisconsin cream cheese, cut into 8 pieces
1 cup (4 ounces) Wisconsin mild cheddar cheese, shredded
2 cups (8 ounces) Wisconsin Colby-Jack cheese, shredded

Bring an 8 quart covered pot filled with water to a boil over high heat. Once it boils, add a handful of salt and pasta. Reduce heat to medium high and cook uncovered to al dente (has a bite to it). Drain and set aside.

Meanwhile warm a large 12” skillet over medium-high heat. Using clean kitchen shears cut bacon into bite size pieces over the skillet and let them to fall into the pan. Stir occasionally as needed. Cook until crisp.

While the bacon is cooking, shred cheeses and dice jalapenos.

Once bacon is cooked through, remove bacon to a bowl with a slotted spoon. Reserve 2 tablespoons of bacon drippings and discard the rest. Wipe the side of the skillet to avoid flame ups.

Pour reserved bacon drippings back into the skillet over medium heat and add butter. Once melted add jalapenos and sauté until softened, 3-5 minutes.  Add flour to skillet and whisk to combine. Add salt and cayenne pepper. Whisk to combine. Add cream cheese and stir until softened.  Allow to come to a bubble for 3 minutes, whisking occasionally to help pick up the bits on the bottom of the pan. Add milk. Whisk to combine. Bring back to a bubble and add cheeses.  Stir until cheese is melted and smooth.

Reserve 2 tablespoons bacon.

Add pasta to sauce and stir to combine. Add remaining bacon. Cook pasta in sauce for 5 minutes over medium heat until sauce thickens and the pasta has a chance to absorb some of the sauce.

Sprinkle with reserved bacon.

Serve and enjoy!

DONNA'S NOTES:
Recipe can be halved.  Simply use half of the ingredients.

Sauce will thicken as it cools. If sauce is too thick, add milk ½ cup at a time until it reaches your desired consistency.

Reheat instructions: Add pasta to pot with milk. Heat until warmed through, adding ½ cup of milk at a time until desired constancy is reached.

Freezing instructions: Allow pasta to come to room temperature. Place in resealable plastic bag or container. If using a container press a small piece of plastic wrap over top to avoid freezer burn. Will keep for up to 6 months. To reheat, that pasta and follow reheat instructions.

I have to say, of all the delicious things to come out of my kitchen in the last 3 months this was has received the most 'spectacular' reviews.

We first tried the strawberry habanero combination about 4 months ago and we have been hooked ever since.

Habanero Jelly Recipe

I have been sharing it with friends and family and I have to say that I have yet to receive a negative review. Munchkin did say (in her cute 5-year-old voice) "it's a little bit sicy (that means spicy), but I like it!"

Of course, she thinks anything more seasoned than ketchup is a little spicy. One of our friends actually told us that we should bottle it and sell it. Another friend that we shared it with put it on everything.

This fabulous creation comes together with just 4 ingredients.

The strawberry flavor shines through and the habanero lends its fruity, citrusy flavor, and its floral aroma to this divine everything spread. 

The sugar mellows the heat from the habanero to give you all the flavor with a tiny bite.  Truly an all around everything spread. What food are you spreading it on?

Helpful Tips to make Strawberry Habanero Everything Spread:

  • You can adapt the recipe to suit your heat level. We have made the following:
    1 alarm - mild heat - 1 habanero, seeds and veins removed
    2 alarm - medium heat - 2 habaneros, seeds and veins removed
    3 alarm - hot heat - 3 habaneros diced (seeds and veins included)
    4 alarm - fire - We have not make this level yet, but we would love to hear what you all come up with.
  • I have not canned these as we love it so much it goes too fast.  I put it in a glass bowl or 2 jelly jars and store it in the fridge.
  • Jam will keep in the refrigerator for at least 2 weeks (much longer from my experience).  But, it will keep  longer, if you pack and seal in canning jars according to the manufacturer's instructions.

What you will need to make Strawberry Habanero Everything Spread:

  • Heavy bottomed pot- heavy bottom pots are thicker at the bottom for a more even cooking distribution.
  • Jelly Jars - if you don't have a stockpile of these I highly recommend you invest in some. Interestly Amazon and Ace Hardware are my 2 favorite places to find them. I use them for everything making whipped cream, storing salad dressings, jams, jelly, drinking glasses.
  • Disposable Vinyl Gloves - The first time Chad suggested I wear gloves to cut up habaneros I laughed at him. Until...  I wiped the back of my hand across the nose and upper lip. It hadn't directly touched the peppers, I had already washed my hands...  But oh my goodness my face was on fire for hours. Now I have 2 boxes in my pantry at all times.
  • Hands-Free Over the Sink Strainer - Perfect for working in and out of the strainer without worrying about it tipping over or having to hold it.

Strawberry Habanero Everything Spread

Strawberry Habanero Everything Spread is our latest obsession. A sweet strawberry spread with a fantastic citrusy flavor and a little bite at the end. Perfect, just perfect! This simple recipe comes together with just 4 ingredients and you will be making it all year long!
prep time: 10 MINScook time: 25 MINStotal time: 35 mins

Ingredients

  • 2 pounds fresh strawberries, hulled and quartered
  • 3 cups sugar
  • 2 habaneros, seeds and veins removed (diced) (this makes medium heat)
  • 2 tablespoons orange juice

Instructions

  1. Rinse strawberries in cold running water and hull them.  Quarter strawberries and place in a heavy-bottomed pot, add sugar, habaneros and orange juice. Stir well to combine.  Bring to a boil over medium heat, stirring often.
  2. Stir occasionally until the spread reaches 220 degrees on a candy thermometer. This will take approximately 25 to 35 minutes. Use a potato masher to smash strawberries if you desire a less chunky consistency or you can transfer to a food processor and blend it smooth.
  3. Remove pot from heat.  If you are not food processing it, place jam in bowl or jelly jars and allow to come to room temperature.  Then store in the refrigerator.

DONNA'S NOTES

One of my favorite cooking methods is working with what I have on hand and finding inspiration in my pantry.

Actually pantry cooking has resulted in some of the most delicious recipes I have ever created and this was one of them.

I injured my knee at the beginning of January and I was laid up on the couch for a week. I only had Chad running to the store for staples (like milk and bread).

After about a week of fast food and dry cereal, I decided I had enough and I was going to cook something, so I grabbed some cooked ground beef out of the freezer and headed for the pantry to find some dinner inspiration.

I keep my pantry pretty well stocked for occasions exactly like this.

After surveying the pantry the beans caught my eye and I decided I would whip up a chili.

Beef, beans, tomatoes, jalapenos and some crushed red pepper. Just a few minutes later I had the most scrumptious chili.

I still can't believe how delicious it was. So, I tried the recipe again and again. Feeding it to friends and family.

Everyone raved about it and no one believed it was so quick to make.

Eventually, I settled on fresh ground beef because you don't always have cooked ground beef on hand, but if you have it cooked already you can whip this up this fabulous recipe in just about 7 minutes.

Good pantry cooking really comes down to choosing your ingredients well.

Fire-roasted tomatoes and chili beans give this chili an incredible slow-cooked flavor and the peppers give it a little kick (not too much). Your friends and family will never believe you whipped this up in just 15 minutes.

5-Ingredient Easy Chili

This thick and hearty chili comes together in just 15 minutes, using only 5 ingredients. Truly one of our favorite chili recipes ever it is perfect for winter or fall, spring or even summer barbecuing. Any recipe that tastes this good and can be put together on a lazy day is a keeper in my book!

Ingredients

  • 1 1/2 pounds lean ground beef
  • 2 (14.5-ounce) cans fire Roasted Diced Tomatoes with Garlic
  • 2 (15.5-ounce) cans chili beans (I used S&W)
  • 1 (7-ounce) can diced green chiles or 1/2 can (4-ounce) diced jalapenos
  • 1 teaspoon crushed red pepper (to taste)

Instructions

  1. In a large (4 quart) saucepan over medium-high heat, cook beef.  Break beef up with a wooden spoon.  Cook until cooked through, stirring occasionally.  Add tomatoes, beans, jalapenos and crushed red pepper flakes (to taste - use less for mild, more for hot).  Stir.  Simmer 5 minutes.
  2. Serve and enjoy!

DONNA'S NOTES

My mouth is watering just looking at the photo of our sandwich creation. That is when you know a recipe is really good, if a photo makes you crave it. Luckily I am making them for lunch again today. {{slurp}} excuse me a moment while I reminisce and lick the screen.

This is truly a stellar sandwich, perhaps my favorite ever and I am a sandwich girl so that is saying a lot! This recipe is so easy.

It all starts with deli sliced roast beef simmered in a spicy beef stock made with Red Hot Chili Pepper Everything Spread (found in the condiment aisle in your grocery store). The spread adds the perfect something to the beef and infuses the meat and juices with a little heat and a lot of flavor.

The hot spicy beef is served over perfectly toasted crusty bread that will absorb the scrumptious juices from the beef. Monterey Jack and Colby cheeses are melted over the beef and then it is topped with Deli Sliced Hot Cherry Peppers and Mild Pepper Rings. The combination of the two peppers add the perfect tang and spice to the sandwich.

Hot & Spicy Roast Beef Sandwiches are perfect for lunch or dinner and even taste delicious served at room temperature. Just wrap them up and send it to work or school as a fantastic surprise.

Hot & Spicy Roast Beef Sandwiches

Deli roast beef is simmered in spicy beef broth and served on crusty toasted bread, topped with ooey gooey cheese and peppers to create our favorite hot and spicy roast beef sandwich recipe in under 30 minutes!
prep time: 30 minscook time: total time: 30 mins

Ingredients

  • 1 pound thin sliced deli ‘oven roasted' roast beef
  • 1 cup beef stock
  • 1/4 cup Mezzetta Red Hot Chili Pepper Everything Spread
  • 1/2 teaspoon course black pepper
  • kosher salt (to taste, add less if beef is well seasoned)
  • 1 (12" long or larger) Loaf Firm Bread (we used Jalapeno Cheddar Loaf from the bakery)
  • 2 tablespoons butter, room temperature
  • Slices Monterey Jack cheese
  • Slices Colby Jack cheese
  • Mezzetta Deli Sliced Hot Cherry Peppers
  • Mezzetta Deli Sliced Mild Pepper Rings

Instructions

  1. Preheat oven to 400°F.
  2. In a skillet over medium heat combine ① beef stock, ② chili pepper spread and ③ pepper. Stir to combine. ④ Add roast beef. Stir until beef is coated. Bring to a simmer, continue to cook for 10 minutes, stirring occasionally. Taste beef. ⑤ Add salt, if needed, a ¼ teaspoon at a time until desired flavor is reached.
  3. Meanwhile: split loaf of bread lengthwise (to make a top and bottom of the sandwich) and butter both sides. Place butter side up on a baking sheet and bake until golden brown, about 10 minutes.
  4. Pile roast beef on toasted bread, do not drain, the bread will absorb the juices and become even more delicious. Add slices of cheese and place in oven just until melted. Top with peppers. Cut bread into slices.
  5. Serve and enjoy!

I have such fond memories of my childhood. Anytime food memories pop into my mind, I remember my mom being in the kitchen preparing the most amazing meals for us.

She was way ahead of her time with her creative simplicity (hmmm, maybe that is where it came from). My mom could prepare a delicious meal with 5 kids hanging on her and have it on the table at 6:00pm every night.

Every time I even look at a bell pepper I remember a baking dish filled with Mom’s stuffed peppers. Green bell peppers overflowing with her special pepper mixture topped with tomato sauce.

Just the thought makes my mouth water.

I haven’t made stuffed peppers in a long time, truth be told Chad (my husband) never liked bell peppers. Well, recently his ever-expanding palate saw the light.

Perhaps it was the bright red, orange and yellow peppers calling his name. As we do eat with our eyes first it is important (especially with picky eaters) that your food looks appetizing.

Helpful Tips to make Cheesy Italian Stuffed Peppers:

  • To quickly clean and cut a bell pepper, cut off the top and bottom of the pepper, then slice it down the side and unfold it into a flat sheet. Run your chef’s knife along the inside of the pepper to remove the membrane and seeds. Once it is cleaned, you can slice it evenly and chop it into bite-size pieces. My mom taught me not to waste, so I go back and cut the stem out of the lid and chop up the top and bottom into bite-size pieces.

    What you will need to make Cheesy Italian Stuffed Peppers:

    • Skillet- I have had this pan since 2006. It is my go-to large skillet. It heats evenly and quickly. The stainless steel cleans up beautifully with a little baking soda so they still look brand new.

    Cheesy Italian Stuffed Peppers

    Cheesy Italian Stuffed Peppers start with cheesy Italian sausage, fire-roasted tomatoes, and orzo pasta. It only gets better from there. An easy recipe that goes from prep to plate in 30 minutes makes this one a keeper!
    prep time: cook time: 30 minstotal time: 30 mins

    Ingredients

    • 16 ounces bulk hot Italian sausage
    • 1 (14.5-oz) can fire-roasted diced tomatoes with garlic
    • 2 ounces shredded Parmesan cheese
    • 8 ounces dried orzo pasta
    • 2 tablespoons extra virgin olive oil, divided
    • 2 cups reduced-sodium chicken stock
    • 4 ounces shredded mozzarella cheese
    • 8 bell peppers (whichever color you prefer)
    • 1/2 teaspoon kosher salt
    • 8 basil leaves, chopped (optional garnish)

    Instructions

    1. Preheat oven to 450°F.
    2. Warm 1 tablespoon of olive oil in a medium (10-inch) skillet over medium heat, approximately 2 minutes. Add orzo, stir to coat. Cook until orzo is golden brown, stirring occasionally. Add chicken stock and bring to a boil, cook for 7-10 minutes until liquid is absorbed, stirring occasionally.
    3. Meanwhile, wash peppers. Cut the tops off and remove seeds and veins. Pat peppers dry with a paper towel. Place peppers (lids and bottoms) in a microwave-safe bowl and toss with 1 tablespoon oil and kosher salt. Cover bowl with plastic wrap or microwave-safe lid. Microwave until peppers are soft (about 10 minutes). Remove peppers from bowl and stand up (cut side up) in a 9”x9” baking dish.
    4. In the meantime, heat a medium skillet over medium-high heat. Add sausage to skillet and cook until browned.
    5. In the orzo pan; combine sausage, tomatoes, mozzarella, and cheeses. Stir to combine. Stuff mixture into peppers, using a spoon. Set tops aside.
    6. Bake for 7-10 minutes, until the top is lightly browned. Place tops on peppers and serve.
    7. Enjoy!

    Jalapeno Popper Cheesy Taquitos are the consummate Game Day food. An easy recipe that will knock your socks off, with instructions to make-ahead too. Loaded with your favorite popper flavors: jalapenos, bacon and ooey gooey cheese. Adding perfectly seasoned beef makes this an awesome dinner recipe and it is on our menu regularly!

    You may have noticed I have a thing for Jalapeno Poppers.  It all started with this grill recipe I created, then came the meatballs, the jalapeno popper pretzel bombs, breads - this one and that one, and then the mother of jalapeno popper recipes... The Jalapeno Popper Mac and Cheese.

    I can't get enough.  The flavor combination draws me in.  Honestly I had no intentions to create this recipe.

    I was on a mission for a burrito, but once I inventoried my fridge, the magic happened.  Jalapeno Popper Taquitos are loaded with jalapenos, beef, bacon, ooey gooey cheese and the perfect Mexican flavors to make your heart go pitter patter!

    The jury is out on the tortilla though, so you will have to weigh in.  I say I love the flavor that the corn tortillas add to the taquitos.  Chad says that he prefers the flour because you can focus on the yumminess inside the taquito.  What is your opinion?

    Last week we were all sittting around the table eating these fabulous taquitos and discussing how our family loves loves loves Mexican food and Mexican flavors.

    Despite the fact that I am Italian (50%, 2nd generation American-Italian) I find myself cooking with southwestern staples and spices more than any other.

    As a matter of fact, I asked my 4 year old daughter about Italian food and she looked confused.  I mentioned pasta and she actually said "what's that?"  Gasp, my relatives would go through the roof.

    Well, the palate wants what the palate wants. Ours seem to go for Mexican and Southwestern food more than not.

    We are planning on celebrating our family day with some football and these taquitos are going to be the star of the show.  A fabulous make ahead dish is perfect for game day.

    Simply prepare (without baking), freeze, and cook when ready to serve.  No defrosting necessary.  Could it possibly be easier?

     An easy recipe that will knock your socks off Jalapeno Popper Cheesy Taquitos (VIDEO)

    Helpful Tips to make Jalapeno Popper Taquitos:

    • Filling tortillas with 1 tablespoon of mixture will make approximately 48 taquitos.  This works best with the corn tortillas, adding more causes the tortillas to separate.  Flour tortillas perfectly hold 2 tablespoons of mixture.
    • Using fresh tortillas will give the best results, if you are having trouble rolling them, microwave a few at a time, for about 20 seconds, with a wet paper towel over top. This will help make them more pliable.
    • If taquitos are unrolling, add a dab of jalapeno popper mixture to the inside end of the taquito and gently press down to seal.
    • To freeze for later use:  Prepare taquitos as described, but do not bake.  Place baking pan into freezer.  Allow taquitos to freeze solid.  Once frozen place into a resealable freezer bag (1 gallon works great)and store until ready to use.
    • They keep well for 6 months.  To prepare frozen taquitos, preheat oven to 425°F and bake frozen taquitos for 20 minutes or until tortillas are crisp or ends are beginning to brown.  Serve and enjoy! 
    • Why New Mexico Chile Powder? It has a deep dark reddish brown color and features an earthy, sweet flavor and subtle, spicy heat. It is mildly hot and absolutely perfect in this sauce. It creates a truly authentic flavor! New Mexico Chili Powder can be found in the international aisle in the bulk bags or on Amazon.  if you are afraid the heat will be too much you can use half New Mexico Chili Powder and 1/2 regular chili powder.

    What you will need to make Jalapeno Popper Taquitos:

    • Jelly Roll Pans (baking sheets with sides) - used for everything from cookies to roasting, a good baking pan will last for years.
    • scoop – perfect for meatballs, cookies, ice cream for portioning out leftovers! I have had this set for years and use them all the time.
    • New Mexico Chile Powder - This is one of my favorite spices. See the notes above.

    Jalapeno Popper Taquitos

    Jalapeno Popper Taquitos are the consummate Game Day food. An easy recipe that will knock your socks off, with instructions to make-ahead too. Loaded with your favorite popper flavors: jalapenos, bacon and ooey gooey cheese.

    Ingredients

    • 3-6 jalapeños, diced (more for spicy, less for mild)
    • 16 ounces lean ground beef (about 88%)
    • 1 tablespoon New Mexico chili powder
    • 1 teaspoon ground cumin
    • 1 teaspoon onion powder
    • 1 teaspoon kosher salt, plus more for sprinkling
    • 1/2 teaspoon garlic powder
    • 1 cup bacon crumbles (1 pound cooked and diced)
    • 8 ounces cream cheese, softened
    • 4 cups shredded Colby Jack cheese
    • 24-48 6" small flour tortilla or corn tortillas*
    • cooking spray

    Instructions

    1. Heat oven to 425°F. Line 2 baking sheets with aluminum foil and lightly coat with cooking spray. Set aside.
    2. In a large (10 inch) skillet over medium-high heat cook ground beef and jalapeños, until cooked through.  Break beef up with a spatula as it cooks. Add all seasonings and 1 cup of water. Stir and cover with the lid.  Cook 10 minutes, remove the cover and continue to cook until water evaporates. Remove from heat. Add bacon. Stir to combine.
    3. Meanwhile, place cream cheese in a large bowl. Set aside.
    4. Add cooked beef mixture to cream cheese and stir until combined well. Add cheese and stir again until completely combined.
    5. Layout 4 tortillas at a time and add 1-2 tablespoons of mixture to the lower 1/3 of the tortilla. Roll the taquito tightly without tearing the tortilla.  Place taquitos seam side down on the baking sheet.  Repeat until the baking sheet is full, being careful not to allow the taquitos to touch.  If the taquitos are unrolling or tearing, see cook's note for tips.
    6. Spray taquitos with cooking spray and sprinkle with salt.  Bake 15-20 minutes until the tortillas are crisp or the ends begin to brown.
